Eric, yikes! I’d stay at the airport too, that area is too shady for me to kill time in.
Dinner is a throw together pasta dish with penne, asparagus and shrimp in a Parmesan sauce with a small salad and a slice of garlic bread.
Nothing on the menu for now, my appetite and desire to cook is very hot or miss these days, so I’ll figure it out midday and hope for the best.

Dinner was a small banana cut up, mixed with fresh raspberries and drowned in heavy cream. YUM. I was going to fix something carby but I'm really full already.

Minus, I make curried avocado soup when I have avocados that start to turn.
Wally, I had never thought of freezing mashed avocado but that's a good idea.
Rhonda, Yum on the spinach empanadas. When we spent a week in Salamanca, Spain there was a shop near the university that sold empanadas with 50 different fillings including spinach. They were so good we ate nothing else for most of our meals.
Eric, There are only a few airports that are comfortable to spend time in. Last time we changed planes in Baltimore there were no seats available in the entire Concourse B area.
Dinner tonight was baked salmon with lemon pepper seasoning, cauliflower and sautéed potatoes.

Dinner last night was the cauliflower and broccoli casserole I made a few weeks ago. I had to substitute other grated cheese for sharp white cheddar. It was very good again but a lot of leftovers. I also had a salad with compari tomatoes, avocado, feta, and Kalamara olives and dh had corn cut off the cob and sauteed in butter with diced orange bell pepper.
I leave avocados on the counter until barely ripe and then transfer to the refrigerator. Have never tried Wally's method which is the reverse of mine. I like them best when barely ripe.
Tonight's dinner may be boneless chicken thighs in piccata skillet dish.

We lost power for a bit due to sleet late yesterday evening but today the temperature went above freezing so the precipitation turned to rain. We always get power restored quickly since we are near the hospital.
Dinner tonight was chicken in orange curaçao sauce, sautéed yellow squash and mashed potatoes.

Today's meal was guacamole and cucumber sticks. I'll finish the raspberries later tonight for dessert.
I've already prepped a big salad with everything for tomorrow. All I have to do before serving is add HB eggs and cucumbers. (oops - just realized I forgot the black olives - that's easy to remedy)
Made my favorite recipe in pudding cups instead of a chocolate pie. Package of Godiva chocolate pudding, 3 oz heavy cream, 1oz Tia Maria and then the rest of the milk called for on the box. Oh my this is good.
Eric - hope you got to your destination & had some time to sleep before jumping right to work.

Tonight was ham steak, baked beans and Persian Taboulleh I made yesterday. I had another type of meat in mind for this but DH wanted ham steak. Always tasty.

I chopped up the last of the goat and used the birria sauce to make a socca "pizza", topped with cheddar cheese.

Reader - the recipe was actually for chocolate pie. Poured onto a chocolate crumble crust and then topped with whipped cream. I'm just lazy and put in pudding cups.

Probably going to make pork chops or something. Supposed to get more snow tonight into tomorrow. Hoping this one wont be like the one we got over the weekend, mostly rain!

When I looked in the freezer for boneless chicken thighs, I saw a package of lamb rib chops that had been in there a while. Took them out instead of the chicken. DH grilled them perfectly, medium rare. Our side was leftover broccoli and cauliflower casserole, just as good as the first time. Mint jelly with the lamb chops.
Tonight will probably be the chicken thighs piccata.
All the meals described sound good.

I'm baking a salmon loaf of sorts, as I type. It can either be dinner tonight or tomorrow. Tomorrow will be a long, drawn out day with DH's procedure.
We have the leftover socca "mexican pizza" if we choose that instead.

Nance - I used to get it locally but I had to buy it from Amazon the last time. If fact I hope they still have it since I need more. But Godiva was just my extravagance. The recipe just says chocolate instant pudding mix.

Dinner tonight was pad Thai and chicken satay, takeout from a restaurant near our hotel 4 stops from the hospital. It was excellent. They had a great variety featuring dishes from the various regions of Thailand but I kept it simple since DH has only had Thai once before.

Last night's skillet dish was good. My goal was to use some of the frozen mushrooms in the freezer. I dredged the halved thighs (seasoned with s, p, onion powder, garlic powder) in flour, browned in butter and grapeseed oil. Poured in chicken broth, added mushrooms, a bit of thickener, slivers of preserved lemon, dash of Worcestershire, simmered. Before serving added cooked orzo. DH was approving of the result and I liked the dish, too.
I ate only a small serving and had a large romaine salad with additions. Enough for another meal tonight.
Wally, I looked up birria and read that it was originally made with goat meat. How would you characterize the taste of goat? Is it gamey like lamb and venison?
Maggie, how nice that you got good takeout Thai food. I've had Pad Thai twice and liked it a lot. I think it's what the novice Thai food diner often orders.

Dinner was hamburger, a baked potato…cooked to "perfection" in a microwave oven…and an apple.
Work is..work. I'm doing routine quarterly equipment checks It's not difficult, but it requires a lot of attention to detail. None of us want to be complaining about the &+_#&+ idiot who missed important stuff at the last check, only to find our name on the check sheet. :-)
Hopefully we won't need to be sending gear out later this week. I've been here when that has happened and during that time it gets "seriously BUSY"

Mommyof3, you're making me envious…wish we had cool and/or snow. May hit 60s again.
Dinner was not a real meal. We were in Edmonds for DH's treatment. As much as I detest this treatment (effects on DH and concern over radiation exposure for myself), it was SO much easier to get to Edmonds than Seattle. They took us early so we made it home at a reasonable hour. I had my leftover socca goat-pizza and DH simply finished the ham sandwich I packed for our lunches. I wish he'd eat more, but I know this treatment will take its toll. (SOB)
Carole, I'd say that goat flavor is a cross between lamb and venison, but also pork. It isn't very gamey and if no one told you what you were eating, depending on how spiced it was, you'd be scratching your head what it was. If there was little spice, I'd say the lamb/venison profile, but milder. Some of our venison can have a pronounced flavor. Not bad, but not beef. So I guess it depends if your venison is black tail or white tail, LOL. The venison in these parts is black tail.

Wally - glad DH's treatment went OK.
I started in the yard today at 10am. Didn't stop or come in until after 7pm. Unlikely a drink will be useful for the sore muscles so hope aspirin will help. I only managed to get less than half done, but new Cecil Bruner rose planted and new gardenia planted. I'll be back out tomorrow morning digging out weeds & planting plumarias. Couldn't even think about the green salad I'd prepped ahead so had a can of Beenie Weenies and a piece of toast.

Minus, I'm extremely impressed with your gardening stamina. Especially since you're not a lot younger than I am. It's already horribly hot and humid here. The outdoors view has that telltale hazy look that I hate.

Maggie, I hope your dh is back to normal today and that normal is good.
We had leftovers for dinner. Tonight will be asparagus that I bought yesterday, a salad for me, and possibly a small pork steak.

We're in the edge of the Midwestern storms this week. Lots of rain expected. So far we've been spared the damaging stuff thankfully. Others near here have not been so fortunate.Dinner tonight is a crockpot affair - pepper steak with brown rice.

No cooking tonight. DH reminded me that we talked of going to a seafood restaurant tonight. Thursday is their oyster specials, including charbroiled.
