  • Minus, I'm ready to go home to more space, a large kitchen, my own sink in the bathroom, three toilets, a washer and dryer, a dishwasher. . . LOL. I don't look forward to heat and humidity. During the summer, we have a gym membership at Anytime Fitness but it doesn't have the senior exercise classes I attend at our YMCA. Golf is more fun here than at home. There is no country club atmosphere at Eagle View Golf Course and I can drive our golf cart there. And I enjoy sitting out on the deck during summer months and participating in the farmers market. So there are pluses and minuses. But it's time.

    Dinner last night started with a thawed package of ground pork. After some discussion with dh, we decided on pasta. I sautéed the pork, cooked a half package of linguine, opened a jar of Rao's, shredded some Pecorino Romano. We have enough leftovers for another meal.

    Storms…."yes" and "no" regarding missing us. :-) The winds have been light, but there has been a quite a bit of lightening and thunder, with a lot of rain. Outside is a "sea of gooey-sticky mud" and both my and dogs' footprints are are 2-3 inches deep.

    I am astounded that the electric power has remained on.

    Last night I made a chicken-peanut sauce dish and Sharon cut up a sweet potato for "french fries".

  • DH is better, too, and determined to get back to normal. He went to the gym this morning. He weighed on the old-fashioned scale there and is down 10 lbs. Somewhat annoying for me since I was up 1 lb. on Wed. LOL. I'll take the extra pound and not feel miserable.

    I'm thawing a ribeye, one of the two that remained in the freezer. The weather will determine whether dh grills it or I slice it up for fajitas. The latter is appealing.

    Eric, your description of the muddy outdoors does not make me think of going for a walk! We're having a stretch of rainy days but there is never standing water. The soil is sandy and the water immediately soaks in.

    Good to hear that everyone is on the mend.

    We get mud season in the early spring when the snow and ice melt. After a very wet spring we haven’t had much rain.

    In NYC to visit my grandson who is now seven months old, past the colic stage and fun to play with. He’s in a hip brace but uses a toy toolbox to pull himself around some.

    Dinner tonight was takeout pizza.

    Hello all! Log time no posts from me. Life is hectic. Since losing our son last year, and my SIL this year, and my sister problems, it's been busy. I still think of all of you. I hope all are doing well.

    Tonight for supper, we went to Cafe Hollander in Mequon, WI. Very good. My sis and I chose it because she had to work till 7 and their kitchen is open til 11. We had the fish fry (almost an obligation on a Friday here in Wiscinsin, doncha know)! LOL

    I won't make promises about being back more often, as I seem to not be able to do that. Sigh. But know that you are all still in my prayers. Much love to all.

    Dinner last night was steak fajitas without the tortillas. Refried beans, sauteed onion and red bell pepper and strips of steak, diced tomato and thin sliced lettuce, sour cream, salsa. It just occurred to me that I forgot cheese.

    A couple who live in south MN are staying at Vacationaire a few days. Clancy's restaurant is located there. We'll meet them at Clancy's tonight for dinner. Some years ago they had a camper here in Pine Hollow Resort. We got to know them then and have stayed in touch.

    I don't mind not cooking tonight!

    Moon - great to hear from you. We all understand conflicting responsibilities, but glad you're checking in when you can.

    Today's meal was cheerios with a banana. Yesterday I had "hatch chili mac & cheese". It was rigatoni instead of macaroni & not a great sauce. Sad to say I will be tossing the leftovers.

    Lunch today was poached egg on lobster and asparagus with hollandaise sauce outside at a good Italian restaurant. Dinner was leftover pizza.

  • Maggie, your meal at the Italian restaurant is causing me food envy!

    I had the walleye dinner at Clancy's last night. I also had a lovely and refreshing Cosmo.

    The walleye wasn't the fresh fillet I envisioned, but the baked potato was a real baked potato and the blue cheese dressing on the salad bar is delicious. Most important the company was good.

    Maggie, that meal sounds mouth watering!

    I thought of you Eric on my recent Trader Joe's outing. I purchased a jar of new to me apple pie spread (DH is a big fan of all jams and jellies) and the checker said that it was particularly good on sourdough toast. If only I had some of Eric's !

    I made a major financial investment in a top round roast which will be tonight's dinner. I'll reverse sear it and add sides of Bobs mashed potatoes and peas. Of course there will be gravy.

    Nance, I have had apple butter and apple jelly but never apple pie spread. It sounds good. Enjoy the top round roast. Even the cheap cuts of beef are expensive these days.

    Dinner tonight was meatballs in Rao’s on spaghetti.

  • We had leftover chili from Mary and Nathan's hot dogs cooked in the chili as it warmed and simmered. Toppings were the usual, sour cream and shredded cheddar. Chopped sweet onions for dh. He has been buying sweet onions from a local farmer and declares they're the best he has ever eaten. The man is crazy about onions. LOL.

    Mary departs today. Some people winterized this weekend and others will winterize next weekend. DH will park our cargo trailer next to our camper for easy loading.

    Tonight's dinner will probably be leftover pasta and a salad. The refrigerator is full of containers. Some will be emptied today as "past the eating date."

    It seems like we arrived day before yesterday. And now it's time to go. The aging person's perception of time. For a child, an hour can be endless.

    On Friday I filed my blue USA passport renewal application, which invalidates my old one automatically….and a US government shutdown over a budget fight looms. sigh.

    Carole, my aunt told me that after age 80, birthdays come twice a year, and after age 90, they arrive thrice a year. :-)

    Beef prices are high. We do have a slaughter house that also butchers the meat into manageable portions that are slightly less expensive than the stores. However, "manageable" means "need a large freezer" or "having 20 people over for dinner".

    Eric - I realized last week end that my passport expired in August. Did you file 'on line' & do the "upload" process? I'm not great with computers so I may have to do the old fashioned way & mail it in.

    I filed online and did the upload process. I'm not sure if the picture I sent in will meet their standards as there is a shadow—only on the wall and not on my face. We'll see.

    This is the first time I did the online process.

    Tonight is a "cheaty" version of chicken cacciatore using jarred tomato sauce (Victoria) with some amendments. A side of pasta will accompany. I'm tired from a poor night's sleep so I'm looking for easy.

    Eric, I was in the same situation as you and the shutdown didn't happen. Hopefully that will be the case again or it will be short. I'm glad that the real ID license works for domestic flights.

    Carole, Time does speed up with the years but it's also true that time flies when you're having fun. Living in two different communities also means more friends and acquaintances. You'll also be returning to an empty freezer so you can start anew.

    Minus, I mailed my passport for renewal last time. My iPhone SE doesn’t seem to have a good enough camera to satisfy the online app.

    Nance, Cheaty often tastes just as good as the complicated version. I haven’t made chicken cacciatore in a while so I’ll have to add it to the to make list.

    Dinner tonight was fish and chips for DH and crab cakes for me. We both had some average local corn on the cob.

    I did the on-line and upload a few years ago and had a crappy picture; they took it without issue.

    Eric, LOL.

    Dinner tonight was a seasoned butterflied boneless leg of lamb. I braised it in the oven since DH will only eat well done meat. I saw a tip which said to use thick slices of onion instead of a rack in the roasting pan which worked well. The sides were sautéed baby potatoes and asparagus. There is enough left for a couple of meals.

    @maggie15 Sounds good. My DH bar b qued lamb chops just two days ago. We were not raised eating lamb and wanted to try it on our own. We both like our steaks medium well and it was very good. We had it with a baked yam and asparagus.

    Yum on the lamb. We like ours medium to medium rare. I didn't eat lamb until it was served at a dinner party. I must have been in my 40's.

    Last night was a small pork steak, breaded and browned in a skillet. Bob's mashed potatoes and Pioneer country gravy. A chopped salad for me and a very small helping of potatoes.

    I'll gaze into the freezer and decide on tonight's dinner.

    I don't stay up late enough to watch late night tv, but I'm glad Kimmel is back on the air.

    Not sure if Kimmel was being aired here, but I tried to tape it so I could hear what his comments were.

    My family always ate differently (we are from Europe) so as a kid, I learned to love calf's brain, kidneys, hearts, blah, blah…I introduced DH to lamb and he loves it. Also, goat.

    I think peanut noodles tonight. DH's (yet again a new onco) appointment today to see what options we have for his rising PSA again. HATE this so much.

    On my last trip to Costco I bought lamb chops, which are usually excellent. This batch was not - very gristly and tough. I have four left in the freezer. I'm unsure what I can do to make them better. I usually just grill or reverse sear them to medium rare. A disappointment.

    Last night was broccoli cheddar soup with a toasted mini baguette. I think tonight will be a charcoutre garni with bratwurst and country style ribs. I don't have buttermilk or I'd make cornbread. I might do anyway using the milk and lemon juice trick. It's an inferior method IMO but It's worth not making yet another trip to the store.

    You can take the lamb chops back. I've only had gristly ones, once. You could do a quick baking soda brine which may help with toughness but not gristle.

    I was unable to watch my taped Kimmel. Grrrrrrrrrrrrrr—-pre-empted, of course.

    Nance - Costco takes back anything for any reason. By all means, return the remaining lamb chops.
