    @goldensrbest I am more like you with fixing basic meals, and the easier the better. Unfortunately that is not always the healthiest. I cook daily dinner for four. If it were just my DH and I things would be a lot easier. We are also hosting Easter dinner this year to accomodate my DD who has to go to work that night. My DH is smoking a brisket and I will do veggies and some sort of potatoes. My SIL will do the rest. It will take me days to just clean the house and hopefully it will stay clean enough for Sunday. I have the urge to bake but I know my limits.

    Cookie, that menu sounds delicious, it does take a bunch of energy to do large meals for sure. Your family must be glad. I do not cook for anyone but me but that is OK with me too. The peanut butter and chocolate dessert sounds delicious to, I am on my way over.

    I woke up earlier but that is OK, no need to worry about waking a bit earlier. Got a blanket from the couch that had chocolate melted on it washed, is in the dryer as we speak. Have a bunch of regular cloths to do and repairs to another lint filter that float in each washer. Also need a repair for the lint filter that did come with my newer washer in the machine. I have debated sewing the mesh part to the plastic part to make it stronger, may also have to re sew the bottom a bit to keep it from coming apart. Easy enough to do.

    Recycle day so will be putting out stuff today. May use my blue bins BUT will be putting a rather large label on them so it is easy for me to find. I will see, couple of large boxes I wish to get out as well so those will require multi trips. I have them broken down but they are leaned up against the wall so getting rid of them opens some precious inches by the door. I will take care of that throughout the day.

    Having a couple of egg quiches for breakfast, cooking them in the breville oven. Later may do up some eggs and rice, thinking of taking some premade rice, boiled in chicken broth first with butter added and some salt, let it cool. Later whip up some eggs and put some spinach in as well. Melt butter in the fry pan, add the rice and eggs, start out on high temp then turn off once ingredients are started frying up to avoid burning. As far as quiches, I will buy them. I do notice they went up 50 cents per pkg but that is not unexpected given the global inflation. Walmart is still the least expensive place to shop.

    Intolight, hoping your energy holds up until dinner time, glad your DH and SIL are helping with the food. One room at a time for the cheaning as well, don't do it all at once. Maybe get some done at the start of day to budget your energy.

    I am presently getting some breakfast ready. Preparing rice first, heating up in chicken broth instead of water and put some garlic spread in as well. When that is done, doing two to three eggs, will whip up first and then melt some butter in the pan to grease it, add rice and cheese as well, stir eggs and mix on high for a minute or two and turn off the burner and let it all come together without burning. May put some mexican rice seasoning with the sour cream seasoning and go from there. Rice needs finishing first and then the eggs can be done. I did have whipped up eggs, two of them, I did melt butter at the bottom of pan, boy, it really spit back at me but no huge deal. Rice, eggs and cheese and melted butter went through well, turned off heat and left it all there to cool off. It was very good.

    Nothing else on the agenda, bean playing an app that pays me for time spent on a game, not a fast earner but anything is good for me. I have another couple games I can play so that would be good. Wanting to earn a bit more on my sites so mostly I can save up money and see if possible to avoid using a savings account and live off disability.I will see if that can be done as that would be preferable. Do more stuff to boost my income a bit or get gift cards to reduce price of things. I am still eating through a lot of food, freezer does look more reasonable now though, working on the fridge by putting boxes in so stuff does not get shoved to the back of the fridge. Also comparing costco prices on instacart to what I get when out with DB in the store.

    DB just texted, wants to go out tonight, I of course said yes so will probably go tonight. Nice to have a couple of days out of the house since I go to the mall tomorrow on Paratransit. Some walking and possible groceries. Tonight will be a mall walk as well. Hopefully no hard breathing with the walking, they both get worried that I need to sit down but I usually refuse. It is exertion not shortness of breath. Have to watch myself to avoid unnecessary purchases.

    Irish, I am sorry you are dealing with both the colitis and anemia. I am sure that you know what what to eat when it comes to dealing with both. Pocket duty for you and DH dealing with his skin issues.

    Going out today yes, washing up some clothes I wore yesterday, short cycles since not dirty then into the dryer quickly.

    Not sure what I will have, perhaps eggs and spinach done in the frypan, I will have to see. Nothing too exciting. I am going to get frozen pasta because I quite like it and it is cheap. No canned foods, too heavy for me unless is just one can. I will be carrying bags this time as the big knapsack threw off my balance last time. I am walking around mall first, and then going to Walmart.

    Updated, did one of the medium size pot pies in the microwave, letting cool and will eat up, need to getting ready by or before 11 am for a 12pm pickup, got the 3 hours at the mall so I will see what I get, not too many bags and no knapsack either.

    I also have rice to finish up at home, bought some queso as well, hoping to finish that up, I will see. It is a good source of flavour for me.

    Update, went crazy on the Amazon, got more hills science diet cat food but the kitten food variety, it is pricey but Tigger does well on it. I got a lot of sour cream and onion containers, it is my favourite seasoning but not sure why I bought so many, put everything on a payment plan, no interest but still get my rewards from Amazon.

    In the meantime, short post from me, I do hope all have a good day and in pockets for all who need me.

    Irish - So nice to hear from you and very sorry that you're having so much to deal with right now. Sounds like a mix of good and bad going on for you right now. Post when you can; we get it, and it's just always nice to read what's going on with you. Sometimes it's just part of my morning routine with coffee, hearing from you.     Irish, I am sorry you were unwell but glad the big D is over, the chicken meal actually sounds really good. Can you flavour with plain beef or chicken broth as well? Just wondering. As far as enjoying my stories, just my quiet life. I enjoy talking here about things that are going on. DB and SIL, even though they mean well really don't listen as I try to explain stuff so I mostly listen to them or ask questions, no mention of my adventures in the kitchen and that is OK, we function well and they are part of the getting out of the house. You guys and even Paratransit drivers, passengers and hospital staff who know me let be talk about things.

    Today stores are closed for Good Friday so will see about walking if the weather holds up, forecasting rain and thunderstorms to occur so I will see. Laundry and chores are on the agenda. I may also wash more blankets. I may take a rest day as all of that walking took a lot out of me

    I was able to get what I want yesterday from Walmart and the dollar store at the mall which was a little more than I intended but that is fine. Got it home without killing my back. Heck, if I ever decide to take the normal bus, can get free trips and not have to book them, just requires a bit of a walk to and from the bus stop. Paratransit is very easy though. I will see come the season how I will do stuff.

    Got a John Williams inspired bit of music going, got music from my fave Star Wars, got back to the future and music from lord of the rings, nice to have that on right now, keep me off youtube which arrange what they think are my interest. Much like facebook, although I like what comes up in my feed, I have to seek out people I want to see but that is OK, the youtube has no ads and can find how to do many things or just watch silly videos to laugh but for now will be music. I do think my Ava likes this music.

    I am typing this post on a sticky note on my laptop since I keep losing it on the official BCO page, that is OK though, not a big deal since I know that I can use these sticky notes and copy them. I am also feeling a real yen to look at older computers as well, get them in shape to work or just take apart for parts. Get more storage for all the movies I either bought, downloaded or my own movies that I digitized knowing I would not have space for the physical copies. Even original Star Wars VHS tapes before the Special Editions, all have nostalgia for me for turning me into a star wars nerd.

    Planning to heat up some noodles first, probably fettucine, cool and put in the fridge to have as a side dish, making some rice and beans, not sure if black or green yet. My thought there is to chop up the beans in some cheese, put rice on the bottom and either fry up in a pan of of melted butter, stir on high heat and then turn off, let everything come together. Top with a spoonful of queso and sour cream. Should be good I think.

    I do hope everyone has a really good day and am in pockets for all, Happy Easter to all as well .

    OMG, I did not measure the rice out of a normal cup measure but used a plastic cup from a happy meal, measured the rice and water from that. No problem, heated up and allowed to steam after turned heat off. I chopped baby spinach into the bowl and went to get the rice thinking it was more the normal amount, it was a huge pile of rice, decided to go with the flow, fill up the large bowl with rice, spinach and shredded cheese. Not a dish that required extra heat, put a spoonful of garlic parm salad dressing and ranch dressing as well, put corn twists in to be the croutons and ate as much as I could. Probably get two more meals out of this but filled up at around 1/3 eaten. Will simply add as a side or throw in a pan with eggs and have butter melting and cook a bit on high and turn off the burner, I will decide later on. It really did taste good though.

    @mara51506 Tasty-sounding rice bowel!

    I did an in-person grocery shopping trip. I usually just order delivery but I wanted to select my own meat for Easter as my DH wants to smoke a brisket. (I know—non-traditional meal but that is us!) Wow was it expensive! But I did fine. Of course I used a scooter cart which helps as this is a huge store. Mara inspired me to do a rice bowel for lunch… It is slowly starting to snow which is not unusual for the Rocky Mountains at Easter. It is why we dye Easter eggs…so we can find them in the snow! lol

    Intolight, the brisket sounds really good. I am unsure what I will make for myself on easter Sunday.

    Tonight, may just bump up the spinach to my leftovers, heat an egg or two, chopin cheese with the egg and cook it all together in a heated frypan, melting butter on the butter. Just have to watch the butter from hitting me. Other option for the pan is butter melted but add some garlic to the pan, would make stuff taste really good. May also tear uI p an english muffin and chop if possible to add an extra dimension. I will post later what I decide but want to try it all in the pan. Just waiting to eat a little later, little early right now.

    @mara51506 Well you have been one busy lady! So glad to hear you had a good week out and about. Sometimes it just feels good getting out and enjoying normal tasks.

    Cookie, You are right, this week was busy for sure. Today I did not go out but I did pull out my older laptops and repaired one of them and it is working well. Will continue to pull out the other one to review what the issue is periodically, will use the repaired one for now as it has lots of memory unlike my newest one. I will see.

    Well, late night last night, my own fault, was snacking late and thus went to bed later. Short but decent sleep though so that is a positive. Typing this from the repaired laptop. Still want to save another one too. If I cannot save it, will take the hard drive

    Massive load of cleaning cloths, was just washing regular clothes and blankets but the cloths will require two machines I think, going to check now after posting.

    I will not be going near a mall or grocery store as it is the busiest shopping day since stores closed yesterday and will be closed Sunday too. This is the busiest day to go shopping. Next week looks decent so I will consider trips for a mall walkabout then. Just have to be careful not to buy a lot of stuff. May also book Paratransit to go to other malls in the city later. I will see about it.

    Got leftovers to have from yesterdays giant rice and spinach, I will likely fry up a scoop of that plus a couple of eggs and cheese with the addition of more spinach this morning. I really do like melting the butter in the pan on high and dumping stuff for a quick heat. Butter makes everything taste better or so they say. I have not even made one of the frozen meals up but that is OK, plenty of time for that later.

    Uneventful post today but that is OK, I do hope everyone is having a good day, good Easter weekend and gatherings with family or just a good dinner as well. My thoughts for my own dinner is to take a can of turkey, hold on to the juice that comes out while taking it out of the can. I still have boxed stuffing so take the stuffing, use some chicken broth to make it and add the turkey. Use spinach and other greens as a side and a buttered half of an english muffin to portray the bun. Might be good. I am in pockets for anyone who needs me as well.

    Mara - I had no idea you were so tech savvy. I wouldn't dare fiddle around with old laptops! I be so scared of something bad happening. The last one I had, I turned into the people at Best Buy when I got a new "all in one". It had been having problems and sure enough when they looked at it, they told me it was a fire hazard, and the tech who opened it up got hit in the face with some sort of charge (he was fine though). I'm so glad I never tried to do anything with it myself. More power to you if you have the knowledge and skill for that sort of thing.

    Threetree, I have always been stubborn and wanted to fix things vs buy new ones. The one I fixed yesterday is just fine now. I have two older ones I want to work with as well.

    I imagine I will be the only one posting as it is easter sunday. People may have gone to church or done easter egg hunts or all the easter fun. I can also imagine there are some yummy meals being put together and I hope to hear all about them. Busy day I can imagine.

    I am not doing a gigantic meal but will do the usual laundry, tv is playing cooking videos which I get paid for the ads. Got a couple of couch fleece throws to wash. I also plan to keep on top of another laptop which will not work as the cat unplugged it while getting ready to reset the computer. I will have to take another copy of windows to reboot with and see if that will work. If not, I will figure something else out. I just really enjoy the tinkering. Got an old gaming laptop that no longer powers on, may take that apart and keep it for parts. Got a laptop cooler as use the laptops on my legs and no need to either burn legs or cause overheating in the laptops.

    I am debating on getting a chicken dinner from a chicken joint called Swiss Chalet, they usually have good stuff that I enjoy. I am unsure yet, I could also find my canned stuff and make my own turkey and stuffing dish. Depends how much work I want to do. I will see how I feel later. For now, not sure what I want to have. I have a lot of eggs to go through, just not sure how I want to make them. I can microwave first, add spinach and such, let cool and chop up. Debating a bit of queso and sour cream. May also have rice in there. That could be good. Also need to eat up the left overs to finish them off. I could possibly take the leftovers and an egg chopped with spinach and use my queso and sour cream to dress it up a bit. Going to make it now.

    Enough from me, for those celebrating while with family or on their own or even if not celebrating, I want all to have a good day, good dinners for you as well. In pockets for all who may need me too.

    Adding to previous post, forgot how good the queso is. I took leftovers of the egg, spinach and rice meal, crunched a few tortilla chips mixed them in and added some queso, heated 45 seconds and added some salt, mixed together in a small bowl. OMG it was so very good. Will need to remember queso as part of seasoning as needed. Spent my time thinking mmm over and over.

    @mara51506 Your meals sound yummy. I will gladly post for you today. My SIL arrives a couple hours before dinner so she can help me fix it. We have a brisket in the smoker. It takes 6-8 hours so we put it in this morning early. It will need to rest for an hour before we can cut it. We will eat whenever it is ready.

    It is a beautiful day here after a cold snow the last two days, but it is supposed to reach 61°. It looks like we are done with the cold according to the future forecast but you never know here (it was 22 last night.) My DGD is old enough to help me a bit here and there so I should be fine although I feel extra weak today…grrr… I usually attend Easter services but there is still a high concentration of illnesses (news from the DD who works in a hospital) and with larger crowds and the fact I am struggling a bit means I will stay home.

    I wish everyone a blessed Easter.

    On this easter day, I am alone, and drinking delicious tea, working on a new drawing, and feeling the hope of rebirth and renewal in my heart. Will water the flowers in the garden, and say hello to the bees. Later going to get blood draw, as MBC does not care about holidays!
