Nance - can you throw bacon bits into the popcorn bowl for your DH? (LOL)

Mae - I was so touched to read about your anniversary on another thread. And the best part - YOU'RE HERE. I'll think of you tomorrow while I'm making fried rice.

Eric - Thanks for the recipe. Everything I saw on the WWW was in German. I remember my grandpa talking about apple kuchen. Love the story about how you got the recipe from your grandmere and passed it on to your DD.

I was a good girl & walked right after I opened my presents. Then had eggnog with rum before I started cooking. Meatloaf is in the oven, along with my first attempt at Hasselback potatoes. Even though all the recipes said use Russet or firm potatoes, I had new red potatoes - so that's what I used. Really - I'm only serving myself so the taste is what matters. While it cooks I'm sipping the last glass of "1000 Stories" wine. Delicious. Then I'll have a glass of Paso Robles Zin with my meal.

All the food sounds so wonderful. I can’t emphasize enough how much I’m enjoying eating and for the first time since I was about 10 or so, calories are unimportant, only content. I’ve maintained my weight for 2 months with no effort and I can’t believe some people are lucky enough to live like this.

Breakfast was the leftover half of the omelette I made yesterday with a few fried potatoes chunks. Lunch was fancy crackers with garlic/herb cheese spread and a apple/orange/pineapple fruit salad.

Dinner will be a big, somewhat greasy cheeseburger on a sesame bun with salad and I’m really looking forward to it.

Tomorrow we head home from the beach for some downtime before restarting treatment. Not sure if I mentioned if but I was off meds for the last week at least but got the all clear from cardio to resume.

Mae - Hooray for a week off meds. And for the taste of all the foods after your long hiatus. What beach did you go to?

Reporting in that the Hasselback potatoes were beyond delicious. After cutting, I rolled in EVOO and garlic. Half way through baking when they'd started to open, I added more garlic salt & some rosemary and drizzled with melted butter. Normally I eat two new red potatoes. I ate four!!!

Merry Christmas my kitchen table mates - or Happy whatever you are celebrating, and agree - toasting to all here and absent friends, well said eric. Interesting recipe - my MIL made fruit ones.

I actually remembered to take photos of today’s food! Brunch was sticky buns, fruit, and sunset mimosas. Dinner was standing rib roast, loaded scalloped potatoes, and asparagus with toasted hazelnuts and 2015 Cab from Castello Di Amorosa in Napa. Dessert was lemon cheesecake. I’m out of order, but what else is new?

All, the food looks and sounds yummy! Hope it was a happy day for all.

Spiral ham here with sides, including new for me mashed turnips. I also made an ugly looking apple pie (for some reason my dough wouldn't come together as it normally does - maybe the weather). Anyway taste made up for it.

    Everyone's meals look lovely!

I didn't prepare any holiday meals as it is just me this year due to covid but I made some fudge that I sent out as gifts to family and Mexican wedding cookies for myself. Dinner was baked wild salmon and turkey sausage and kale soup mixed with a variety of chicken noodle and I had the cookies for desert.

imageMerry Christmas! All the food looks great. We had spiral ham, mashed potato, corn, baked sweet potato Green bean casserole. Dessert were cookies, supplied by the Amish bakery, decorated by Granddaughters. And Pumpkin Pie and Apple pie. With coffee, and Baileys Had my DD2 and family, and DS1 and wife. DD1 and family Zoomed in, as did DS2. Fun time. Above is my dessert wreath that made an appearance, but wasn't eaten, as there was so much else. LOL But Ive been making them fir the holidays for more than 40 years, so out it comes, along with a dozen made for the neighbors and smaller ones to go home with the kids.

I wish you all Peace, Love, and Comfort in these weird times! Much love

May this have been as merry and magical a Christmas as possible in these trying times.

The kids ordered us (online, from the ranch in TX hill country--not Houston, as I'd mistakenly thought, for us to pick up) prime rib dinner from the Palm. "Gigi" salad (iceberg, green beans, bacon, shrimp, hard-boiled egg with vinaigrette), and sauteed mushrooms as sides. One piece each of flourless chocolate torte and cheesecake. Took us 2 nights to eat it all. For brunch, I made omelets (Swiss & cheddar, Hatch & Fresno chiles, red onion, green bell pepper, shiitakes) for brunch. Made 5 slices of bacon--Bob had 4 of 'em. The kitties were overjoyed to get the cheese crumbs that escaped the intended trajectory of the rotary grater.

All the meals sound delicious and the pictures make my mouth water. This will be the Christmas that we didn't have dinner. DH lit the grill last night and immediately afterwards received a group email about a family Zoom get together. It would have been nice to be notified in advance. By the time everyone said goodbye we decided it was too late to eat a heavy meal. So the ribeye went into the refrigerator.

With any luck dinner tonight will be Christmas dinner!

I've never cooked those potatoes, Minus, but have seen them prepared on cooking shows. Glad they turned out so good. I'll have to look up some recipes.

DH woke up with vertigo. I've had it several times so I know how uncomfortable it can be to have the world swirl.

Again, I want all the food here, looks so good.

Chisandy, we haven’t been to Fredericksburg but friends have and rave about it, lovely place for romance and German food.

Minus, we’re at Quintana beach near Freeport.

Heading home soon, got see’s candies waiting at my door, yum.

Great pics! Wish I'd thought to take some. Special, I have the same holly pattern china (among others).

Another Christmas come and gone so quickly. Today it’s back to home improvement. Unfortunately this means a trip to Home Depot where people will be fighting over discounted Christmas decorations.

Carole, poor Monty- that happens to me when I change my head position too quickly and the little ear crystals get out f place. I have learned how to correct it but have sometimes resorted to meclazine.

I,too, forgot to take pictures! Dinner was roasted pork tenderloin with raspberry chipotle sauce, roasted mixed potatoes ( sweet, red skin and russet) with onion and garlic, and broccoli. Available for dessert were four kinds of freshly baked cookies. Wine was a California Rhone blend. Just the two of us but today DS1, DDIL1 and DGDs 1,2,&3 are coming. Planning to make meatloaf so we will have some for sandwiches.

Blessings to all, whatever holiday you celebrate or not.

Just an FYI, I came across this Jamie Oliver video for Bubble and Squeak for holiday leftovers. I’m gonna try it this week but wanted to share.

Mae - thanks for the Bubble & Squeak recipe. I expect you ate at the one time great Brit restaurant, which went downhill and then sadly closed forever - The Black Lab. And I loved Cezanne, the jazz club upstairs. I looked up the beach park where you were. They have cabins to rent for those of us w/o campers. Hmmm. I particularly love the beach in winter when it's not so hot & crowded.

Nance - did you get what you need at Home Depot? They didn't have what I wanted the last couple of trips I made. Even though there's one w/in 5 miles of my home, I try to hit the competition - Loews.

Carole - the potatoes were so easy. Line a baking sheet - I used alum foil. Slice potatoes 1/4" widths but not clear through. I rolled them in EVOO and garlic & placed on baking sheet. Half way through cooking when they start to 'fan open', I drizzled with melted butter, more garlic & rosemary. All the recipes say cook 425-450 for an hour, but I wanted to cook with my meatloaf so I did 350 for and hour and 450 for 20 minutes to crisp them. For reference I was using new red potatoes. I expect Russets might take longer. There are a ton of variations - including bacon or putting a cheese slice between each fan space.

Moon flower - what is your wreath made of? Beaver - yup, meatloaf sandwiches tomorrow. Tonight was the leftover pinto bean concoction with french bread.

    Delayed Christmas ribeye was delicious.

Bob's working late every night through Thurs. (but plans to be home before midnight on NYE) because the guy with whom he trades call took his family (14 in all) to Mexico for vacation. My guess is that this rough late-night week may stretch into almost 3 weeks, because his colleague will almost certainly have to quarantine upon his return (unless he figures that being a doctor, having been vaxed--and that nobody's enforcing post-travel quarantines--lets him go back to work). Bob says some hospitals are making symptomatic doctors come in to work unless they test positive--so they're being discouraged from being tested, since the staffing situation is so dire!

Last night's dinner was a Caprese over arugula, and a nuked frozen keto chicken Cordon Bleu. Tonight, probably more salad, and nuke a couple pouches of Indian food (lentils & palak paneer). Looks like dinner for one until further notice.

Tonight was an Outback inspired Surf and Turf with a seared NY strip, sautéed shrimp with broccoli and mixed veggies.

Last night was Mexican from a nearby Mexican restaurant. I ordered and paid online. With light Sunday traffic I drove to the restaurant, picked up the order and was back home in 15 minutes.

We had our evening cocktail and then warmed up the burrito dinners after transferring each order to a plate. Win, Win, Win. I didn't have to cook. We enjoyed the meal. We supported a local restaurant.

Dinner tonight was a great big cheeseburger again, courtesy of DH. It’s delicious but huge, I’ve been working on it for almost an hour now.

We usually order carry out on Sunday nights. Last night was fried chicken with mashed potatoes and gravy and green beans. The chicken was ok - battered instead of breaded - not my favorite. Everything else was good but I probably won’t order from them again. Tonight was vegetarian night - fire roasted tomato soup and garlic bread. My nieces sent us a box of edible arrangements containing chocolate covered fruit slices, among other things, so a chocolate covered banana chunk and a chocolate covered strawberry will be dessert.

We have some nasty weather coming our way this week. That usually calls for chili. For a change, I'm actually enjoying cooking now that there's not so much pressure to get work done. Don't get me wrong - there's still plenty to do, just more time to do it

Up too late last night (didn't take enough melatonin), so slept in till lunch, which was avocado toast (homemade guacamole on low-carb toast, topped with cherry tomatoes, shallots, cilantro and an olive-oil fried pasture-raised jumbo egg). Odds & ends for dinner: cucumber slices with hummus & babaghannouj; charcuterie (mini-salami, prosciutto, jamon iberico) & cheeses ("Le Marechal" raw-milk Gruyere; 3-yr Gouda, 7-yr cheddar); and mixed nuts (pistachios, cashews, VA peanuts--the latter a gift from one of Bob's colleagues). May have a small salad later.

Speaking of gifts from Bob's colleagues, the annual Shatilla Bakery baklava tray (from the the Little Co. of Mary GI group) arrived today. No idea what the heck to do with it this year. In normal years past, I'd taken some to WDCB for the party surrounding the Holiday Hoot studio show; to our BFFs' as a Christmas dinner dessert, and saved some for New Year's Eve (sending some home with Gordy & Leslie). Of course, I'm trying (not always successfully) to avoid sweets; and the pandemic put the kibosh on all those eventd--and when the kids come back from TX, they're going on "Whole 30." So maybe I'll put together a couple of plates for the next-door neighbors on either side of us to leave at their doors. No point in Bob sharing them with colleagues (except maybe at Union Health), since all of them got the same baklava trays and are doubtless wondering what to do with them.

Last night's dinner was speckled butter beans (fresh frozen) cooked with large dice pickled pork and seasonings. Brown rice that came out perfect. Romaine salad with additions. The beans were delicious. We both enjoyed them.

Tonight will be crab cakes made with lump crab meat. Not sure about side/s.

Not dinner but I made the Bubble and Squeak. I made a very small batch with small gold potatoes, cauliflower, carrots, shallot, rosemary and parsley. We really liked it (DH said it tastes like thanksgiving) and leftovers have definitely been elevated by this.

Dinner will be salad after yesterday’s big burger.

    Illimae...that looks awesome.... :-)

We cooked a turkey for Christmas for MIL and rather than waste the bones, I made broth, which I'm now canning for her. It's sort of a late Christmas present so she can make meals that are other than the internet shopping-home delivery "TV dinners".

Back in May, MIL saw her doctor because of back pain. They found some compression fractures of her spine and 3 kidney stones--12mm, 9mm and 5mm. The fractures have healed but the kidney stones remain and have been hurting her so much that she makes only the absolute minimum amount of moves from her recliner chair. Right now, to move, she's using a wheel chair and can't drive.

We have 2 people in a 4 bedroom house and have offered to have her stay over here, but she refuses citing that it would be too inconvenient to us. When we're over there, one to several times a day, we greatly enjoy talking with her and she with us, but we just can't quite convince her that it would be more convenient for everyone if she stayed at our place. Sharon and I will very likely be the same when "that time" comes for us, so...... :-)

The most recent (I think it's revision Z-80.a.96.3.41.7.j) schedule for the outpatient procedure has her getting the first stone "blasted" in early January. Hopefully, this happens and she can regain some of her physical ability.

    I guess I've been ranting a bit.

Eric, maybe you could convince her to “visit” for a week or two? She might enjoy that and rethink your offer.

carolehalston - Those crab cakes sound great. Sounds like you have access to some good crab to make them with. We can get some decent ones at Whole Foods, but not available for delivery. May have to order take-away from Bonefish Grill - would love to have some for New Year's Eve.

illimae - Wow, are you cooking up a storm there! You have been posting some fine looking food photos.

Made a mix of leftover roast turkey breast, gravy, sauteed shrooms, butternut risotto plus garlic & various other spices + cranberry sauce on the side for dinner. Have enough left over for one more meal.

  • chisandy
    chisandy Member Posts: 11,408

I forgot who said it, but someone (Burt Reynolds?) quipped "God invented kidney stones because men don't go through childbirth." Hope your MIL can get the rest of her stones blasted, Eric.

Brunch was French-style slow-soft-scrambled eggs with chives, and toast on the side. (From now on, you can assume all my breads are low-carb unless I confess otherwise).

Bob worked late tonight, and I didn't feel like cooking, so I heated half a can of Mediterranean clam soup (with beans & kale) and made myself a grilled cheese sandwich (Kerrygold cheddar) with grape tomatoes on the side. Hit the spot, considering the suddenly wintry weather. (2" of snow, turning to sleet and later rain). Nursing a cup of orange herb tea right now. Zoodles & shirataki tomorrow night with pesto and more tomatoes.

    Our Whole Foods delivers.

Celia, we do have access to good crab meat. My crab cakes are mostly crab meat with just enough filler to make them into a patty. I make the patties and refrigerate them prior to cooking. Last night's crab cakes came out especially good. DH made a remoulade sauce.

Our side was very good, too. In my recipe notebook, I ran across a recipe for artichoke heart casserole that called for dressing mix. I had a bag of a popular brand I had bought before Thanksgiving. Name??? Not Stovetop. The recipe was simple, a WW recipe, and the casserole really suited my taste buds. Kind of an artichoke dressing. I ate too much of it.

Tonight I will use another recipe for a brown rice and broccoli casserole using some fresh broccoli and cooked brown rice. I will probably cook some lemony chicken to go with it.

I need to stop at a supermarket today to buy a bag of Camellia black-eyed peas and a cabbage. Maybe a corned beef brisket. New Year's Day traditional foods.

Dinner tonight will be picking through the fridge as I’m already cooking tomorrow’s dinner now. It’s the annual Xmas butterball soup. BFF’s family meal but I love it, so I carry on the soup tradition in my life too.

I’m sure all of you can smell this pic 😋
