    Last night's hot dish was tasty. I browned some ground beef and added a jar of Rao's. Then I layered sliced potatoes and sliced cabbage with the meat sauce and cooked covered in the oven at 350. The salad was the rest of the bagged crunchy kale salad with addition of an avocado.

    No plan for cooking tonight. Will probably order and pickup a thin crust pizza. Or maybe a shrimp poboy. Depends on what dh prefers.

    Carole, so glad you missed the brunt of the storm!

    Last night was a one skillet dinner: cubed potato, onion, and carrots cooked in a small amount of chicken stock, then added chunks of chicken and shredded cabbage. Seasoned with s&p. Not fancy but helped use what was on hand. Tonight may be shrimp fried rice unless some other inspiration strikes!

    Carole, "hot dish?" Spoken like a true Minnesotan (even though you live most of the year near NOLA).

    Had a big pepper/mushroom/cheddar omelet for brunch yesterday (ate it out on my deck, which kept Happy from trying to climb into my chair to beg for some). Dinner, at Cellars, was a crouton-less Caesar salad, then grilled sirloin with Zinfandel demi-glace and green beans. Dessert, at home, was Greek yogurt with chopped strawberries and a drizzle of honey.

    Today was quiche & salad. Tonight? Leftovers (my steak & green beans, ribs/mashed sweet potatoes/Brussels sprouts/green beans for Bob).

    Brunch was cheerios with a sliced banana. Supper was a crudites - radishes, cucumber, deviled egg and wheat thins with spinach/artichoke cream cheese spread. Accompanied by a tall Gin & Tonic. It's still 95 here most days. Way too hot to switch to bourbon yet. Desert will be 1/2 cup shelled pistachios.

    Carole - I like the sounds of your hot dish. I have to remember to buy some cabbage.

    Beaver - you're doing just what I am. Concocting food inventions based on what has to be used. I have 1/2 of a baked potato for tomorrow along with one remaining slice of quiche and a cup of salad. Oh boy - along with Susan I really miss Bedo. Then I'll have to decide whether to defrost 'new' meat/fish/chicken or start on the one serving frozen left overs. I'm really hungry for spaghetti but I bought an acorn squash instead of a spaghetti squash last week. Guess I was thinking about fall, however that was clearly a mistake since it's hot as blazes again.

    Well somehow after all these years, I got unsubscribed from this list. I’ve been worried about all y’all so I’m glad to hear that things are mostly ok. Carole, I’m very happy you escaped the latest devastation and Lacey, I’m glad you haven’t picked up any nasty bugs. I too enjoyed your travelogue Minus and so wish we could all travel again. When you do come through here I’ll be much closer to the city to meet. I don’t know when I’ll get to Houston again but we will as soon as we can safely do so

    There has been food albeit simple - individual quiches, chicken enchiladas (btw Sandy - I’ve never seen Costco with no chickens!), beef stroganoff and too much delivery.

    We may have found a house, a villa (condo) which are popular around here. The bones are very good but it needs some major redecorating and updating. But it’s where we want to be (just down the road from the apartment) with bedrooms on the first floor and no yard maintenance. It has two nice decks that face woods one of which is screened in. I will miss my garden but I think this will allow us to live in our own home longer and also allow us to travel whenever we can do that again. There will be enough to do inside the place to keep us busy for the entire winter.

    Carole- I’m a big Lee Child fan and have never gotten over my outrage at Tom Cruise being cast as Jack Reacher.

    Nance - did you know Lee Child has turned over the Reacher 'franchise' to his brother? The book that just came out - they wrote together. Then the brother is on his own. I heard Child speak and give his reasons, which I thought were good. But yes, I certainly agree about Tom Cruise. A horrible choice for anyone who has actually read the description & formed a picture in their mind. Not to mention the personality difference.

    I love the idea of a 'villa'. Wish I could find something like that so I could just lock the door & leave at the drop of a hat whenever the mood struck. (oops - that was another life, though hopefully a future life too). Is it two bedroom or three? Is it a gated community? I think you'll really enjoy letting go of lawn mowing. With the decks you can still have a ton of plants & flowers.

    Brunch was a deviled egg. Supper will be a hot dog. A friend cooked a huge pork butt for a family dinner Sunday and is bringing me some pulled pork tomorrow.

    I was aware that the last book was written by both of them but wasn’t aware that his brother was taking over the franchise. Interesting. I do know that the next film (or maybe it’sa series) will have a different actor who better fits Reacher’s description. It wouldn’t be so bad if he wasn’t so distinctive looking.

    The Villa has three bedrooms and three full baths. One bed and bath is in a mostly finished basement. Two gas fireplaces and a deck on each level. It’s really a nice arrangement. There are lots of skylights so it’sa very bright place. Not a gated community but very close knit neighborhood with lots of folks our age and older. You know, the ones who are always home and looking out the windows lol. Lake St. Louis is a sort of resort community with two recreational lakes and lots of green space. As you might imagine there are lots of covenants and restrictions.

    Tonight is grilled pork tenderloin and apples. There will be something green too but I don’t know what. I’ve been taking meloxicam for a flare up in my arthritis knee. Although it doesn’t usually bother me this round is giving me severe heartburn and some stomach pain. Not good for the appetite.

    DH is spending the night at DD's tonight, she returns from her trip tomorrow night. I am sending him with a kale salad with strawberry vinaigrette (strawberries crushed and mixed with olive oil and vinegar dressing) and extra strawberries, pecans, red onion and goat cheese. He is a kale fanatic. He is not super hungry as he had a big lunch of tuna salad on wheat sourdough, sweet potato chips and some massive grapes! We spent the morning at the ophthalmologist where he was checked on very short notice for a detached retina. He started noticing arcing light on the opposite eye from his recent surgery, along with swarm-like floaters, and mentioned this to the ENT at his third post-op last week. Doc was a bit alarmed and got in touch with his colleague for this appt. Classic symptoms of a detached retina, but there seems to be no evidence of that, thank goodness. The doc thinks maybe an ocular migraine - which is a distinct possibility, especially since he had been off and resting, then staring at computer screens all day. Interestingly, DD also has had them - her symptom is a black void wherever she is looking. She was worked up by an ophthalmologist as well. DH will have an MRI and carotid US next week just to double check. Latest news is that a neighborhood feral cat had three kittens under DD's shed - I have to figure out how to keep her from keeping one, or more, of them...We are already taking care of her six chickens, one tiny orange parrot, and her growing number of specialty fish in aquariums. I have her elderly dog at my house, and the cat she got me as a "present" after one of my recon surgeries. We really don't need any more pets to manage...

    I don't know what I am eating tonight. I didn't sleep well last night, so I may just watch some TV and eat popcorn. I did make some ranch dressing so may eat some veggies with that instead. Undecided.

    I made spaghetti squash just the othernight but it sat on the kitchen counter for a week until the weather cooled off. I just toss it in the oven at 450F and turn it halfway. For the sauce I use Prego but I bring it to a simmer and add chopped red bell peppers, mushrooms, olives and some pre cooked ground turkey I keep in the freezer.

    A busy day and DH was home so after dropping SUV at Subaru we picked up Italian at a local place. Cheese ravioli in rose sauce, side salad and truly drippy delicious garlic knots. No wonder my weight loss has stalled. 😏 After getting offline i shall be planning our healthy meals for the rest of the week due to your all good ideas!

    My MIL asked Sharon and I to take her to the hospital. The imaging discovered she has 3 compression fractures of the lumbar spine. We don't know much else right now. MIL is 83 years old and she is worried if, when or even if she should go back to her home.

    Oh my goodness Eric. So sorry to hear this. I imagine she is worried. Is Sharon at least able to be with her in your hospital? Fingers crossed.

    Oh, Eric--fingers crossed, healing thoughts sent to you & Sharon for your MIL's recovery.

    Last night was leftover steak & green beans. For brunch today, low-carb avocado toast with broccoli microgreens, chopped shallot & homegrown tomato over WF's Hatch guacamole (spicy!!!), topped by an olive-oil-fried egg.

    Tonight Bob the hunter-gatherer stopped at Costco and brought home a rotisserie chicken and shrimp mega-cocktail. I reheated the rest of the green beans and his leftover brunch potatoes (which I spurned), supplementing them with the remainder of a seedless cucumber and homegrown tomato--which I tossed with basil, olive oil, champagne vinegar and flake salt. Dessert was Greek yogurt with sliced strawberries, crushed unsalted cashews, vanilla extract, 1/2 tsp. raw honey, and monkfruit sweetener. I will try not to give into post-midnight carb cravings--darn that paleo cereal, Cheerios, and WF's flour tortilla chips!

    Tomorrow it will be warmish (70s) for one last day before the bottom drops out. Here by the lake, we won't get frost, but I expect that in the low 40s/high 30s much if not most of my basil will bite the dust. Will try to bring the more robust ones indoors to re-pot, and freeze the rest packed into ice cube trays with water. May harvest most of the mint & thyme too, and maybe the 3 little baby zucchini still on the plant. The rosemary is pretty hardy--it'll be the last to be harvested. All the tomatoes have been picked: down to about 5 cherry tomatoes, a small "Green Zebra" and medium "Pineapple" still on the sill. After that, it's back to buying 'maters again till next June or July.

    Oh wow Eric - a dear friend’s 96 year old mother was just diagnosed with the exact same thing. She is having some sort of non surgical procedure done and being released the same or next day. I hope you MIL can be successfully treated.

    Tonight was a roast beef, salted tiny potatoes and haricots verts. DH’s older sister and DBIL are coming for lunch tomorrow. I’m making a salad nicoise with the addition of some grilled chicken because DH dislikes tuna. Dessert will be appledumplings with cinnamon ice cream.

    Dinner last night was great northern white beans cooked as usual with onions, garlic, andouille sausage. Served over brown rice cooked the same as a week ago and yet the result was not as good. The rice was still crunchy. I added a little water and microwaved for a few minutes. The only side was cornbread.

    eric - hoping that this is something that can be stabilized for your MIL. Thinking of you and Sharon.

    Last night was Andouille sausage with peppers and onions over pilaf, with some corn on the cob. I have two sketchy looking bananas so am going to make a banana cranberry walnut bread today and help DD put together an interview outfit for tomorrow!

    Lost in familiar places here in NH. I seem to lose all sense of time and days when here, especially because since Covid we mainly stay safely in the house...except for occasional walks, and our Lobster Fest on the beach this past weekend. The lobsters, steamers, and king crab legs were all wonderful, and there were lots of extra steamers and small potatoes, so our neighbors/organizers suggested I bring them home. I decided to make steamer chowder, and there was plenty to share with them as a “thank you”. And then there were also a lot of extra king crab legs. So we brought some of those home. And the result of all of this ocean bounty was the experimental, but delicious steamer chowder, and a very generous crab salad over greens for our Monday night dinner. And that closes out our Seafood fest for this year,

    Since then, we've been back to eating chicken dishes. ;)

    Nance, I'm so pleased that you have selected a new home. It sounds lovely, and you will no doubt become a great container gardner! We just had tree guys here for some major work, and if I could get myself in gear, we should really be following your example of finding a home that requires less attention. Instead we seem to remain stuck with maintaining two! Ugh! Downsizing in the Boston area is not an easy or easily affordable task, umfortumately.

    Eric, I do hope that Sharon’s mother recuperates well and soon, and that she is able to access helpful care through this recovery time.

    Special, what a relief that your DH found no retina problem. I recall having ocular migraines a couple of times, and it is definitely a weird experience...especially since I never have had headaches. But the symptoms can certainly appear to be related to retina problems...scary!

    lacey - DH is not usually a headache person either, at least up until the sinus issues, and he didn't have pain with this - just the weird light arc in the peripheral and the swarm of floaters. It lasted for about a week - intermittently - but not since, and the eye doc's scans showed nothing of concern. I'm like - welcome to your 60's and up - put one fire out and another starts. Also - those lobsters are as big as my head!!! Officially jealous. I'm not a super seafood person, but I am into lobster!

    Edited to add - my quick bread this morning was made with coconut oil instead of butter or shortening. Good crust, I subbed one to one on measurement, I can’t detect coconut flavor but wouldn’t have minded if I did. Here is a pic, and yes, I took a slice from the middle.

    Yum on the beautiful food pictures.

    Last night's dinner was flattened chicken breast fillets breaded and quickly browned. Creamed spinach that was delicious, made with two packages of chopped steamed spinach, reduced fat cream cheese and full fat butter (!). The spinach was coarsely chopped, which made a difference. Ho-hum romaine salad made mostly for dh. I had a small portion and doubled up on the spinach.

    Tonight's dinner will be pork roast and sweet potatoes. I bought a very nice small pork butt roast yesterday and will stuff it with green onions and garlic.

    Once again there were no lamb chops at Sam's Club yesterday. I will have to make a trip to Fresh Market, which also has nice thick rib eyes.

    Oh my - those lobsters look delicious. Color me jealous too Lacey. Do let us know when you hear about your lumbar MRI. Special - interesting oil sub. The bread looks good. Glad your DH's eyes are OK. Eyes are probably my most treasured body parts. Eric - is you MIL OK? Carole - love the contrast - reduced fat cream cheese but full fat butter. Do you add onions to your creamed spinach?

    I have a large bag of fresh spinach to use. I think I'll do a spinach & fresh mushroom omelette today. Tomorrow will likely be a Florentine but I'll sub out the chicken for the large boiled shrimp that I shelled and froze as an experiment. Or maybe I can add spinach to a new recipe I found for Stir-Fry Noodles with Shrimp so I can use the rest of the fresh mushrooms. And do Chicken Florentine the next day... So many decisions.

    Hopefully next week I'll get down to Trader Joe's for my semi-annual shopping excursion.

    minus - the interior of the bread is just the same as if I had used butter or shortening, the crust is crispy but not thick so it is a pleasant texture. I’m not a super crunchy person - I can’t do biscotti or chew ice cubes, lol! I buy frozen cooked tail-on shrimp from my frozen food peeps, your previously boiled shrimp should work. I usually thaw in warmish water for just a few minutes - works great for quick dinners
