    When cooking, I'll often used cream instead of whole milk and it always makes things taste better. :-)

    Cream, butter and sugar definitely make things taste better. If you splurge occasionally it doesn’t do much harm.

    Dinner was boneless chicken thighs spread with salsa and cooked in the toaster oven. The side was Spanish rice made with a packet. Not great but edible.

    Carole, I cook chicken breast pieces in chunky salsa and serve it on rice. I sometimes add diced green pepper or corn. It’s not my favorite meal but it’s easy and tastes fine.

    Dinner tonight was leftover shepherd’s pie for DH and chicken noodle soup for me. I seem to have contracted norovirus at the hospital :-(

    Spent time today prepping lots of things that were sitting in the fridge. Egg salad, tuna salad, watermelon chunks, strawberries w/powdered sugar, guacamole. I also have a broccoli salad & a small chicken salad from Chicken Salad Chick. Just think of all the good things I have to eat this week!!!

    Today I ate 1/2 a egg salad sandwich, 2 small pears, Ruffles chips, danish shortbread cookies and two pralines. All washed down with a large Gentleman Jack and water.

    I too use heavy cream in most of my cooking or prep

    Yesterday I made a large chicken salad for lunch food and also boiled a batch of eggs, more lunch food and snack food.

    Dinner was a large romaine salad with individual additions according to preference and individual dressings. Also the last of the chicken dumplings.

    I sampled mushy peas on our trip to Ireland and Scotland. I liked them. But then, I like green peas, even out of the can.

    Dinner last night was a surprise. Dh went to Sam's with a list that didn't include a sausage and penne casserole, but he saw one and bought it to spare me from having to cook. It tasted ok. I appreciated his impulsive action.

    Today is my birthday, another big one. 83. I plan to stay home and enjoy an ordinary Sunday. My birthday dinner of choice will be a takeout pizza.

    A birthday is a good time to say how much I enjoy the company of this forum.

    Carole, Happy Birthday!!!! I feel the same about this forum; a safe, inviting place and lots of food talk :-)

    I found a website that indicated mushy peas are actually made of dried peas (like split pea but not split). I didn't have any on hand so I just used canned…not "authentic" but DH liked it.

    Leftover rib eyes tonight.

    Carole - the happiest of birthdays to you! I feel like we’ve been food “friends “ for years. Even though I don’t post s as much I read always and look forward to everyone’s posts.

    I’ve had family from Texas visiting since Tuesday so meals have been happening I with a heavy reliance on Costco.

    How does one make mushy peas?

    Carole - Adding my Birthday wishes. I love the plan of staying home for the day AND the pizza for dinner.

    Wally, I’ve had mushy peas made both ways and I don’t think the prep method makes much of a difference.

    Nance, Here are links to the traditional UK recipe for mushy peas and a more modern quick one. You can use any whole dried peas in the first and in the second canned peas instead of frozen.

    It warmed up to 40 today but with no sun there has not been as much melting as I hoped for. We've got more wintry mix falling later in the week, forecast for the day I'm driving back from Boston of course.

    Dinner tonight was corned beef and cabbage. The beef needed to be cooked by the end of the week so I ignored the holiday schedule. I'll buy another one at the St. Patrick's Day grocery store sales but probably won't cook it for a while.

    The sun finally came out today and some of the ice fell off the roof. There’s still more than a foot of snow on the ground.

    Too sunny here but at least it didn't get much above 42. 😍 Next week will be icky and warm, so enjoying this slight reminder winter isn't over even though it never really arrived here.

    I made country style ribs in the crockpot and used up all the leftover veg for sides. DH had to have BBQ sauce; I ate mine more "Kalua" (sp?) style (hawaiian, braised in fat, not the drink).

    Up at 5 am this morning after a fitful night, waking to look at the clock. DH was scheduled to arrive at the surgery center at 6 am for the cataract surgery on his left eye. I'm thankful that everything went well, also thankful he has no more eyes. I'm dragging. Dinner may be from Subway.

    Last night's dinner was baby back ribs, mashed potatoes and brown gravy.

    I was reading that and also had to reread it when I saw "no more eyes". :-)

    I think the timing will work out for making another pie on March 14.

    Wally, Hawaiian style pork is delicious . I’d bet that pork cooked in Kahlua liqueur would also taste good.

    Carole, Getting up early combined with the clock change is exhausting. Don't get too comfortable because there might be YAG capsulotomy in your DH's future. The laser procedure takes all of 5 minutes but like everything else it's scheduled early. I had the opposite problem with DH's cataract surgery scheduled for 2:00 PM. He's hypoglycemic and they wanted him to fast starting at midnight. We convinced them to start the fasting at 5:00 AM (we had to get up even earlier for him to eat) but he passed out during recovery and didn't get released until late evening. Thanks to that his second eye was done at 7:00 AM. His ophthalmologist is over on the seacoast so it's another long drive, the story of my life.

    Eric, I think you can spend the next 20 years perfecting your apple pie.

    Nance, I have half a head of cabbage that I have to use up soon. I'll see if I can find some nitrate free thick bacon.

    Tonight was a simple cheeseburger and cubed butternut squash dinner.

    Arizona keeps the clocks on MST (except for the portions of the state within the Navajo Nation). Phoenix is probably a big reason for this. On "standard time" it's often still 110F/40C at 9pm in Phoenix. Going to "savings time" and having that 110F/40C at 10pm wouldn't be pleasant. I don't mind that Arizona remains on standard time.

    I caught up on sleep last night. No whining today except to say yesterday was a reminder of what it's like not to feel good. I managed a simple dinner using cooked linguini out of the freezer, Raos, and ground pork. Also, his and hers romaine salads.

    I would like to stay on daylight savings time all year. I think things depend on how far east/west you are in a time zone. When I lived in MI sunset was almost an hour later than in New England since both are in the eastern time zone. It is definitely easier when your body doesn't have to readjust twice a year.

    Carole, It's so helpful to have emergency meals in the freezer.

    Maggie, the hospital cafe seems to prepare good meals. Can anyone buy food there?

    For lunch with my exercise friends yesterday, I ordered a Caesar salad topped with fried shrimp. The shrimp were overcooked. I brought my leftover shrimp home and heated them in the air fryer for dh's lunch. They came out juicier, and he enjoyed them.

    Dinner was two catfish fillets, seasoned and seared/blackened in my iron skillet. Side was boiled and buttered turnips. DH made his usual tartar sauce and, as usual, made too much. I like my fish with a squeeze of fresh lemon.

    Hi everyone,

    I found a lovely recipe by an Italian Chef Lidia Bastianich's Spicy Crispy Roasted Cauliflower - yum!

    Here it is if anyone is interested, I also baked the cauliflower with whole mushrooms cause I made too much batter. Definitely will make this again.

    • ¾ cup fine dry breadcrumbs
    • ¾ cup freshly grated pecorino or Grana Padano, or a combination
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 stick unsalted butter, melted
    • 1 large head cauliflower, cut into florets
    • ¼ teaspoon kosher salt
    • Warm marinara for dipping (optional)

    Directions

    • Preheat the oven to 425 degrees F. Line two baking sheets with parchment paper. 
    • Combine breadcrumbs, cheese, garlic powder and onion powder in a large bowl. Pour butter into another large bowl. Add the cauliflower, season with salt, and toss to coat in the butter. Add half of the cauliflower to the breadcrumbs, and toss well to coat thoroughly. Place on one of the baking sheets. Repeat with the remaining cauliflower and breadcrumbs. (Discard the remaining breadcrumbs.) 

    Bake the cauliflower until it's deep golden brown and crispy, 25 to 30 minutes. Serve it warm with the marinara for dipping, if desired.

    Carole, The hospital cafe is used mostly by employees and visitors/outpatients; the food is way better than what you are served as an inpatient. Anyone can buy food to eat there or take out. They start with breakfast early and until 8:00 pm have two entrees with sides, two soups, a huge salad bar, pizza, panini, grill and deli sandwich stations along with fruit, yogurt and baked goods. You can get a full meal for under $10.00. Once I met a man who lives in the neighborhood and eats there every day since his wife died and he never learned how to cook.

    Wally, If you ate too much Mexican food it must have been good.
