Last night was corn cut off the cob and heated in a skillet with butter. Also chicken breast cutlets spread with mustard and breaded with seasoned panko and browned in olive oil and butter. DH used up the last of a jar of Major Grey's chutney.
We have the heat pump running this morning to take the chill out of the camper. This week of perfect weather will end tomorrow night and Saturday and Sunday will be hot just in time for weekenders to cool off in the lake.

I am a milk chocolate girl, and I actually dislike dark chocolate - if that is all there is I will take a pass. I just tried the Lindt oat milk chocolate, and it is surprisingly good. Non-dairy, but alas, not non-sugar...
minus - your two bundlet choices are my two personal faves. I have a $5 off $10 coupon that I have been resisting - I just got my hair colored yesterday and the building is right next to the NBC store, and I stayed strong, lol!
divine - I had to look up haluski - I had not heard of it before and my married last name ends in ski! My MIL was not Polish, but did cook some of the things my FIL grew up eating - Polish sausage and lentils, cabbage rolls, and some traditional baked goods. Haluski sounds delish - right up my alley, and I would also like your pasta with roasted veggies. You could make either an all-inclusive main with some sliced kielbasa, or leftover chicken or steak.
Dinner last night was that salad you've probably all had at a potluck - napa cabbage, julienned carrot, scallion, julienned red pepper, topped with sliced chicken breast and toasted sesame seeds and the toasted noodles from a package of ramen, with sweet and sour dressing. DH and DD were together yesterday at the dentist getting their Invisalign started. Both have adult orthodontic benefit from their respective insurance, but we split the patient portion with DD as her birthday and Christmas gift for this year. She has worked very hard doing keto and has lost 45 lbs so far, so she will be svelte with straight teeth for 2023!
Dinner tonight is the naughty meatloaf I have posted about previously. I have modified the usual recipe to include gluten free panko breadcrumbs, and Swerve brown sugar in the glaze, but the overall recipe is still pretty naughty with trio of ground meats (beef, pork & veal) and the bacon and the chili sauce/mustard/brown sugar glaze. I am using eggs from DD's backyard chickens, and oat milk to make it dairy-free. DH is still a few pounds too light from his bout with Covid in May so he will be excited to see the meatloaf, but I will try to eat less of the meatloaf and more of the veggies. I typically make mashed red-skinned potatoes and either roasted broccoli or carrots as the sides. Motivation comes in the form of having to be weighed tomorrow at my PS appt - it has been a year since my implant replacement surgery so I have a check up in the morning.

Sandy, oh good old TaB! My best friend in high school was diabetic, and she introduced me to its wonders. Somewhat of an acquired taste, but as a young teen, I liked that I could indulge in a carbonated beverage with no calories. Thus began my love affair with diet pop. My favorite became Diet Coke and Fresca. Occasionally for nostalgia's sake I'd have a TaB although it became rare to find. Discontinued in 2020.
I use stevia in my one cup in the morning coffee. Not all brands taste the same, I like Stevia in the Raw. I add almond milk. Trying to cut back on dairy. (Another acquired taste). That said, I'm not a big coffee drinker but imo one of life's truly simplest pleasures is a really good cup of coffee (stevia with almond milk doesn't make that list!). It is always a treat when I come across one.

Haluski is a common dish here and often sold at festivals and fund raisers, especially in the fall. Most often people toss in egg noodles with the cabbage. A man my sister knows makes the best haluski, though, bar none. Instead of using noodles, he makes potato dumplings which is what the true traditional Polish recipe calls for. We had him make a large roaster of it when we had ds's high school graduation party and all the guests raved about it.

divine - I use dairy free coffee creamer but recently tried oat milk, and found it to be a heavier consistency so felt more indulgent. I like it better than almond milk and if you have one of those inexpensive handheld frother things it really thickens like a latte. My issue with many of the non-dairy milks is that they are so thin. I would like haluski regardless of if it had noodles or potatoes - I swear potatoes got me through chemo and I have no aversion to them afterward. If anything, I love them more because they sustained me! I need to do some haluski research and make it. Yes, the meatloaf is pretty serious - it is one of DH's fave meals. When he was promoted the last time while still active duty we had it for a meal for the extended fam who came for his pin-on at the Pentagon. I made three of those - you can't tell from the photo, but that is three pounds of ground meats per meatloaf and a whole lotta bacon, lol! It makes the best meatloaf sandwiches as leftovers. DD is definitely to be congratulated for her dedication - she saw some photos of herself and made a decision that she couldn't be that heavy, particularly at her age and living in FL where it is shorts weather almost year round. She has a large social media presence due to her fishing activities - she has been on TV, magazines, etc. and is a IGFA world record holder, and she just didn't feel good about herself - not to mention the health aspect. She is doing great and we are very proud of her effort to be the best version of herself.

OMG Special - all that bacon!!!!
My dinner was sauteed onions & mushrooms & garlic with rice added and a bit of soy. The best part was adding all the leftover 2" asparagus pieces. Of course I should have been eating the broccoli salad that I bought at Chicken Salad Chick yesterday, but the asparagus was calling.
Wally - I love creamy orzo with mushrooms and added shrimp. But I also love fried rice with shrimp. And shrimp Lo Mein. Oh, shrimp is good with everything.

wally - IGFA is the International Game Fish Association. There is a fishing tv show called Finchasers that invited her to be a guest. The premise of the show is to fish tournaments or set world records. She is predominantly a salt water fly angler, and a Coast Guard certified charter Captain here in Tampa, but started fishing initially for freshwater bass years ago. These two episodes were looking to break women’s records for bass and freshwater trout in North Carolina and Northern Georgia. These records are less about overall size and more about size relative to the tensile line strength - in other words, biggest fish on the slimmest line. There are rules - catch and release only, photographic evidence of measurement and weight, you have to send the IGFA the actual line and tippet. I believe after those two episodes she had 5 records. Then on her own months later, on a break from a fishing paddle board commercial shoot, she caught a trophy bass that was a record in size alone, along with a line class record. Fortunately she had the film crew there to record it!
minus - now you know why it is naughty meatloaf! It is a baconpallooza situation. It does make a large amount so a slice isn’t that bad. Right?
I confess to buying a lottery ticket for this massive jackpot - if I win I’m taking the whole dinner thread on vacation and I will make meatloaf for everyone!

I like oat and almond milk lattes but am not allowed to drink them: I've found any non-dairy milks worth drinking are loaded with sugar. In fact, even some unsweetened oat milks have more sugar than dairy milk. I am allowed unsweetened vanilla almond milk (Blue Diamond is the only one that froths in an espresso machine's steam wand or makes acceptable cold foam in an Aeroccino, but won't froth hot using the latter's "latte" or "cappuccino" button. And I have to add a little heavy cream when frothing it with the steam wand so it won't go flat too quickly). Plain unsweetened almond milk tastes thin and bitter to me. At least I'm allowed a little FairLife or CarbMaster whole milk a day; I can also dilute heavy cream.
Had an early dinner at Chez Joel tonight--all of Bob's afternoon Union Health patients cancelled on him due to Lollapalooza. Either they didn't want to face the traffic & detours on Lake Shore Drive, or are cops on traffic or security duty for the fest. So we ate at 5pm. We shared a house salad and Manila clams steamed in lemon-butter broth. Bob had coq au vin with frites (more like matchstick fries), and I had pan-seared walleye with broccoli & cabbage in a citrus beurre blanc. Dessert, at home, was mixed berries.
Our tomato plants are starting to fruit but ripening very slowly due to moderate temps. Next week will be hot & humid, so they'll likely ripen all at once, at least enough of them for me to make a Caprese for the block party brunch.

Special, that fishing sounds amazing. DH got me addicted to salmon fishing but we fish off the beach. I'll have to google all that information you posted and i will happily take you up on the meatloaf/trip if you win! Maybe we can do it in Sweden in the fall, LOL.

A group of us in Pine Hollow Resort are buying tickets together.
Dinner last night was pasta and salad. The sauce was Rao's and ground chuck. The pasta was fettucini since there was no linguine on the shelf. The salad was wonderful with fresh spring greens and a perfect avocado, also cucumber from the farmers market.

I gave DH the choice of a shrimp cassoulet, shrimp scampi (noodles) or Kung Pao shrimp (rice). He selected Kung Pao, so that is what I'll be making for dinner tonight and leftovers tomorrow.
I'll cook up potatoes tomorrow and make potato salad but not sure what I'll be serving with it in the coming days.

Dinner last night was a repeat of the earlier brined chicken experiment. This time the chicken was only brined for about 2 hours instead of 6. It was much better...very juicy but not salty. Also included were baked turnips.
Tonight will be leftovers.

There’s no guilt in playing the lotto! We pass on the smaller jackpots but always buy tickets when the Powerball or MegaMillions start getting really big. So far this time we’ve won a whopping $4.00! Apparently, the owner of one business, Raising Cane bought 50,000 tickets for last drawing and since no one hit, he’s doing it again, planning to share with employees if he wins.
I’ve seen Oat milk in the store and since you mentioned it, SpecialK, I will pick some up to try after I finish this carton of almond milk. I always get the unsweetened kind. I started buying it a few years ago when ds’s girlfriend visited us because she’s vegan. It took awhile until I began to really like it and now a glass of it sometimes really hits the spot.
Love hearing about your daughter’s fishing accomplishments and numerous records! Those are some very impressive skills. Do you fish? I was wondering where her love of the sport comes from.

eric - that is usually me! I buy a lottery ticket probably once every five years, and this was a whim - I was in the grocery store and there was no line at the register for lottery tickets, lol!
wally - funny story about salmon fishing. DH and his older bro - who is a doctor - went salmon fishing in upstate NY not far from where we were stationed. These were big fish and there was a narrow time window to catch them. Lots of people fishing. DH was hit in the eyebrow by some guy’s line weights when he brought the pole back to cast. Lacerated his eyebrow and caused a swollen and badly bruised eye. My BIL did a quick exam and some eye tests on the riverbank, determined no eye orbit bones seemed to be broken, actual eye was unaffected - so the best decision was to continue fishing, lol!
carole - when I was in the store getting lottery tickets, Rao’s was on sale for $5.99! Very exciting! I got multiple jars and had to restrain myself - only so much pantry soace

We did our "run" into town today and managed to get a cracked windshield. :-( We have USAA's zero deductible glass replacement and have the replacement scheduled for Monday at 1pm...so another trip to town on Monday..
It's handy to have a doctor "on staff" and nearby. That must have "burned, stung and hurt" when the weight hit.
We keep oat milk and cow whole milk in the refrigerator and the oat milk is quite a bit thicker than the cow milk... I do have to remember to shake the carton of oat milk before pouring it out of the carton.

divine - I fished as a little girl, camping and fishing were our family vacations. My kids mostly fished at the home of my in-laws, they lived in coastal SC, moved there when my kids were babies. DH grew up fishing with his dad and sibs in Miami. DD started fishing seriously here in Tampa right after high school, a good friend of hers got her into skiff fishing and then she just took off from there. I don’t fish anymore, double whammy of too much skin cancer which limits any time in the sun and lymphedema in my casting arm - repetitive motion triggers problems for me
chisandy - I looked at my Planet Oat unsweetened vanilla and it has zero sugar, and same for the Trader Joe’s macadamia, almond and cashew milk. I usually use the unsweetened vanilla for protein shakes and coffee related things and the Trader Joe’s milk for cooking. I usually also have some single serving shelf stable almond milk cartons on hand, particularly during hurricane season.

I'm like Eric - if you don't buy them, you can't win. But if Special wins, I vote we skip the meatloaf and all go to Florida & get her daughter to take us offshore fishing. Then we can sit around her outdoor kitchen and eat what we catch.

Dinner was a large broccoli salad from Chicken Salad Chick. Delicious. That was proceeded by two V-8 & vodkas. I felt the need for some salt.

minus - lol! DD is a catch and release girl so we may still have to have meatloaf! We need to schedule the trip here when it is cool enough to sit poolside - but wouldn’t that be so fun?

Special, even though unsweetened oat milk has zero added sugars, its net carb count is higher than that of even regular (non-unltra-filtered) dairy milk. (Skim has more carbs than whole, BTW). That's because it's made from grain. I use ultra-filtered milk (FairLife or Kroger's CarbMaster) because it has half the sugars & csrbs of regular milk. I've tried cashew & macadamia milks, and they just don't cut it for me. Before I went keto, I made cappuccinos with Pacific Barista Blend almond milk or Oatly oat milk, because that's what the espresso bars use (and I preferred them to dairy-milk espresso drinks just before a vocal rehearsal to avoid phlegm). But my BFF who is an ideoologically pure "perfect boycotter" (which can get exhausting at times, but I won't elaborate lest this turn political) doesn't do dairy for moral reasons (though she's not a vegan) and tried to shame me out of using almond milk because it allegedly takes 500 gallons of water to grow one almond. So I keep a carton of Oatly or Califia Oat barista blend on hand for when she comes over and wants a cappuccino or latte. I actually love the taste of espresso drinks made with regular Oatly or almond milk, preferring them to all the drinks using dairy milk except for "breves" (using heavy cream or half&half). But I have to watch my carbs like a hawk now--not only can't I cheat even a little bit, but I must also intermittent-fast. (Finish eating by 9pm, nothing caloric the next day till 1pm). So frustrating--it's all I can do to not gain any more weight.
Dinner tonight at Indie Cafe (the Thai-Japanese place next door to Regalia) was miso soup and "omakase" (chef's choice) sashimi with kale & daikon.

Dinner last night was a pizza from Dad's Pizza, Take and Bake. Pepperoni, Italian sausage, mushroom, black olives.
Tonight will be beef chuck roast and potatoes and carrots. Possibly a tossed salad. The roast has been cooking all day in the crockpot. It smells good.

Carole - I can smell your delicious roast from here. My meal was the rest of the Chicken Salad Chick leftover salad with dill & cucumbers. Excellent. Served with 4 wheat crackers and a handful of black olives.
I made 3 deviled eggs for tomorrow. And I need to cook some red potatoes before they 'turn'. I have some leftover chicken broth so I think I'll "par boil" and then finish off in the skillet with some onions & a little broth. Hmmm - and maybe some dill...

The electrical power failed around 2pm and didn't come back until around 10:30pm. This is the 2nd multi-hour outage this week.
We have a small generator that will run the refrigerator and a few lights, but not the well pump. A bigger generator that will run the well pump will be coming up soon and I will feel a lot better when I get that hooked up.
The stove is electric, so that wasn't working. I was going to get out one of the non electric cooking methods going (2 camp stoves, a kerosene stove and the propane stove in the camper) when we noticed the cookies.
Cookies for dinner. :-)

chisandy - I think your friend is misinformed about the amount of water to grow one almond, lol! Does she use olive oil? Olive oil requires a comparable amount of water. California is the only state that produces almonds commercially and if it took that much water - in a state that doesn't get a lot of rain - I don't think anyone farming almonds would turn a profit. OR even be able to find enough water? The oft reported amount of water per almond according to the agricultural info for the state is about a gallon per based on data from the last drought, definitely not 500 gals, but that does not take into consideration that other parts of the almond are used for livestock feed and alternative fuel. I just bought some of the Califia Barista Blend but have not used it yet, I found that the regular coffee creamer from that brand had a weird aftertaste for me, so I am curious to try it again. I have been enjoying my little $10 frother - works great with the viscosity of oat products.
I am a natural intermittent faster, but it has zero effect on my weight gain/loss - maybe because I have always done it? I think my DD will have to adopt IF permanently after she ends her acute Keto phase and gets to a goal weight. Could be an issue for her because she definitely gets hangry...

I don't intermittent fast every day. It is hard to juggle that if we have any sort of plans or if I snack on something after dinner. I think I am in a plateau. Like Sandy, I am trying not to gain. The summer fruit is healthy and tempting. I cannot complain about my current weight even though I wish I could still lose some pounds. Menopause has shifted my body shape, never mind no boobs, and I'm happy to be here to complain about it, LOL. My onco is on low carb and is the skinniest she has ever been in her whole life. She said her husband is starting to tell her to stop. Even when I did low-carb, my body has a set-point and no matter how long I low carbed, the weight would not budge. Of course, no sooner do you stop, the water weight can come, which freaks a lot of people out.
I think that is the hardest thing; to figure out a "way to eat" so that it can be enjoyable, not too expensive or time consuming, healthy and give results. Wish we all came with a manual, LOL.

The latest research (independently funded, since the Feds refuse to fund any studies not involving low-cal or low-fat diets) indicates that the traditional "calories-in vs. calories out" paradigm is not only simplistic but inaccurate. Not only does the body treat every "calorie" differently in terms of how & where those calories are allocated (e.g., to fat for storage, or to liver or bloodstream for energy), neither does every person's body do so equally. Both losing & gaining weight are to blame: losing weight upsets the body's longstanding set point for body fat and the body does all it can to restore burned fat that falls below that threshold; but gaining weight also influences when & how insulin handles the incoming calories--of whatever macronutrient--following established metabolic patterns in order to forestall the effects of historically-expected famine. And the longer one has been overweight, or more frequent the instances of gain-loss-regain cycles, the more ingrained that hormonal pattern becomes. Cutting calories leads to hunger and lowered metabolism--and increasing exercise also ratchets down metabolism, all in the name of conserving energy. Abundance (of both available calories and opportunity for leisure) is a very recent (in terms of human existence) phenomenon--whereas famine cycles have been much commoner & more frequent throughout history.
That's not to say we should throw our hands up and eat whatever we feel like, whenever we want and in whatever quantities that satisfy--nor to give up trying to alter the nature of our appetites if possible--but it does look as if in the long-term it may be somewhat futile; and we should STOP treating body weight as a psychological or even moral matter. I try not to be a judgmental person, but there are times when I look at someone with my physique or larger and wonder "how can they let themselves go out in public dressed like that?" Culture is powerful, but too often toxic.
Last night I grilled myself a burger, with lettuce, tomato, onion and a thin slice of cheddar on a keto bun. Today, Bob brought back quiche & salad (sad to say, I ate the crust) for brunch. Not sure about dinner.

Hello again. I hope everyone is doing well. I will admit to not reading the 45 pages since my last post. LOL. I was out of commission for 3 weeks with the bronchitis, and getting back to normal even longer. Yesterday dinner was broccoli salad and turkey in gravy, Salisbury steak, carrots mashed potatoes. Not keto, sorry LOL. It was a catered dinner for my sisters 5oth anniversary. It was set up in just a few weeks, so there were people who had other commitments. But my sis and her DH were happy. She didn't want to plan too far ahead, as he's not doing real well with his cancer. (Colon/lung) but, those who came had fun and it was lovely.
No, tonight is not leftovers! LOL. Tonight is sautéed Swiss chard and smoked kielbasa.i may serve it over half a baked potato. Yum.

moonflwr, glad you’re feeling better. Very impressive of your sister to be married 50 years, what a milestone. Sorry to hear of her husband’s health.
Btw, I love broccoli salad. Dh grilled kielbasa and sauerkraut last week and we had it on hot dog buns with Swiss cheese and thousand island dressing, similar to a Reuben sandwich.
Today dh grilled hot dogs. I only buy all beef Ballpark. I thawed some left over chili I had in the freezer and we made chili dogs. I add a touch of mustard to mine because it ain’t a hot dog without it. And a sprinkle of shredded sharp cheddar. They were tasty.

My nephew, wife & 7 year old daughter came up to swim in my community pool today. I had decided not to swim, but that was a VERY bad decision. I sat watching from 12:30 pm to 5pm. Yes, I sat under a patio cover, but it was 101 degrees with no breeze. Whew. I said they could come swim but I wasn't cooking. Nephew is vegan so I grabbed what I could find in the fridge - Tofurky, HI rolls, dijon mustard, black olives, cucumber spears, applesauce & orange juice. His wife was craving the original, greasy KFC - so that's what the rest of us ate. Unfortunately she only brought a double order of mashed potatoes & gravy for sides (remember 101 degrees). I would have loved some coleslaw. I took lemon mini's for dessert for the non Vegan people. Oh the energy of 7 year olds!!!

In the charity shop someone actually donated a pair of used underwear !!! Also had to keep an eye on some customers that were trying to steal. And some clothes, I'm not surprised that people gave them away, they are so ugly.
Had chemo today and I have a steroid tablet which makes ne hungry. I had soup and chicken parmy and roast vegies tonight. I brought a cooked silverside the other day and had that in toasted sandwiches and with vegies over the weekend.
Your weather is as bad as ours here in Australia with floods and fires. From today until Wednesday there are storms and heavy rain here. The wind has just started to pick up here. I was in the toilet and the lights flickered so have got my torch and candles ready.
Also had some chocolate pudding for sweets !!!
