    DH still has a bit of the mexican left (they give you a lot!) so I'm thawing some scallops (which he doesn't like) and will make a sashimi bowl of sorts.

    Rhonda, It’s great that you can get bread that you love through your case.

    Wally, I also take advantage of single serving leftovers to cook scallops for myself.

    Eric, Having hot pepper slices throughout the winter is worth the time and effort that canning takes.

    Dinner tonight was cube steak braised with onions, parsnips and mashed potatoes, a good ole diner type meal.

    Bonnie, a bluegrass friend went with her. The train was "coach" from Detroit to Chicago and a roomette from Chicago to Winslow. They both said the first day the food service was great, with the "other service" not so good, but both were wonderful the 2nd day.

    We went to the store and there some nice veggies out there and decided on a nice veggie dinner for us. Got some fresh green beans and put them in the crock pot to cook in the day so they were nice and soft and some ears of corn shucked and cut into smaller pieces so not too much food. Sliced some nice tomatoes that were on the vine that were very yummy and it was a nice dinner for a few days for the 2 of us. with a pound of green beans and 2 maters and 2 ears of corn. Healthy as well since do not salt in our house at all for other health reasons. Mrs. Dash works wonders.

    Last night's dinner originated to use a large box of baby bella mushrooms. It evolved into a stroganoff dish with bulk Italian sausage and cooked penne pasta out of the freezer. Leftovers.

    Last nights dinner used up some leftovers too. Some mashed potatoes paired with kielbasa and sauerkraut. Of course cornbread had to be made.

    I think tonight is egg roll in a bowl with ground pork, cabbage and some of Costco's stir fry mix veggies.

    Last night we my DD shared her Hello Fresh pre-cooked meal with us. It was just ok but since I felt poorly it was great. It is getting harder for me to cook dinner. Tonight is lasagna leftovers.

    I use UCH as well and live in Colorado Springs. Son and DIL and grands are in Peyton and son is football coach there. We live in t he south part of town and our kids grew up here and DIL and her family did as well and her folks still live down here. They moved when he got the job up there and live in Falcon and kids all go to Peyton.

    Been at Memorial Hospital for many things over the years for either myself or spouse and now my mom goes there since we know it. DIL is a head charge nurse of admission and managed to get me into a private room after my bad fall.

    We still end up doing medical stuff in Denver sometimes for both me for other health issues I have and for DH who is a transplant patient and is in VA specialty docs are all in Denver unfortunately. He will have go to up there this coming week for one. It is a pain to have to travel for appointments.

    Dr. Sharon was my BS and she was great and so informative as well and supportive. I had to go Memorial north for my MX though when they did that. Think it was where there a good room for recovery there for me.

    My oncologist is at Central and I really like her. I usually bounce between Central and North for my care as I am actively Stage IV. I have a new PCP in Briargate whom I really like too. There is good care here for which I am thankful. My DD is a night nurse at Children's Hospital. She and her 10 year old daughter live with us.

    Always fun to match up with BC people we meet on line. I was fortunate to meet several people around the country. Several back east, but of those who still post - Mae and Eric.

    Just finishing up egg salad for very late lunch at 4pm or early dinner. I have strawberries cut & sprinkled with powdered sugar in the fridge for later.

    I made stuffed manicotti for the first time tonight, it was good but such a pain in the ass to prepare. If I try again, I’ll boil it less and have better tools for the stuffing part. Garlic bread and a side salad completed the meal, along with two glasses of red wine.

    Had chemo yesterday and still have a little steroids in my system but tomorrow will be an easy meal, probably frozen steak fingers, mashed potatoes and corn on the cob.

    Illimae, Manicotti is so good but hard to stuff. l use a ziplock bag with a corner cut off as a makeshift pastry bag or get giant shells and stuff them which is easier. I can’t do either with just my left hand so I’ll have to stick to no boil noodle lasagna.

    Wally, I’ve never had grilled cheese with bologna; it sounds good.

    Dinner tonight was chicken piccata with cauliflower.

    Last night's dinner was bowls of leftover corn chowder with a large salad.

    DH roasted a dozen ears of corn on the grill yesterday and cut off the kernels. He has two ziplock bags of corn in the freezer for making more chowder. Each bag has two cobs to add flavor. DH has to "take it easy" for a week, no golf, because of the ear surgery.

    We're off to an annual bluegrass festival in Pine River today. It's a long drive. We'll stop in Dorset for breakfast.

    Mae - looks delicious. Glad you are able to get some of your treatments in El Paso and don't have to drive clear to Houston. How's your beach bar doing?

    Carole, I hope you enjoy your breakfast out and the bluegrass festival. I have never added a cob while cooking corn chowder but it sounds like a good way to enhance the flavor.

    Dinner tonight was the rest of the cube steak with tomatoes, onion and corn braised in chili powder mix served on rice. It turned out well.

    That is great tip on stuffing manicotti which love and hate to stuff myself so end up with no bake lasagna a lot of times.

    DH fixed a low sodium low fat lower carb diabetic friendly pizza yesterday. We do them at home since he diabetic a lot and just 2 pieces is enough to have for our supper and it will feed us 2 nights. Trying to eat low salt and low carb and low sodium for years and years we have learned to be inventive in when we cook sometimes with other seasonings.

    Do my own spaghetti or lasagna sauce as well in the crock pot with no salt crushed tomatoes and tomato paste and some Italian seasoning already prepped and some red pepper flakes in there and let it cook for a bit and put in some already cooked turkey meatballs and makes a good spaghetti supper. Or leave it off and use it for sauce for lasagna with some ground meat as well for layers.

    Also love to take strawberries and slice in a bowl with a cut up banana and for the 2 us makes a good healthy dessert as well. i love berry season when they are out!

    Eric, banjo is my favorite blue grass instrument. We heard some good blue grass music yesterday. And some not so good that wasn't really blue grass. I'll try to look up Sharon on UTube.

    Today wasn't a comfortable day to be at the farmers market. Chilly and windy with intermittent rain that would have been light rain if the wind didn't make it almost horizontal. Our bowls got wet four or five times. The sun would pop out and the bowls and wooden shelves would dry out with our aid. Then it would cloud up and rain again.

    It would be a good night for chili but we're having rib eye steak tonight and planning to have chili tomorrow night. Tomorrow is supposed to be cooler than today. It's 63 now and mostly cloudy.

    Bcincolarado, I agree that cooking yourself makes it much easier to follow dietary restrictions. I always cook to avoid DH's migraine triggers and as an alternative to eating inside inside at a restaurant or a friend's house (pulmonologist’s orders.) The berries this year have been really good. I have strawberries at breakfast and blueberries for dessert at dinner every day.

    Wally, You have had a banner Napa cabbage year.

    Carole, I find it hard to believe but Labor Day is next weekend. I guess it's not surprising that cooler temps are coming. I hope you enjoy your bargain rib eye.

    Eric, Sharon is a talented musician. I’m not surprised she got to play at the Grand Ole Opry.

    Dinner tonight was leftover cube steak for DH and clam chowder for me.

    We're enjoying cooler temps here too. I'm sad to see summer go in spite of the hot spells.

    Last night we had an early dinner at a local Italian place that we like. I got my usual - linguine con pesce- and had plenty of leftovers for lunch. DH had baked mostaciolli with sausage, a dish he loves. ( I'm sure that's spelled wrong)

    Tonight was ġrilled hamburgers and a baked potato with butter and sour cream.

    The rib eye last night was delicious. Our side was boiled new potatoes with butter and sour cream.

    We eat out occasionally but, on the whole, our home-cooked meals are better. Meals out are mostly for enjoying the company of dining companions.

    The owner of the resort is having the driveway re-sealed tomorrow, so we full-timers have to move our vehicles and golf carts to an unpaved area if we want to use them on Monday and Tuesday. No driving or even walking on the driveway. I think the "not walking on" is a bit much.
