Salsa Chicken - Carole, I too have had excessive liquid a couple of times. I've started draining the beans - and while I'm at it rinsing them too just in case some of the sodium gets washed away. And I no longer use a whole jar of salsa.
I remember when Moon was talking about the meal kits. Hopefully she'll chime in and update us.
You are all soooooo ambitious. I can no longer paint straight lines due to neuropathy from chemo (or maybe just plain old age but I'll use any excuse) I had my outside painted last year and it looks great. I was planning to use the same guys this year to start on the inside. Unfortunately it will be more extensive as I have to have two ceilings replaced. But after two leaks last year that required replacing the water heater, I have arranged for my house to be re-piped - all the old galvanized pipes in the attic and walls will be replaced with PEX. I'm holding on that because I don't want a crew in my house during the virus. So I'm holding on the painting too because the plumbers will have to cut holes in some walls requiring sheet rock repairs. And of course holding on the floor & carpet replacement since it would be silly to do that before painting. Sigh.
Only 40 degrees here this morning. And rumors of possible snow flurries tomorrow. That's really cold for Houston.

Carole, I love Hello Fresh! If you feel like it, please share the meal names and pics. I’ve cooked at least 30 of their meals and only two were just ok, the rest were great and it really helped me sharpen skills and venture out with Asian meals and new sauces.
Tonight will be French bread pizza and salad.

Last night was the last of the linguine with calamari, cut in with the last of the broccolini. Tonight, Bob is too tired (after his second shot yesterday) to venture out to dine in a restaurant's tent--and still doesn't think it's safe for me to do so, however well-vented it may be. (His reaction is abating). Part of the lethargy is that the NFL playoffs are on TV and it's only halftime...
Think we'll order out for either Indian, Mexican, Lebanese or BBQ. The Lebanese & Mexican restaurants are a block away and doing curbside; the Indian & BBQ joints are offering delivery. Whatever we eat I can supplement with salad (to sub for the starches). I'm getting too close to my immediate-pre-pandemic weight (instead of gaining a "quarantine 15" last spring, I lost it!), so it's time to "bring the hammer down" on the comfort-food carbs. Darn that leftover Christmas candy...

I just posted last night's dinner on the wrong thread! DH made a big pot of soup using a Lidia recipe. He saw Lidia making the soup last weekend on her cooking show. The soup featured cannelini beans and lentils and lots of veggies. The only meat was some bacon at the beginning. It's a hearty and tasty soup and we have enough to last us the rest of the year.
We had slices of buttered French bread heated in the oven as a delicious side.
Yay! We have appointments for our first and follow up shots of vaccine!

Ordered out from Pearl's Southern Comfort last night: pulled pork & red beans & rice for Bob, spare ribs & collard greens for me; mustard cole slaw for both of us. More of the same tonight for dinner. Brunch (which Bob brought home from Beard & Belly down the street) was quiche Lorraine and mesclun salad, plus one chicken sausage link. Killed me to throw out the crust, but a gal's gotta do what a gal's gotta do. (Bob had a sausage & green chile hand pie with 2 more sausages on the side).

Well - I don't go out to eat AND I don't pick up food. And I don't order food delivered. Today was as far as I veer from actually cooking every day. I cooked Costco spinach quiche. Not bad for taking a night off, right? Desert will probably be Trader Joe's iced peppermint pretzels with a lovely 2018 San Gregorio Garnacha wine that I think cost $9.99. Maybe I will splurge if I get a check from Uncle Sam.

My "dinner" was leftover guacamole with stale chips, one Royal Rivera pear, two sweet potato muffins, a glass of Garnacha, and some See's English Toffee (only available at Christmas). Not particularly healthy but I was in the middle of some very complicated computer reports & didn't want to stop.

We ordered from Middle Eastern Bakery & Grocery: mixed kebabs/kofta, hummus, babaghannouj, Jerusalem salad, tabbouleh, pita and and falafel (Bob had the rice from the mixed-meat plate). Plenty of leftovers for tomorrow night.
Brunch was a French herb-gruyere omelet. Hadn't made one in quite a while.

The chicken enchiladas made with leftover Salsa Chicken were good. So was the guacamole dh made. No leftovers.
My appointment for the first shot of vaccine is today at 12:50.

Carole, I envy you your vaccine appointment. Although we have registered, my county hasn’t even received any vaccine yet. Weare in the 1c group (which is 1b almost everywhere else .) As with most things in this state, the plan, if you can call it that, is nebulous.
Last night was chili. It was good enough but seemed to be missing something I couldn’t put my finger on. Tonight will be bratwurst with mustardy potatoes and cabbage.

Oh my - slow day here. My meal of the day before an involved Zoom meeting was Tonkotsu Ramen, premium noodle soup - to which I added mushrooms. After the meeting I had some rosemary/raisin crackers from Trader Joes with Boursin chive & shallot cheese. Too late for desert now so I've been sipping a small glass of Tuaca as I read emails.
We didn't end up with snow, but the counties to the North & West did have light snow falls. Our temperature hit 31 last night and I don't think my tomato plant is happy, even though I had covered it.

I used turkey from the freezer ro make a cassarole with things such as celery, chopped eggs, mayo, onion crisps, cheddar and a bit of cream soup. It's an old-fashioned recipe from a junior league cookbook of long ago. Served with a salad and some cranberry on the side. I enjoyed it; hubby not so much. Last time I made it I took his comments to mean he liked it. Apparently they meant he was trying to be polite. I'll file this one under "once in a while..." 😉

Well, I’m really impressed with all of the home improvements that are being undertaken by a few of you. I felt my anxiety rise just reading about them. My motivation for undertaking such projects/upgrades is sorely lacking, and the idea of having anyone come into our house “bubble” now to do it terrifies me, so we just “make do”. My rationalization is that we are easy on our environment, so not much wear and tear shows, and also, I am able to tolerate the way I decorated things years ago. Whenever I allow a decor change idea to float into my head, I chase it by figuring that if we ever move to a smaller place, our house will likely be a “tear down”, replaced by a mega mansion, which is true for almost every 100+ aged house in our town that has enough land to accommodate that (and sometimes just barely enough!). So...why bother! ;/ My grands will get to experience the “grandparents old house” feeling of the olden days. Not quite the “arsenic and old lace” look, but to them it could feel that way! LOL
Meanwhile, local son and wife have decided that they love living in chaos so much after spending the past six months having the bathrooms, and basement areas reconstructed in their new house, that they are NOT going to wait to demo and reconstruct their kitchen and dining room, so off they go! I believe they have no idea what it is going to be like to have no kitchen through the winter in MA. And I’m keeping my mouth shut!
I have a feeling they may land in our NH house for at least some time during that process.Dinners here have returned to those cooked by me. My drive home from PT sessions twice a week takes me right past Volante Farms where I have enjoyed (dared?) stopping to get their nice fresh veggies and delicious breads. The fish truck was also there on the days I have gone, so I’ve been buying salmon and scallops to integrate into our menu cycle. On a less healthful note, yesterday I also treated us to some carrot cake “balls” that caught my eye. Volante’s has a wonderful chef/baker husband and wife team, so their vast store is loaded with tempting baked goods and prepared meals. While I’m never tempted to buy prepared entrees, their baked goods are hard to pass up, especially in small quantities.
I’m posting a pic of a dinner we had with sea scallops, mushrooms, onions and shrimp over linguine a few days ago. We loved it, but will try to create something without pasta to use the scallops I picked up yesterday.
Last night we had baked salmon filets and salad, along with farro tossed with shallots, diced carrot, kalamata olives and diced portabellos topped with a bit of feta.
Tonight we’ll have marinated grilled chicken breasts, maybe microwaved yams, and a multi greenssalad.Sending peaceful thoughts to all as we navigate through this turbulent time...

The scene at the Ochsner Medical Center yesterday was impressive. Well-organized to handle a steady stream of folks wanting to be vaccinated. My only side effect is a sore arm at the injection site. The vaccine is the Phizer version. I am so thankful that, by some miracle of miracles, ruby red Louisiana re-elected our Democrat governor instead of the Trump endorsed candidate. Otherwise our vaccination rollout would resemble the debacle in FL where elderly people have to camp out in line. It took us less than an hour to drive the ten minutes to the Northshore Ochsner center, go through the process and drive back home.
Three of my siblings and spouses have also received the first dosage and we live in different areas of south Louisiana. The other two siblings are younger. I'm not sure whether they are pro or anti vaccine.
Dinner last night was a combination of the good and the bad. The good was large shrimp cooked in the air fryer. The bad was a frozen riced cauliflower with cheese sauce. Yuck. DH and I were in full agreement that the BYGO wasn't a bargain. It was so inexpensive and trendy that I had to try it. I wouldn't put it in my grocery cart again if it was free.
Tonight will probably be meatloaf.

The meatloaf last night was as good as I've ever made. I think the difference was not cooking too long. The sides were frozen kernel corn cooked with butter in the microwave and bagged kale crunchy salad with the addition of an avocado.
Now I've used the ground beef in the freezer.
Tonight? To be decided.

Leftover quiche yesterday with the last two Royal Riviera pears. I had made coleslaw but was too full. Oh well, the flavors of the tarragon, garlic, etc. will sit & combine nicely for another day.
I'm planning fried rice tonight. I'll be experimenting with using "Seeds of Change" organic Quinoa & Brown Rice - one of my favorites. I cooked it last night after dinner so it could chill today, and it was difficult for me not to eat more than a couple of bites for my desert. It will be interesting to see how this works.

"Roasted" a small chicken in the crockpot tonight. I'm addicted to my crockpot and this came out really well using an easy recipe from a "Fix it and forget it " cookbook. I wasn't sure it would work to my liking but the skin was even ok.
Sides of mixed frozen vegetables, stuffing ( DH request) and a little brown gravy. Tomorrow night I'm on my own since DH is out so maybe breakfast for dinner. We'll see. 🥞☕

Well I got sucked into a book and I didn't want to stop - even for fried rice. I had two large helpings of coleslaw accompanied by a handful of Trader Joe's Rosemary/Raisin crisps with Boursin chive/shallot cheese. Easy to eat while I was reading. Desert was sipping on two short glasses of Amarula while I talked to my BFF on the phone.

DH was about to go to the supermarket yesterday with a short list when he suggested we have a casserole with sauerkraut, pork, and potatoes for dinner. We've had this in the past but not for a long time. I quickly agreed. We had a couple of trimmed shoulder pork chops in the freezer.
He put the casserole together and it was ok. Not memorable. The pork was a little tough. Sausage works with this recipe, too.
Looking forward to receiving the Hello Fresh meals this weekend, mainly because they will answer the question, What's for Dinner?

Carole, living in a red state (Dem. Gov. notwithstanding) with a smaller population than FL or TX is probably what enabled you to get vaccinated. IL? Fuhgeddaboutit. Trump hates Pritzker (and quite frankly, I'm surprised JBP isn't hunkered down somewhere away from irate mobs...including Chicago bar & restaurant owners who, despite Mayor Lightfoot's pleas for permission to reopen to even limited indoor dining, have been told in no uncertain terms that the city hasn't been below an 8% positivity rate and above 20% of ICU beds available long enough to be considered to have met the metrics for moving even up to mitigation tier 2, much less 1). No hospitals are anywhere near ready to release vaccine to Group 1B--many (mostly in ghettos) are having a tough time convincing staff to roll up their sleeves. When the city opens its vax sites at City Colleges, it'll still be for outpatient health workers still in Group 1A. And when, 10 days from now, the Nat'l Guard opens their sites...it'll be only in suburban Cook County, not the city. So I'm doubly screwed (almost all my doctors are in Evanston/Skokie/Lincolnwood, but their "patients" whom they'll soon vaccinate must live in those towns; and Amita St. Joseph in the Lakeview neighborhood of Chi., where my former primary's NP is and still renews my prescriptions, doesn't have enough on hand).
Last night had Costco shrimp over lettuce--made remoulade sauce. Side of sauteed black radishes and a small bi-color Caprese (hold the cheese). Tonight I ordered from Avec: bacon-chorizo stuffed dates, 1/4 roast chicken plate, a hanger-steak app.

The picture above is Meal No. 1 from the Hello Fresh shipment. It was good but loaded with calories. We were impressed with the packaging. Insulated box, large ice packs on the bottom. Brown paper bags with the dry ingredients for each meal. Two small packages of chicken pieces for the two meals with chicken.
One plus for a meal kit is the right amount of veggies and other ingredients. For some people that might be a minus but I do have some waste when I clean out the veggie drawer and empty little containers of leftovers. DH and I are not good at using leftovers unless there is enough for another meal.
For several days I have been setting up an Etsy shop, offering homemade crochet dishcloths/washcloths for sale. It has been time consuming because uploading pictures is slow with our internet service. I don't actually expect to sell my items but have enjoyed the process. My prices are higher than competing shops selling the same thing and what I'm selling isn't in great demand. As I mentioned on another thread, my SIL in OK took in $10,000 last year selling her homemade face masks. She is a quilter and has a large sewing studio in her home with a variety of sewing machines, including an embroidery machine.
The name of my shop is CarolynHomemade. I may set up a shop for dh, offering for sale a few of his hand turned items. I'm not keen on that idea because sales would involved more work with shipping. Of course, competition is keen on Etsy because of the number of competing shops in any category. Fortunately, we aren't desperate for extra income!
Today I need to follow Minus's example and take a walk for exercise. I have been very sedentary the last couple of weeks since I stopped going to the gym because of health worries.

I LOVE the crochet washcloths. Since I don't usually go to farmer's markets or craft shows, (even pre-Covid) I appointed a friend to find me a bunch so I have a good stock. But will definitely remember that I can buy yours in the future.

Dinner was a NY strip steak from the freezer and Bob Evans mashed potatoes. I have one of those counter-top grills with a water reservoir on the bottom that doesn't splatter grease anywhere. Back to leftovers tomorrow.

Flatbread pizza for dinner tonight. A little organic EVOO + artichoke bruschetta + pesto as the base, then chicken sausage with asiago & sun dried tomatoes, then baby bella shrooms and finally shredded organic mozzarella. So good!
Have a package of Luke's Lobster meat thawing in the fridge for tomorrow. Will make lobster rolls (w/melted butter & lemon) using brioche buns & Tailgate Coleslaw from Whole Foods as the side tomorrow. I am so looking forward to the lobster rolls!
