So...whats for dinner?

Oh Mae - please can I come to your house??
Contractors left at 6:30pm. Too tired to eat, let alone cook. Dinner was two shot glasses of Amarula. (oh blessed nectar of the gods). I might have some cubes of Gouda cheese later - or some almonds - or not.

Last night used up some items in the house freezer: three small Italian sausages, a bag of cooked linguine. I made the tomato sauce with a large can of whole tomatoes, ground up in the food processor, tomato paste and seasoning. As always with pasta, fresh grated cheese, in this instance, pecorino romano. Result was good with leftovers for another meal. Our portions were guided by WW moderation. Side was a wonderful tossed salad with delicious ingredients. We commented that we only have salads this good at home.
Trying to think of a main dish using the leftover beef roast for tonight.
Beautiful plate of food, Illimae. The ribbons of carrot are so colorful.

Yesterday DD and her boyfriend came by for dinner and then we went over to her grandma's (my MIL). Because they didn't get off work until 5pm and then with the drive across town, they didn't get over here until 6:30pm. Dinner was a simple affair....vege burgers and french fries...so we could get over to MIL's house before it got too late.

Tonight was about clearing the fridge. Leftover grilled pork rib, leftover beans and a quick fresh slaw. I’ll be planning this weekend for the coming week to avoid lazy eating, which usually leads to little or no veggies.

Carole - if you're not adverse to pasta, how about a beef stroganoff with mushrooms (canned if necessary) and sour cream.

DH suggested roast beef sandwiches for dinner last night, using the two buns in the freezer. I agreed. Then our plans changed and we met my sister and her dh and her granddaughter, who lives with them, at Pontchartrain Poboy for an early dinner. PP has expanded their popular restaurant by taking over an adjacent space in the strip shopping building. The tables are now spaced apart where once they were jammed together to seat as many people as possible. It's a major improvement.
DH had a fried shrimp platter with potato salad as his side. I had a large Caesar salad topped with fried shrimp. We enjoyed the visit as much as the food.
Tonight we'll have the roast beef sandwiches.

Hi illimae: Your food looks delicious. I noticed on your profile that you're ER+PR- HER-. I've been stage four since Januray of 2017 and started out ER+PR+ now I've gone to ER+PR- and I was discouraged to learn that that is a bad change. What has been your experience? I still have my primary tumor and it seems to be progressing even after radiation this winter. My onc is talking about putting me on Halaven. I'm so discouraged, seeing my latest pathology report from last week, with a high Ki67 rate as well. I have a consult set up for the University of Minnesota to see what they say. anything encouraging you can offer about ER+PR-. Wish something new was coming down the pipeline.

Elenas, thanks for the compliment on dinners, I enjoy making them visually appealing as much as eating.
As to cancer subtype, my experience being PR- hasn’t had much of an impact because I am HER2+ (not negative) and this has been the primary driver, fortunately I’ve responding well to Herceptin.

Last night's hot roast beef on bun was delicious, so was the tossed salad. We got three meals out of the rib roast.
Tonight we're meeting another couple at an Italian restaurant. From the website it looks casual. The picture didn't show tablecloths. Apparently I said to this couple that we should go out for dinner before we departed. I don't remember saying that but I assume I did.
These meals out mean I won't win the challenge to use up the frozen food on hand.

I would have used the leftover beef in the salad. We love steak salad. But like Minus, we often make stroganoff with leftover roast.
Tonight is bunless burgers with oven steak fries and a small salad.
Speaking of rib roasts, DBIL and DSIL are coming next week. I'm looking forward to getting the half rib roast from Christmas (uncooked)out of my freezer and onto the table.

Oh Nance - can I be a ghost at your table for the prime rib?
Starting to pull things out of closets today & boxing in anticipation of carpet in 10 days. At least I have time to look at what I'm boxing now. I committed heresy today and threw away a book..... My Webster's Collegiate dictionary that never left my side since 1962, bit the dust. We played scrabble with it. We looked up words we didn't know. We pulled it out at the dinner table. I've never thrown away a book in my life, but honesty google does a great job with spelling & definitions (not to mention pronunciation) and this venerable tome was literally falling apart. Rest in peace.

Tonight was soft tacos. Tomorrow will be spinach lasagna, which I’m going to try to make extra pretty with veggies looking like flowers. I saw a great pic on Instagram, gonna see if I can do it too. You all know I’ll post a photo.

We ate late tonight, I had some cooked chicken breasts so gently reheated them in chicken broth, then used the broth to make a gravy with some mix, sour cream and sautéed mushrooms. Served with little red potatoes boiled and tossed with butter and parsley, and some zucchini and yellow squash.
minus - I bet it was hard to part with your Webster’s - I still have mine too!
Illimae - your lasagna sounds intriguing - will wait for the photo.

The Italian restaurant with a hard-to-remember name, Cucina something, was located in the space once occupied by New Orleans Hamburger and Seafood. We didn't realize the change had occurred two years ago. We so seldom go to Mandeville these days because of all the traffic.
DH had shrimp and grits which he greatly enjoyed. Another ingredient was andouille sausage and the sauce looked like remoulade. I had an individual pizza called Mediterranean. Hummus, sun dried tomato, eggplant, feta cheese. It was tasty on what seemed to be sourdough crust. One improvement would have been a dribble of olive oil but I didn't ask for it.

Well, I can’t find the post that inspired me and mine is not nearly as pretty but it still looks good enough to eat.

Oh yum Mae. Hope you have a good trip to the mountains with no trailer problems. And you are able to accomplish what you're planning. It's going to rain here all week, so a good time to be gone.
I cooked!!! The contractor took today off. It feels like Christmas when I was a kid. I slept until 7:30. Actually made it to the grocery store. Did two loads of wash. Read the entire Sunday paper & dozed this afternoon. Dinner was fried rice with organic brown rice & quinoa, onions, water chestnuts, mushrooms, garlic, leftover rotisserie chicken bits, soy, fresh spinach. What a lovely treat.
And an additional treat from the store. I bought two small slices of strawberry swirl NY cheesecake. One piece I ate as soon as I got home around 11a. Great breakfast. The second I ate after dinner tonight.

Minus, sounds like you had a great day, yay!
It would be a great time to be out of town but unfortunately we’ve already run into problems. The trailer rental place rented the one DH called about but failed to tell him until he arrived yesterday to pick it up. Hopefully they’ll have one tomorrow but that puts us loading in the rain, which sucks. It’ll get done eventually.0 -
illimae - sorry about the trailer fiasco, lasagna looks beautiful!
Today was tax day at my house - did ours and also DD’s. Yes, I’m an enabler... she and DBF came for dinner - Boston Butt that became pulled pork on brioche with NC style vinegar sauce, Cole slaw, baked beans with bacon (pork on pork) and crushed pineapple, mac n cheese, watermelon, and a yellow sheet cake with chocolate frosting. Two returns on the plus side and yummy food! Yay! I have been waiting for three big glass doors for a couple of months - one 96” pocket slider, a glass swinging door, and a set of French doors. One was delivered this afternoon - according to the plan it should have been the on time slider, but it was the swinging door - 4 weeks early. On tomorrow’s agenda is a query about what is going on, lol!
minus - your fried rice sounds great! And the cheesecake! The end of your projects is in sight, correct? I can’t believe all you have gotten done! I have the three doors, pool deck resurfacing, I need to find dining room chairs, my bedroom to paint, and either new carpet or an extension of the bamboo floor from the bathroom, and lastly - sanding and re-staining the hardwood in the living room, dining room, and study. Also, still waiting for the fridge I bought in January.... some of this will now be broken up by an accelerated surgery date for explant/new implants and fat grafting on June 8th

Special - Oh my - just reading your list makes me want to cry. Work is about 1/2 done on the master bath at my place and the big kitchen floor still to be started. Most of the rest is 90% done. The clock is ticking since carpet installation is scheduled for 6/1.
Glad you've got a date for explant/implant. What brand/product did you choose this time? I just realized today that my implants are 10 years old this fall, but since I have no problems I'm going to leave well enough alone.
Couldn't sleep tonight so got back up to sort vinyl records. Every one I put into the box pulls my heart strings, but I still had 230 LPs after my last cull two years ago. I got down to 70 keepers tonight. I know I have to do better, but I ran out of boxes & didn't want to go up in the attic in the middle of the night. Guess I'll try again to sleep.

Our forecast is like Minus's, rain today through Thursday, our departure day. You were due for a relaxing day, Minus.
Last night's dinner was large boneless skinless chicken thighs. I seasoned them and pressed a coating of seasoned panko, grated romano and olive oil on top. Cooked in oven. Steamed broccoli and tossed salad on the side. DH finished up a jar of Major Grey chutney, a favorite condiment with chicken but not easy to find. I bought several jars from Amazon.
This morning my weight is back to the plateau number. Good after two restaurant meals last week.
Will check the freezer for ideas for tonight's dinner.

carole - my Publix has both the Crosse and Blackwell brand in the BBQ sauce area and the Sharwood brand in the international food aisle - I should mail some to you, lol!
minus - since the house projects are an elephant, I am going one bite at a time, lol! Since the delivered door was one I was not expecting for another four weeks and not the one that would have been on time, I am not sure what the new timeline is for that. My window guy just texted me that they shouldn't have delivered any of the doors until all three were in their warehouse - ugh... Trying not to stress about it because I am clearly not in control, ha! The new implant plan is looking like a swap for same size Natrelle Inspira smooth from textured, but achange from the softer/mid-range cohesive style to the firmer most cohesive one. I would not be doing this either except for the ruptured righty. At least I am fully vaccinated now so a bit less worried about that aspect of a hospital visit. Wow on your vinyl collection! I have probably a dozen of those remaining, but no turntable - mostly 80's stuff, but do also have some that belonged to my parents (not vinyl, of course) with big band stuff!

You said that key word, Special. CONTROL. I feel things are out of my control most of the time now. I don't like living this way, but there is just no other choice when people are working on your house. (or should we say tromping through & tearing up your house).
Carole - we have flash flood warnings until Thursday morning. Hope your departure isn't disturbed by the weather there.
Pulled out 75 CDs tonight. Can you tell music was always a big part of my everyday life? But that was then & this is now. Given the choice between keeping books & keeping music, it would have to be books now, since I know I will re-read most of what's on my shelves. And I can always listen to music on line. Bless my son for getting me a GREAT speaker system for my computer.

We spent a few hours helping DD and her boyfriend get stuff moved into storage for a couple of weeks and on the way home we stopped at El Pollo Loco (Crazy Chicken) for grilled chicken.
We were kind of annoyed though. DD had an electric bike that would fold up to fit into a car trunk. She used it a few days ago and, as usual, locked it up in the apartment's bike room with some heavy duty locks and tonight, it was gone.:-(
Minus, I like that phrase, "lack of control". I am glad that I can do most of the home renovation work myself as I don't have to worry quite so much about "lack of control".
Sharon has many hundreds of CDs. She took them out of the cases and put them into book looking thing. Her collection went from several shelves to a couple of books the size of textbooks. She also put most of them onto a couple of 256Gbyte USB sticks and she plays the music from that.
Special, is DH back to eating normal food?
Ilimae, as usual, the "food porn" is wonderful...keep it going, please! .

We were awakened shortly before 3 am this morning by horrible shrieking sounds from our cell phones in the kitchen. DH got up and turned on the tv to learn there had been a tornado warning in our area, just ending. This morning there is flooding in places like Lake Charles and New Orleans, which is very susceptible to flash flooding. We are headed to Shreveport on Thursday for an overnight stay before proceeding to Tulsa area to visit my younger brother. Hope we don't encounter flooding highways. Weather is definitely an event in these times.
I hate theft, Eric. It's such a repugnant thought that people take other people's possessions, not caring about the repercussions.
Dinner last night was hamburger patties, microwaved green beans and tossed salad. I sliced up a big onion and cooked it in a skillet to top dh's burger. He also had sweet onion in his salad. He's a real onion person whereas for me the only purpose of onions is seasoning in a finely diced form.
Lacey must be busy as hostess for her son and family while their home is being renovated.

carole - I hate tornadoes, I find them super scary, but I am a California girl. Give me a fire or an earthquake and I am right at home - hurricanes and tornadoes, nope.
eric - unfortunately, DH is not eating everything at this point. The loss of bone from underneath that tooth, plus it being the furthest back upper molar, means that healing is slow and there is somewhat of a depression in that spot. He is eating things like chicken salad, cottage cheese, scrambled eggs, etc. Also making protein shakes. I did make some pulled pork which he had sans bun, along with some mac n cheese. Greek yogurt is working, as are pancakes, but I am sure he would love a steak! I hate that your DD's bike was stolen - so disheartening and annoying! I was upset when the big trailer DS bought in Dec. to move to CO was stolen from the apartment parking lot (along with two others), but then so pleasantly surprised when the police recovered it a mere 7 hours later! It was a bit damaged but he repaired it and sold it for a profit a couple of weeks ago.
Hope lacey and chisandy are doing ok - they are both quiet.

I don't like the warning sirens. I guess that comes from being a small kid on a large marine base during the mid 1960s. There wasn't a danger of tornadoes in California...but...there were "other things".

Had an interesting conversation one time in an airport with a young man who was seeking to mansplain to me why tornadoes are better than earthquakes because there are warnings for tornadoes. Having lived through several tornadoes in Ohio and earthquakes in California I was able to womansplain the fallacies in his argument!
Dinner tonight was turkey cheeseburgers, ranch beans, and fresh fruit salad (had green salad for lunch).

Tonight our houseguest made fajitas, which I love and he had also bought Corona’s, and I hadn’t had one in years but since we had limes, I went for it. Both were really good.

Carole - so glad I heard about your cell phone shrieking. I have a new cell phone. Don't get too excited - it's still a flip phone. But I don't use if for calls and never leave it on - only if I have an emergency walking or in the car. Except I'm just learning and forgot to turn it off tonight. You're right - god awful shriek about tornado alert. Guess I should shut down.

Grab your flashlight minus. I’m in my closet bunker until this passes, then off to bed. No power currently and some hail.
