    Illi, that pork chop is incredibly well-marbled!

    We went to Wildfire downtown tonight. After two straight nights of fish, Bob was jonesing for steak--and for him, "steak" means filet mignon. They had prime rib tonight, and we need to be home tomorrow night for our "aliyah" at online temple services in honor of our anniversary, so I got the "king cut" to reheat tomorrow night for dinner afterward. App was a spinach-kale salad. Sides were mushrooms, creamed spinach, & balsamic-roasted veggies (peppers, zuccchini, onions & Brussels sprouts). We were given a free dessert in honor of our anniversary, so we chose to share a slice of Door County tart cherry pie with whipped cream (I had about 1/3 of the filling, with some of the cream, and gave Bob the rest). We were very lucky--the rain stopped as we left the house and isn't coming back till well past midnight. But it'll be back with a vengeance, for days on end.

    Sandy, it’s actually not so impressive, I think the marble you’re seeing is really the drizzle of balsamic glaze but it tasted great regardless.

    We spent two nights in Denver in the driveway of a friend's (my boss from 1991) driveway.

    Tonight we're in Colorado Springs.

    Dinner is going to be the remaining pulled pork.


    The horse training was a "stumbled onto" thing. The fairgrounds offered us free camping and we happened to notice the sign on the arena.

    Your dinners are all so impressive! I am done harvesting lettuce from my garden and have moved on to sugar snap peas. I went to a cookout a few days ago and brought Beyond Beef Hot Italian Sausage. Everyone said it tasted just like meat. Then I made Impossible burger stuffed cabbage (from my garden) which was really good. I also found Oat Milk vanilla creamer which was excellent. No, I'm not vegan, or even vegetarian as I eat shellfish, and fish maybe 2-3x per year. So glad they have improved these things. Still cancer free and working although I am really cutting down. Hope everyone has a wonderful 4th.

    Thank you! The young me enjoyed packaged ramen noodles quite often (I still do sometimes) but it wasn’t until a few years ago that I really started to enjoy the cooking and plating as much as the eating. Early retirement have me the extra time and hello fresh sharpened my skills, now I get so much more out of it, especially the colorful dinners. And I love being able to share them here, some people don’t care much for food pics.

    I wish I could be vegan and low-carb, and able to enjoy restaurant meals. But my metaboliam wants animal protein, alas. I looked up the nutrition labels for Beyond & Impossible, and they're listed as "dirty keto" (containing seed oils and higher-carb vegetable proteins). And knowing how much water it takes to grow one almond (during a drought in CA, no less), I would vastly prefer Oatly for my cappuccinos...but it's carb-ier than even unfiltered whole milk. Sticking with FairLife and Blue Diamond Unsweetened Vanilla Almond Breeze, with a dash of cream. BTW, at Wrigley Field last week, all sundaes & cones were Oatly soft-serve.

    So dinner tonight was leftovers from last night's Wildfire dinner: filet mignon and leftover veggies for Bob (plus some of my prime rib); 'shrooms, kale salad, a tablespoon of creamed spinach, and prime rib for me. Still have leftover prime rib. SoDelicious sugar-free dark-chocolate-coated vanilla frozen coconut milk bar. (Dead ringer for a Dove Bar, only smaller and guilt-free). Midnight snack was grilled cheddar on keto white bread. Trying to eschew non-keto-friendly carbs because of tomorrow night's dinner...and Cajun/Creole lunch Sunday with my sis & niece (if the weather gods allow their plane to take off from Dulles tomorrow). I will also message my weight mgmt. NP on Mon. to request we move the next appt. back to Aug. to keep to the original every-3-mo schedule. No way by July 6 can I get down to what I weighed in May, much less lose anything more.

    Am checking in w/o doing my usual catch up on reading since I’m supposed to be off screens. Lord, is that hard! My concussion became markedly worse several days after the fainting event, and between the lightheadedness and headaches, I have been rather useless. DH is now the chauffeur, shopper, errand runner for everything (!) and still managing to keep up his good natured demeanor. I am very appreciative! My PCP referred me to PT for the concussion symptoms, so just started and will do that thru July. After reading online how much rest I am supposed to be getting, I learned from the PT that concussions are helped heal by aerobic exercise! Why should I expect to hear anything else at a PT session?!

    I have at least been doing some cooking, and this week we departed from our non-mammal diet to enjoy some grilled pork tenderloin (marinated in a balsamic mix), with sautéed veggies, a cuke salad, and crusty bread with avocado spread. That was a filling meal.

    Minus, hoping that you mostly have your house back!

    Special, hope you are feeling better, but will have to return when I can be liberal with my screen use again to learn of your recent post-surgery journey.

    Carole, hope the bowl sales are going well, and that the process of selling is fun for you both.

    Hope all else are well, and avoiding the extreme weather events I’ve been hearing about.

    Hoping this brain bump heals in the next few weeks so I can really catch up and enjoy Illimae’s pix! :/

    Actually, Lacey, it's "advance" anniversary, as the actual date is tomorrow. We scheduled the party for tonight because most guests have to work on Monday. Sadly, my sister's flight was canceled due to the line of storms "training" up from the SW-NE across the area. Nothing is flying into Midway, and almost nothing (except short-hauls) into O'Hare. It's sunny now, but there's a flash flood watch till 6:45 and tornado watch till 7pm (we had a warning late this morning, but our basement "safe space" took on some water coming up from the storm drain--just enough that we really shouldn't be in there without waterproof boots. Our safest available space is the tiny hallway between the basement stairs & first floor bathroom--with doors to the basement & bath closed to avoid exposure to windows. Our house is 8 stairs up from the street. So we'd have to sit on the stairs--we have no windowless rooms. Our housekeeper may not make it because not only is her basement flooded, but so is her alley, which is her car's only access to the street.

    Tonight is leftovers, I'm having salad, the houseguests have finished their balsamic pork plates and DH is making banana bread as the bunch had only a day or so left. One houseguest got a bunch of stuff from a food pantry place as he'd fallen on hard times lately, so the next few days I'll be trying to figure out what to do with all this stuff I don't usually buy. A bonus though is that his haul included white asparagus, several bunches of red grapes and pre-made meatballs.

    DD was telling us about the weather in Chicago and in Traverse City.

    Tonight we are in Alamosa, CO and dinner was vege burgers. Tomorrow we are going through Pagosa Springs and Wolf Creek Pass "way up in the great divide" (the CW McCall song), probably stopping in Cortez, CO.

    Happy anniversary Sandy. We’re in the land of never ending storms too. We have four skylights that are keeping me anxious in the heavy rains

    Last night was good ole meatloaf with garlic mashed potatoes and some beautiful Amish sliced tomatoes with just a sprinkling of kosher salt. Lots of meatloaf left for sandwiches.

    Tonight is skillet roasted lemon chicken with as yet unknown sides.

    Lacey, I’m sorry you’re having such lasting effects from your fall. I certainly hope the PT helps your recovery.

    The party went off without a hitch--only 3 no-shows (my sister & niece, whose flight was cancelled due to every domestic flight into Chicago being cancelled; and my godson's fiancee, a food chemist stuck in her NW suburban lab till the flood waters receded late that night. Our appetizers were spicy shrimp sliders on King's Hawaiian buns; mushroom bruschetta; caprese crostini; wasabi-battered Brussels sprouts; and fried calamari. Entrees were grilled bourbon salmon on farro with mushrooms & zucchini; grilled red snapper with mango salsa; ribeye with corn relish and mashed potatoes; duck breast lasagna; and wild mushroom ravioli. Finally, a dessert table: brownies, apple streusel bars, lemon bars, Ferrero Rochers, and assorted macarons.

    Dietarily it was of course a double-cheat day.

    Sun. night the rain held off, and we went to Big Jones (Carolina low-country cooking) for our "on-our-actual-anniversary dinner." I started with fried green tomatoes and Bob had gumbo; we split a salad; and then we split half a fried chicken with biscuits. We ordered greens but they ran out. I was able to get through one drumstick and half a biscuit. Alas, my tolerance for simple starches isn't what it used to be--plus my body has no trouble achieving portion control--I fill up more easily these days. No dessert there (we brought home a leftover wing & a thigh), but I decided to have one last sugar-debauch. It was a kids' size chocolate frozen custard with tart cherries. But even that small portion left me logy. Now I realize why when struck with insomnia I crave cereal (even paleo): carbs make me tired & sleepy.

    Tonight I made a Caprese with garden basil & mozz. di bufala, followed by a bowl of grain-free pork chili from the taqueria down the street and finally a scoop of lemon-dill tuna salad. Insisting Bob have the leftover chicken, as I'm back "on the wagon" today. If he doesn't come down and sleep-eat it, and doesn't take it to the office tomorrow (along with all the desserts we brought home), I call dibs on it for breakfast--removing the breading, of course.

    Lacey, sorry to learn of your concussion issues. Hope you get back to "being you" soon.

    We did not go hungry the past five days as we travelled to central IL for dh's sister's memorial service but we did not eat anything worth mentioning except lunch yesterday at a Portillo's restaurant in the Minneapolis area. I had my favorite sandwich from their menu, Italian beef with hot and sweet peppers. DH had two hot dogs with "everything."

    Since we had such a hearty lunch, dinner last night was sharp cheddar and crackers.

    It seems we have a bear visiting the campground and knocking over trash cans. The owner got a picture of him last night and put it on Facebook.

    Dinner tonight to be decided.

    chisandy - the party sounds fantastic and yummy! Fried chicken is my kryptonite.

    lacey - when DD had the horse accident she went to the doc who runs the concussion clinic at the local university, also DD's alma mater. They put her through a gamut of cognitive tests and then sent her to a concussion specialty chiropractor connected to the neurosurgery department at USF. I saw my PS yesterday for a post-op and we discussed her son's concussion from a recent car accident - I was aware because the accident happened as I was in her exam room and she scooted out rapidly to get to him, so I inquired about him yesterday. She was particularly concerned about him as he started stuttering and blanking out on words mid-sentence, he is in his junior year of high school in AP classes with straight A's prior to the accident. He is improving but saw the same docs as DD to get a proactive approach - and he is improving and finishing his finals. Hope this resolves for you asap!

    Dinner has been a mish mash for the last few days until last night - had NY strips cooked in a cast iron pan, pilaf, and Brussels with balsamic glaze. Tonight will be turkey burgers with mushrooms, bacon and Swiss, with cabbage ramen salad, and skin on fries. DD and DBF will come over - he is getting a haircut with DD's stylist (who is now handling DH and me as well - family affair!) in prep for a trip to AZ to for his mom's surprise b-day - DD will be meeting the whole fam for the first time. They don't want to grocery shop since they will be out of town and then will have the house tented for termites (argghhh) shortly after returning so didn't want to load up on food that will have to be removed anyway, so I have been trying to feed them. Sent them home the other night after they stopped by with a bunch of baked fusilli.

    Lacey...sounds trite...but....get well soon. Concussions problems are, I think, underrated.

    Sharon's music jam group is heading up to Flagstaff, AZ on Friday for the long weekend and we are going too. So, after unpacking the camper, we are repacking it and getting it ready to go out again for the long weekend.

    I spent a couple of hours yesterday building a carpet covered platform to extend the size of the back seat area in the truck so the dogs can be more comfortable when we're traveling. They used to be OK with the back seats, but now.....one is 14 with hip problems and the other is 11 years old.

    Hubby declared tonight will be a no fuss, no mess dinner as I have not slept well with this last heat wave. So I am under orders to make chicken sandwiches and fries! Had one more night of lasagna left but hubby said freeze it for a night when we want something fast and I don’t have the energ to cook.

    Our dinner last night was cheddar brats, store made, cooked on the grill, Bush beans, and a tossed salad with some of our favorite ingredients but lacking blue cheese. Not easy to find up here in northern MN.

    Our weather is heating up again but it usually cools down at night so that we are comfortable with fans and don't have to run the a/c all night.

    Tues. night we went to Mercat a la Planxa (founded & formerly run by Iron Chef Jose Garces, and just reopened last week) for upscale tapas--we had the "luxe tasting menu:" grilled octopus with roasted grapes, capers & olive-oil mashed Yukon Golds;"cinco jotas" jamon Iberico; pan (imported toasted Spanish bread) con tomate; serrano ham & fig salad; Ortiz tuna salad with aioli, peas & piquillo peppers; spicy roasted cauliflower with goat cheese & pine nuts; sliced grilled pork loin with grilled corn & wild mushroom blend; baby Colorado lamb chops with zucchini, and Basque "burnt cheesecake" with cherries soaked in sweet sherry. Yeah, we took home leftovers (the pork loin & octopus). Wed. I pan-seared corvina out on the grill--but in fiddling with getting the lid just right to keep the grill hot, the pan tipped and the fish flipped over to (over)cook on its side. Also grilled red knob onions and balsamic-marinated asparagus. Last night we had the Mercat leftovers, plus leftover filet mignon Bob brought home Wed. night from his drug co. dinner at Wildfire Oakbrook, and a defrosted hunk of last week's leftover prime rib from Wildfire downtown. Also stir-fried Shanghai bok choy and snow peas from the farmers' market.

    Tonight we'll walk to Cellars--Bob wants to eat early but I'm not very hungry yet. Will likely eat just an appetizer but get hungry again before bedtime--which is the bane of my weight-control. Last night I carb-cheated again and I've been paying for it all day. Doesn't help that today begins 10 days without my HK--and naturally, I just discovered ants in the kitchen around Heidi's dish--and crawling in her kibble. (Thus far, knock wood, they're avoiding Happy's vegan kibble). As if feeding the kitties wasn't stressful enough...

    Will have to try to find a dependable exterminator that uses pet-safe spray. Our last one, which we used for over 30 years, did--but during the pandemic they were erratic, with personnel quitting left & right till we finally gave up and fired them after they sent someone not just on the wrong day but without a mask.
