So...whats for dinner?

Maggie, good luck in your decision-making on health coverage. We considered switching to an Advantage plan because it's so much cheaper but stuck with Medicare and BCBS Federal, even though we pay a lot monthly. So far there is never a hitch with getting prescription coverage or approval of treatment. Advantage plans are great for healthy oldies who require very little medical care, just routine screening. Humana and People's Health are two popular Advantage companies here.
I lit the big oven last night to cook the sweet potatoes and the barbecue chicken. Both were excellent.
Tonight will probably be steak fajitas with refried beans, sauteed colored pepper and onion, and guacamole. We'll probably skip the tortillas. I'm back in "lose weight" mode, hoping to get back to my lowest weight last winter and then whittle that down. The Viking Cruise put on 3 pounds and the summer in MN added another 3.
It's supposed to be more comfortable outside today, with lower humidity. DH is playing golf. I'm hoping to get to the gym for an 11:30 exercise class after being on hand to pay the couple who mow our big lawn during the summer. With luck they'll come early enough for me to make the class.

I’ll definitely have the bloodwork results and hopefully the cerebral spinal fluid ones before the cutoff date. My steroid inhaler is used off label for RIPF so the other asthma drugs on the formularies won’t work. My pulmonologist will attempt to get it covered so I’m looking for an insurer that is more amenable than the United Health plan in my zip code. I now appreciate what I learned when I had to work in my dad’s pharmacy because it was really busy.
Wally, I hope the antibiotics clear the infection.
Carole, It’s easier to choose lower calorie cooking methods when you have a full kitchen. Adding a few pounds while enjoying yourself is worth it imo.
Dinner tonight was chicken and asparagus in cream sauce.

Tonight should be leftover pork medallions dish with leftover brown rice. I may add carrots, precooking them first. You may sense my lack of enthusiasm. LOL.
The sliced beef strips I bought for the fajitas last night were a little tough but still tasty. As usual I ate more steak strips than dh did. He ate all the sauteed onion and most of the sauteed yellow bell pepper. His guacamole was especially good. And I always like refried beans.
Maggie, you have lived such an interesting life and educated yourself in so many ways. This is the first mention of your father's pharmacy.
It has cooled off somewhat, enough, I hope, to allow me to get some yard work done this morning. I plan to attack invasive trees and vines in the flower beds. It's an ongoing war. Yard work counts as exercise.
1 -
Yard work most definitely counts as exercise. It's exhausting.
Last night was a fish fry — a catfish fillet for me and cod for DH. Sides were Bob's mac and cheese and coleslaw.
Tonight will be swiss steak in the pressure cooker with sides of mashed potatoes and roasted golden beets.
Maggie - all your testing sounds grueling. Sending you my best wishes.
1 -
I agree with Nance, grueling, never mind the angst waiting for results. Hope you can navigate it all and come out without too much stress. I wonder if your hospital offers social services that can help navigate some of this…our tiny hospital has helped us when we saw no options for approvals.
DH will never be cleared of the jaw infection (thank you, Prolia) but just trying to keep it at bay so he doesn't become septic. My heart aches for my DH…all this stuff thrown at him, dealing with all of this at his age…getting older is not for wussies (sadly, I am one…oy).
I made shrimp broccoli coconut curry last night. DH preferred noodles in there (vs. rice) so that is what I did. Leftovers tonight.

Thanks for the well-wishes. Because my 2025 part d plan was discontinued I can take an extra 10 days to choose a plan and still be covered on January 1st. I had plenty of experience appealing denials with my insurance when I was working. I was just enjoying not having to deal with that.
Carole, Everything had to be done by hand in 1965 so I would copy the Medicaid prescriptions in triplicate (carbon paper forms) to be submitted for reimbursement. Because all the scripts were handwritten by doctors I got good at reading bad handwriting, useful when I was teaching. I also learned pharmacology without studying.
Nance, I’ll have to use golden beets in place of the parsnips I cook with Swiss steak; it would be a delicious change.
Wally, How is the dishwasher adventure going? Your curry sounds good. I’d have to replace the broccoli with something else for DH but I’d keep it for myself.
Dinner tonight was stew beef and butternut squash cooked in a pumpkin/tomato pasta sauce on penne.

We had a substitute "impulse" dinner last night, a take-out pizza. I enjoyed it sooo much. Milk Street tv cooking show was about making pizza, so maybe watching it was an influence.
1 -
I enjoy watching Milk Street…always learning new combos. Maggie, I usually add spinach to my curry but had to use up the broccoli. The dishwasher is not going well. We ordered a small dremel saw (for the floor) on amazon, which was to arrive next day…and still waiting. Re-ordered a different one and hope to get it today. I hate looking at the mess in my kitchen, but think I'll hate it more dealing with it.
Last of the curry tonight. I'm thawing rib eyes while DH's teeth can handle it. So far, no reactions from the new meds. Crossing fingers it is working.

Carole, I like watching cooking shows, too. One of my favorites is Patti's Mexican Table. I would never use those recipes since the cooking seems to take all day. From what I've seen traveling they are authentic.
Wally, Spinach is good since DH likes that. I'm sorry the dishwasher installation is taking so long.
Dinner tonight was lamb chops, sautéed baby potatoes and parsnips.

Tonight was “marry me white bean soup”. Northern beans, spinach, spices and cream mainly. DH liked it, I thought it was fine (for a spouse with low expectations) but definitely not as impressive as the name would imply. Today was rainy with temps in the 60’s, so while I don’t like the cold much, I am looking forward to DH making chicken and dumplings 🙂

I went to a concert downtown last night - all 6 Bach's Brandenberg Concertos with nephew & wife & 10 year old daughter. We were supposed to eat a quiet dinner, but they'd had some problems at a Girl Scout gathering in the afternoon so we grabbed something quick at Local Foods. I had broccoli & cheddar soup. Tonight dinner was sauteed asparagus. While it was cooking, I prepped a bunch of things for this week - guacamole, peeled tomatoes, cauliflower, coleslaw. I screwed up & bought a double pack of raspberries last week - WAY too many so I'll have to double down on eating quickly.
Mae - our lows are still in the 70's. Hoping for 60's at night this week, but day time highs are still over 90. And NO rain in my part of town for at least two months. Everything is dead.

We had the leftover pork medallions last night, served over brown rice. DH opted for coleslaw over tossed salad. I have to agree that the coleslaw made with crisp slivered cabbage is tasty.
Chicken and dumplings. Lucky you, Mae.

Illimae, I also have chicken and dumplings envy.
Minus, Bach’s Brandenburg Concertos are a favorite of mine. My piano teacher had a harpsichord and I had to play all my Bach on it during lessons. There was no way of disguising a wrong note like can be done on a piano.
Dinner tonight was lemon and dill chicken, sautéed asparagus and mashed potatoes.

I lost the post…but it was my fault…
Wally, has the saw arrived? And if so, how's the project? Or should I not ask?
My mom was a NP-midwife and could write prescriptions for some stuff. She used a typewriter for her prescriptions. Somewhere I have a cartoon of a doctor dipping a chicken's feet into an ink well and there is a prescription pad next to the ink well. :-)
Sharon cooked Spanish couscous and chicken today while I worked on improving the drainage in the driveway. It's been raining all day most every day since Thursday and about half the driveway was a puddle about an inch deep. A bit of work with a garden hoe and the puddle is now only a foot or so wide and about half an inch deep,, which is "good enough". As for temperatures, frost is likely late this week and early next week, which is "right on time".

Last night's dinner was a "meh" meal for me. Bony shoulder pork chops, breaded and cooked in the oven. Baked sweet potatoes. The pork chops were overcooked. The condiment was canned cranberry sauce with berries.
I was on the verge of buying a salmon fillet yesterday. Instead I bought cod. DH always says he likes cod. Now I have to come up with the cooking method/recipe. Suggestions welcome.
I stepped on the wicked bathroom scale this morning and was surprised and pleased.

Eric, the saw finally arrived…and don't ask….DH is starting to get the horrible fatigue from his new meds. I try and let him work at his own pace; trying to be a good wife has some tough days ;-)
Carole, cod suggestions…1. You could cut them into strips and dredge in mayo, then seasoning and bake like fish sticks (I have a recipe somewhere if you want it). 2. Wrap in foil, top with garlic powder, salt and butter and bake/steam it. 3. Poach in chicken broth with veggies you have on hand (use the veggies as a bed for the cod) 4. whole or diced into a coconut curry (indian, thai, …whichever ethnicity you enjoy).
Our ribeye turned out PERFECT. I hope I remember what I did. Leftovers tonight.
I'm going for my eye exam (high eye pressures but so far, no glaucoma) tomorrow. It is in Sequim so we'll shop Costco. The local hospital is dedicating the new wing to my first oncologist here (sorry if this is a repeat…she created a cancer dept. lo these many years ago) so I would love to go but who knows what my dilated eyes will decide.
Carole, congrats on the pleasant surprise!
Minus, I adore classical music. It is mostly what I listen to. Glad it was a good concert.

Carole, For plain cod (like DH prefers) Preheat oven to 400*. Pat fish dry with paper towel. In a glass baking tray/ dish big enough for single layer place cod, drizzle 1.5 TBSP olive oil, 1 TBSP lemon juice, salt, 3 dashes cayenne pepper or 1 tsp paprika or 1 tsp Cajun seasoning. Cover with foil. Bake 10-12 min or longer if very thick.
I like a bit more flavor so I make an easy sauce (serves 2) using 1 TBSP olive oil, 1 clove garlic minced, 1/2 pt cherry tomatoes cut in half, 1/4 cup white wine, 1 TBSP lemon juice, 1/2 tsp salt, 1/2 tsp stevia, 1/4 tsp black pepper, pinch red pepper flakes, 1/2 cup fresh basil or 1 tsp dried. After patting dry you can pan fry the cod in olive oil about 3-4 min per side until cooked through. This is a bit drier than using the oven but the sauce moistens it. I usually cook the cod in the oven and make the sauce in a pan.
As Wally pointed out cod is a nice neutral fish for all kinds of recipes.

Cod is DH's favorite. Most recently I fixed it the same way as the catfish — lightly breaded in Louisiana fish fry and pan fried. I like it baked or broiled with a lemon butter sauce similar to what you would make for piccata
Tonight is a belated birthday dinner out with friends at DH's favorite Italian restaurant. Her will have rigatoni with sausage and I will have linguini con pesce. It's always the same lol.

Carole, Well done getting back to your winter routine and making your scale go in the right direction.
Wally, It’s too bad the saw arrived at the same time as your DH’s fatigue. Hopefully your eyes will recover from dilation quickly so you can attend the dedication.
Nance, Enjoy the Italian dinner. When you find a dish you really enjoy there’s no need to order anything else.
Eric, A gravel truck that was supposed to slowly spread new stone along our driveway in MD miscalculated the height of a wire and just dumped the load of gravel. DH had already moved to Canada so I had to spread it all. Afterwards people driving by would ring the doorbell and ask who had done our driveway. I told them but let the know I was not for hire. It was hard work.
Dinner tonight was pot roast, butternut squash and mashed potatoes.

All those cod recipes sound great. I was too tired to cook anything that required attention last night so we will have the cod tonight.
I played 17 holes of golf yesterday and got over tired and dehydrated, despite drinking a lot of water. I got the "pasta kit" out of the freezer, previously cooked ground beef and Italian sausage blend, frozen linguine. Opened a jar of Raos. Grated pecorino romano. Dinner.
Maggie, I loved your driveway story.
Wally, hoping for a good outcome with the project.
I would love to go along on the birthday lunch.

Maggie, I had 10 yards (dump truck load) of composted soil into the garden. It was a very light soil and that was "enough". I do not want to even imagine moving that much gravel. :-)
Wally, hopefully DH's fatigue will go away long enough to take care of the floor…and still get some rest.
1 -
Carole, What did you end up doing with the cod?
Dinner tonight was leftover pot roast.

Yup - I'm interested in the COD answer too. I like mine poached or baked or broiled or sauteed. Must be a throw back to my Mother who NEVER fried anything. I understood about the fish smell lingering in the draperies, but still….
I never even learned how to fry chicken. And then I ended up in the South., Ai yah yi.

Eye appointment went well. No dilation!! Scored perfectly on the visual field so 6 months and they'll do the retinal/optic nerve scans. Pressures came down by a few points.
Saw my beloved onco for the dedication. Almost sobbed, it was so lovely to see her. She said I should email her and let her know how I'm doing (so dedicated)
Ended up making egg salad open-faced sandwich for dinner.

Hello to all. We have a wedding in St Louis this weekend. Anyone have suggestions for food? We will be arriving Thursday nite, and are by ourselves Friday. Wedding is Sat. Sunday, we'll head home. First big trip for us in a while. Hope all are doing well. Did a quick stirfry for supper. Turned out pretty good. I love Yoshida sauce. LOL

I have to confess to not doing anything adventurous with the cod. I cut the two fillets into strips, wet them in egg and lightly breaded them in Louisiana fish fry. Browned the strips in a small amount of oil in a skillet. The side was roasted asparagus. Dinner came together quickly and was tasty. DH made his favorite tartar sauce.
I will write down Maggie's sauce, which sounds much to my liking.

Monica - where in St Louis will you be and what kind of food are you interested in?

Salmon with cauliflower and the leftover roasted carrots.
Nance, I hope your dinner out was good.
Carole, I used mayo instead of egg and a seasoned flour or cornmeal, than baked at high…YUM. Let us know if you try Maggie's recipe.

Auntie Nance we just arrived in St. LOIS. RIGHT NOW, ANYTHING! LOL
We are at the Holiday Inn on Watson Road.

Monica - Grace Chicken plus Fish just opened on Watson Road and is quite popular. I've had the chicken and it's quite good.
