    Last night's dinner was spinach and cheese ravioli from Costco in a home-made pesto sauce. Olive oil and fresh basil and grated parm reg. Oh, my, the ravioli were delicious, so much more flavor than I expected. I'll freeze the rest of the two cartons for future meals. Our sides were individual salads.

    We’re staying overnight in a food desert (unless you are a Costco member) for a 10:30 pm MRI. The room has a microwave so I brought food from home. Carole, great minds think alike.

    Dinner tonight was spinach and ricotta ravioli from Aldi in homemade bolognese sauce. Since we could drive the whole way I brought dishes and silverware; shampoo was the dish soap.

    Carole - thanks for the Costco spinach & cheese ravioli recommend. I put it on my list.

    My dinner was the Dilly Chicken Salad from Chicken Salad Chick that I had frozen. Turned out to be a good experiment. I'll know to buy more next year since it did freeze well.

    Got a coupon from Nothing Bundt Cakes for BOGO free. I'll head over there tomorrow to sample their summer 'lemon raspberry' and pick up one of my favorites - white chocolate raspberry.

    Sam's club has a spinach ravioli, but I have not tried it.

    Neighbor Mary provided dinner last night with containers of the food she cooked for their dinner. Potatoes cooked with ham and coleslaw with a sweet oil dressing, which she prefers instead of the usual creamy dressing. The potato and ham dish was rich with cream and quite delicious. The ham was small dice and just enough for flavor.

    It's raining again today. The third day in a row. DH has missed Monday golf and Wednesday golf. He went to the gym a while ago. I don't like driving or riding in the rain but he doesn't share my inclination to hole up until the weather improves.

    I just thought of the word for Mary's potato dish. Scalloped potatoes. Sooner or later a word pops out of my brain after searching for it without success.

    Sandy has been posting about her difficulties in moving back into her renovated house on the oldies thread. At some point when she has time, she will probably return to post about her meals.

    The birthday dinner ended up being a low key affair. Because of the crushing heat we opted to stay in. I dined on snow crab purchased on sale at a local store, dipped in butter, with local corn on the cob and tiny potatoes. A delicious but messy affair.

    We went out last night in spite of the heat, to celebrate my birthday and a friend's who's is today. We went to my favorite steakhouse where they make the best fried chicken. Fried chicken is at the top of my list of favorite food and I'm a bit of a connoisseur. The chicken here is broasted (pressure fried) and perfect every time. Not many places do this anymore because the equipment is expensive.

    Tonight will be an enchilada casserole I think. My friend gifted me five lovely home grown tomatoes, one of which will be the side.

    Carole - I saw that ravioli at Costco and regretted not buying it. I'll add it to my ever growing list.

    Nance, The snow crab dinner at home and the broasted chicken dinner out sounds like a fitting birthday celebration.

    Carole, When DH could eat ham I thought that scalloped potatoes with leftovers was better than the original meal.

    Minus, I hope you are enjoying your Bundt cakes.

    Dinner tonight was skillet sour cream and onion chicken, cauliflower and mashed potatoes.

    Last night was his and hers leftovers and freshly cooked yellow/wax beans with little red new potatoes.

    Tonight will be Mexican at a popular restaurant in the village of Dorset. We're meeting Judy and Ron, farmers market friends.

    A couple of friends came over for 'happy hour' late afternoon yesterday. We all supply our own drinks when we do this, but I set out some snacks - spinach/artichoke dip, crackers and deviled eggs. Once they left, I ate the Lemon Raspberry Bundtlette and called it dinner. The Lemon Raspberry is one of the summer specials. It was good, but I think the regular White Chocolate Raspberry is better.

    Minus, What a good happy hour arrangement for getting together with friends. I love a meal consisting of different appetizers.

    Carole, Enjoy the Mexican meal with your market friends. The only good Mexican restaurant I found around here (in Boston) burned down several years ago and was not rebuilt. I need to go visit my sister and brother in CA.

    We lucked out today - only 99 degrees in my part of Houston (in the shade). The last two days have topped out at 101. The low at night has only been 80. Certainly not opening any windows. REALLY need some rain since my lawn is dying in just a week with these temperatures every day.

    Mommy - I'm really hungry for meatloaf but I can't imagine turning on the oven & adding more heat to the house. Maybe I'll saute/fry some ground beef patties… hmmm, salisbury steak with mushroom gravy?

    Wally - yum to the rockfish.

    Lunch today was deviled eggs. I had a banana that just couldn't make it another day so supper was cheerios with said banana.

    Our food at the Mexican restaurant was "meh," to use Sandy's word. I ordered a meal because I usually like the refried beans and rice sides. I was looking for Chili Relleno but the only meal included a tamale. The plate was blazing hot and the food just as hot. Everything tasted "hot." DH ordered beef tacos in soft wraps and his tacos were cold. We have better Tex Mex at home, but then we're close to Texas which has the best.

    On the positive side, we had a good visit with Judy and Ron, and the service was excellent. The salsa was acceptable, with a hot and a mild selection. The hot wasn't really hot but did have some flavor. More and more often we leave a restaurant with the realization that we eat well at home.

    A long time ago we ate at an authentic Mexican restaurant in Santa Fe. It was elegant and the menu definitely not Tex Mex. I don't remember anything about our food selections. For us and a big majority of Americans, Mexican is Tex Mex.

    This restaurant like a lot of businesses in this part of MN are adding 3 percent to payments with a credit card.

    No inspiration for dinner yet.

    Tonight is usually pizza night but I bought pizza dough at the grocer so tonight is calzones filled with sausage, Canadian bacon, green pepper and cheese. I might throw together a salad if I can scare up the energy.

    Looks like all of us are doing uncomplicated meals. I had celery with pimento cheese for appetizers with my a gin & tonic. Then I had strawberry shortcake with fresh strawberries, sour cream Angel Food cake and (oh no) Quip….

    Carole, My dentist has started adding 3% to the bill if you pay with a credit card so I bring a check with me.

    Minus, We’re just in the 90s but our grass is crunchy because of the lack of rain. I’ve been eating strawberries after every meal but angel food cake would make them taste even better.

    Intolight, Breakfast for dinner is always good.

    Dinner tonight was shepherd’s pie, not exactly seasonal but I had a leek that needed to be used.

    I feel guilty that I'm not contributing much to full blown meals & recipes that I'm cooking or baking - instead of just "catch as catch can". I can only use the heat as an excuse, but still….. Interesting that I saw a copy of Laurie's salsa chicken on the web this week. That's the only thing my son requests when he visits Texas.

    carole - I love scalloped potatoes and ham, and also add leftover ham to homemade mac 'n cheese. I had an old military friend who sliced tomatoes and put them on her mac 'n cheese and added parm and buttered breadcrumbs and broiled at the end of the baking. I would totally eat that but DH is anti-tomato in the fresh form.

    Not very exciting meals here - I had some mushrooms that needed using so I sauteed them and added them to marinara with some cooked ground turkey. Mixed that into cooked GF penne with some parm and baked it. It made enough that it had been dinner for the last two nights. It had a bit of sauteed onion, which I am allowed if cooked. For a couple of days prior to that I made DH a big salad with chicken breast on little gem and baby napa cabbage, topped with diced mango, pineapple, scallion, and slivered almonds with a peanut vinaigrette made by combining Bangkok sauce and vinaigrette in equal portions. I just snacked since I can't have any lettuce 😔

    I have been more diligent over the last week with trying low fodmap and it seems to be helping. What I really needed to do was make a list of things I can eat that I like from the master list of allowed and not allowed. That is making it easier to think of and plan things to eat. There are foods I miss but enough I like that I can do this - at least for a period of time. It will be interesting to see if I lose any weight with the restriction on carbs - I have been undisciplined lately and could stand to lose at least 10 lbs., so I am hopeful for that. I feel like I went off the rails at Easter with chocolate, lol! I have been frustrated with my GI doc, he prescribed an antibiotic with an eye-watering price tag that my local pharmacy doesn't even carry. My Medicare supplemental (military) covers my meds, I don't have a specific separate medication supplement. The military insurance has their own pharmacy - for both Medicare enrollees and active duty alike - which will send me the expensive med (I called and checked and the share of cost is reasonable) but have to have a peer-to-peer with my doc first so he can explain why I need this crazy expensive med - and he wants it on an ongoing basis so I can use it when I need it. He feels like this sugar sensitivity will be an ongoing issue. So, he knows he needs to do the peer-to-peer, I called twice to pass the info and appropriate telephone number, and also discussed with him at the last appt, but he just hasn't done it. Why prescribe a med, knowing it will likely need this extra step of involvement, and then just not do it? I get that it is time consuming for the doctor, but if you are not willing to invest the time then don't prescribe the drug. He is retiring in a few months so I am thinking of seeing if my primary care will handle this for me as she is an internal med doc and she and I have already discussed this drug - she is familiar with it and the cost - or at least recommend a new GI doc when I see her next month. Very frustrating. The GI doc I have also works in a system that is dysfunctional - no patient portal, a centralized message system so you're not reaching his actual office, had to reinvent the wheel numerous times to get the right referral for the CT colonography, it is a mess. I won't miss going there.

    I am currently in wait mode for a text from DD to be dispatched to pick up prescription food for her kitty. DH is over at her mini farm and he, DD, and beau are replacing fencing. Kitty is out of food that beau was supposed to go get. Mom to the rescue.

    DH asked for meatloaf the other day! Great minds! I had all the ingredients except for a couple so I sent him to the store, and will make it tonight. Will prob have baked potatoes and some sauteed yellow squash. I don't like to use the oven that much in the summer but since I have the new Kitchenaid wall oven it doesn't put off too much heat.

    I made hot dogs cooked in baked beans (canned) with frozen spinach tossed in to "thicken" and make it a little healthier. Leftovers tonight.

    I'm thawing my other rib eye (prime cut from costco) because DH wants to try to sous vide it. Crossing fingers it will be ok.

    Wally I love sous vide steak. It turns out perfectly.

    Tonight is Greek lemon chicken, pilaf and a cucumber tomato salad. I may do the chicken in a cast iron skillet on the grill because it's so hot today.
