Wally, glad your dh was able to accompany you on the drive for takeout. Thai food is really popular in the U. S.
Dinner last night was leftover pork country ribs (no bone) warmed up in barbecue sauce. Shared baked sweet potato and a packet of Seeds of Change brown rice and quinoa flavored with garlic. I cooked the brown rice mixture more than indicated in the instructions to make the rice tender and it was just ok. My brown rice I cook is much more flavorful. I'm regretting having bought the whole box of packets.
Tonight's dinner will be beef/vegetable soup with a tomato flavored broth. We had the a/c on all day yesterday. Dh got up this morning and switched the thermostat setting to heat. It's 48 degrees outside, sunny, with a predicted high in the mid 50's.

Morning all and happy Sunday. We are under a blizzard warning, maybe up to 22 inches which is so rare for the NYC tri state area.
Maggie sorry your plans were cancelled, such is the erratic weather and polar vortex and jet stream variations ( as far as I can read) .
We went food shopping yesterday at our local store, calm as can be. So nice not to have frantic shoppers around us. Got all my vegies and beans for the week, plus tofu and hummos. When I feel like animal protein, I sometimes make chicken meatballs they are so good. Tiny yummies. Made some yesterday, and broccoli and zucchini, and defrosted tofu nori rolls( from Traders). My classes will be cancelled on Monday, so looking forward to baking some oatmeal raisin cookies perhaps.
For those in the path of the storm, wishing your power stays on and warmth and coziness as we wait it out. ❤️0 -
Carole - I like the Seeds of Change brown rice w/garlic, but I usually add sauteed onions & more garlic.

Carole, I’ve never had barbecue with baked sweet potato but it sounds like a delicious combination.
Rhonda, It’s good that you were able to get the groceries you needed without the crowds. I hope your power stays on and you can bake oatmeal raisin cookies to go with your tea.
It’s snowing lightly now but will pick up overnight. Since we’re not on the coast we’re supposed to get “only” 12”. I hope everyone stays safe and warm (or cool if you are in the heat.)

The beef and vegetable soup turned out good. Vegetables were carrot, celery, onion (pureed), canned tomato, potato and green peas. DH chose potato over noodles when given the choice. We had bowls of soup for dinner with whole grain Premium crackers and butter. The meat was a thick round steak dh bought on sale at a discount grocery place. I didn't think it had as much flavor as the stew meat or diced pot roast I usually use for soup. Funny note. DH instructed me to cut the round steak on the bias when I was cubing it. I followed instructions. He mentioned that the meat was tender.
Maggie, what kind of stuffing do you make for your stuffed bell peppers?

My mother used to make beef stew and beef soup with cubed beef that had bones. I haven't seen that version of stew meat in many years.

BIL and DH went to pick up mexican. YUM. I hope we are not eating out for a full week….

Carole, I make stuffed peppers with a variety of fillings. For Italian I usually use green bell peppers, ground beef, onions, cooked rice, garlic, basil/oregano and tomato sauce. With ground chicken I often mix in salsa and stuff yellow/red bell pepper halves. A couple of times I added cooked herb stuffing and dried cranberries. With ground lamb I use rice, curry powder and chutney. I haven't tried an Asian version yet but Wally would probably have some good ideas about what to use as a filling. The cubed beef with bones sounds similar to using an oxtail in stew in Britain. The bone marrow gives it more flavor.
Wally, I'm glad your power is back on. Mexican takeout sounds delicious.
We had 10” of snow today which was less than what fell near the coast. More is on its way for Wednesday. It’s still winter.
Dinner tonight was skillet chicken with brown butter corn on rice.

What a wonderful variety of stuffed peppers, Maggie.
We had the last of the Costco ravioli last night with the rest of a jar of alfredo sauce in the refrigerator. Also a spinach souffle that was an impulse buy. frozen and cooked in the microwave. I liked it ok. But the ravioli filling is spinach and cheeses, so we had double spinach. I like having the ravioli on hand and will buy more.
DH had cataract surgery at 7 am this morning. I am dragging from getting up earlier than usual and not having the normal routine. Tonight's dinner will be leftover beef soup. I'm not sure where that stew meat with the bones came from on the animal. Maybe beef ribs hacked into pieces?
I bought frozen flat dumplings yesterday on a whim. I spotted them in the frozen foods and decided to give them a try. The ones I make from scratch and freeze for later cooking are good.

Carole - glad that DH surgery is over & he's home resting. Hope you can take a nap too.
Went to vote this morning and the center/hotel where I've voted for 20 years is no longer active. Darn. Nothing else close so I came back home to re-group another day.
Found a recipe that looks really easy for French Dip. The only issue of course will be the sodium. The consume is 790 mg, french onion in 780.
»»Heat 1 can Campbell's Beef Consume, 1 can Campbell's onion soup, 1 can water. Simmer. Add thin beef slices & simmer longer. Cut rolls in half & place cheese slices on both half. Heat in oven . Spoon beef over the top & dip in liquid.

Carole, I hope your DH has a good surgical result. My DH had his first cataract done at 2:30 PM and they wanted him fasting from midnight. He is hypoglycemic and would have passed out long before then so the ophthalmologist had to get involved. His other eye was done at 7:00 AM which meant leaving the house at 5:00 AM. I’m not an early riser but I can do it if I have to.
Minus, That sounds like a good French dip recipe but canned soup has so much sodium. I’m supposed to stay under 1500 mg a day so I don’t think I could try it. I found a really good nutrient tracker, cronometer.com, which is free and measures everything you could possibly think of including sodium.
Dinner tonight was chicken enchiladas with Spanish rice.

Carole, I totally understand the "dragging" feeling and the upending of schedules. Hope your DH's surgery was uneventful.
Maggie, off the top of my head, a great asian version could be mushrooms, tofu and teriyaki or soy or peanut sauce; add rice if you wish. Shrimp instead of tofu or even ground pork.
Yesterday was an awful meal day. BIL wanted to "shop the deli" for dinner. I was horrified. No vegetable. All icky breaded or deep fried. UGH. I ended up eating roasted red peppers for breakfast just to get a veg in.
Tonight, I made a crustless quiche. He wants to go to a Pho place tomorrow. I weep for humanity….I am so happy to cook (and purchase) the food….he's leaving saturday so I am trying to go with the flow. He has kidney disease and refuses to listen to me. I"m a (former) registered dietitian. Go figure.
At least the guys are getting some stuff cleaned out of the garage. DH did great.1 -

Wally, interesting background, being a dietician. I hope this visit from his brother is a good interlude for your dh, despite the disruptions in diet.
The leftover beef/vegetable soup tasted twice as good last night. There's enough left for a lunch for one of us.
Your dinner is very appealing, Maggie. I really like Spanish rice. And enchiladas.
Not sure about the dinner menu. I'll probably be going to lunch with three women in the senior exercise class.

Wally, As a dietician it must be frustrating to watch your BIL do nothing to help his kidney disease by eating junk. Your DH will probably be OK with a few days of nutrient lacking meals and will be back on track with your cooking. Hopefully the positive aspects of the visit outweigh the negatives.
Carole, I hope you enjoy your lunch with friends. You might not need a full dinner.
We had another three inches of snow last night. It keeps the scenery pretty but is a pain to deal with. Another clipper system is forecast for tonight.

Lamb chops at our house, too! LOL. DH cooked them on the grill. The side was the two leftover baked sweet potatoes, peeled, halved and browned/blackened in butter. This is my favorite version of baked sweet potatoes.
My lunch at an Italian restaurant was very good. Flatbread topped with chunky vegetables, tomato, eggplant, mushroom. Also with mozzarella cheese. A salad was included. I chose Caesar. I wish this restaurant was closer. I would be a "regular."
