We grilled some Mahi-Mahi tonight...none of us felt like spending the effort to make the soup (yet). :-)

Was not overly impressed with the "specialness" of the eggs but at least I can feel good that the chickens are happier.
I made unstuffed cabbage with the leftover rice, adding some sausage to the mix and topping it with cheese. What doesn't taste good with cheese! Repeats tonight.

Foodie question....Has anyone tasted authentic Carolina Gold rice? If yes, can you describe it to me. I watched a youtube about it and am dying to try it...but OUCH on the shipping. Want to hear comments about it before/if I fork over that kind of $.

Bob was late getting home last night. Had a slab of Niman Ranch BBQ ribs in the freezer, so I thawed them, pan-seared Brussels sprouts (salt, pepper, garlic, olive oil, and balsamic), and also air-fried him a couple of frozen potato latkes with applesauce. He's on his way home--we may walk over to Regalia after I feed the kitties. Will probably go for the branzino or roast half-chicken. (Maybe sneak a few bites of cacio e pepe).
My gas grill's igniter had stopped working. Went on YouTube and found out it's battery-operated. D'OH! Unscrewed the button housing, swapped out a fresh AA and it's clicking away merrily again.

Wild and woolly weather here last night. Ate dinner in the basement between tornado sirens. Thankfully no damage here but lots of it 20 miles from here. Scary stuff.
I bought Carolina gold rice in Charleston. It was delicious and I haven't had it since. At that time, it wasn't very expensive. Now it's a luxury item.
Eric, I do hope your MIL shakes the C-diff. It's a trial.
Tonight was turkey noodle soup made with the Thanksgiving turkey carcass from the freezer.
DH wanted to watch a Christmas movie tonight so we settled on Die Hard. Yippee kai-yay.

Cold front moved through here last night/this morning so tonight was potato soup. Need to finish it off in the next couple of days since forecast is for much warmer weather by midweek. This weather is so unpredictable, a major tornado in December? The destruction and loss of life is terrible. Lots of prayers for all of those who have been impacted.

Talk about cold front. 86 yesterday. Supposedly 39 tonight. And 80 again by Tuesday. WTH - heater or air conditioner? Baby Doll short sleeve PJ's or electric blanket? Houston often has warm weather at Christmas but I don't remember these dramatic ups & downs.

Yesterday I had steeled myself for the possibility of stopping at Hoosier Mama for a consolation slice of pie in case my mammo led to an ultrasound. Instead, they turned me loose and said to expect the results in my portal today. By the time I got to the car, it had begun to rain, harder and harder as I crossed the city line from Evanston back into Chicago--so regardless of result, pie would have been moot. Amazingly, by mid-evening the mammo results showed up in my portal: bilateral BIRADS 2, "see you next year." Whew!
I keep switching between scrubs and long sleeve PJs these days. Really weird weather. We made it up to 58 last night before the bottom dropped out--it drizzled a bit overnight but by the time the temp got down near freezing it was windy but dry. The threatened snow showers didn't materialize. We may get snow by the 20th, but the ground will be too warm for it to stick. There were a couple of small twisters that hit just across the state line in IN. Not part of that massive tornado that stretched >225 mi. all the way from southeast MO to AR to Memphis, through eastern KY, and into Edwardsville, IL (where an Amazon warehouse collapsed). Jackie (IllinoisLady) lives in Centralia, which is further north and not in the tornado's path. I hope CeliaC, in the KY suburbs of Cincinnati, also escaped it.
We walked to Regalia again. I brought them the last little nub of my white truffle (I was afraid that I'd break my nails or scrape my knuckles on the slicer). I had intended for them to use it for "family dinner" (the staff meal before or after service); instead, the chef made a risotto, brought it to our table, and grated the truffle over it. They did enjoy some in the kitchen, thank goodness. We shared the fried artichokes (Bob also had meatballs & polenta), house salad, linguine cacio e pepe, and branzino poached in tomato water with heirloom cherry tomatoes and a side of sauteed spinach. The owner was so thankful for the truffle that he sent over tonight's special dessert: light-as-air mocha cheesecake with a couple of mocha meringue macarons. Well, for the next few days I'll have to live on dead animals & leaves to make up for tonight's carbs. We got there about 7:30, and the place was packed. Word got out, at least in the neighborhood. I only hope that they can get online soon enough for it to be busy on weekdays too. We can't afford to let another neighborhood gem go under.
Bob has a haircut downtown (900 N. Mich.) tomorrow afternoon--we'll walk to Hugo's Frog Bar afterwards and I'll go for something light--maybe raw oysters and a shrimp cocktail with salad. And leftover branzino for late supper while we watch the slo-mo disaster that will be the Bears in Green Bay.

We're experiencing the same yo-yo weather described by Minus. I would be happy with less hot and more cold/cool.
We had leftovers last night and may have a take out pizza tonight.
I have begun reading through my remaining (still rather large) collection of cook books, many of which have some sentimental associations. My MIL gave me the Silver Palate and also Gatherings many years ago. I am making a stack to donate to Friends of the Library for their book store. This group may turn out to be a volunteering opportunity.

Thanks for thinking of me, Sandy. All OK here in N Ky - just some ferocious winds & rain. Not so for western KY - decimated a candle factory (over 100 folks inside, heavy death toll) & a lot of the town of Mayfield, also bad in Bowling Green & a few other western KY spots.
Made a flatbread pizza last night - pesto as base, shrooms, chicken sausage & shredded mozzarella. Have not had one in quite awhile. For today: two potato latkes, topped by two sunny side up eggs, chopped avocado drizzled with balsamic on the side.

Today's meal was a 3 egg omelette with sauteed onions, mushrooms & spinach. Since I was virtuous and completed my 6 mile walk first, I added one English muffin.
Tomorrow I'll get my hair trimmed. Then my meal will be fried rice with more onions & mushrooms, either celery or water chestnuts, the rest of the spinach and some rotisserie chicken.
I decided to focus on one absent friend each day last week and email them about the benefits their friendship has brought to my life. A couple more to go this week.

I nuked a sweet potato, made slaw and nuked a costco frozen pre-cooked burger for our dinners. Those burgers are too yummy.

We went downtown for Bob's haircut but didn't feel like walking to Hugo's--especially with 3 hours of free parking with a $10 purchase in the building. So we went to the Four Seasons Hotel adjacent to (actually attached to) the building. We were not dressed for the "festive tea party" section, and the restaurant (considerably reduced in size from years past) was not serving its dinner menu till 6. The host said all they had were "appetizers," which was fine with us. Turned out to be a decent-sized lunch. Shared a half-dozen Kumamoto oysters, a cheese platter with accompaniments (Bob had the carby ones), and a Little Gem Caesar salad. We had our own desserts--Bob's was vanilla gelato, mine lychee-peach sorbet.
Dinner tonight will be last night's leftover branzino & veg, and leftover cheese & nibbles. Maybe nuke a little broccolini too.
Regalia's website & phone are up & running--it's finally possible to make a reservation, rather than walk through the cold & take our chances we can get in.
Oddly, I'm finding that if I allow myself a modest restaurant "cheat," I have no desire to carb-load late at night, not even with supposedly keto-friendly versions of candies, etc. And my weight is holding, though I'd like to lose at least a couple of lbs. before my weigh-in on the 29th.

Frozen 'za with a side of leftover slaw. I got my booster this morning and planned on getting ill again; so far, so good. The first two were Moderna (100ml) and YOW on the reactions I had. I had read that switching the vaccine garnered higher antibodies/better immunity, so opted for the Pfizer this time (both would have been 50ml). The lady freaked out when I asked for for a thigh jab, so back to my left arm. Hopefully not nearly the node swelling this time.

Seconding Eric's sentiments - glad it looks like no one had serious tornado damage. Nance - I have a full color picture of you having dinner in the basement.
Dinner was indeed fried rice. Tomorrow I'll meet my ex-DH and his wife for a mega-steak dinner at Perry's in River Oaks. He's treating!! I see him fairly regularly but haven't seen her since 2019 - before Covid. Funny to consider that I was married to him for 20 years and she has now been married to him for 27. TIme flies...

Today I made an onion bread.
It's not "that closely measured" other than about 4 cups of flour. I proof a packet of yeast in a cup of warm water with a most of a tablespoon of sugar. Once the yeast seems good, I add that to the flour, along with around 1/2 cup of finely chopped onion, a teaspoon (measured by "guess") of salt and then knead the bread. I add water and knead the dough until the dough feels sticky but doesn't stick to my hands or the counter. Once I get the dough "feeling right", I knead it a bit more until the dough is smooth.
I let it rise once, then put it into a greased cookie sheet and flatten it out so it's about 1/2 to 1 inch thick, sprinkle a tiny bit of salt and a "fair amount" of dried rosemary onto the dough. I press the rosemary into the dough so it "sticks" in place. I bake it for 15 minutes at 400F, then lightly brush it with butter and bake it another 10 (more or less) minutes, still at 400F degrees, until the bread is done.
The two dogs were laying in front of the oven and Duffy (MIL's cat) was in a chair not far from the dogs. :-)

Decided not to make the pompano, as the piece of Arctic char was at least 3 oz. and I had the aforementioned veggies. Grilled the veg., and used a piece of foil brushed with grapeseed oil & then sprinkled with S&P as a "pan" on the grill. Nuked hollandaise as well. Then Bob brought home Filipino food his medical partner made: lumpia (mini-spring rolls), a BBQ pork skewer, empanadas, pansit ("cellophane" noodles with vegetables and garlicky pickled squid. Had one lumpia and about 1/2 c. of the pansit. Bob will have most of it, and all the empanadas. Because it has no carbs, I can actually have as much of the squid as I want...which is not very much at all.

Last night was breaded and pan fried chicken breast fillets, flattened. One half chicken breast provided both fillets. Side was a no-recipe dish with large dice yellow squash, herb dressing mix, beaten eggs and chicken broth. Cooked in oven. Other side was a spinach salad with additions, dressed with sprinkled white balsamic and extra virgin olive oil.
I never use the standard breading process because I like a light breading. I apply a moistening agent, eggbeaters, mustard, mayo to make the breading stick. Last night I used mayo and fine seasoned bread crumbs.

Sandy, I love squid!!!! I haven't met a seafood I dislike...yet.
Carol, I have done that technique to make "fried fish sticks" using the mayo. Turns out so moist and delicious.
We will have leftover frozen pizza and a veg side tonight. I'm not feeling poorly at all yet; the moderna knocked me out for weeks...no wonder my DH thought I was a drama-queen. What a difference a 1/2 dose makes (even though Pfizer is still considered a full dose) !!!
editing: I made kale chips in the microwave and some green beans for the 'za side. LOVE kale chips. About the only way I actually like kale, except for a Greens cookbook potato kale soup.

Delicious dinner. Gin & Tonic while waiting for my ex-DH & wife. Hot bread. Cote de Rhone wine when they got there. He had a Scotch & she had a Baileys (before dinner.) There is an over 65 special before 6pm/ $36 with a choice of first course, mains & either a side or desert for $36.00 - although he has more money than god so... Still... Crab cakes appetizer outside the special. I had a wedge salad. 6 oz Filet. Creamed spinach. They both had the fillet with whipped potatoes & I brought home their mostly untouched potatoes along with my creamed spinach. We had coffee but by 7pm it was way too noisy to stay for dessert since we couldn't hear each other think. Next time we'll eat at 4pm instead of 5pm.

Wally, I love squid too...either as crispy-fried calamari (a cheat meal), lightly grilled or sauteed. This dish, however, consists of entire cold baby squids (cuttle intact) pickled in their ink, brine, five-spice, garlic & onion. I didn't feel like cooking the sablefish tonight, so we started with salmon, whitefish, and American "sturgeon" (bowfin) roes on Atkins crackers for me and matzo for Bob; then the squid and nuked green beans almondine from WF's deli case.

I started the potato-leek soup this morning.....and ate it tonight. It's good, but I did add an extra bit of salt.
MIL is home. Sharon drove her home in our car and I drove her cat and "cat gear" home in MIL's car.
About 10 seconds after we left MIL's house in our car, we had some car problems. Sharon was driving and said the care "felt funny", so she pulled to the side of the street and got out to check for a flat tire. The tires were fine, but the left front wheel had almost completely fallen off the car and it was no longer in a position allow the car to be steered. Fortunately, we were only doing about 3mph, so there wasn't any excitement. Had we been on a highway and traveling at normal speeds.....
A bolt that holds the wheel in the proper position was missing (fallen off).

Eric, scary episode with the car. Glad driver and passenger are ok. The potato leek soup sounds good. That's a good combination.
I cooked a small pork steak last night using a recipe for Cranberry Pork Chops as inspiration. The recipe called for canned whole cranberry sauce but I used home-made cooked cranberries. Other ingredients are crushed pineapple, orange juice and orange zest. I omitted the orange juice because my combination of ingredients didn't need the extra juice. The recipe called for browning the pork chops but I didn't brown the pork steak. I topped the steak with the cranberry mixture, covered and baked at 325 for an hour. Then uncovered and cooked a few minutes longer.
It didn't pass the appearance test but tasted good. There was extra cooked cranberries. Side was steamed broccoli seasoned with butter and lemon juice.
Browning the pork is probably the way to go. The raw pork released a lot of water.
Today I'm going to a luncheon. Not sure what dinner will be. Maybe some chicken gumbo out of the freezer.

Eric, did you have a spare bolt, or was roadside assistance able to bring one? Scary stuff indeed.
We're in for gale-force winds tonight (60-70 mph, straight-line, but still capable of blowing down power lines & uprooting trees). Have flashlights & power banks at hand, and all mobile devices (plus this laptop) are fully-charged. That's the price for having 60-degree temps in winter.
Obviously not grilling tonight. Gonna pan-sear the sablefish I bought yesterday (HK is off tomorrow so she won't be bothered by the smell), and saute snap peas and broccolini. Bob will have that pansit should he want a starch.

The car was towed. The tow truck operator used a temporary bolt that "sort of fit", which was good enough to roll the car onto the flat bed truck, but not good enough to drive off. The bolt is a special one that is specific to this make-model and year of car (not a generic auto parts store part) and the dealers are out of stock everywhere in the state. They said, if they are lucky, one will arrive tomorrow, but said to not be surprised if it doesn't arrive until Friday.
Dinner tonight was...nothing...neither of us felt like eating. Tomorrow was the music jam, but one person is having severe allergies. This time of year is a horrible time for allergies, especially after a windy evening like we had last night.
Chi...we had 50 mph winds last night, and it rained a lot too, but that's a lot less than the 70mph there. If I recall correctly, compared to a 50mph wind, a 70mph wind is about "twice as strong" as far as the forces that the lines have to withstand.

One of my friends brought me a container of her homemade vegetable/beef soup this afternoon. It had at least 10 different veggies & was delicious - and I didn't have to cook.
Driving an hour North tomorrow to the Woodlands to have holiday lunch with my BFF. Fingers crossed that the thunderstorms expected are minor. We can't put it off since she heads to Dallas the next week to be with her grandson for Christmas.
