So...whats for dinner?

Auntie Nance. Maybe tomorrow . Hotel steered us to Helen's Fitzgerald. BUT they were so crowded wait time was 45 min. LOL Panda express was just across the street, so oooh. LOL. Hop in the pool, then bed! LOL

Tomorrow we are doing a city bus tour then I don't know if there is a rehearsal dinner or not. If not we might try the Irish pub again early.

Wally, Congrats on the good eye exam. I'm glad you made it to the dedication.
Minus, Living in the South really expanded my culinary repertoire. There are so many more potluck events where recipes are traded.
I used to go to St. Louis annually when DH attended a poultry breeding conference there. I always had some of the local barbecue which was distinctively different from that in other areas of the country. My favorite is still the northern Alabama white vinegar style but I enjoy trying the other varieties as well.
We drove out to an apple orchard today to buy apple cider donuts. I don’t generally like donuts but these are really good.
Dinner tonight was Kung Pao chicken on rice.

Tonight was a hot dog and chilli cheese tots, easy and good. I’ve been tired and nauseous this week, so favoring easy soups mostly. No idea about tomorrow but DH is probably on his own for dinner.
2 -
Monica - Helen Fitzgerald's is good and popular as you found out. Your location is near a lot of eating establishments. If you head north on Kirkwood road to Kirkwood proper there are many more.
Dinner tonight was meatloaf mashed potatoes gravy and cauliflower.

I had lunch and dinner in restaurants yesterday. Lunch with three women friends. Caesar salad topped with fried shrimp. Dinner with dh at Buster's Oyster restaurant. I had a dozen grilled oysters and a cup of chicken and andouille gumbo. Both good but the gumbo was delicious. DH had a dozen raw oysters and a cup of corn and crab bisque. Thursday night is oysters special prices night at Buster's.
Today we're in for a three-hour drive to deliver firewood to my middle sister. After unloading the wood, we'll go to lunch with her and her dh, my younger sister and her dh (driving their pickup with a second load of firewood. After lunch and visiting at the restaurant, we'll drive home. Six hours of driving in total.
The wicked bathroom scale will cackle with glee over all these restaurant meals. On the plus side, it's great to be back in fresh seafood country.
2 -
I call the bathroom scale "Sharon's mood measurement box". :-)
2 -
I don't get on the scale anymore. Why bother. I just hope I can fit into my clothes when I get up.
Not sure if we will have 1/4 pound hot dogs (costco brand) with air-fried potatoes or if we'll pick up mexican from our fav food truck.
We will head to the flooring store and I've taken pictures…we'll see if they can offer any solutions/ideas on our dilemma with this stupid dishwasher situation.

Illimae, I hope your nausea settles soon.
Carole, Fresh seafood is something I would miss. The Legal Seafood location I can get to easily is closed for renovation. Hopefully it will reopen in the spring.
Dinner tonight was angus strip steak, cauliflower and potato salad.

Shrimp and vegetables along with Thai steamed dumplings were on the roster tonight. Met my brother snd and SIL for dinner so the company was good too.
Got my covid booster so hopeful for no side effects.

Reader - got my covid booster at my PCP's office on 10/14. Shot in the butt not the arm because of Lympnadema. The first two nights, even turning over in bed hurt & woke me up. Today it's still sore but not as painful. Hope I can sleep through the night tonight.
Dinner was weird - well nothing new for me. Cucumber spears, a mini Boston cream donut. and raspberries with heavy cream. I had intended to serve some guacamole, and maybe cottage cheese with fresh tomatoes - but I just wasn't hungry.

I’ve been keeping it simple these days, steamed broccoli , green beans and whole wheat pasta with RAOs sauce. Lentil soup with carrots.
CSA has 5 weeks left, will buy some extra produce to blanch and freeze (spinach and green beans) and perhaps potatoes and carrots and sweet potatoes to stock up, since they keep for a bit. The fresh produce has been so amazing, and last week the bread was cranberry walnut… they also have a store with local artisan producers and bought a dark chocolate hazelnut bar, and 15 month cheddar. It’s been such fun. This week I might try the pickled beets with garlic or sauerkraut, which goes great with vegan sausage (my version of hotdogs). my DH laughs at me cause I get so excited about this. But I have to say, I have been craving fried chicken..go figure!1 -
Rischaller, pickled beets are popular in the area of MN where we spend the summer. The Amish vendors at the farmers market always have jars of them. I tasted them somewhere, don't remember where, and the flavor was spicy, as in all spice or cinnamon. I'm used to a vinegary flavor with cooked beets. If you try them, let us know your opinion.
Your vegetables sound wonderful.
I have a butternut squash that has been sitting around for a few days. We'll have it for dinner tonight. DH watched a reel with Pepin and thought his recipe with butternut squash was interesting. He added honey and balsamic vinegar. I may look it up. I'm also thinking of…what else? chicken thighs! Oven fried is appealing but I may just stick with roasted. I do love chicken.

Mexican take out leftovers. I was disappointed they got my order wrong but it was still delicious.
Tomorrow will be the costco/kirkland 1/4 pounder hot dog with air fries.
Expecting upwards of 50mph winds. Hope no outages.

We tend to keep cooked chicken in the refrigerator for snacks or a "minimal effort meal". Most of the time it's cooked in the dutch oven pictured in my avatar. The broth is saved for the dogs' kibble.
There is a butternut squash on the counter here. Fortunately they have a long shelf life. The typical preparation for that is cubed, a bit of olive oil, some salt, pepper and paprika, then "fried" in the air fryer.
It's been below freezing several times here, so everyone's gardens are finished for the season. All that is left in the one in our backyard is carrots, beets and onions. Once i get the garden tilled and fertilized for next spring, I need to get some garlic to plant.
Sharon loves beets…me…NO!!!!!!! :-)
I hope the power stays on there, Wally. Losing electric power is annoying.
Neither Sharon nor I have any ideas for dinner tonight.….maybe a "minimal effort meal". :-)

Oh my goodness: Below freezing at Eric's and 50 mph winds at Wally's. We had a couple of days down to 89 and it felt fantastic. Back up to 95 again today. Carole - glad you're home safe & sound.
We had a discussion about shoestring beets a while ago. Yes, I can still find store brand at Krogers. The price has increased to $0.99 - but nothing like what Amazon wants. So I bought 5 cans. I like them added to tossed green salads.
My dinner will be cottage cheese with tomatoes. My PCP wants me to eat more protein.
I LOVE fresh vegetables. Just read "on line" that there are 6 vegetables that are much better frozen than fresh (nutrient wise I gathered): peas, broccoli, cauliflower, spinach, bell peppers and mixed veg. Well - I do always use frozen peas - but for the rest I'm pretty much in favor of fresh - either raw or cooked. Finished off my fresh broccoli and have fresh cauliflower cut & waiting - not to mention a bag of fresh spinach. Nothing wrong with frozen, but…. What do the rest of you usually use?

Rhonda, Cranberry walnut bread sounds delicious. Your CSA fresh produce is continuing longer than I thought it would.
Carole, Aldi’s sells tomato sauce made with pumpkin or squash seasonally. I cook stew beef or chicken in it and at the end add butternut squash pieces lightly covered in olive oil and salt baked in the oven. I regret not buying more sauce since it is gone now.
Wally, I wish there were somewhere near here to get good Mexican food. I’ll have to travel south or west for that. There probably is somewhere good in NYC but the Hispanic food I’ve had there was South American or Caribbean.
Minus, I prefer fresh veggies. Flash freezing might preserve more nutrients but not the taste and texture. I can no longer get fresh lima beans so I’ll buy those frozen.
It seems I’ve lucked out in the weather department: mid sixties and sunny going down to the forties at night.
Dinner tonight was leftover steak with mushrooms and bell peppers in Alfredo sauce on farfalle.

Winds are picking up as I type. We've eaten and cleaned up, so all I would lose is TV for now.
Minus, it depends what I'm making and what the prices are that I choose fresh over frozen. Stir fries…I prefer fresh broccoli because it can retain more of its crisp texture. Spinach as a side vs in something, blah, blah….

DH found the Jacque Pepin reel with the butternut squash recipe, but it was stovetop and required tending. I was lighting the oven anyway for the oven fried chicken thighs so I used a pan. I saw a tip online on a video to poke fork holes in the whole squash and microwave it for three minutes to make peeling easier. Still not "easy." I need to get a different peeler since mine is mostly for potatoes and carrots. Anyway, I tossed the peeled and cubed squash with olive oil, s & p, honey and balsamic vinegar. It was really, really good. The chicken thighs ok.
I am craving fried chicken so a Popeye's meal is in our future. The popeye's is never as good as imagined but cures the craving.
Tonight will probably be ribeye and potato salad. I have potatoes that need to be cooked and I have a yen for my mashed potato salad.
Minus, I have wondered whether your diet includes adequate protein.
No rain last night. The shrubbery looks desperate for water.
2 -
We finally had rain yesterday after two months of none. I doubt it was enough but we'll take it.
I'll never forget Apple's description on here of cutting up butternut squash. It brought to mind images of Lizzie Borden.
Carole I perfectly understand that fried chicken craving. The Popeyes around here are so poorly managed I can't believe they're still in business. It's not uncommon to find them closed during normal hours or for them to be out of chicken. When your entire business is fried chicken how could you frequently be "out"? Ŵe gave up on them much to my great disappointment.
Last night was take out pizza. Tonight is chicken leek pie.
2 -
We never did lose power, thankfully. We have finally started getting some rain. No rain since March…trees and shrubs must be thrilled.
My Thanksgiving cactus must be a halloween cactus; it is the second time it is blooming.
Today will be the 1/4 pound hotdogs. My sis raved about these, so I hope we love them as much as she says we should, LOL.
I've never had fried chicken. Maybe that will be my next meal on the outside.
1 -
Carole, My peeler was bought by my father when he visited us in MD and didn’t like the one we had. It works really well. He has been gone for 35 years now but I use it almost every day.
Nance, Chicken leek pie sounds good. I hadn’t seen a Popeye’s for many years until we stopped at a rest area on the Maine Tpke last year. They did have chicken.
Wally, I’m glad your power stayed on. Today was another beautiful fall day but it will be raining when I have to drive to the big hospital up north early tomorrow morning. We need the rain so I won’t complain.
Dinner tonight was salmon, cauliflower and tater tots for DH.

The grilled ribeye and mashed potato salad meal last night "hit the spot." Whatever that means. LOL. I made a lot of potato salad in order to have leftovers for lunches for dh. Deli potato salad became a regular item on the grocery list this summer. He can add onions, if he likes. I realized I was out of yellow mustard when the time came to assemble the potato salad last night, so I substituted Grey Poupon. A slightly different taste but still good.
Tonight will be red beans and rice with the frozen red beans in the freezer. Side will be either romaine salad or coleslaw.
Hard to imagine a Popeye's without chicken. Some of the big gas stations with food are known to have good fried chicken and good fried catfish. My mother cooked fried chicken in a large cast iron skillet with high sides. The hot oil popped and made a mess of the stove. My best memory of fried chicken. She cut up whole chickens to turn them into the maximum number of pieces for a large family. There was one "wish-bone" piece out of the breast. And the wings were two pieces with a little drumstick.
1 -
Last night was some of the chicken. Sharon had a music gig and ate at the gig. I stayed home with the dogs, began the process of refinishing the wood part of a floor lamp and also ran (slowly) 6-1/2 miles.
We have two peelers, I can't see any differences between the two, but one works great on potatoes and carrots and poorly on squash, while the other works great on squash, but poorly on carrots and potatoes.
2 -
Carole, DH really likes Aldi’s potato salad. They have a more expensive steakhouse version which is excellent and another more traditional version which is good. I thought they were done with it for the year but I found some of the regular salad last week.
Eric, 6-1/2 miles is impressive whatever your pace. Do you have to rewire the lamp?
Dinner tonight was chicken and onion in sour cream sauce with mashed potatoes.
1 -
Yes on the rewiring., but that's easy. The wood refinishing isn't too bad, but will take longer because of the drying time for the wood finishes.
I was about 1 hour 10 minutes for the 6-1/2 miles. In 1981-1982, I could do that distance in half the time. It must be the altitude. :-)

Making a crustless quiche tonight…A cross between a fritatta and a quiche.
0 -
Wally, I had to look up a recipe for crustless quiche. I have made quiche before and frittata was my staple breakfast when I was working but have never made this. It looks more custardy than a frittata.
Dinner tonight was chicken and asparagus lasagna. I used the no boil noodles since I can’t wrastle the regular ones.
1 -
Maggie, yup, with the "quiche," I add some cream and it is softer and fluffier. My filling is more frittata like.

Continuing the protein discussion - Carole, I definitely don't turn the oven on in the summer, so no beef or pork roasts or baked chicken. But I do have poached salmon or cod at least once a week. And eggs 3x a week. I keep rotisserie chicken on hand. I eat LOTS of cheese. & cottage cheese & yogurt. And canned tuna. What I forgot to tell my PCP is that I eat a can of smoked oysters, clams, trout, etc usually twice a week with my salads or veggies. Even through my DIL is vegetarian and my nephew is vegan - I really believe my protein intake is OK.
Today was left over mixed green salad with extra cauliflower & bacon added and HEB ranch dressing. Served with whole wheat crackers & butter. Dessert will likely be 2 Godiva dark chocolate hearts at bed time. Or maybe a cup of chocolate mousse. Along with a dram of Tuaca (Italian Brandy) at bedtime.
Need to get to the poll tomorrow for early voting.
