Tonight I made pan-fried Branzino (super fast) with a pineapple, lime and parsley salsa, roasted cauliflower and leftover chickpea salad (red onion, celery, parsley with olive oil and lemon dressing). The recipe was for grilled pineapple but I just used a hot pan with some avocado oil. DH was very happy and wished I had made more than single servings of the fish.
I haven’t made the farro yet, but I’ll have more time to cook over the weekend.
I have to do a cholesterol test on Monday so I’ve been limiting my meat consumption. Monday is also my bone scan and CT day. I’m hoping that the tests will calm my fears about my back pain being further progression

Spaghetti squash and capellini with semi homemade sauce. Prego with added chopped portabello mushrooms, red bell peppers, olives, and cooked ground turkey, all of which will be done before this post submits.

A baked potato last night.....not quite a huge celebration for an anniversary. :-)
Yesterday it kept raining and then stopping and we didn't want the boxes and furniture to get wet, so we didn't do much moving/packing. Instead, we got a bunch of "government stuff" done...having motor vehicle department 'approve'' our living trust to be able to own vehicles and then transferring title of some of the vehicles into the trust, taxes and school bus driver paperwork.

Last night I nuked cauliflower rice rather than actual rice. It was pretty good.
Going to Regalia early tonight to beat most of the storms. My Butcher Box shipment arrived--most of it completely thawed. Unlike most places that ship perishables overnight, they did not use any form of ice packs this time, just layers of corrugated fiber-filled cardboard. I literally saw the truck (unmarked) pull up and heard the box (literally) dumped on my porch. Brought it in immediately and noticed how little it weighed compared to prior shipments--when I unpacked it I discovered why. I had to pull stuff out of my freezer and give some of my stash to Gordy & Leslie just to shoehorn the new stuff in. I already extended my shipment interval to three months (as long as the site allows); with just the two of us at home and Bob working too late most nights for dinner, I can't use enough of it before it gets freezer-burned.

I love transforming a cooking flop into something good.I overcooked the quinoa that I made a few days ago. Rather than eat the gummy quinoa as is, I decided it would be better to make cheesy, fried “latkes” with the leftovers: a couple eggs, some Panko breadcrumbs and some cheddar. I fried the small patties in avocado oil. It’s not very “healthy, but oh so good! We had the quinoa patties with a salad and leftover roasted cauliflower.

It got all the way up to 70F yesterday before the front blew through with some pretty wild lightning & thunder. Last night at Regalia we shared everything. Started with steamed mussels & Manila clams in white wine & garlic broth. Next, Caesar salad. Entree was a bistecca alla Fiorentina (fileted off the bone), medium-rare in a Chianti reduction with garlic mashed potatoes (left those for Bob) and sauteed spinach, with a side of roasted cauliflower. (I took only a tiny taste of the housemade foccaccia--just enough to scoop up some cannellini bean dip).
We dined early to beat the storms--and most of the neighborhood had the same idea. There was a line out the door by 5pm. We snagged the last table, so it was a good thing we had a reservation. Normally, that table near the door used to be undesirable, as a blast of cold air would blow past as people entered & exited. But a couple of weeks ago, they installed a canvas "vestibule," with the door to the street kitty-corner from the door to the inside. The de facto foyer gave everyone the chance to don their masks and pull out their proofs-of-vax. Now that's no longer required in Chicago. But I still wore mine outside, because the wind was near gale-force and pollen season has begun. (Even the kitties are sneezing)
Sadly, I carb-binged after midnight--dunno why. (Seems to happen more often when I've denied myself carbs earlier).
This morning I woke up not at all hungry, so Bob walked to Beard & Belly for brunch. He brought back a couple of sausages. I cut one up and put in an omelette with tricolor peppers & mushrooms.
Dinner tonight was pan-seared barramundi; did a stir-fry of Shanghai bok choy (which the clueless WF employee pointed Bob to when he asked for Belgian endive), red pepper, shiitakes, and asparagus in garlic-ginger oil (plus grated ginger & garlic). Sauce was a teaspoon of ponzu, and dashes of mirin, fish sauce, and sesame oil--seasoned with five-spice powder and white pepper. Nuked cauliflower "rice" for me and brown basmati for Bob. The garlic, ginger and sesame are masking the telltale odor of having cooked fish.

Had to create a new account as my old one was not accessible and IT is working on it. So frustrating.
Tonight's dinner is going to be lasagna a salad and garlic bread. I've got an angel food cake in the oven. Will make a berry sauce to put over.

We had leftover spanish rice and broccoli and I added scrambled eggs last night; tonight, I used the last of the spanish rice as a base layer, then refried beans, salsa, shredded cabbage, Jack cheese and slices of avocado for a type of Mexican "bowl" or a chipless nachos, however you want to look at it.

Guacamole toast (keto bread) with an egg for brunch. Late lunch was a grilled cheese sandwich on keto bread. Dinner was four hot wings with celery & tricolor pepper strips and blue cheese dip. Managed to intermittent-fast (15 hrs) but it's frustrating and I'm still gaining on less than 1200 cal./day. The exercise I got today was chasing Happy around the house, up & down stairs with our HK till she finally caught him to put him into his carrier for his vet visit (liver-panel blood-draw and mani-pedi). My left foot is making exercise impossible: the only shoes that don't hurt my elongated third toe (courtesy of a callus on the inside & bone spur inside) are either padded sandals or UGG boots. I can't even wear socks. I can't use the treadmill or exercise bike barefoot. And lately, the toe wakes me up occasionally (as does a burning callus below my bunion). I'm afraid that's not going to earn me any sympathy from the weight mgmt. team on the 23d (this time I see the cardiologist, not the NP) and I will be prescribed meal-replacement shakes (which, if they're anything like Premier Protein, Atkins or FairLife, are utterly disgusting. The only thing worse-tasting is that old "predigested protein" stuff from back in the late 1970s).
I am so tired of having to "eat around" the menu at restaurants, either begging for substitutions or leaving stuff off my plate--it's getting to the point where the only advantage of dining out is not having to clean up afterward, because anything permissible I can order is no different from what I can cook. And I can't even complain about it because the NP is like "I'll see your boredom & frustration, and I'll raise you my Type 1 diabetes & celiac disease."
I think at my weigh-in I will demand that my bloodwork include thyroid levels--especially because I'm constantly feeling chilled even when it's >70 degrees according to the thermostat. And I also think it's time to consider ditching the letrozole--it's been almost 6-1/2 years.

A friend offered to store some cleaning solvents for me...so we took the couple out to dinner. They wanted to try an Islands Restaurant, so we went there. It's a "fancy hamburger" kind of place. Sharon had fish tacos and I had a chicken sandwich. I also had a no alcohol drink that was sort of a cross between a frozen lemonade and a milk shake. Supposedly it only had 150 calories. I'll need to look around to get some ideas on how to make something like that.

I have been unable to log in since the launch of the "improved" web site. It has been frustrating and I am among those who find the font too small. I hope all this upheaval is helpful for somebody.
Today is my birthday, marking my last year in the 70's. DH and my younger sister and I plan to go to lunch at Pontchartrain Poboy and enjoy some fried shrimp and catfish. Also oysters if they're available.
Then Thursday night we have dinner reservations at our club. Members get a free dinner entree during their birthday month and I will claim mine.
Dinner last night was small white lima beans cooked with smoked sausage. They came out perfect. Sides were brown rice and tossed salad.
I am in one of those periods when "What's for dinner?" is not a question easily answered.
For those who write long posts, I would suggest that shorter paragraphs make reading easier.

Sandy, I feel your pain. Sometimes, not eating enough calories forces the body to think it is in starvation mode, slowing down metabolism. As I've mentioned, since I graduated from college, dietetics information has changed a great deal...still...I wonder if you just ate normal, regular, real food instead of "made like" food (keto breads or foods made to taste like the real thing) and just watched portions. I know, I know...portions are very hard. If you aren't seeing results with what you are doing, maybe it is time to change things up.
Eric, that drink sounds very tasty; almost like a liquid lemon cheesecake!
We are going to have frozen burgers, quinoa and slaw. No idea what to do with the quinoa...maybe I'll use up the last of the jarred salsa and add it to the liquid it will cook in.

Wow. I finally got something other than "application error" when I tried to view this thread. I hope the changes were needed because of incompatibilities of new versions of software instead of just wanting to change things.
We have been shopping the freezer in preference to shopping the pantry. I'm hoping we can get the freezer emptied out so we can just put it into storage (unplugged) instead of having to take it to MIL's house so it can be powered up.

Breakfast was a couple of Birch Benders keto waffles with Lakanto fake-maple syrup. (By far the best of the suger-frees). Snack was a small piece of high-fiber low-carb wholegrain toast with leftover guac. Light dinner--Caesar salad topped with cherry tomatoes and Jerusalem chopped salad (no tahini). Dessert was strawberries & blackberries.

I love Birch Benders. My pancakes come out perfect every time with that brand.
Dinner was broccoli and a variety of Japanese sweet potatoes called Murasaki sweet potatoes. They are purple on the outside, and light on the inside. Their taste and texture are similar to Okinawa sweet potatoes but they seem to be not quite as sweet.

Thanks for the birthday wishes. I enjoyed lunch yesterday. DH, my sister and I shared a seafood platter with fried shrimp and catfish. No oysters since oysters are in short supply. DH and Michelle enjoyed crispy onion rings.
DH and I skipped dinner last night. Just before going to bed, I snacked on a few slices of sharp white cheddar and whole wheat crackers.
No plan for dinner yet.

I ended up sauteing red onion and mushrooms, a little soy sauce and cooked up the quinoa. Very tasty but what a mess it is to wash those little grains....and worse still, trying to aim them into my pot (not all of it made it, LOL).
Tonight will be leftover quinoa, broccoli and Filipino adobo chicken.

Oysters in short supply? NOOOOO!!!! They’re among the pass-around apps for Gordy & Leslie’s rehearsal dinner at Arnaud’s. And I’d been planning on picking up a dozen at WF Friday (a buck apiece for their Fishmonger Friday special) and trying out the shucking set (knife & glove) the kids bought me for Christmas.
We’re paying for the flowers, photography/videography, and rehearsal dinner…for 34. Leslie’s parents are paying for everything else: the kids’ AirBnB, the bridal party wardrobe, venue, wedding banquet, second-line recessional band and DJ. We will host a small brunch for those staying over Sunday (the kids will enjoy a pre-honeymoon), in honor of my sister’s birthday that day. We’re also footing the bill for a room next to ours for our BFFs—their son is best man. We were hoping they could change their flight to ours so we could split the cost of a limo to Midway, but their fare is locked in and our flights are already full. Our HK may not be able to come because of her DH’s health—he refuses to fly and NOLA is a much longer drive for themthan to her family in B’ham. If they can come, there will be a pedicab for them to ride in for the second line. Gordy is as much our HK’s baby as ours—she was his nanny starting when he was less than 3 months old and I first had severe PPD, and then went back to work.
Going out to Calo tonight—will have grilled octopus & spinach, drinking Pellegrino rather than champagne. Brunch was a French omelet (Gruyère & chives) with a slice of Natural Ovens Keto toast (bland, basically a spread-delivery device, but zero net carbs).

Sandy, such a sweet connection with the HK and Gordy. Warms the heart. It does sound like an amazing party. I expect the bridal party wardrobe will be amazing, unlike some of the stuff I was asked to wear (and pay for!!). Do post pictures if you feel like sharing. It sounds simply wonderful!
The Filipino adobo chicken was wonderful. So few ingredients to make such a fast and delicious dish. I'm going to shred the leftover chicken and make a BBQ chicken 'za using the socca base, for tomorrow.

Dinner is going to be pan-fried Branzino with sumac along with leftover thin spaghetti (cacio e pepe) made with a mix of Manchego and Pecorino Romano cheese with a sprinkle of toasted Panko breadcrumbs. For veggies I think I’ll do a simple salad since there are a lot of calories in the pasta

I had another Murasaki sweet potato and some soup with broccoli, capellini, pre cooked seasoned brown turkey and sauteed portabello mushrooms. The broth was just the water I cooked the broccoli and capellini and thawed the cooked turkey in.

Haven't been eating anything that interesting, I live by myself so sometimes just can't be bothered cooking. Went out for afternoon tea last Sunday with the family. I had scones, jam and cream and a banana milkshake. Yummy.

Yesterday I got up early and travelled by car an hour and a half with three golf friends to a funeral for the sister of another longtime golf friend. After the service we took a route home that allowed us to have lunch at Middendorf's, a well known seafood restaurant located in a fishing community called Manchac. I had thin fried catfish with coleslaw, hush puppies and fries.
Then last night dh and I went out to dinner at our club to use my free birthday entree. The reservation had been made in advance before the funeral trip became known. We met another couple and the woman was the same golf friend who had done the driving to the funeral. I wasn't especially hungry, having had a restaurant lunch. I had the soup special, corn and crab bisque. It was quite good once I'd fished out the green onion garnish. And the catch of the day topped with crab meat and shrimp in a cream sauce. The fish was "mahmoo." I'm using a phonetic spelling. It was a very firm fish and a thick fillet. I probably wouldn't order it again. The sides were several very large asparagus spears that had been peeled. They were definitely not overcooked and tasted good. Another side was a potato preparation that was bland.
The two glasses of wine were chardonnay! I would order it again!
I didn't dare step on the scale this morning. I fear that the restaurant food has restored my 4 lost lbs. At least I didn't eat any of the loaf of bread served with butter at lunch. I resisted because it didn't tempt me. I could tell it wasn't worth the calories.
After yesterday's excess, the questions remains, What's for dinner?
