lunch was Cheerios and a banana. Supper was Teriyaki Stir Fry Udon with mixed veggie topping.

If I had fresh peaches, I would want them just served with cream - not mixed up with anything else.

Only 97 today…. I looked at coming months and it appears the next time the daytime temps will go below 90 is mid-September. I was reluctant to calculate how many of those days are approaching 100. Whatever is in my garden now is likely what will be there until it cools off. I can't even force myself to go finish weeding the rose beds, let alone plant things. On the other hand, the plumarias LOVE it. Both gold & pink blooming profusely.

Dinner tonight was steak, sautéed potatoes and acorn squash.

Last night was a stir fry with pork strips, chard and baby bok choy. I bought the chard and bok choy at the farmers market. I also bought golden beets and cucumbers.

Tonight's dinner may be a pizza if the weather allows using the outdoor grill.

Yesterday afternoon the temperature got into the low 80's, hot enough to need the a/c until bedtime. Summer weather has probably arrived. This morning it's 69 degrees.

Minus, I once drove across Georgia during peach harvest season and bought a peach at nearly every fruit stand on the way. I never made up my mind which was best since they all tasted wonderful.

Carole, Your farmer's market has a better selection of vegetables than mine.

The weather here is so variable that no extremes last too long.

Dinner tonight was eye of round steaks cooked like pot roast, zucchini and mashed potatoes.

Today's meal was leftover broccoli salad from Chicken Salad Chick. Served with 4 crackers. Followed by two bourbon & water cocktails. I have another banana to eat before it goes bad, but I expect tomorrows meal will be a large salad. No tomatoes on hand, but I do have fresh mushrooms and can open a can of black olives. And I have a bag of fresh spinach so I can add some of that. I really want to have marinara & meatballs & spaghetti, but since the meatballs are frozen - that dinner can wait another day.

Yesterday dh and I biked 12.5 miles on the Heartland Trail, from Park Rapids to Dorset and then back to Park Rapids. At my insistence, we ate a late lunch (2 pm) in town. I had the $7 special at Dairy Queen. Cheeseburger, fries, drink, and sundae. I had a hot fudge sundae. Everything tasted wonderful. So no dinner was required or desired.

Dinner last night was "nothing". I installed the system to power the house from a generator…all done… and because I had shut off the power to the house…no cooking…so we snacked and then weren't hungry for dinner.

12-1/2 miles is a nice distance for a bike ride.

The "real" farmers' markets here are just starting up. Real meaning selling stuff grown nearby versus someone selling stuff that was grown in another hemisphere.

I can't wait until the peaches are "juicy, sweet, tart and…well just perfect". :-) The plums and apricots are perfect now, but I'll need to wait about 6 weeks for the corn and Hatch Chilis to be available at the farmers' markets.

So far it's been around 95F for high temperatures and 55-60F for low temperatures. We open the windows at night and the house cools to 65F so that the A/C, set for 77F, doesn't come on until around 4pm.

Eric - I'm with you. I can't wait for the Hatch Chilis and the Olathe corn from Colorado. We didn't get any of the corn here last year, so fingers crossed.

Carole - I agree. That's a good distance for a bike ride - especially since I think this was the maiden voyage for your DH since his surgery.

Supper was Rao's marinara with spaghetti, sauteed mushrooms and Combo Beef/Pork meatballs. I was eating leftovers from the freezer, so it was only a half serving. But I'm so full I can hardly breathe.

Carole, when I first read your post I thought it said you HIKED 12.5 miles and I was in awe of you.

DH and I went on a very tiresome window shopping excursion for shower doors to upgrade one of our bathrooms to a walk in shower. Too much standing today on too many concrete floors has taken a toll on my back, which to answer your while ago question minus, continues to plague me. Ŵe seem to be at the place where my best options are pain killers or surgery, neither of which appeal. We had a late lunch at McAlisters so dinner will be minimal. DH has opted for an omelet while I think I'll have some stir fry frozen veggies (Costco) with frozen fried rice (TJs).

My very sweet neighbor brought over some chocolate covered strawberries she made so that will be dessert.

Local corn hit the farmers market today. I'm excited!

Nance: Are those the Costco frozen Norrmandy veggies? I've been wanting to try them but the bag is SOOOO big I need to clean out my freezer first. Sorry to hear your back is still bothersome. I can't remember - did you try PT?? My last PT for lymphadema popped something in both shoulders. I keep hoping they will mend themselves but it's been 3 months.

Minus they are the stir fry medley, my favorite. It includes all my favorite vegetables.

Yes I've tried pt twice. It helped the sciatica issue but not the ongoing issues with the compressed nerve.

Carole, The Heartland Trail sounds like a scenic route. The bike ride probably used up enough energy so that you could really enjoy the Dairy Queen meal.

Eric, It must feel good to be free from worry about power outages now.

Nance, I’m sorry that your back is still a problem. It’s tough not to have a decent treatment option. I always worry about having surgery since I figure I’ll be one of the small group where things don’t improve or get worse.

Dinner tonight was meatballs and sautéed green peppers in Rao’s on spaghetti. Thanks for the idea, Minus.

The Heartland Trail is a rails-to-trails paved trail. It meets up with the Paul Bunyan Trail. The total distance is at least a 100 miles. We did the whole network in stages. It's nice because there are small towns and villages along the way and a couple of larger towns at each end of the Bunyan trail. DH's knees caused us to park the bikes for a few years.

We went to Clancy's last night and dh had his meatloaf special. I opted for the dark meat broasted chicken meal, which comes with fries and slaw.

I browsed in Aldi's yesterday and bought a few items. I was looking for eggplant after finding none at Walmart. Aldi's didn't have any either. Big mystery. Where are the eggplants?

Tonight will probably be sauteed greens (beet tops, chard, bok choy) with Polish sausage. Hot pepper vinegar for sprinkling. Also golden beets.

I made a grilled ham and cheese last night. Tonight will be scrambled eggs with leftover cabbage and potatoes (from the chicken meal). Tuna steaks will be thawed tomorrow for the next day.

Safeway is having a sale on rib eye so we may get some and compare choice to prime and see if we can tell the difference, LOL. Trying to figure out what to do for our anniversary (32 years…yikes, I'm old) on Bastille Day.

Our "heat wave" never materialized yesterday…high of 71 and today, nature's a/c is cooling us down.

Down to 3 chicks from the quail and hopeful that remains.

Carole - wow 12 miles on a bike ! I’m so impressed, for a city gal like myself that sounds like quite a trip. Sounds lovely.
The CSA has been a godsend with all the fresh lettuce and mixed greens and broccoli and zucchini. We also got fresh beets and fennel, so I’ve juiced them with carrots and ginger, quite yummy. Also got some orange, saffron , cardamom marmalade . A little too sweet for my DH, but I’m in heaven after one bite.
It’s been too hot here to cook, so I’ve been juicing and researching salads. Loved this one / blog https://jamieschler.substack.com/p/salade-nicoise?utm_source=post-banner&utm_medium=web&utm_campaign=posts-open-in-app&triedRedirect=true

Carole, It’s great that your DH’s knee surgery has allowed you to get back on your bikes. I haven’t been able to get eggplant, either. It seems the rain in GA where they should be in season now has interfered with the crop.

Wally, With a Bastille Day anniversary you should have something French, even if it is the wine or dessert.

    Rhonda, The marmalade sounds delicious.

Dinner tonight was corned beef and cabbage, not particularly seasonal but it had to be cooked.

    That salad looks delicious.

Last night we had the golden beets I cooked during the morning. Peeled, sliced and doused with white wine vinegar. They are so sweet and tasty. I also sauteed the rest of the chard and some of the beet greens with garlic and added polish sausage sliced into coins. In a separate skillet, I cooked corn off the cob with butter. I should have cooked more greens but there was enough to eat. The jar of hot peppers in vinegar provided hot vinegar for the greens. At home all the supermarkets stock small jars of tiny peppers in vinegar.

A potluck gathering is planned for Friday afternoon but it may be a very wet occasion, judging from the weather forecast. I volunteered to buy buns for sloppy joes (called "barbecues" here) and chips. It's a wait-and-see situation. If the forecast holds true, the farmers market on Saturday may be rained out, too. I always hope for the weather to make its statement so it's clear that cancelling a plan is best.

    lol Eric - excellent!

Tonight is chili dogs with cole slaw. Chili retrieved and thawed from the freezer.

Carole - we always have a bottle of Trappey's in the fridge.

Carole, The regional variations in food names are interesting. I hadn't heard sloppy joes called barbecues before but I have heard dynamites (local), mince and roll (UK), Boogaloo sandwiches, Spanish hamburgers, sloppy janes and spoonburgers. There are probably many more monikers.

Eric, That video was an entertaining find.

Nance, I use the vinegar from pickled banana peppers which isn't quite so hot.

Dinner tonight was corned beef hash. It was quick, easy and didn’t heat up the kitchen.

DH made fettuccine Alfredo with shrimp and I made a salad, both were great. Dessert was 1/3 of a large piece of cake I picked up from the store earlier today and have hidden in the veggie drawer (DH is trying to go low carb most of the time). No idea about tomorrow but hopefully he cooks again as we’ve got a couple of friends (electrician and plumber) helping him finish our cabin and I never seem to cook enough for several men. Plus, I’m enjoying the nights off.

We had house guests spend last night here. They are on their way to a tag collectors' convention. He collects dog license tags and auto license tags.

Last night's dinner was chili, corn on the cob, sourdough bread and fruit salad. I love this time of year with all the fresh fruit at perfect ripeness. :-)

Today is a sourdough bread baking day. The sourdough starter seems to be very slow and I'm sitting here hoping that it is okay.

The video was entertaining, Eric, and there is some truth in it.

Last night was my night to open the jar of Raos. The meat was bulk Italian sausage. I added some fresh oregano and thyme and the herbs really added nice flavor. The sides were sliced cucumbers and more of the golden beets. Very good meal.

Today I'm thawing a large ribeye.

Carole, DH is addicted to rib eye so that is what I'll be making tomorrow. Last time, they were so thick, I did the reverse sear. I may try and do the flip back and forth (america's test kitchen technique) on these as they are about an inch thick.

I'm using up the tuna steaks to make fish tacos, slaw and beans for tonight.

Illimae, The vegetable drawer is a good hiding place for cake.

Eric, I hope your sourdough starter woke up.

Dinner tonight was a beef and veggie stir fry in oyster sauce over rice.

Tuesday my ex-DH took me out to lunch for a Patty Melt & fries. Of course I could never eat more than half. So the other half was today's meal. Tomorrow will be a big salad, even if I don't get to the store for tomatoes.

  • carolehalston
    carolehalston Posts: 8,983

DH grilled the big ribeye to medium rare. We enjoyed it with a side of Bob's mashed potatoes.

It's supposed to be very hot again today. We won't open up the camper and will keep it comfortable with the a/c. We're in "wait and see" mode for what the weather will be like at 6 pm when the potluck is set to take place. When it gets this hot, some storms are inevitable. It would be helpful if stormy weather held off until dark, which isn't until about 10 pm. Then the corn hole competition could take place.

The farmers market tomorrow is "wait and see," too. The forecast predicts rain all day. Mother Nature stating an opinion on the BBB?

The buns I bought for the sloppy joes/barbecues are store baked so they aren't sliced. I will probably slice them later today instead of just providing a bread knife.

I went to the grocery store for less than 10 things. It was an emergency for tonic water & I had a coupon for a free Dole Salad Kit. But reading Carole's post I can't believe I forgot Bob Evans mashed potatoes. Sigh. My impulse buy was a 6" Raspberry Swirl Cheesecake. It was on sale for $3.31 because the best use by date is 7/5. No worries, I can eat it all before the weekend is over.

    We NEED butter.

The bread turned out well, so I guess the starter survived. It did change though…the bread is more sour than before.

    Makes me smile…7/5 best by..no worries. :-)

Carole, I hope the rain held off so you could enjoy the potluck.

Eric, I’m glad the bread turned out well.

Minus, You can just have cheesecake for dinner for the next couple of days.

The weather today was wonderful, low 70’s and low humidity. Unfortunately the nice evening is perfect for fireworks. My county is the largest supplier of fireworks in the northeast so I guess people are supporting the local economy.

Dinner tonight was oven baked barbecue chicken, potato salad and corn on the cob.
