Love the Alexander McCall Smith books also Maggie. When we visited Edinburgh I couldn't really place things like in the books. So fun you lived nearby the Dalhousie locations and so knew about the different places. We were underwelmed with Scottish cuisine as a whole, but loved specific foods and just the whole vibe.
Dh made Ravioli with Vodka sauce tonight as I was feeling a bit like a cold is coming on. I promised him chili tomorrow for during the Ravens-Steelers game. We'll see how it goes, if I'm up to it.

Really want to break away from cooking the same things pretty much almost weekly. Cookbooks are in storage and I really want to get them so I can do different meals.
Not sure about tonight. Was thinking of taking the ham steaks and a box of scalloped potatoes and making it into a casserole.

Mommyof3, Google is your friend for searching for recipes. Also Pinterest. I'm "old school" in that I usually print out interesting recipes.
DH printed out the recipe he used yesterday to make a huge pot of soup with leeks, potatoes and lentils. Evidently he watched a video on UTube. He labored in the kitchen, using two large pots and the stick blender and the veggie chopper, etc. One of the ingredients was turmeric so the creamy soup is a yellow color. It was/is quite tasty and there's a large container of leftovers.

I agree with Carole. I've found some really good recipes on Google. Unfortunately I am also 'old school' and print interesting recipes. That means I have WAY to many piles of recipes that I want to try.
I took some cold boiled shrimp from the freezer this morning and am thinking about Shrimp Scampi or something with shrimp and noodles in sauce. So far the frozen Shrimp Boom Bah is on hold.

Minus, I have a looseleaf notebook for recipes. With dividers and labels. Lol. And the gadget to make the holes. I get recipes in emails daily. I find some of the food blogs annoying with all the advertisements.
I resisted the urge to cook pork chops in salsa and Mexican/Spanish rice today. We need to make a dent in leftovers.

I have a loose leaf binder with old recipes from the 80s and recipes on yellow index cards from the 70s lol… not to mention all I’ve printed from Auntie Google ! I now use a web clipper app called Evernote, and save the internet recipes to the app, and tag them so I can sort. Though I love reading through the cookbooks too and finding something new to cook.
As I’m just 2 days since last infusion, keeping the digestion on a simple rotation with a vegie soup and black bean and carrot salad, o spices for now. DH bought saltines today lol.. for the soup. Made me laugh out loud.1 -
Reader, In my opinion Scottish cuisine is nothing special. There are some foods I miss like finnan haddie, tomato sausages, shortbread and Mcvitie’s cracked wheat bread but we never ate out since just about anything I cooked at home was better. Bruntsfield where Isabel lives is more of a residential/small shops neighborhood built in the Edwardian era which borders the west end of Princes St. Part of the problem following the book locations is that in Edinburgh a long street which would have one name in most cities changes its name randomly multiple times.
m0mmy, Ham goes well with scalloped potatoes. I've found some really good recipes by googling the main one or two ingredients I want to use. I print them out like Carole does since my tablet and desktop don't share files nicely, probably since the desktop is 17 years old, lol.
Carole, Turmeric is an Indian spice so you have started using your collection. My recipes aren’t as organized as yours. I have several folders and keep the recipes I want to continue making in one. I have 3 ring binders and a hole punch so maybe I’ll get around to categorizing them someday. They can take the place of the math curricula I recycled.
Minus, Shrimp and noodles in sauce sounds good as a cold weather meal.
Rhonda, I’m glad you found food you can enjoy post chemo. DH eats saltines and oyster crackers with margarine whether or not we have soup

The whole grain saltines are my favorite cracker. That tells you something about my gourmet palate. LOL. I can have 7 for 2 WW pts, which I enjoyed yesterday with egg salad (1 egg, 1 T light mayo) for lunch. I also like Triscuits and many other crackers. I can easily satisfy hunger with a block of cheese and crackers.
I have read Alexander McCall Smith but the books were set in Africa. I didn't know he used Edinburgh as a setting. I will look for those when I browse in our public library offerings for Kindle. He was/is amazing prolific. I couldn't believe the number of books he has written.
DH had leftover pasta last night and I had leftover rice and curried sweet potato and chickpeas dish. Tonight will be something else. Probably a meal with no leftovers.

I haven’t read Alexander McCall Smith yet, look forward to exploring ! I love my kindle app, always makes me so happy to download from the library 2 books at a time. One to read now and one for reserve.. I read every evening, it’s such a joy .
Well my 3 week vacation is over, go back to work tomorrow. I work on zoom, but still…it’s been so nice to not have meetings, reports, and staff issues, and no teaching yet either. Though that is the part I like best, semester starts in 2 weeks. Amazing feeling of calm tonight..I guess I’m ready. I did not know there were Whole grain saltines, I’ll tell DH. Triscuits are tasty, they were my Dads favorite crackers. ! I like Trader Joe’s Pita crackers, for the extra crunch. And I love a good whole grain bread or baguette with hummos, with a sliced pear or apple. Once I get my taste buds back.. another day or two. Dinner was leftover vegie soup and crackers for DH , and mushy brown rice and steamed broccoli for me.1 -
Rhonda, It's too bad your vacation is ending but nice that you can ease back into work. I loved starting a new semester since it gives you an opportunity to improve on the previous one.
Dinner tonight was leftover turkey and gravy from the freezer with acorn squash, mashed potatoes, Pepperidge Farm stuffing and cranberry sauce.

Love the cracker discussion. I too eat both Saltines & Club Crackers with butter - not related to soup or salad in any way. My parents choices split between Triscuits and Wheat Thins.
Tonight's dinner was Rosemary Crackers with the last of the Boursin cheese. Desert was a fresh pear. Bedtime snack as I type is two Godiva dark chocolate ganache hearts.

DH and I both like butter on crackers. His favorite used to be Wheat Thins, original, but now it's Club crackers.
Last night's dinner was pork chops salsa bake that included black beans. Served with leftover brown rice, sour cream and bag Mexican grated cheeses. Laurie's chicken salsa but with pork chops. Always tasty. I used a jar of chunky medium salsa.
Tonight will be sausage and chicken gumbo.

Oh! Saltines and butter - one of my favorite meals! I used to buy unsalted tops but I started buying the half packs that only come salted. Saltines and oyster crackers were the only kinds I knew as a kid. As an adult, we always have a variety of crackers on hand usually from Trader Joe's or Aldi. Our favorite is a variety pack that includes a couple of whole grain and water cracker selections. I rarely eat crackers with soup unless it's tomato.
I've read several of the No.1 Ladies Detective Agency books. Smith is a very prolific author.
Dinner last night was American chop suey and a small salad. Tonight's offering is a very good question.

Carole, I love to cook with salsa since it's healthy and seems to go well with everything.
Nance, Aldi sells a great variety of crackers. The problem is when you find something you really like you might not see it again for a year.

Last night's menu was revised and we had the creamy soup dh made some days ago with leeks, potatoes, and lentils. Also a romaine salad. The soup tasted better to me than the first time. Enough left for one lunch.

Refried bean nachos. I used havarti cheese (huge package from costco) and actually liked it equally to cheddar…DH loved it even more.

Minus, Enjoy your son’s visit. I’ve cooked chicken with salsa in a skillet but never in the oven. Do you think Laurie’s salsa chicken would work without the beans (which DH can’t have) or with corn replacing them?

Maggie - Laurie's recipe below. I'm not good at guessing that kind of substitution. Maybe someone else will chime in:
Salsa Chicken: 2-4 chicken breasts in a Pyrex dish. Dump a jar of your favorite salsa over it. Drain & dump a can black beans next. Cover & bake at 350 degrees for 1-1/2 hours. 2 minutes before serving uncover & top with cheese. Serve on rice. If desired, put a spoon full of sour cream on top of servings.
Heard from Mae and she's doing OK in her "beach room" out on their mountain top.

Maggie, I think corn would work fine as a substitution for beans in the recipe. The salsa is the main ingredient. The meat can be changed to pork.
Dinner last night was sausage and chicken gumbo served with brown rice and also with mashed potato salad and also with fresh-baked whole grain bread. Yum. Lots of leftovers.
I lost concentration as I made the bread and realized that the batter didn't look "right" when I mixed the liquid with the flour component. I added flour and also allowed more time for rising when that seemed necessary. The loaf did rise in the oven but not as much as usual. It also tasted good but was denser. I think the problem may be related to getting the water a little too warm for the stage of mixing water and yeast and honey. It's a simple recipe and I weigh the ingredients but I need to pay attention to weighing them. LOL. I've had such repeated success that I've gotten "casual." The bread gods slapped me on the wrist.

Carole, I haven't spent much time baking bread because it is so good and I have to watch my carbs. Thanks for your opinion on the corn. That’s what I put in chili, the white peg variety if I can get it.

Dinner was warmed up leftover gumbo over rice and leftover potato salad.
I'm having lunch with two women friends today. Dinner tonight will be a main dish out of the freezer, probably stuffed peppers.

Dinner last night was a taco casserole that was a first time recipe for me. It was very good and will become a regular offering I'm sure.
Haircuts and lunch out today at a fried chicken joint (the lunch not the haircuts) so dinner will no doubt be something light.

Wally - I used regular taco chips and also topped it with more broken chips and cheese before baking. More crunch that way. I also halved the recipe except for the cream cheese.
Walking Taco Casserole
Ingredients:
- 1 ½ Ibs Ground Beef
- V3 Onion, chopped
- 1 can Green Chilies
- 1 can Enchilada Sauce
- 2 oz Cream Cheese
- 1 bag Fritos
- 1 bag Shredded Cheese
- 3/4 cup Lettuce, shredded
- V2 cup Tomato, diced
- 16 oz Salsa
8 oz Sour Cream
Directions:- Brown ground beef with onion.
- Add green chilies, enchilada sauce, and cream cheese.
- Layer in a 9x13 pan: Fritos, meat mix, cheese.
- Bake at 350°F for 20 mins.
- Top with lettuce, tomatoes, salsa, and sour cream. Enjoy!
