So...whats for dinner?

Enjoying summer salads with either beans or lentils lately. Last night had lentils, with kale and carrots and garlic/ginger crisped in I olive oil, sprinkles with goat feta and a touch of red wine vinegar, with a side of baked tofu on toast. Tonight will make a chickpeas, cucumber and avocado salad with spinach and a Dijon dressing. Love all the combos using up the weeks CSA.
Happy Sunday to all .1 -
Rischaller, those salads sound wonderful. And so healthful. I want to give tofu a try if I can find it in one of our supermarkets. I would love some recipe recommendations.

Carole, I suppose you won’t get tarmac on the soles of your sneakers. I hope avoiding the driveway isn’t too inconvenient.
Nance, I really like linguini con pesce but when I ordered it in Rome the pesce was “crudo,” raw.
Rhonda, You are quite creative at using what comes in your CSA box. How much longer will the program last this year?
Dinner tonight was Angus strip steak, corn on the cob and potato salad.

I went running and about 30 seconds from my turn around point, the (hard) rain started. As soon as I got home and came inside, the rain stopped.
It will likely be leftover spaghetti tonight and like others have been having, a salad. I do have some sourdough bread, so garlic cheese bread "is not out of the question". :-)

Caprese Salad tonight.
Hopefully, the 80s are gone for the year. We hit 82. I wish I were like some of you who enjoy hot weather.
Tomorrow will probably be burgers. DH harvested a small handful of green beans and a small zucchini, so I'll figure out sides using those. Still have more napa cabbage and need to get to the scallions.

Waving hi to everyone as I've been tied up up with many things during August, including much cooking and guests. Will share when things settle down.

Yum on garlic cheese bread with home-baked sour dough bread. I have been buying supermarket bakery sour dough bread because white bread is a "must" for tomato sandwiches with home grown tomatoes. I may find myself making sour dough bread when back at home.
DH made a pot of chili yesterday with ground beef, canned tomatoes and canned pinto beans. It was/is delicious. We enjoyed bowls of chili for dinner with sour cream and grated cheddar. Happily, lots of leftovers.
It's cold this morning, in the low 40's. I'm thinking the asphalt will need to warm up before the re-sealing can happen. I will probably walk the circuitous route and drive to the gym a little later.

This is my 2nd starter since 1980. The first one was invaded by mold and I had to start over.
I mix equal volumes of unchlorinated water and starter, and then put a "fresh from the vine" grape into the mixture. Usually a day or two is all that is needed before the Frankenstein "IT'S ALIVE" line can be used. :-)
I can dry some starter and send it to you. Then it's the unchlorinated water-flour mix and the dried starter instead of the grape.

Eric, what a generous offer! I'm likely to take you up on it when we return home. I just looked up Sharon's music videos on You Tube. Wow, she plays a lot of instruments! What a talented wife you have.

We are currently on generator power and we have yet to make arrangements to get a "no electricity needed propane stove", so dinner will likely be cooked on the grill.
The electric utility company indicates it will be 3:16pm when the power is restored. This seems somewhat suspicious as the company just sent a text message indicating they will be dispatching crews to investigate the cause of the outage. :-)
Despite the long and numerous outages, neither of us would move anywhere else to gain more electrical reliability….It is great to be living out where we do!

Power is back on.

Yay for power!
DH made a roast and Yorkshire pudding, I added asparagus and a baked potato for me. All of it is delicious.3 -
Love love Yorkshire puds! Usually only a holiday treat at our house. Don't know why.
I had a sour dough starter for years. Allegedly a descendent of a 100 year old starter original to San Francisco. I baked with it for years. Finally it got to be too much responsibility to keep it alive lol.
Tonight was baked bbqd pork steak, some bionic size ears of mediocre Colorado corn and sliced strawberries.

Eric, I’m glad you got your power back. Living in a location you love is worth the hassle. I’m amazed at how long your sourdough starter lasted.
Illimae, The roast beef and Yorkshire pudding meal looks so good. When we lived in Dublin we would occasionally go out for a roast beef lunch since it was cheaper than dinner the Clarence Hotel which Bono of U2 eventually bought. Your DH’s Yorkshire pudding looks better than what the Clarence served.
Reader, Enjoy your guests. I hope you are finding some time to relax.
Dinner tonight was salmon in coconut curry sauce on rice,

DH's mother used to make Yorkshire pudding for a holiday meal.
We had dinner last night at Clancy's with friend Dorothy, who will be flying to her Fort Myers home on Friday. She sold her wonderful home on Long Lake. Her dh, Carl, died last summer at the Long Lake home. Dorothy plans to live full time in Florida, where she stays busy with bridge and eats out most evenings with women friends who have also lost their lifetime partners.
I had the two-piece dark meat broasted chicken dinner and dh had the meatloaf special.

We enjoyed the leftover chili again last night. DH added corn he roasted on the grill and sliced off the cobs. I made a chopped salad with iceburg lettuce and cherry tomatoes sliced into halves. Dressed with mayo.

Our garden green beans have started coming in! I'll be making a green bean chicken stir fry tonight.

I was going to make an omelette tonight, but a friend called & we got to talking about popcorn the way it used to be made a movie theaters, when it was hot & fresh & you could ask for extra butter. Hmmm. Popcorn may be my dinner.
Lunch was the last of the leftover potato salad. I surely wasn't going to toss it since it had celery & green onions & hard boiled eggs & dill. My potato salad has mayo & sour cream since I'm not a fan of mustard potato salad. (I think that makes me a weirdo in the South).
2 -
Tacos tonight and probably tostadas tomorrow with the leftovers.
1 -
Carole, Your DH must miss Clancy’s meatloaf when you return home. I substitute corn for beans in chili. While I miss the beans it still tastes good.
Wally, Green beans fresh from the garden are so good.
Minus, Adding mustard to potato salad makes you a weirdo in the North. I like potato salad both ways but I would definitely choose the dill version.
Illimae, Your photos always make me want a second dinner of whatever you had.
Dinner tonight was creamy bacon mushroom chicken with mashed potatoes.

I would be a weirdo in the north because mustard is a "must" in my home-made potato salad. It doesn't rule out dill or sour cream.
Last night I cooked a cheddar brat for each of us in a skillet on the stove while dh grilled slices of eggplant and yellow squash. He has not had success with grilling brats and didn't want to improve on his record.
We're meeting Judy and Ron, farmers market friends, at Campaneros tonight. We'll order something different from last time. The restaurant was Ron's choice. The atmosphere and service are good but we aren't convinced they have a good grasp of "Tex Mex." An opinion we keep to ourselves since they like the restaurant.
1 -
Carole, I hope you found something on the menu that was edible. I haven’t had a good Tex Mex meal since the one decent option in Boston burned down. I’ll have to go visit my sibs in CA.
Dinner tonight was chicken parmigiana.

We had a lot of time to visit last night before being served our food. Campaneros was very busy. I ate too many chips with salsa. My nachos selection was huge and tasty. In the future, not this summer, dh and I will share a nachos. My top shelf margarita was very good.

I am making a sort of palak paneer (using feta) but also a palak aloo (potatoes) so the base (spinach) is the same, it will have both "paneer" and potatoes.
DH's knee PT is going so-so. Fishing season is drifting by (pardon the pun).
Happy Labor Day weekend !

I know there was a discussion a year or three ago about having to wait for the tap to produce hot water before showering. Maybe not this thread, but I think Eric was involved. In any case - Houston in the summer - I have to turn on the cold water tap and let it run for a good long while before I can get water that won't burn my hands.
Still haven't gone out on any errands. I'm out of bourbon & out of gin, so relegated to drinking vodka & tonic with a splash of lemon. And I need to get busy defrosting & cooking all the things stored in my garage freezer. It's hurricane season and I don't want to be throwing things away.
Need to get out tomorrow since I have a free "Nothine Bundt Cakes" item that expires the end of the month. Hmmmm - Lemon Raspberry? Or White Chocolate Raspberry?
I actually did make a cheese omelette last night with some orange rind Muenster that was nearing the end of it's useful life. Quite good. Tonight will be a Dole "Sunflower Crunch" salad. I know, I know - it's not usually cost effective to buy pre-mixed salad kits - but since I live alone, it's more wasteful to buy 6 different things to make a "real" salad. And a bagged salad mix serves me for two complete meals once I add sunflower seeds & maybe tomatoes &/or whatever is hanging around.
Hope everyone is looking forward to a fun holiday weekend.

Carole, I'm glad you got a good margarita and the nachos were tasty. Now you know what to order if you have to return there.
Minus, We have a circulator pump on the hot water heater that provides hot water quickly without running the tap. Good idea to start using up what is in your freezer.
Wally, Sorry you are missing fishing season but I’ve found that as you get older things happen that interfere with your plans.
Dinner tonight was meatballs in Rao’s on spaghetti.

Last night's dinner started with chicken thighs in the slow cooker. Added peas. Added corn. Added cooked thick noodles. Deboned the chicken (overcooked) and added Raos alfredo sauce. Served in bowls. Tasted good. Side was chopped salad with iceberg, tomato and cucumber.
Today is our Labor Day potluck meal about 5:30 or 6:00. I bought buns and chips.

Maggie, agree…at 49 and my breast cancer dx, life changed forever. I know the drill but it is still unwelcome, LOL.
Leftover Palak aloo/paneer. It turned out well.
DH is talking about possibly driving to Marrowstone Island for fishing…the walk to the beach is tons shorter, even though the drive is longer…we'll see.
I cut my own hair (oy) and gave myself a pixie cut when the weather was hot; listening to Minus and her temps and the water…I'm a wussy-girl.
1 -
Carole, Enjoy the potluck meal. It’s good to have a scheduled get together before neighbors head home after summer.
Wally, It’s brave of you to cut your own hair. As a teen I cut my family members’ hair but would never attempt to cut my own. My dad paid for it to be done professionally figuring he came out ahead. Hopefully you can fish in the more walkable location.
Dinner tonight was fish and chips for DH and leftover spaghetti for me.

I used to cut my own hair in my 20's. It was always long so I was only cutting some inches off the end. I also cut hair for my DH and my son. Most of the remaining years I kept it at shoulder length. But now…. other than evening the ends, I haven't cut my hair since Covid so it's down my back well past my bra line. Being lazy, I usually wear it in a pony tail.
Dinner was salmon steak poached in white wine with dill. Served with broccoli and Seeds of Change quinoa & brown rice. To top it off, I used my coupon to pick up my free buntlette from Nothing Bundt Cakes, so I ate 1/2 of that White Chocolate Raspberry delight. I recommend this 'bakery' highly if there's one near you. Or even if you have to drive an hour.
