So...whats for dinner?

Carole and Wally, I hope your DH's jaw issues go quiet.
Wally, I hope your get to go fishing. Catching something to eat would be a bonus.
Nance, Those blue plate specials never lose their appeal.
Reader, I have never bought canned chicken even though I use canned tuna all the time. I'll have to try it.
Speciai, His and hers salads keep everyone happy and are not much more work than making two identical salads.
I don't make chicken divan as often as I'd like to since DH is not a fan of broccoli. My son loves it and since it was his last dinner here DH just picked out what he didn't want to eat.
Dinner tonight was homemade pizza using refrigerated dough.

Hope dh is up to fishing, Wally.
My dh always ordered the blue plate special when we were traveling with our 5th wheel and stopped for lunch at some restaurant with ample parking space.
My meatloaf turned out really good last night. I cooked it for 40 minutes in the covered grill at 350 degrees. Then spread on a home-made sauce and cooked about 20 minutes longer. The sauce was ketchup, brown sugar, white vinegar, onion and garlic powder. A lot of leftovers.
The side was yellow "snap" beans cooked with new potatoes, plus the leftover green "snap" beans and new potatoes added to the pot to warm up. There's nothing better than fresh snap beans. I didn't snap them but left them whole.
Tonight we're invited over to Mary's deck for dinner. She's making a turkey dinner. She has a house stove with oven on her large deck, also a refrigerator.
Nance, I can buy the parm reg at Sam's Club but they stopped stocking the Romano a couple of years ago. I don't know why. They have the pre shredded but I like to fresh grate my Italian cheese. I'll have to start paying attention to the Costco buys mentioned on this thread.

Carole, are snap beans the same as string/green or wax beans? YUM on meatloaf! And I had to google chicken Divan….on my list to make.
I've bought the Wild Planet canned chicken because there's less ingredients in it. It is what I use to make my BBQ "pizza" socca crust (unless I have leftover chicken —rarely).
Carole, how do you grate/shred your cheese. Costco sells "shaved" parm, which I occasionally buy. Shredding is a royal pain. I think I have a huge wedge of romano that I'll have to toss…sigh.
I will poach an egg and add it to the last of the yakisoba spam noodles.

Wally, sorry to create "bean confusion." Yes, snap beans are green beans or yellow beans or pole beans. The latter tend to be bigger. My mother always snapped beans into smaller lengths, the better to overcook them. Green beans were referred to as snap beans. I tend to remove the two ends and leave the beans whole if they're young and tender.
At home I use an old-fashioned box grater to grate cheese onto a generous piece of wax paper on the counter. If there is extra, I put it in a Ziploc bag or a container for later use. I'm so used to grating my cheese that it doesn't seem like a PITA. I wish I lived near enough to take that huge wedge of romano off your hands! LOL. It's probably like the one I just bought. Romano is my favorite Italian cheese. It has a salty bite.
My cheese grater here in the camper is like one side of the box grater with a handle.
I bought a box of peaches at Costco. I just ate one that had ripened slightly and it was delicious and free stone.

Carole, Leftover meatloaf is good for another meal or sandwiches. I'll bet yours is better than Clancy's. I know yellow snap beans as wax beans. They are not so easy to find nowadays.
I don't mind grating cheese but hate cleaning the grater.
Dinner tonight was leftover pizza.

Last nightbwas pizza.
I use my food processor for grating things

At home I put the box grater in the dishwasher. Here I/we have to wash all the dishes. I use a brush with a handle that is part of the dishwashing supplies. Italian cheese is hard and doesn't stick to the grater.
The turkey dinner on Mary's deck last night was good, especially the dressing/stuffing and the mashed potatoes. The turkey was just ok. I'm not a big fan of turkey. I like a roasted chicken better.
Afterwards we played a couple of card games, one with dice. I won the pot with dimes twice.

tonight is kielbasa, broccoli and a side for dinner

Carole, I hauled out my Romano cheese and shredded some into our lunch salads. YUMMMM!!!! I do like sheep's milk cheese more than cow, but of course that depends on how it is made, too.
We are heading out to fish in a bit so dinner is either salmon or a frozen pizza, LOL.
Update: gorgeous out there…55, gray skies…perfect fishing weather except for no fish, LOL. Still, priceless to see my DH out there. 😍

I know I used to have a box grater, but I have no idea what happened to it. Not where I thought, with my old hand crank 3 cup flour sifter. The only grater I use now is like Carole described - 1 side of a box grater with a handle. My favorite bulk cheese from Costco is Jarlsberg. I cut off small hunks for my appetizers.
Oh - meatloaf sandwiches!!! But with the temperatures flirting with 100 here, I don't want to turn on the oven.
Wally - be still my heart…. fresh salmon. Hope the catch was good. But even if there was nothing biting, fishing still one of my favorite ways to relax.
I'm still trying to use up whatever is oh hand. I'd like to empty the garage freezer before we have a hurricane or power outage. Tonight was a bag of Dole Sunflower Crunch salad with whole wheat Club crackers

Carole, I’m glad you enjoyed the turkey dinner and card games. Don’t go wild with your jackpot, LOL.
m0mmy, Hope you are having a good summer.
Wally, The pizza will taste good if you enjoyed your day outdoors. That’s what I always thought the point of going fishing was.
Minus, I hope you have fewer power outages this year than last.
Dinner tonight was pesto zucchini chicken. I’ll make it again.

Were at 41 "1/2 hour or longer" power outages since January 1. The generator is VERY useful.
1 -
@eric95us so glad you have a generator !
The CSA deliveries keep me creative, I’m having such a good time with all the fresh produce. Tonight was steamed yellow zucchini and red potatoes with a Dijon vinaigrette, green beans and pasta with freshly grated pecorino. Simple and lovely. Ordered another jar of their fresh orange and cardamom marmalade for next week and a slab of goat cheese. Food is so happy making.1 -
Dinner tonight was Garlic Butter Shrimp - Kirkland/Costco. It comes frozen with TWO 16 oz packages. Needless to say I only cooked one. Cooking options, but I sauteed and the sauce is delicious. Served on pasta noodles.
Eric - is that forty-one power outages so far this year? Oh my goodness. I'll quit feeling sorry for myself.
Rischaller - when I moved to the South in 1974, I joined a vegetable co-op. It was a great way to learn about vegetables I'd never eaten - either because my mother never cooked them or because they weren't local where I was raised.

Eric, That generator is a necessity at your house.
Rhonda, I had delicious orange and cardamom marmalade in Seville, Spain. I have never seen it anywhere else.
Minus, Your dinner reminds me that I haven’t cooked shrimp in a while. I’ll have to rectify that.
Dinner tonight was curried salmon, sautéed zucchini and tater tots for DH.

I was thinking about pizza for dinner last night but dh reminded me of vegetables in the refrigerator that probably should be cooked. So we had a skillet sauté with corn off the cob, one lonely leek, yellow squash, zucchini, red bell pepper, Polish sausage that smelled ok. I had a small bowl and he had a large bowl and seconds. We had a good salad with cucumber, tomato and onion for him. Avocado for me. Darn! Just occurred to me I forgot about the basil on the deck.
So glad you and your dh went fishing, Wally.

minus - I saw that shrimp and wondered about it. DH won't touch it so I'd have to eat the whole thing myself. No problem lol. Thanks for the review.
The cardamom marmalade sounds delicious. I love the taste of cardamom in things.
Rhonda your CSA boxes sound so fun. A friend used to share hers with me. It was analways exciting to see what was going to arrive.
Last night was overcooked pork chops on the grill basted with Korean bbq sauce with local corn and tomatoes.
Today is my birthday so dinner is whatever I want it to be. I just don't know what that is yet.
1 -
Nance - Happy Birthday!!!!!!! Looking forward to hearing about your special meal. One of the two Garlic Shrimp inner packages holds 20 shrimp & that is two meals for me - 10 small shrimp each meal. The shrimp saute down to an easy bite size and the coating 'melts' off to lovely sauce for the pasta.
1 -
Nance, have a wonderful birthday and celebrate it as you want!
Tonight is spaghetti and meat sauce, might make a salad and garlic bread too

Happy Birthday!!!!
Yes 41 "blackouts" since Jan 1. :-) We still love it here!!!

Happy birthday Nance 🎉
Tonight is Alaskan Pollock using a “better than fried” recipe and DH’s best ever batch of Mac n cheese. Both are delicious!
3 -
Nance, Happy birthday! I hope you had one of your favorite meals.
Carole, Your use up the veggies skillet meal sounds delicious.
Illimae, The pollock with mac n cheese looks so good.
Dinner tonight was Angus strip steak, zucchini/tomato sauté and potato salad.

Mae: I'd like to hear about your "better than fried" recipe for fish.
Working on leftovers. Had the last of the cucumber slices & chopped onion marinated in tarragon vinegar & sour cream with lots of dill. Also re-heated the other half of the baked potato I cooked last week.
Then treated myself to a mini "Tortuga Rum Cake". YUM. I first had them in the Caribbean years ago. The coconut is my favorite since it has no walnuts (one of my allergy items) They're usually only available at Spec's Liquors locally but occasionally WalMart. Although I noticed that Amazon carries some varieties.
Tomorrow I'm getting some new tires for my car so dinner will be the Dilly Salad from Chicken Salad Chick from my freezer. Unfortunately no amount of pleading or agreement from the store employees will convince the chain to carry the Dilly Chicken Salad as more than a special for a month.
I have to try to make it to Chick-Fil-A this year to get a peach milkshake. I missed the window last year.
And Kroger didn't bring in any Olathe Corn from Colorado last year. From what I'm reading about crops, there may not be any this year either. It's my favorite corn.
Finally it's almost Hatch Chili season. Luckily HEB imports huge quantities from New Mexico. Their Hatch Chili Scones are to die for.

Here’s the YouTube video for the better than fried fish. I’ll definitely make this again and it’s so easy.

Happy Birthday, Nance!
Dinner last night was leftovers.
We're having gentle rain this morning, so no Monday golf for dh. We'll go to the gym and then to West Forty for breakfast.

Happy Birthday, Nance!! Can't wait to hear your meal selection.
I used up ramen noodle packages (tossed the 'flavor packet' ) and made a peanut sauce, tossed in some broccoli. Leftovers tonight.
DH's dental appointment today…crossing fingers, holding breath….
Everyone's meals sound wonderful.

Our house guests left for home a few minutes ago.
Two power outages during the five days there were here. One for about 90 minutes and one for 7 hours. :-) I am working on collecting the stuff needed to "go solar". I'm probably going "partial" until it's time to replace the high demand electric appliances (water heater and clothes dryer). I would do a clothes line…but…the dust is prolific and "Martian red".
Dinner last night was chicken cooked in the dutch oven with BBQ sauce, fruit salad and some garlic-cheese soda biscuits.
Tonight will be leftovers.
Wally, I hope DH's dental appointment goes well. I remember those from my university days and I think the ramen noodle flavor packet is 99.99% salt.
I need to go refill some of the generator fuel containers for "the next time"…which may be today as the storm clouds are rapidly building up. In about 20 minutes, it has gone from clear skies to dark and foreboding. I use one of my old open Jeeps so I don't get "gas stink" inside the newer cars and I don't want to melt id it starts to rain. :-)

Not a pretty plate but it tastes great. Pan fried pork chop with mashed potatoes and sautéed cabbage/onion. My drink is barefoot Reisling and I’ve hidden a piece of chocolate cake in the veggie drawer but that’ll have to wait until DH is not around.
1 -
Illimae, Thanks for the recipe link. I looked at some of the other Spain on a Fork recipes which I hope to try. Reisling was my favorite wine when I could drink so enjoy it for me.
Carole, Breakfast is a great meal to eat out since it’s almost always really good.
Minus, It’s disappointing when the seasonal treats we love don’t show up in the store. Hopefully you’ll get the peach milkshake and the Hatch chili scones this year.
Wally, I hope the dental appointment goes well.
Eric, Adding solar power would be helpful given the frequent outages. The garlic-cheese soda biscuits sound delicious.
Dinner tonight was teriyaki salmon on rice.
