    Last night was my birthday dinner at the nicer of the two dining rooms at the club where we play golf. More accurately, where dh plays golf. I don't play often anymore. Members get a free entree as a birthday present. I had the fish entree, which was puppy drum, topped with crabmeat and shrimp in a butter sauce. The sides were potatoes and brussel sprouts. DH had shrimp scampi pasta. We both had wedge salads.

    The food was good and so was the company of a couple who are friends and members of the club, too.

    Today I will make a basic pasta salad to take to a barbecue gathering tomorrow. Tomorrow morning I will add fresh salad ingredients, cucumber and halved cherry tomatoes. Not sure what dinner tonight will be.

    Carole, your bday dinner sounds amazing.

    Our corned beef was perfection. I made a horseradish sauce to go with. Leftovers tonight. Maggie, I'm not Irish, so I simply eat it because it is yummy; nothing more, nothing less.

    m0mmy, You must have figured out what to have for dinner by now. Breakfast for dinner is always a good default.

    It’s snowing again. I guess that’s better than 90 degrees given it is still March.

    Dinner tonight was chicken in sour cream and onion sauce, lima beans and mashed potatoes.

    Last night's dinner was roasted asparagus and spinach and cheese ravioli in Raos alfredo sauce.

    We're going to a barbecue today that will be heavy on the grilled meats so I omitted meat from last night's meal. Once a year Gerald, a member of the woodworkers guild, hosts a barbecue at his place on a bayou. He grills sausage, ribs, and chicken on a large grill. Everyone takes sides and their beverages and their chairs. I will finish up my pasta salad today with fresh ingredients. It looks like we will have a perfect day for an outdoor gathering. Sunny with temperatures in the 70's.

    Sockeye tonight. I have a small bit of corned beef I will use to make corned beef hash for a lunch.

    Carole, That barbecue sounds like a feast. I hope you enjoyed it.

    Dinner tonight was chicken meatloaf cockaigne, cauliflower and mashed potatoes.

    Dinner was a sandwich with leftover meatloaf. Dinner tomorrow will likely be the same. Fourth meal on the meatloaf that I screwed up by forgetting to add an egg. Whew - then it's done.

    The barbecue was indeed a feast on a beautiful day. Dinner was a helping of my leftover pasta salad.

    I made roasted Brussels sprouts sprinkled with olive oil, rice vinegar. Salt and pepper and roasted for 50 minutes, the leaves were like chips and the center soft. Yum. Served with steamed broccoli and carrots and brown rice with tahini sauce. Vegan comfort food.

    The corned beef dinner came out perfect. I do believe it was the best brisket I’ve ever bought. The lemon pie was the stuff dreams are made of.

    No cooking today. Dinner will either be leftover Irish stew or take out.

    88° here yesterday and today breaking records. Back to normal temps tomorrow.

    I posted years ago. I'm more of a lurker.

    H & I waited until the weekend to throw-together a 1 pot ham boiled dinner for St. Patrick's Day.

    Water became a delicious broth with the ham, turnip, cabbage, carrots, potatoes, onions, salt and pepper.

    Teka - good to see you. Although I do meet up with you on other threads, this is my main "go to".

    Nance - 89 degrees here today. WAY too soon.

    Rischaler - the roasted Brussels Sprouts sound delicious.

    I finally got to the grocery store today. New potatoes, Campari tomatoes, cucumbers, orange juice, Bob Evans mashed potatoes, etc. But I did in fact have a meatloaf sandwich again for dinner. I did buy a fresh sushi California Roll to that will be tomorrow's meal.

    Minus, I always feel obligated to finish something even if it isn't great, probably due to what we were taught as children. It looks like you will be having some good meals this week.

    Rhonda, The Brussels sprouts sound yummy.

    Nance, With temps like that eating leftovers or takeout will keep your kitchen cooler. I drove through a wintery mix today but it turned to rain as I got further south. We’ve had too much winter but I’m not looking for summer quite yet.

    Teka, The boiled ham (or bacon as it’s called in Ireland) dinner is the authentic St, Patrick’s Day meal. Yours looks delicious.

    Dinner tonight was chicken and veggies in lemon sauce from the hospital cafe.

    Our dinner last night was leftovers, some warmed in the air fryer, some in the microwave.

    Rhonda, that's the way the Brussel sprouts with my birthday dinner at the club were cooked.

    Our weather is warm but the humidity is relatively low, which makes a big difference. I pulled some weeds yesterday and dh got our huge yard mowed. Our azalea bloom is over. Trees are about fully leafed out.

    Leftover sockeye for dinner; corned beef hash for lunch. YUM. DH wants a burger for dinner tonight. I bought some grass-fed frozen patties at costco so will be a first for us to try those.

    Definitely noticing the pollen counts…achooo!!

    Sharon was "in town" and ate there while I ran 8-1/2 miles. Running always seems to turn off "I'm hungry", so no dinner last night.

    Temperatures are below freezing in the morning and around 83F degrees for high temperatures, so my vegetable garden plants are still inside in their "Red Solo Cups" under grow lamps.

    We haven't decided on today's dinner yet.

    On Saturday we went to the funeral of our 34 year old neighbor—killed in a car crash. :-(

    Oh, the Brussels sprouts….that is how we cook ours as well. I used to not like them, but now….I do. :-)

    I love Brussels sprouts. Unfortunately DH does not so I don’t have them as much as I’d like.

    Whiplash temperatures here today high only 50. I wore shorts anyway. I’m not letting go of spring.

    Nance - I love that you are being defiant and wearing shorts anyway. We're also experiencing whiplash - 45 to 90. Need the heater going to bed. Need the AC in the daytime

    Eric, Like you I didn't enjoy Brussels sprouts because they were always served boiled. They are delicious roasted or stir fried. It's a shame about your young neighbor. Someday your garden plants will be able to move outside.

    Wally, One of the advantages of living in prolonged winter is no pollen yet.

    Carole, There are no buds on our trees yet and still some snow on the ground. The robins are out looking for worms in some of the less snowy patches so that might be a good sign.

    Nance, Did you make your own fry bread?

    No weather whiplash here. I went from sleet to rain to snow on the way home but it has been winter all the way.

    Dinner tonight was leftover meatloaf.

    Shrimp pizza (leftover from the freezer) and reheated on a stone and kale salad. Was tired after walking today in local gardens so I wanted "easy."

    Nance, I'm sooo envious of your dinner. I love tacos on fry bread. DH doesn't like Brussels either. I don't like them enough to push them on him. We both like cabbage.

    I made Inez's Tomato Gravy last night for dinner. Inez is my mother, deceased, and tomato gravy was one of her meals to feed a large family on a low income. It starts with cooking bacon. Next is making a medium roux. Add canned tomatoes and simmer. Serve over rice. She always cooked white rice and I cook brown in my amazing little rice cooker. Our side was a frozen spinach souffle cooked in the microwave.

    I season with onion powder, garlic powder, s & p. I think my brother Gary and my sister Linda, who both make tomato gravy, include chopped onions. My younger sister, Michelle, loved/loves the dish but her dh eats meat and potatoes, and her concept of cooking is making a meal as quickly and easily as possible.

    Carole - I like the Tomato Gravy story.

    I had guacamole for an appetizer with my evening Gin & Tonic. Trying to decide if I'm going to have cottage cheese & peaches for the entree or another round of sushi (California Roll).

    I still haven't gotten hold of the canned lemon pie filling so I can make the "Lemon Angel Bars". Also haven't found the Campbell's Onion Soup to make the easy French Dip recipe. Looks like both might be available at Wal Mart, so as much as I dislike that store - guess I'll have to consider a trip. But not the one closest to me since people are routinely attacked in that parking lot. Or maybe order from Amazon…

    Two girlfriends are coming over for Happy Hour tomorrow. I may cook the last of the delicious Bibigo vegetable spring rolls. Or maybe serve canned mackerel & canned rainbow trout with crackers. I find sardines too salty for my taste. My favorite is canned smoked oysters but probably not with these women.

    Carole, Your mom's recipe sounds delicious and very adaptable. Those family recipes bring back many memories.

    I have two Indian Taco recipes in my inbox this morning. The fry bread seems very doable. How did yours turn out, Nance?

    We had lamb loin chops for dinner last night, cooked on the grill. Side was boiled red potatoes with butter and sour cream. Condiment was mint jelly for dh, a requirement with lamb chops.

    Today is Wednesday, my day to go to lunch with exercise friends. We're going to a Mexican restaurant. I will probably have fish tacos.

    Carole the fry bread Is very easy. I usually cut the recipe in half for just two people. Mine turned out great and DH declared the meal “wonderful!”

    Tonight will be oven bbqd pork steaks assuming I get to the store to purchase them.
