Wally, it seems that you are doing a good job on the installation. I wonder why pork is so more reasonably priced than beef. It must be easier to raise pigs. There are so many pork products, like bacon and sausage as well as the chops and roasts.

Wally, I’m glad your dishwasher installation is going well. You have talents you never knew you had.
Carole, Pork is cheaper than beef because pigs grow and reproduce faster, are more feed efficient, require less land and water, and are less labor intensive to process. The only reason I know this is because of DH’s former occupation.
Dinner tonight was pork with fig sauce and rice pilaf with cranberries (delicious ) from the hospital cafe.

Maggie, if I had to choose between pork and beef for the duration, I would pick pork. Although I would hate to give up ground beef. Your hospital cafe meal sounds good.
My white chili was more like soup than chili. It needs some work. I liked the taste but it was more brothy than dark chili. I read some other recipes that called for mashing some extra white beans to thicken the sauce. Other recipes included a white sauce with flour and milk. Even cream. Leftovers for another meal or for lunches.
Tonight will probably be leftover beef stew with addition of freshly cooked veggies.

Just need to connect the drain hose to the garbage disposal and we're DONE!!!!!!!!!!!!!!!!!!! DH finally caved and let me do a good portion of it…still took longer than it all needed to be but he measures 1,000x and cuts once. OY. I''m more bull in a china shop method, LOL.
DH will have another PSMA pet scan. Our whole oncology clinic is being overhauled, so my appt. got pushed to January, so I'll be postponing my labs. No point stressing over Thanksgiving. They are giving him another 4 weeks to see if the new med will do anything; we are both unhappy but we'll have to wait.
I'm thawing boneless skinless chicken thighs and I think I'll make some sort of Thai curry with them.
Editing to add: I'm running a small test load. So far, so good.

Carole, I used to mash extra beans for thickening when I made white chili. I don’t cook with beans any more since DH can’t eat them. What a good idea to add new veggies to leftover beef stew. Choosing different ones could make it taste like a new meal.
Wally, Congrats on getting the dishwasher to test run stage. Hopefully the new med will kick in over the next four weeks. Thai curry sounds good but I ended up ordering two appetizers instead.
Dinner tonight was beef satay and crab Rangoon (with lots of real crab filling) from the Thai restaurant for me. DH made himself three different breakfasts for meals today; he said he’s looking forward to a real dinner tomorrow.

My dinner last night was a huge romaine salad and a small bowl of stew gravy and brown rice with a few pieces of stew meat. DH had a small salad and two bowls of beef stew. He also added some brown rice.
I'm remembering that my mother made beef stew without the vegetables. We spooned the meat and brown gravy over rice, always white rice. Her rice was beautiful. She boiled it and drained in a colander. No measuring ever.
Tonight we plan to go to Buster's restaurant. I may skip the chargrilled oysters and have something off the menu. Dh will probably have his usual, a dozen raw oysters and a cup of gumbo or soup.

No leaks, for which I am grateful. I made the mistake of turning "on" the wrong water line and didn't realize it till the dishwasher was in the hole….bated breath when I did the correct one…and whew…no puddles or leaks anywhere.
Leftover thai chicken curry tonight. I used a can of Amy's thai curry sweet potato, added some salsa, cream, a veg and some sauteed onions as the base…DH loved it. Easy and filling.
Carole, I've read about doing rice like that and may try it. YUM on the raw oysters. I adore raw seafood. I've gotten ill so many times on the raw oysters, I may give up. (My worst was my first trip to Paris for work. Sicker than a dog and I pity the cleaning staff of my hotel room….sigh.)

Carole, I never had beef stew on rice until I moved to Michigan where it was always served that way. I hope you enjoy your meal at Buster’s.
Wally, Your Thai curry recipe sounds good. I’ll have to try it. It must be nice to have a working dishwasher again. We are still waiting for one part to come in for our furnace repair. It will be three weeks without central heat on Monday. Grrr.
Dinner tonight was meatloaf cockaigne made with ground chicken, cauliflower and mashed potatoes.

Wally, a lot of people avoid raw oysters but dh ignores the warnings. He enjoyed his dozen last night with a sauce he mixes with cocktail sauce and horseradish. Afterwards he had a cup of corn and crab bisque. I had a tossed green salad topped with fried oysters and a little dish of remoulade sauce for dressing. The oysters were perfectly cooked and the serving so generous that dh had to help me eat them.
Afterwards we stopped at a local supermarket where we buy our anchovy olives for martinis. I also bought some eggplant that looked fresh and unbruised. Other items made their way into the shopping basket.

Carole, I also like oysters but only eat them cooked these days. When I moved abroad to Ireland to join DH there my dad offered to take me to dinner anywhere in Boston for my “last” US meal. I picked the Union Oyster House (founded 1826) for oyster stew. It’s still hard to get a reservation there.
I haven’t had much luck finding good eggplant this year. It seems that some years are better than others for all types of vegetables.

I went to Fresh Market yesterday after 9 holes of golf to buy Einkorn flour. I cruised the small store and cod was on sale. So I bought a large fillet for dinner. So we had cod and mashed potato salad for dinner.
I'll cook the eggplant today and make a lasagna-like baked dish with Raos marinara and grated cheeses.

Made Costco 1/4 pound hot dogs with baked beans and spinach last night.
I'm brining/marinating pork chops in a pseudo buttermilk and I'll bake them with sweet potatoes and broccoli for tonight.

Have not had much energy for cooking as I just finished another round of radiation. But simple meals are our staple, sautéed kale and onions, steamed spinach and baked tofu. Though I think tonight I’ll experiment and make chickpea and potatoe fritters and baked pears. Feeling frisky lol !

Take Out leftovers last night - Special Lo Mein with chicken, pork & beef. Yummy the 2nd time around.
Finally got to the grocery store today And the library book sale. 15 used books for $28 instead of 1 new book for $28.
Does anybody take Alpha Lipoic Acid? My PCP wants me to start for the chemo induced neuropathy. Seems strange after 12 years that my neurologist never recommended it. The pharmacist agreed that nerves will not regenerate but this might keep them from getting worse ??? Fortunately I don't have major pain - just dead feet and 1/2 dead fingers. I sure hate to start "just one more thing".

Minus, I've always made stew from canned smoked oysters but there must be more that can be done with them. How did you use them before you simplified your cooking?
Wally, I've never marinated anything in buttermilk; it must be the lactic acid that does it.
Rhonda, Baked pears sound delicious. Radiation hits hard so rest up. Hopefully the fatigue will lift soon.

Minus, I took alpha lipoic acid for my pre-diabetes. I hated the taste (sulfur) and it never did much for me. I lasted a year and gave up. That was in my mid-late 30s. I'm still pre-diabetic.
The pork chops were wonderful.

Minus, ALA has been shown to help diabetic neuropathy but has mixed reviews for drug induced neuropathy. Since the spring my right arm/hand and half of each foot have been totally numb. In Sept I was prescribed Repatha since a statin caused drug induced liver injury. After 4 doses my left fingers and both legs from ankle to knee are numb and also get the horrible shooting pain that gabapentin doesn’t touch. I quit the Repatha and messaged my neurologist whose response was to schedule me for another MRI. I have a bottle of ALA coming tomorrow since at this point I’ll try anything to get some sleep. I’ll let you know if it works. I have decided my body needs extra cholesterol to function.

Minus, when (21 years ago) I had a weird hearing disturbance (pitches were 1/4 tone lower in one ear, and everything sounded tinny & underwater), I Googled "sudden sensorineursl hearing loss" and found one doc & his audiologist at Cleveland Clinic had good success with a cocktail of a 6-day prednisone dosepak plus manganese, vinpocetine and ALA> I never noticed any taste disturbances from it. (I suspect it was the prednisone more than anything else that cured my problem).
We moved back home 2 weeks ago, but last week when I was washing a ceramic skillet, the sink began to back up…and so did the cheap-@$$ Glacier Bay disposal our incompetent contractor's helper install. Called the plumber i've used for 38 years (pricey—I think I put the owner's kids through college—but they know their stuff and guarantee their labor) who spent hours power-snaking the drain as best he could; the sink & dispossl were usable though not ideal. They went to the basement and discovered the soil stack was cast iron, over a century old, with some botched amateur reoairs around joints, so they came back a few days later to replace the cast iron with PVC and run a camera down to make sure there were no obstacles leading to the city's sewer (which system was recently upgraded in our 'hood). Well, the camera made it only 6' past the floor entry point: there was a virtual wall inside, which was made of corrosion and over 50 years of assorted detritus flushed down by previous owners. So tthey're bssically going to give the soil stack a "balloon angioplasty:" removing the botched-repair sections. The auger grinding through the clog (like a blocked artery) is the "catheter" then after removing the deteriorated cast iron, they will insert a "rubber boot" (like the balloon) and finally more PVC (the "stent").
Advised to use the kitchen sink as little as possible (and lay off the dishwasher) till they can complete the repair next week. Been washing dishes in the bathroom and eating off paper plates. Not doing much real cooking—Mon, after my MRI I stopped at Evanston Chicken Shack for their 4-pc "all dark" special with fries (which were meh). So tonight I fired up the gril after soaking a cedar plank, Took some North Road (Scotland) salmon, sesoned it with a little Pike Place Market blend.I cedar-planked it on the cool side of the grill and periodically temped it—when it got to 125, I pulled the plank out of the grill as soon as food was on the table, Sauteed snap peas with sesame seeds; and cornbread on sale at Whole Foods. Had to grill tonight, as winter returns tomorrow.

Sandy, It seems you can’t catch a break. I hope they get the drain working so you can really cook again. It’s good that the weather held so you could grill the salmon outside.

@maggie15 I’m so sorry to read of your numbness and discomfort. Staying present with the body as it changes and degrades is normal aging requiring courage and presence, and also compassion for ourselves it seems to me. Denial doesn’t help lol and too much attention or clinging is worse… but relief from suffering is definitely called for, and I wish this for you. Sending love and healing , and good foods that warm the tummy and delight the mind. Your foods always make me smile

The baked pears were outstanding, I used Asian pears which are crisper than Anjou and seasoned the. With ground cardamom and cinnamon with a touch of maple syrup and chopped walnuts. Even DH liked them. Tonight was sautéed seitan with garlic and tomatoe purée with pasta.

We got our Popeye's "fix" yesterday. I invited my younger sister and her husband to a noon meal. DH cooked a pot of red beans with smoked sausage and I picked up an order of fried chicken and biscuits while the little rice cooker was cooking the brown rice.
Little did I know that so many other people would be ordering/picking up fried chicken on Sunday morning. I meant to walk inside but "inside" wasn't open. It all worked out, just took longer than I expected, inching through a line of cars.
Saturday night we had the baked eggplant dish, which was very good.
It's foggy this morning, the humidity having come back.

Haven't had such a bad night of sleep in some time…blech. I'll make a Vietnamese style tofu and tomatoes with brown rice for tonight.
DH's dental appointment this afternoon and we'll shop for odds and ends after. I'm bringing a bunch of cookies and madelaines (from Costco) to the dental office. DH is polishing off the huge costco pumpkin pie.

Cool spell yesterday so I made vegetable beef soup with a piece of chuck roast from the freezer. Plenty left over for lunches. I can never make a small amount of that soup.I have such severe diabetic neuropathy in both feet that I've pretty much quit driving because I can't feel the pedals. I took alpha lipoic acid for a while but the therapeutic dose gave me a stomach ache. This was also just after chemo so that may have been a factor. Chemo caused me lots of residual stomach problems. Anyway, it didn't do much else for me while I took it. Gabapentin now helps with the burning feet but as Maggie noted, not with the sharp pains.
Dinner is an unknown. It will have to be simple because the back is not cooperating.

Made panini on the indoor press for lunch yesterday (coppa, bresaola, roast beef, peppers, onion, mushrooms, provolone on sourdough). Was going to grill steak last night but we were under a red flag warning (yes, even in Chicago by the lake) due to drought conditions and high winds. No open flames allowed (leaf burning, BBQ, firepits) and even discouraging fireplace use lest embers make it through the chimney cap. Lifted the warning today, but we have leftovers from last night (ordered from Soul & Smoke: brisket, rib tips, collard greens; and still have plenty of cornbread). Also have a slice of spinach/mushroom quiche from Hoosier Mama. Bought a dozen Vital Farms Heritage Blue eggs yesterday. Fried one this morning—glorious deep orange domed yolk.

Our eggs, duck and chicken, come from the next door neighbor. The eggs are unwashed so we don't need to refrigerate them.
We went to Phoenix this past weekend and stayed at a friend's home. Their dog and our dogs had a great time. The people also had a great time. :-) We got home last night late enough that on the way home we ate convenience store hot dogs for dinner…double-plus-ungood.…

We finally have heat after three weeks! It's been going down to the low 20's at night so I'm glad that we have a working furnace. They were waiting for a part to come from Mexico. It seems Carrier opened a factory there to keep the Mexican workforce at home but now tariff regulations make it hard to import some things.
Carole, I rarely have Popeye's now since there are none around but as fast food goes it is pretty good.
Wally, I hope the dentist finds no new problems. How nice of you to bring treats to the office staff.

Eric, When we lived in a farm cottage in Scotland the farmer would give us a goose egg every spring. It was huge and creamy tasting. I always cooked an omelette for dinner with it.
