Sandy, I love your description of the March lamb. I have been cycling between four jackets because of the extreme weather changes. This morning we were back below freezing.
Carole, I also think a Reuben sandwich is the best use of corned beef. I got a good cut for a good price at Aldi but have to wait until I have the time to cook it.
Wally, I have never heard of corned venison but I'll bet it tasted good.
Nance, I'm glad you got your made from scratch lemon meringue pie. The mules are trained to walk along the outer edge of the narrow path so if they are startled they will jump to the inside. It made sense to me but unnerved DH. I figured the mules have a strong sense of self preservation so it was best to ride properly and not interfere with their balance. The outfitter asked for a detailed summary of riding experience when booking and refunded the money of anyone who didn’t pass muster on a pre-ride in a field.
Dinner tonight was spaghetti bolognese (my own sauce.)

I just made the world's largest meatloaf. Should have formed it into two loaves. I'll slice up leftovers in meal portions for the freezer. Used ground beef and ground pork, 3 eggs, lots of seasonings, and some French bread breadcrumbs from the freezer. Sides will be Bob's mashed potatoes and tossed salad. A ho hum menu but a menu.

Oh Wally - I am jealous. I'm having canned tuna. Since I didn't get to the store, I'm just mixing it up w/mayo and eating it out of the bowl with a fork.
Carole - meatloaf lurking in the freezer - yay!! And I love Bob Evans mashed potatoes. So glad they're available in individual servings.
Last week I put the remaining third of Special's chocolate cake in the fridge to try to preserve in our 80 degree weather. I cut & ate a piece today and it's still really good. Next time I'll freeze half in the beginning.
It appears to be a "sweets" day for me. Unusual since I normally prefer salt over sweet. A friend and I took 2 dozen Bundtinis to our bank today to thank them for everything they do. It's a small branch and we REALLY don't want it to go away. We each snagged one before we passed them over. Mine was White Chocolate Raspberry. Yum.

Minus, Thanks to a Girl Scout recipe I add celery, chopped pickles or relish and sometimes onion to the tuna and mayo. You are supposed to put it on bread, top with a slice of cheese and put it under the broiler but I like it out of the bowl. The chocolate cake would be the highlight of my day.
Went to the dentist today for my second attempt crown delivery and the new one didn’t fit, either. This time I insisted that the dentist (not the dental assistant) do all of the scanning. He is also going to talk with the lab since there is something unusual with my gum near that tooth. I have reject #2 cemented in as a temporary. At least this is only costing me time and aggravation. However I’m glad he won’t settle for a crown that doesn’t fit perfectly.
Dinner tonight was French onion meatballs with spinach on capricci pasta.

Tomorrow night is leftover pork tenderloin chunked up and mixed in with leftover rice and leftover veggies. Thinking this weekend I'm going to try and make chicken and dumplings as it looks like we might be getting either rain/snow or a snow event. Watching the weather closely as the weekend approaches.

Today's meal was Ivar's Boston Clam Chowder and club crackers. Obviously not as good as Legal Sea Food in Boston, but better than most.
Tomorrow I must use the last of the fingerling potatoes. Since it's turned cold again (for Houston - 49 at night), I'll probably boil them & serve with a hunk of Costco's rotisserie chicken breast from the freezer.

Minus, I love clam chowder. I regularly doctor canned clam chowder when I can’t make my own or get a good restaurant version.

Dinner has been a bit sparse as DH had a scheduled colonoscopy, prompted by his brother (the gastroenterologist) because both he and their older sister have had polyps on their most recent ones. DH did end up having polyps as well, so I am glad he had this done at this point - 5 years since his last one - rather than wait another five years. Two of the polyps were nothings, but one was deemed pre-cancerous. He checked with his younger brother last night to find that he too has had polyps! Only his younger sister (twin of younger bro) is polyp free to date.
Last night I made an alfredo for DH and added some turkey from the freezer, accompanied by carrots I cooked and then added honey butter to. I just had some yogurt with granola. I ate some leftover lasagna earlier for lunch and was still really full. Tonight will be ribeye steaks, baked potato salad, and some doctored baked beans.
minus - if you freeze the one step chocolate cake you can slice it and put the pieces between small pieces of waxed paper, then wrap. That way you can extract a piece at a time! I have another similar cake that is lemon if you would like that recipe also. It has more veg oil than a rgular recipe so the texture is very similar to the chocolate cake. I often make both in a bundt pan, then slice and fan on a serving platter. They will both stay moist for a party or gathering when you are having a number of desserts that are out buffet style.
maggie - we sometimes have tuna melts for dinner - I always have tuna, celery, onion, and cheese, so I mix up the tuna salad, grab a slice of the sturdy "gluten friendly. not free" sourdough bread from the freezer, then top with a slice of cheese and broil it. Easy, quick, and yummy! I usually do this when I have a salad of some kind, pasta, three bean, broccoli, or potato as a fast choice to accompany.

Mapo tofu tonight. I'm forced to use firm tofu vs the necessary silken (bought the wrong kind accidentally); I'll add more ground pork and non-traditional veg (spinach) into the mix so we have more leftovers for tomorrow. I may put it over udon noodles, instead of the traditional rice. OY…nothing like overly creative in the kitchen. We'll see how it turns out.
Special, glad your DH had the colonoscopy. I had one 5 years after my BC dx as I was told it was a "sister-cancer" possibility. I've been fortunate with all clears but learned I have an extra long colon.

Well a friend just invited me over for happy hour cocktails at 5pm, so likely "dinner" will be appetizers at her house (probably crackers & cheese) and just nibbles when I get home. Maybe a small can of wild caught, boneless, skinless Mackerel Fillets in EVOO. Or Smoked Oysters.

wally - I am glad he did too - crazy to me that all his sibs but one have polyps too, but neither parent did. My BIL thinks I should have every 5 year exams due to the breast cancer diagnosis, but as I discovered on this last one (done for symptoms) I can no longer have traditional colonoscopies, I have to do CT colonography instead - too many twists and turns. Fortunately, there were no issues. The next step with the GI doc is a trial of three weeks of a gut specific antibiotic. Unfortunately, it is a super expensive one that my insurance requires a call from him to confirm need. Still working that out, but then they should be able to mail it to me per my phone call with them yesterday.
minus - here is the lemon cake, a recipe my godmother gave my mom probably 70 years ago!
In a mixing bowl dissolve a package of lemon Jello in 2/3 c. very hot water. Add a yellow cake mix. Add 4 eggs, one at a time, and when mixed, add 2/3 c. vegetable oil. Mix and add 1 tsp. lemon extract. Pour into a 9x13 or bundt pan that has been sprayed with Pam, or greased. Bake for 40-45 mins at 350 F. or until a toothpick comes out clean. While cake is baking mix zest and juice of one lemon with 2 Tbsp. of softened butter, and one cup powdered sugar. Ice the cake while warm - if making a 9x13, just spread the glaze over, you can poke holes with a toothpick if desired. If using a bundt, turn the cake out onto a plate and spoon glaze over.
This was my late brother's birthday cake of choice. It is a nice cake for spring or an Easter dinner. It is old school for sure. I have not had any issues making this lately and having it turn out ok, although cake mixes are smaller in volume by several ounces these days.

I was 80 last year. Although I had several prior colonoscopies that polyps were removed, the last one - 5 years ago - was clean. The GI doc determined there was more risk of damage having a colonoscopy at my age than the chance there were more polyps. So no more for me….

Special, It's good that your DH had the precancerous polyp removed. The sedation wore off early during my last colonoscopy and the doctor asked if I wanted to stay awake for the tour out. The images on the colonoscopy operator monitor were surprisingly pretty: pink, blue and purple. I just might make that chocolate cake dividing up and freezing the slices as you suggest.

I pulled the eggplant lasagna from the freezer for last night's main dish. It was sooo delicious. I had a large salad but dh just had the eggplant. It's weird the way he has stopped eating foods he once enjoyed. Blue cheese, avocado, kalamata olives. If he ever stops liking onions, I'll know he has stopped eating altogether. LOL. I don't know what has happened with his sense of taste. Maybe another byproduct of aging. He still likes his big breakfast which he has resumed making for himself.
I am thinking of shrimp scampi for dinner and will have to buy some. Fresh and in the shell.

Leftover Mapo tofu and it was DELICIOUS. I may never make the authentic version again!
I hope to make a spam, broccoli, potato casserole (sort of Pommes Boulangere and au gratin mash-up) for tomorrow.
Carole, my DH's tastes have also changed once he started treatment and various drugs. He never drank coffee in his life, till his dx. Also, he'd never consider anything with vinegar (and now loves the Filipino adobo chicken or pork recipe). Olives…still a no-go. Mustard is acceptable in small amounts.
My DH also eats the same breakfast every day….I am all over the map.

I eat the same breakfast practically every day of my life - half of an everything bagel with whipped cream cheese and a small banana. On the rare occasions we eat a larger breakfast (usually out) I find myself not eating much else till dinner. We both notice we can't eat as much these days.
DH has decided after 45 years of my feeding him that the only onion he now likes is red onions in salad. Go figure. I'm not leaving cooked onions out of recipes so he'll have to fish them out if they're offensive. So far it seems to be raw onions that are objectionable.
Tonight is tikka masala with potatoes , carrots and yes - onions. Served with brown rice.

Carole, DH is eating less and lost 20 pounds without trying over the last year. Turning 80 seems to be the cause. He also eats more at breakfast than any other meal.

Wow, Maggie, you described my dh as well as yours!
My comment about dh's breakfast was misleading. He doesn't eat exactly the same breakfast every morning but continues to like breakfast more than other meals. He rarely skips having eggs. If he does, it's because he's short on time and has a piece of toast with butter and jam.
I tend to eat the same thing. A slice of my whole grain bread, toasted and spread with peanut butter and topped with a small amount of jam or a small amount of honey or slices of banana. Also half a carton of chocolate Premium Protein.
We had shrimp scampi with linguine last night. I also had a romaine salad with additions.
No clue on dinner tonight.

Okra from Guatemala appeared in the grocery store so I bought some. Certain fruits and veggies only show up once in a blue moon.
Dinner tonight was north Alabama chicken and okra stew on rice. That and the local bbq (no tomato but vinegar without the mayo in other white sauces) were very much regional favorites.

Last night's dinner was a beef and veggies stir fry with soba noodles. I made an "Asian" sauce. DH was complimentary and enjoyed the meal. I enjoyed it, too, though I'm not a big fan of "Asian."
My sauce has brown sugar, soy sauce, fish sauce, sesame oil, sambal oelek, rice vinegar, corn starch. If anyone has a recipe for sauce for stir fry that you really like, please share.
A big storm system is about to arrive. We have eye dr. appointments at 10:20, 10:40. We won't venture out if the weather is really bad with chance of hail.

Leftover casserole thing from last night.
My stirfry sauces are usually very simple…garlic, ginger, soy and/or oyster sauce, dry sherry (or authentic chinese wine..hard to get here).

My stirfry sauce is much like Wally's. The state liquor store next to one of the supermarkets always has rice wine.
Carole, I hope the weather allowed you to get to your appointments. We had snow followed by sleet today but there was nowhere I had to be.

Two nights ago, I made a chicken in a peanut (butter), ginger, bell peppers, scallions, soy sauce, tomato and chicken broth sauce.
Yesterday Sharon made a spaghetti sauce in the slow cooker, but we ended up eating at a pizza place after a hike. So, tonight is the spaghetti.
Our two dogs loved the walk. Frankie is nearly 15 years old and is running around as normal. Daisy is no more than 2 years old and she's been sleeping most of the day.
We've been getting eggs from one of the neighbors (the 2nd closest one…3/4 mile away). Many mornings we will toast a piece of sourdough bread, spread some avocado on the toast, add pickled red onions, some "everything bagel seasoning", and put a "cooked over easy" egg on top.
Our doc has decided that for some of his patients, the occult blood checks (four samples) do as well as the colonoscopy…so far all has been good. He wasn't worried about my grandfather having been diagnosed with "barely got started" colon cancer at age 91.
Dept of Health & Human Services is, again, having me come back east to do more equipment checks for two weeks, I'll be traveling there next Sunday and returning home on April 13.

We had His and Hers dinners last night. DH made a vegetable/lentil soup yesterday and had it for his lunch and dinner. I had crackers and cheese for lunch and salsa chicken for dinner. We both enjoyed our meals. Sadly, his jaw pain is back.
Tonight will be leftovers of choice before he goes to a woodworkers' guild meeting.
I'm seeing a lot of eggplant cooking on Facebook reels.
Our Viking river cruise is now less than a month away. Tremors of nervousness about packing and embarking on the trip.

Chicken chili and cornbread tonight. Not made by me but good.
Our Viking trip us 27 days away. I've been having a bout of sciatica so I'm worried. I'm trying to do the right things, and will see my GP in early April. Not my plan, but none of life's unexpected things are I suppose.
My DH could eat breakfast out every day but instead cooks breakfast in periodically and goes out for it here and there.
Special thanks for the cake recipes recently. I saved the chocolate and lemon ones to serve.

I'm back doing PT for Lymphadema again. One of those cancer gifts that never goes away. Dentist this afternoon. Electrolysis tomorrow to get rid those pesky hairs on my chin that I can't see. Blood work on Thursday.
April is going to be a nightmare. City, County, HOA, Houston Police Dept & Civic Club meetings at least twice every week
My pre-dinner cocktail was gin & tonic. I often share the cocktail hour with a friend during a "phone drink" - each in our own homes. Dinner was left over Shrimp LoMein. Then Tate's cookie bark with dark chocolate & sea salt - one of their newer concoctions that's pretty good. Then cocktail peanuts.

I had always thought that a river cruise would be a great way to travel abroad as I got older but now it's medically out of the question. I'm so glad we travelled when we had limited time off even though DH wondered whether the long flights were worth the short vacations.

Carole - my DS gets botox shots for his jaw pain. It works well for a while. I don't know exactly how often because he doesn't like to talk about it - but I'm guessing once a month or 6 weeks.
Today's meal was the leftover Ivar's Boston Clam Chowder served with Saltines and butter. Fasting tomorrow for semi-annual blood draw - the usual 13 tests. I never did find ANYONE who could do an ankle draw in this huge city famous for medical care, but I have found a phlebotomist who does exclusively cancer patients and is very careful with lymphadema. I'm not happy about it, but the endocrinologist won't give the Prolia shots for osteoporosis every 6 months with out blood tests first.
Special - are you still getting Prolia Shots? I seem to remember you were going to take a break & do something like Reclast??
