    oh my gosh Maggie love the idea of cheesecake for dinner. DH bought peach pie at the market and have been having a bite every day with a touch of vanilla ice cream. So glad I’ve expanded my diet to a bit of dairy and sugar lol 😆

    Carole you inspired me a few posts ago to make kale sautéed in garlic… yummy. Fresh cucumbers and tomatoes from the CSa and kale and chard.. have been in vegie heaven.

    Eric - years ago I had a whole wheat sourdough started I killed somehow… though reading your post I’m dreaming of bread making ! Maybe after the summer heat passes here a bit..

    Rhonda, Bread in the oven makes the kitchen smell better than anything. It’s something to look forward to in the fall when the weather cools down.

    The fireworks continue tonight. It’s probably better to set them off than to store them.

    There have been no fireworks around here. The entire county is under a fire ban and that includes fireworks. Everyone seems to be remembering the devastating wild fires.

    Leftovers last night. DH wanted ribeye again and I did the 2 minute flip technique. Worked well

    I heard fireworks on the 4th and again last night. We are in drought and there is a fireworks ban, but seems some cannot be bothered.

    The 4th of July happened here in the campground. We had the potluck before the rain poured down and the wind blew. The next day those who were interested participated in a corn holes contest. And now, always a good part of a holiday in MN, the weekenders went home to resume their lives and we full-timers are here with a peaceful campground. This summer there are four retired couples living in campers. The owners have a beautiful house and their grown daughter lives in her own nice quarters in a building that was supposed to be available to the occupants of the campground but became a guest cottage for the owners.

    Dinner last night was roasted chicken thighs and fresh green beans from the farmers market cooked with tiny potatoes.

    My two sisters both have husbands in the hospital, one with heart issues and the other with blood clots. I'm very concerned for the four of them.

    With the passage of the BBB and the tragic flash flooding in Texas and family illnesses, this hasn't been the most joyful 4th holiday.

    last night, scrambled guinea hen eggs (from DH's dentist…the last of those eggs) with the leftover air fried potatoes and a can of Italian flat green beans.

    Tonight, DH has requested tuna noodle casserole. I don't believe I've ever made that so am googling up some recipes and will make a hodge podge of it.

    I hope anyone in Texas, in that area, is doing OK. Unimaginable. I agree with you Carole…I wonder this as well. Hope your family improves.

    I, too, hope the folks in the flood area are okay. For about 10 years, I've been following the blog of someone that lives in the flood zone and there have been no posts nor replies to the myriad "are you okay?" comments….fingers crossed.

    So far, there have been no indications of any potential deployment.

    Maggie. The fig sauce???? That sounds interesting.

    We get duck eggs and chicken eggs from the next door neighbor…about 3/4 mile down the road. $4 per dozen.

    It's been "all quiet on the western front" with regard to fireworks. The fire danger is currently extreme and anyone shooting off fireworks would likely get punished by Smokey the Bear wielding a pulaski (an axe-adze combination).

    Off to the outside to check on everything. It's summer monsoon season and the storms are starting early today.

    Leftovers tonight, probably a chicken quesadilla for me.

    I’m a few hours west of kerrville but high on top of a mountain. Our streams are full and flowing down below but I can drive through in my 4runner. The loss of life is definitely sad. Texas is so prone to flooding for various reasons, you almost get used to it, still enough water to carry away structures is just crazy.

    Fig Sauce

    2TBSP olive oil / chopped large shallot / 2 cups beef, chicken, veggie stock / 1/4 cup balsamic vinegar / 9 dried figs diced / 1TBSP cornstarch / 1 TBSP water.

    Add olive oil to pan and sauté shallot until soft about 3 min. / Add broth and figs. Bring to a boil and simmer 7 min until reduced by half / mix cornstarch with water well and add to sauce / Simmer 2 to 3 minutes

    If cooking pork, chicken or beef in the skillet add after the oil, cook and remove to make the sauce. Add back in when simmering at the end. I bake the salmon and cover it with sauce about 10 min before it is done.

    Illimae, I’m glad you are on a mountain top. Flash floods are much more sudden and forceful than most people imagine.

    Carole, I hope your sisters’ husbands are doing OK. I think the BBB 4th of July “deadline” was put in place so nobody had time to read it and discover all the details.

    Wally, Tuna noodle casserole is one of my favorite comfort foods.

    Yay! No fireworks in Boston, just construction.

    Dinner tonight was steak tips in bordelaise sauce on mashed potatoes for DH and chicken tips in lime sauce on rice for me. For dessert we shared a dish of crème brûlée which was to die for. The pub has over 40 beers on tap which neither of us can drink now.

    I grew up where flash floods were on the "watch for" list. Their speed and also how quickly the wash would dry out was amazing.

    Still no word from the blogger friend. They're a physical therapist that makes the rounds of the nursing homes in the area, so I'm hoping, as 'mae suggested, they are busy.

    They are okay, undamaged but without power…the benefits of living on a hill. The neighbors are helping each other, which is a good thing.

    Tuna Noodle - my Mother made this regularly but she made it with crispy, crunchy can of La Choy Chow Mein noodles. It's definitely a different dish with the crunchy variety instead of soft noodles. It was a weekly staple when I was first married but I don't believe I've made it since my son graduated from High school. Hard to believe he was 54 this year.

    Eric - glad your friends are OK.

    Carole - thinking of you sisters & their husbands.

    Today's meal was cold boiled shrimp. And the last of the raspberry swirl cheese cake.

    Maggie, I'm impressed that you make the fig sauce. I had assumed it was from a jar.

    We did not go to Clancy's last night for Meatloaf Monday. We had the leftover pasta dish and a big tossed salad.

    I found nice eggplants at Walmart yesterday so will be making eggplant lasagna.

    I hope all the media attention on the Texas flooding will result in donations.

    Hi all! I have been absent again…and honestly, lost track of how long I had been silent, and was shocked to see how long it was! I got a message from someone asking me about my Her2+ vaccine trial so I logged on to reply. We had two trips out of town to the east coast of FL - one weekend trip with SILS from NC, and the other was a week at the beach (Amelia Island) with old friends. Mixed in there was a medical emergency with DD, she was returning home with her cat from the vet, when she reached into the back seat of the Tesla (low slung) to get the cat carrier and suddenly the world spun and she barely made it into the house before starting to vomit. She could only lay down or everything was spinning, and if she raised her head she threw up. Classic vertigo. These are the times I am thankful to have a doctor BIL and multiple nurse SILS! She got some Antivert and an expedited visit to the ENT who did her sinus surgery in 2023. He diagnosed labyrinthitis and gave her heavy steroids and an antiviral. This worked to stop the nausea and vomiting, and controlled the dizziness to the point where she could sit up and ambulate carefully after the first scary 48 hours. She is now done with the steroids, still on the antivirals for an extended period. The ENT said he wants to make sure this is gone because if it rebounds it is harder to control. Sheesh. So, I have been busy! On a positive note, i just rejoined the gym and now that DH is retired we signed him up too.

    As far as food is concerned, we have had a couple of gatherings - two wine nights with DD, beau, and friend Olivia. The first one we did some charcuterie boards - fun, and tasted wines from our cousin's winery in PA. DH, DD and Olivia went to the winery when they were up there in January - they ordered their faves from the tasting. We just did one on Sunday with assorted snacks and lounging in the pool. I happened to be at Trader Joe's and saw a wine named, Love, Olivia so I had to get it, lol! For July 4th we did a hot dog and French fry bar with many toppings and kinds of dogs, and sweet potato fries, seasoned regular fries, garlic and herb tater tots with parm, and waffle fries. It was fun but we all ate too much. Who is surprised? Haha! This was delayed from Father's Day which was in the thick of DD's vertigo so we had to cancel. I also found a Barefoot wine called peach fruitscato, super light and refreshing, and also super cheap! Great for drinking while standing in the pool. I was curious about the grapefruit wine that rlschalleer posted - will have to look for it.

    minus - DH's fave bread is the artisano one you mentioned for the French toast. It is indeed soft and the suggestion to let it go a bit stale is a good one! I'm not supposed to even be eating bread on this low fodmap thing but it is so good…

    carole - relieved that your BILS are both OK, and glad you had fun on your trip and got to MN ok.

    auntie - my BFF had surgery on her sacrum/lumbar for pinched nerves (being pinched by a cyst in the facet joint) and her recovery was not bad and the surgery worked. She has a dog's breakfast of other issues - stenosis, bulging disks, arthritis, etc., but she got relief from the surgery. The presidua pain from the other issues is now manageable.

    eric - yay for DD and beau! So exciting! Seems like yesterday she was in high school! DS did a courthouse wedding to get my DIL on his insurance after she was laid off and I thought we would do a wedding later - however, that never happened. I think they just didn't want the hassle or cause the expense and they feel just as married. I hope your DD doesn't do that - I feel robbed, lol! Is your neighbor ok after the scary shooting incident? Also, interesting about the tag collector convention - I have all the tags for those pets on the other side of the rainbow bridge on a thing that hangs from my rearview mirror.

    I love Olive Garden salad, sadly I can't eat it now that I have this blasted lettuce and brassica issue. I do have a recipe for a copycat of the retail dressing if anyone wants it.

    maggie - hope your mouth is doing better! I read about the raspberry and chocolate ice cream you mentioned - I want some. Right now.

    wally - yay for DH and his numbers! I am also a potato fan - love them in any form. Ate them all through chemo even they say don't eat your favorite foods as to not develop an associated aversion - not a problem, I would eat potatoes any day, all day. DS taught me about the reverse sar, I feel like it makes such a tender steak even though it is a bit time consuming. The dentist visit in a power outage reminded me of having chemo after a tornado here, the IV pumps had battery so they proceeded with all of the morning schedule but we had no power. The room was all windows so there was enough natural light except for in the bathrooms - had to go in with a flashlight. It was like chemo while camping… it is funny now, then maybe not as much.

    illimae - yay for a good scan! Loved the cheddar bay muffin pot pie - great idea. Which I will steal.

    I loved the assorted quail pics and convo! So cute!

    The peach convo reminded me that my friend that we went to the beach with asked me if I ever ordered from the "peach truck" and I was like, what? Apparently there is a giant peach filled semi that rolls into town and you can order peaches from it! Why did I not know this? DH likes peaches but they have to be peeled so that they are not "fuzzy" so I just give him nectarines. He had never had one growing up. He led a sheltered life…

    Special - so nice to "see" you! As usual, your life sounds very full. Your DD's episode sounds dreadful and I certainly hope she's past the worst of it.

    It's prime peach season here and the local orchard's crop has hit the stores. The first one I ate was a disappointment, mushy and bland. But the second one was everything a peach should be, eaten over the sink with juice running down my arm. I love summer.

    Good news about your family Carole and your friends Eric.

    My county is the closest to the metro area where fireworks are legal to sell. It's big business around here. Fortunately my community has pretty strict regulations regarding theIr use. It was pretty loud for three days between 9 pm and midnight but shut off pretty completely after that. I feel for pets and veterans.

    Tonight is baked raviolis in Raos and a wedge salad with homemade thousand island dressing.

    Yum on the juicy peach. I sometimes gamble on buying peaches in the supermarket and let them sit out and ripen. About a 50/50 chance that they turn out edible.

    Last night's dinner was a cheddar brat and Bob's mac and cheese. We don't have much success with cooking brats on the grill so I used my skillet technique. Browned them in a small skillet and then gently simmered in chicken broth. We didn't have beer or I would have used beer instead of chicken broth. Doubtful that it makes any difference. The brats were juicy and tasty.

    The news has more flooding this morning. Another place where we've stayed in rv parks. Ruidoso, NM, where water is at a premium. I notice some courageous meteorologists are actually mentioning climate change as a factor in the weather events.

    DH will have the last of the tuna noodle casserole and I will have raw scallops in a "poke bowl" type meal.

    I baked off a frozen cherry pie for DH. I hope it is good. It is locally made and $$$$.

    Next week will see a huge warmup here.

    I am definitely NOT a morning person. But I actually got up early & started working in the yard this morning at 7am digging weeds out of the beds & pruning since we had a "cold spell" last night (LOL) - down to 75 degrees. I persevered for 4 hours(!!!) but had to quit when it got up to 88 degrees & the beds were in full sun. I finished 80% of the weeding - two full 30 gallon trash bags in addition to my huge garbage can almost full. I saved just enough room for one kitchen garbage bag.

    Wally - oh yum. Cherry Pie was my Dad's favorite. Carol - I agree about the peaches from the grocery store. Usually meh… Maggie - sorry you were stuck in the hospital for another night.

    The book thread isn't active so I'll share here. Reading classics I haven't read in 30-60 years. Really enjoyed 20,000 Leagues Under the Sea. Couldn't make it through Moby DIck again (my 2nd try as a 'senior'). Now reading Kate Chopin The Awakening. I like Freida Mac Fadden's books. The first one I read was The Housemaid. "The Housemaid: An absolutely addictive psychological thriller with a jaw-dropping twist"

    My dinner will be a green salad with cukes & tomatoes. Hmm - I think I'll open a can of black olives and add some. I cut up some cucumbers to marinate in tarragon vinegar, dill & sour cream for tomorrow.

    Minus, You certainly took advantage of the “cooler” temps. Black olives are a great addition to a salad. I’ve never made it through Moby Dick, either, and would only finish it if I had to for a class. I’m currently reading Shelby Van Pelt’s Remarkably Bright Creatures.

    Carole, Peaches are one fruit that doesn’t ship well. To get good ones you need to travel to where they are grown. I miss the peach ice cream everyone would make in Alabama.

    Maggie, I admire the variety in your menu rotation.

    Our dinner last night came together quickly and was tasty. Also high calorie. Another skillet dish with ground beef, lovely mushrooms, cooked penne pasta out of the freezer, and alfredo sauce.

    My weight is up two pounds despite trips to the gym and 2-mile walks on non-gym days. The emphasis on quick and easy meals isn't as weight friendly as the way we eat at home. My excuse is cooking in a camper kitchen is more challenging than cooking in my home kitchen.

    Tomorrow is our 56th wedding anniversary. We have plans for a restaurant meal at a nice restaurant tonight but the weather may intervene. We're in the green zone with possible severe weather during the afternoon and evening. If it seems wise, we may end up cancelling the dinner out. The restaurant is a 45-minute drive.
