Wallycat, I do something similar that Specialk mentions above, also very forgiving. I use zucchini, but the larger ones are best, which you can't find in the store. I have done it like a casserole with smaller zucchini, layering them on the bottom. The recipe comes from Alton Brown, zucchini boats.

I ended up doing an "open faced" enchilada casserole, more like a mexican lasagna. WONDERFUL.

Goldie, thanks for sharing, I really enjoy stuffed zucchini.
It’s our last night in the house and clearing the fridge made for a bit odd but tasty combo of items. I used a knorr pasta sides parmesan pack, with leftover black truffle sausage slices, the last of the sea scallops and a veggie mix of squash, zucchini and carrots. We’ll be in a hotel for a few days, so what doesn’t get eaten by tomorrow afternoon gets tossed.

As for the garden work - I paid BIG time. Couldn't move by the time I finished Sunday night (back, thighs, everywhere). Nor did I move at all on Monday. But I do know that if I take a break and go inside to cool off or get a drink like Special mentioned - I could never make myself go back out. Oh, and I made the zucchini casserole with fresh tomatoes so there wasn't enough "juice". Other than that, the flavor was good. Tonight I had Hasselback potatoes - roasted 1/2 way then squashed & drizzled with butter melted with garlic & rosemary to finish baking. Served with my leftover zucchini.

Hearing aid adjustment today. After 6 days they were falling out every 30 minutes & I was ready to stomp them under my foot. In fact I actually 'ripped' them out several times. I think I cried more in this 6 days than I have in the last 60 years - because of course everything else went wrong too. Anyway, she changed the "dome" (the end that goes in your ear) for something smaller and they stayed in today, but it's an interim fix. She made molds of my "delicate", small inner ears to order a different ear piece. Weird having that epoxy injected into your ears...
Detour from food for a minute - my big toenails never re-attached after chemo. New podiatrist insists I take Lamasil pills. I'm really leery because of: 1) liver issues; 2) can't go in the sun; 3) need to cut out caffeine - including chocolate; 4) and obviously no alcohol. Not to mention rare SEs of losing taste & smell & vision problems. Has anyone else ever used it? My PCP isn't excited but my pharmacist says he's never seen any problems.
Sorry I don't seem to be keeping up very well. It takes so long for things to come up.....

Eric - so sorry for the loss of your fur baby!
Minus - my toe nails lifted towards the end of chemo. They have never been the same and are very sore. I have it on my list to discuss with MO on Monday. I have to be careful putting on socks and shoes as the slightest pull and there goes the nail. I really hope you get some answers about Lamasil.
Not much of an appetite still. Yesterday I made potato salad and cut up a pork tenderloin into chunks, marinated it with adobo, garlic, an onion and a sofrito packet and then later air fried them. Today I air fried the rest of the pork and made a salad and arroz junto (rice and beans made in the same pot).

Minus, glad you got the hearing aid thing at least figured out. I have funky ears too. I don't know if too big or too small, but hardly any ear buds stay in my ears, I have to use head phones. However, I have Dumbo ears! As for the garden work, I work about a half hour or so, and then go do something else, where I'm upright and working, not squatting or bending over. I know better than to do that for too long, or I pay for it.

Sautéed fish, roasted vegetables and beets is what we had for dinner! One Ghirardelli chocolate for dessert, a raspberry dark chocolate for me and a salted caramel chocolate for my husband!

Tonight I made burritos with rice, black beans, onion, yellow pepper, ground beef and enchilada sauce. I topped with fresh salsa with lime.
I’m a bit behind on posts. I was sorry to hear about Gypsy and wallycat’s sick cat. We have a cat with kidney disease and dread the day when the disease is no longer manageable

Parsely tastes fine to me. I've been told that for aldehyde non-tasters cilatro tastes similar to parsely and citrus so it has been on my "to do" list to make some recipes that call for cilantro with parsely and citrus instead and experience what I have been missing.

Had to come back and "fess up". Last week I bought a bag of Cheetos and a bag of Ruffles. I rarely buy these since I can sit down & go through a whole bag if I'm not careful. In fact I don't think I've purchased either since mid summer last year. I ate 1/4 of a bag of Cheetos last Friday. And I just had to open the Ruffles tonight. Well at least they are only the 8oz bags & not the family size. Even for 8 ounces, they were $3.99 each. Maybe that will convince me to eat slower?? (NAH)

Oh Eric. I’m so sorry about Gypsy. It is so hard. I miss my dogs every day and they died 12 years ago.
Tonight was an Italian sausage soup and New Orleans barbecued shrimp - both very tasty.

Minus, Cheetos are my favorite snack food in a bag. I almost never buy them. DH routinely buys chips to eat with his lunch and I seldom eat them.
Today I am having lunch with three women friends I got to know through golfing. We have a reservation at Rip's on the lakefront in Mandeville for a table outside on the balcony overlooking Lake Pontchartrain. The weather should be nice for being outdoors since we're having several days of low humidity.
Dinner will probably be pork out of the freezer.

Potato chips are like heroin for me.
I posted earlier that we'll be having leftovers tonight. I made the lazy version enchiladas using corn tortillas at the bottom, filling, topped with cheese and enchilada sauce, then more corn tortillas (all soaked in the enchilada sauce), topped with cheese. DH thought it was a tad spicy but it was perfect for me.
For those being rx Lamasil, is it because they suspect fungus? If that is the reason, try rubbing Vicks-type menthol for a few weeks (People's Pharmacy recommended it) to see if that helps. My friend's DH tried everything without success, till he tried this....

I can resist potato chips but Cheetos are kryptonite for me. Especially the crunchy ones. (Fritos are about as bad). If I buy them,which is rare, it must be the small bag because I won’t stop till it’s empty.

Wallycat - We use Vicks for any and everything. I love it!
Today's dinner is going to be canoas (plantain boats) ripe plantains filled with seasoned ground beef or chicken, haven't decided which one yet, topped with freshly shredded mozzarella. Usually the plantains are fried and then stuffed with the meat and cheese, but I prefer to assemble them and air fry them. I love the sweet/salty combination. I'll have a salad with it, my son will probably request rice.

I haven't touched a Cheeto since going low-carb in 2019--in fact, probably the last time I had any was from a freeway plaza vending machine when I was still driving down to Sparta to record. (They, the dark chocolate M&Ms from the vending machines, and maybe a granola bar or two were what enabled me to make the 6-hr drive with only pee and gasoline stops, arriving late enough at night that everything was closed).
Panko crumbs...corn tortillas...Wendy's...pasta...plantains...Godivas...it's so frustrating that I can't have ANY of those. Even the "Caulipower" pastas are too carby, according to the NP at the weight clinic. If I didn't have nuts, keto-friendly or low-carb/hi-fiber bread and monkfruit-sweetened chocolate available, I don't know what I'd do. (The Quest keto-friendly flavored taco chips are too skimpy and the cheese powder of the various flavors gets all over my fingers & clothes). It's getting really, really old having to drink water every time I get a craving, as my PCP suggests. (I'm running to the toilet all the time but the color in the bowl says I'm still dehydrated).
Wanted to go to Regalia (tuna carpaccio, salad, spatchcocked chicken) tonight, but Bob is working late and would rather grab dinner in the hospital cafeteria. Not worth walking through the unseasonably cold & raw weather just for myself (and without Bob to "police" me as I sit at the bar I would be susceptible to the treats that the owner insists on giving me--especially the amaro or caffecello). So I will sear a piece of sable I defrosted and stir-fry snow or sugar-snap peas. Now that I'm off letrozole, maybe I can treat myself to half a red grapefruit for dessert (been Jan. 2016 since I've had grapefruit). Normally, I'd grill that fish out on the deck to avoid stinking up the kitchen, but we can't use the deck till the water-based stain dries & cures...which with this cold-wet weather cycle, may not be for another week or more. I hate Chicago weather--but there's no escape anywhere what with wildfires, tornadoes, earthquakes, etc.

Sandy, I had to smile..when I was low carbing, all I could think of was carbs. When I can eat carbs, I wonder how "healthy" all the protein I eat can be. OY! I will say, I had a weight stall for THE longest time; decided to try the 16 hour intermittent fasting and dropped weight. I had been doing 12-13 hours, or there-abouts, but 16 seemed to be the magic number for me. Who knows how long that will last, but I am eating carbs--trying not to over-eat and go nuts, but pretty much eating till full...My onco has been doing low-carb and dropped a ton of weight. I'll be seeing her May 11th, so I'll ask her how she's doing.

My physical medicine doctor recommended intermittent fasting as well. I’ve also been doing the 12-13 hours and getting nowhere in the last few weeks. Wallycat, you’ve inspired me to try again.
Tonight was leftover rice and burrito filling. I made tostadas instead of burritos so it wasn’t a complete repeat of last night.
I’ve been doing spring cleaning in the evenings. One room a night is all I can manage. I’m doing walls, ceilings, windows….the works. This is the first time I’ve had the motivation to do deep cleaning since I was diagnosed. (I had some help during treatment so the house wasn’t a complete disaster.). It feels like life might be almost normal again. What a blessing! I’m going to cherish this time as much as I can.

Funny how most of us like Cheetos (and orange fingers). I managed to eat 1/2 a bag of Ruffles last night. Oh my. Dinner tonight was cheerios & a way too soft banana. I've had lots of computer reports to prepare & I just never stopped to fix a meal.

Last night's dinner was pork piccata with quinoa instead of the usual brown rice. And a large tossed salad.
I cannot do fasting. I'm borderline diabetic and feel like I am going to pass out when I get really empty.

Wc, interesting about the parsley/citrus to replace cilantro. IMO, parsley is a rather mild herb, where cilantro is quite strong.
Wallycat, I too have heard about the Vicks for the nails, forgot about that one.
LOL on everyone and their salty snacks. My DH always ate some chips after dinner, said he wanted the salt. As for me, I munch on them occasionally, but it's because I want something crunchy.

Carole, I am prediabetic and I have had reactive hypoglycemia since my 20s. If I do not eat anything, my blood sugar will not react. Once I start eating, all hell breaks loose. If I push breakfast out, my body seems to be OK with that. After breakfast, if I don't eat regularly, I can literally get shaky and sweaty from the reactive hypoglycemia. A real pain when I am out on a walk. I always, ALWAYS carry food with me.
Last of the open-enchilada and I'll flesh it out with a side of slaw.

DH has had an issue with fungal toenail issues and in the past used Lamisal which did not cure the issue. The dermatologist he is seeing now suggested he use the yellow Listerine, white vinegar and water. So the proportions are 1/3 of each and to soak his feet twice a week (can reuse liquid for the week) for 20 minutes each time. It is working much better and he can still enjoy caffeine and alcohol. So it is worth a try but will warn the yellow Listerine is never on sale and it's pricey. We buy white vinegar by the gallon. Side effects so far: none.

Our oncologist told DH to use iodine ointment or an iodine footbath...that is what her DH uses for his toenail fungus. Generic listerine is the same ingredient list. I'll mention this to DH..looks less messy. I still prefer the vicks. Easy and zingy.

Just had my first (half) grapefruit since 1/1/16, when I started letrozole. Worth the wait!
The half-avocado in the fridge was looking a tad dingy, so I made guac with it (adding fresh pico, lime, cilantro and avoc. toast seasoning). Spread it on a small piece of low carb hi-fiber toast, topped with chopped shallot, grape tomatoes, more cilantro and a Happy Farms heritage egg. We're going to Regalia tonight, late (Bob won't be home till 9). Probably have carpaccio, salad and chicken saltimbocca (or spatchcocked & pan-roasted) with veg. instead of potatoes. Must...resist...pasta...
Speaking of heritage (and other pasture-raised) eggs, it looks like even the "pasture-raised" hens will be confined for awhile (per VitalFarms, Egg Innovations, and Pete&Gerry's press releases) due to avian flu. Geese are spreading it (and, sadly, have already "decorated" my newly-stained deck a la Jackson Pollack), so pasture-raised eggs may be a thing of the past unless H5N1 burns itself out. The geese & ducks that carry it don't get sick, though--so the bug won't "cull" their flocks and may be here to stay, affecting the industry and our animal-welfare-friendly eating intentions. (VitalFarms stock price has taken a nosedive).
Stopped eating last night at 9:30, didn't have brunch till 1:30. 16 hrs.--my jeans seem a tad looser than a couple of days ago. Could also be from increasing my water intake. Last night's dinner was pan-seared sable over arugula, with a small Caesar on the side; yesterday's brunch was a 2-jumbo-egg omelette with spinach, mushrooms and a slice of Swiss cheese, all sauteed in a little EVOO.
I think as long as I can keep 2/3 of my plate veggies and not snack between meals I'll be okay and not gain more. Gotta do something about my L foot so I can exercise in anything other than UGGs or flip-flops. (My neighborhood L.A. Fitness is not stellar--it's small, crowded, the staff are surly and the hygiene leaves something to be desired. May drive to the one up in Evanston, which has a pool and a women's-only section. Bummer about having to pay for parking, though).

At Regalia tonight, we split: grilled octopus with caponata & arugula; tuna tartare with jalapeño; house Mediterranean salad; and a trio of tournedos (tenderloin filets) with truffled balsamic glaze, over sauteed spinach & grilled eggplant. Could have had blueberry mousse for dessert, but Bob wanted to spend his calories on brandy (Christian Bros., which I consider worthy of only setting on fire) to hang with our favorite bartender (who used to work at Cellars, Pumping Co--which burned down--and Hugo's/Gibson's downtown) who recently moved to Regalia. When we got home, I had a Delta-8 peanut butter dark chocolate truffle (no sugar, just monkfruit) from the health food store. Will let you know tomorrow how it affected me.

Dinner was not memorable. Chicken pieces from two leftover curried chicken thighs, leftover quinoa, asparagus cut into lengths, fresh-made white sauce, curry powder and cumin. I sprinkled pepper flakes on my serving. A large tossed salad.

The Delta-8 truffle gave me major munchies until nearly 3am, so never again. You know the munchies are major when you find yourself eating plain shmura matzo (the "bread of affliction" for which you pay through the nose to be afflicted) and savoring it...nibbling one "row" (between perforations) at a time. At least I ate mindfully instead of gobbling. Not eating today till at least 1:30, maybe 2. (See below).
Brunch this aft. will be keto lemon ricotta pancakes. I add an egg (separated, white whipped and folded in), a T. of whole milk ricotta, and a squeeze of lemon juice to 1/3 c. mix and 1/4 c. water or unsweetened vanilla almond milk. May grate in some nutmeg before griddling the batter in a large skillet greased with coconut oil. (I use a small ice-cream "disher" to portion the batter). Will sprinkle on Lakanto granulated or powdered monkfruit rather than syrup, which would deflate and cool the pancakes. Maybe a few blueberries too.
Bob is working late, and we didn't bring home leftovers last night (we were hungry and we shared). So I will make soft tacos or burritos out of almond-flour tortillas, leftover guac from yesterday's toast, creme fraiche or Greek yogurt, chopped lettuce & tomato, and Niman Ranch sauceless pulled pork.

Sandy - I have hard time wearing anything but Uggs and my Adidas sandals, I use them for walking too, as I cannot find anything comfortable enough. My You Walk Skechers were good, but I wore them out and can't find them anywhere.
Last night I went out to dinner with my mom, we had Mexican and a shared a parrillada (think fajitas but with short spare ribs, chicken, carne asada, and chorizo). I didn't have any of the rice and beans and had one corn tortilla. Had more than enough to bring home. My son ate it for lunch.
Going to Brewers vs Cubs game tonight so dinner will be whatever is being served in the suite and tomorrow the Celtics vs. Bucks game, stadium food, which is delicious, but not the healthiest. My first major outings since the pandemic started (other than traveling to PR), but will be wearing my mask.
