    Eric, I second Maggie's comment. Those pans look "new." They're very interesting. They definitely found the perfect owner. Thanks for sharing with photos.

    The catfish was sooo good. I offered dh two options, seared or oven fried. He chose the latter. I used a fine breading and sprayed with olive oil spray. Heated the big oven to 400 degrees and finished browning with broiler heat. They were crispy browned the way we like catfish. I spread a little butter on top and squeezed fresh lemon juice. DH made his tartar sauce with mayo, dill relish and horseradish. Side was overcooked sauteed zucchini.

    Today I am cooking dry red beans with slices of smoked ham hock. Dinner will be red beans and rice with a side salad.

    Eric, I've retracted the legs as far as they will go. Sadly, they added a "lip" on the counter edging with granite tile. UGH. Appreciate the suggestions. We'll just have the new one delivered this morning and then figure out who needs to help us or if we'll take a sledge-hammer approach. Sigh.

    I just replaced the batteries in the camper, going from lead acid to lithium iron phosphate. The charging part was new enough that it would accommodate the new lithium batteries.

    While doing this, I kept thinking of Wally's dishwasher. An hour to move everything needed to access the batteries, five minutes to remove and replace the batteries and another hour to put all the moved stuff back into place. I guess they didn't care that the move-access-put back process needed to be done to do even the recommended quarterly electrolyte level inspections.

    The new batteries weigh 50% less than the old ones, have twice the electrical capacity, don't need quarterly electrolyte inspections and should last at least a decade…so I won't have to go through this again for a long time.

    Wally, If your floor or countertop were in bad shape it would be a good excuse to renovate but it doesn’t sound like that is the case.

    Carole, It sounds like you are enjoying meals that were not easy to make in the camper.

    Eric, It’s satisfying to finish a job that will last a long time.

    The red beans and rice meal was delicious. So was the salad with romaine, compari tomatoes, cucumber, avocado and blue cheese. I'm using a Ken's Northern Italian Lite dressing that is quite to my taste. DH prefers a creamy Ken's Vidalia Onion dressing.

    A large carton of red beans left over. Most will go into the freezer.

    What a pleasure to cook rice in my little rice cooker. We ate almost no rice this summer. A lot of potatoes instead. Maybe the influence of all those Norwegians. LOL.

    Tonight will be another dish we didn't have all summer. Pork medallions from a pork tenderloin with a lemony sauce.

    Grilled Prosciutto (Italian ham) and sharp cheddar cheese sandwich. Used up my leftover napa cabbage to make a slaw for the side.

    DH just ordered tools to saw down the floor. Nightmares.

    Wally, Taking out part of the floor to lower it sounds like the safest way to get the dishwasher to fit. Actually doing that is not in my skill set. DH did woodworking in school and has made furniture but structural repairs are different.

    The pork medallions dish was "different" from my usual. First the pork tenderloin was larger than usual, like a cross between a pork tenderloin and a pork loin, which I don't buy. The lemons I bought from Sam's in a bag were odd. The one I cut up and added to the skillet didn't give a lemony taste, but a tang of bitter. The dish looked good with a brown gravy and mushrooms, and dh commented on how tender the pork was. We ate it over warmed up brown rice. There's enough for another meal.

    The side was coleslaw made with hand slivered green cabbage. It was very crisp and tasty.

    My plan for tonight is leftover red beans with a new batch of brown rice.

    Does anyone else fear that our country is headed for another civil war? I've been reading articles by educated people who aren't conspiracy theorists and see alarming signs of growing authoritarianism. Like a paramilitary.

    I've been in enough places when "news was being made" and have seen the disparity between what I was seeing and what I was seeing reported that I've become jaded about the news. :-)

    We had tacos last night and I’m making a big salad tonight topped with cheddar and leftover fried chicken strip pieces. But, I thought I’d share my wonderful breakfast since the avocado toast was just beautiful.

    Carole, I hear your angst. I am not so much concerned with civil war as I am with the authoritarian stuff…time will tell.

    I have no idea what will be for dinner. I forgot to thaw the sausage I wanted to use for a spaghetti dinner. Good news on DH's meds. I called early this morning (to the specialty pharmacy specializing in cancer meds only—located in Arizona) and they will be shipping out the meds fed ex, arriving tomorrow. "Only" $2,000. Grateful for the max out of pocket for drugs. They wouldn't ship till we paid up front.

    Yeah, the 2K is a "blessing" from the 17K/month. The cap means no more than 2K/year…funny how drug prices can annoy even the pharmacists. DH's initial med, aberatirone, was thousands/month (sadly, the cap back then was 5-7K) and now, you can get it for 20 bucks.

    For anyone as ill-equipped to make decent hard cooked eggs as I am, I have now done my hard cooked eggs in my air fryer (3 times) and they are near perfect.

    Today's meal was a sliced avocado with blue cheese dressing - topped with tuna mixed with mayo. I bought a bag of 5 avocados at Costco - 1/2 the price of Kroger. Now I just have figure out a way to eat them all.

    Our neighborhood National Night Out last night with the police, fire dept, City Council and County Precinct was OK. Only 30 people showed out of 187 homes, but…. It was a dessert pot luck and there was a delicious banana pudding and a great peach cobbler. This lazy person planned to make a pineapple cake, but since I was in charge of everything else, I ended up taking individual Rice Krispie treats and individual Pepperidge Farms Cheddar cheese fish packets.

    Leftovers will go to the Houston Police Dept for their "trunk or treat" Halloween event at the cop station.

    Wally, The cap on prescription drug costs makes such a difference. Unfortunately this has caused an exodus of Medicare advantage and part d insurers/plans from NH for 2026. Only one of the six part d plans left covers all my meds so I’m stuck with a low rated company that tends to deny drugs that need preauthorization.

    Minus, Advocado soup is a good way to use up the bag.

    Dinner tonight was meatballs in Rao’s on spaghetti.

    Minus, I bought a bag of avocados from Sam's so I am in the same situation. Over blessed with avocados. Maggie, I have not eaten avocado soup.

    The leftover red beans were delicious again last night. Tonight will be chicken thighs, probably oven barbecued, and sweet potatoes.

    Maggie, no consolation, but we are so remote with so few options, I don't think we even have the chance to get an advantage plan. With DH's situation, it is actually cheaper to pay the $240/month supplemental than try and find an advantage plan and drive 4 hours for every appointment. I know some folks enjoy driving; I'm not one of them…and then there's the ferry/bridge stuff to deal with. I didn't realize you live in NH. DH was just thinking maybe we should move there…no idea what caused him to say that.

    Avocados: Keep them in the fridge and take one out to ripen, as needed. If they are all ripe, mash and freeze.

    Leftover hot dogs and beans.

    DH has his dental cleaning and post op check, so who knows what they'll find, again. Still no call from the Seattle oral surgeon.

    DH has started the sawing of my floor. *sob*

    Wally - I didn't think about freezing avocados. Do you need to add lemon juice before freezing so they don't turn brown? I hear your 'sob' on the floor. Hope all goes well.

    Maggie - like Carole, I've never tried avocado soup either.

    Minus, my California-bred family never has problems with too many avocados. We eat avacado toast as well as avocado/tuna or salmon salad. We love guacamole which usually takes two avocados. I make tortilla soup and slice an avocado on top once it is done, or as a compliment to any taco/enchilada/quesadilla. So yummy. And yes, avocado soup is great! I usually buy at least three avocados at a time. Walmart has always had the best prices on avocados.

    Sob…I agree. Wood floors are awesome and it's hard to "hide" the effects of "the assault" when finished.


    We are also in the "few options" for medical insurance plans. We have a medical insurance broker that is good at finding options. I just signed up for Medicare and a supplemental plan. I guess I'm getting old…… :-)

    Avocado soup????????

    Just got off the telephone….assisted living place told us MIL was complaining of chest pains, so she was taken by ambulance to the hopsital ED for evaluation. She has a history of heart issues and heart failure…ejection fraction of 25%…

    Eric, good news on your MIL…scary. Yup, we're all getting old-er.

    Minus, I don't add anything to my avocados if/when I freeze them. If you have some powdered vitamin C, you could sprinkle that as well. The few brown spots I get, I don't much worry about.

    eric - it's my understanding that people in assisted living places (& for sure nursing homes) develop frequent UTIs and the facilities don't always diagnose the side effects properly. Glad they caught your MIL's

    I'm very happy with my original medicare & supplemental plan - even though I have to buy a drug plan separately. Since I don't have many meds, I selected a drug plan with a zero premium. So far I've been really happy, since even the few RX drugs I've needed never cost over $2.00.

    I’m in a quandary replacing my cancelled part d plan since I might need new meds next year. I have finally seen a neuromuscular neurologist. The EMG yesterday had results she did not expect so I'm scheduled for a lumbar puncture and lots of bloodwork. I'm thinking I might go with a better rated insurance carrier with a more extensive formulary and pay for my costly but not stratospherically expensive inhaler. A crystal ball would be nice.

    Wally I like living in NH except for how hard it is to get medical care without driving a distance. The summers have gotten hotter over the years which you wouldn't like,however. Cutting into beautiful wooden floors is sobworthy.

    Eric, Sorry to hear your MIL was hospitalized but glad it is something treatable. My favorite avocado soup has curry in it.

    Illimae, Making your own pizza allows you countless ways to customize it.

    We’re in Boston so dinner tonight was steak tips, spinach and mashed potatoes in bordelaise sauce for DH and beef tenderloin tips in a bourbon bbq marinade with smoked apple salsa and sweet potatoes for me. We lucked out and got a room with a microwave.

    Maggie, can you speak with your neurologist and get an idea what meds they may rx? For what it is worth, DH had Humana part D when we first moved here…when he got cancer, it didn't occur to him to review his plans. We WAY overpayed for his first line of treatment. Switched to the zero cost plans and since there is a cap, if you know you'll blow past 2100 (new max 2026), it rarely matters which you choose. And we've used Singlecare and GoodRx for some meds for DH (prior to this $$$$$ drug), which is sometimes cheaper than going through insurance.

    DH's dental was not great. Back on antibiotics.
