The pork roast with gravy and brown rice was good last night but there is enough pork for another meal. I will freeze it. Two meals is enough for now. We still have leftover chicken sausage gumbo. Plus some meatloaf.
The veggie last night was roasted yellow squash and zucchini chunks tossed in olive oil. It was very good.
Tonight may be something not left over.
SpecialK, you are amazing at planning meals for family and guests. I think you could run a restaurant.

I skipped dinner last night, so DH had to fend for himself. I was too tired to cook or eat after presenting at a conference and then driving home for 3 1/2 hours. I’m still getting over my ear/throat and sinus infection as well
Dinner tonight was Barramundi with chimichurri sauce, couscous and carrots. The fresh lemon juice, zest, garlic, cilantro and cumin really make a huge difference. DH found Barramundi at the Costco north of us. The closer Costco didn’t have it at all.

Today was a banana mid morning and a couple of handfuls of Spanish peanuts with my gin & tonic at 4:30pm. So much going on I just now realized I never ate dinner. Oh well, too late now.

Sharon and I came down to Phoenix/Sun City today to get some paperwork to our real estate agent that is handling the sale of MIL's house, meet with the pest control folks and load up another trailer load of our and MIL'd stuff. We're heading back to Snowflake tomorrow.

I bought two bundles of mustard greens yesterday at the local vegetable market, bought a package of pickled pork for seasoning and cooked a pot of mustard greens for dinner last night. Also made the necessary side, corn bread, and got out the butter and pepper vinegar. DH and I enjoyed the dinner.

Carole, that sounds divine! I need to figure out mustard greens. Not sure we have pickled pork out here but maybe something like a smoked turkey leg..?? thoughts?

Mushroom ravioli tonight, a favorite at our house. The sauce is made with grape tomatoes, cremini mushrooms, shallots, garlic, fresh thyme, a tablespoon of sour cream, two tablespoons cream cheese, vegetable stock, and finished with a tablespoon of butter. It’s not low calorie, but it’s not excessive either

Tonight is steak, roasted potatoes and a side salad. My steak is topped with onions, sautéed mushrooms for DH.

We made it home and ot looks like everything made up in good shape. Now we need to unload everything so we can get the trailer back to "test daughter" and her husband on Monday as they need it on Nov 22-26.
We haven't decided on "what's for dinner".

Cyathea - oh my that sauce sounds decadent. I've got to try it. How bad would I be cheating if I didn't use 'home-made' ravioli?
Mae - I love potatoes that way but don't cook them often since it makes 3-4 meals for me. But yum on the onions AND the mushrooms.
So after forgetting to eat yesterday, my first meeting was at 8am this morning & I've been racing all day. Finally got back to play Chickenfoot with some neighbors from 3-6pm. The host had been to Flying Saucer Pie to buy a fresh strawberry pie. Two slices of that was breakfast & lunch. Dinner was a cup of Bugles since one of the ladies brought a bag. I hadn't thought about Bugles in years. I woke up at 3:30am and couldn't get back to sleep, so I'm for bed VERY soon. And I'll turn off the ringer on the phone.

There was no snow and the roads conditions were perfect. When we left Phoenix, about 3 hours earlier, it was in the low 70F degree range Three hours later, at the high point along the road (7,500 feet above sea level), the temperature was just barely above freezing.
When it does storm, the road can get ' completely ugly'. The last storm I was driving in with the trailer, a snowplow truck skidded off the road!

Hi all
We have the Mission brand here in Australia as well, have been buying the mini tortillas lately. I've been having an upset stomach the last few weeks, a bit scary since I have bowel cancer. I have been eliminating foods from my diet to see if anything is causing it but I'm not sure. Have tried the A2 milk but not sure if it will help. I will probably need another CT scan soon and have an appointment with my Oncologist on the 30th.
My meals have been vegies, salads, chicken, most meals not very exciting. I haven't been eating any meat.
We have only had a few hot days here then this week very cold and wet for November. It's normally quite warm here now.
I'm trying to organise myself for Christmas, it's coming up fast again !!! We are going to my sister's again this year for Christmas lunch. We normally take a dish each. It's been hot the last few years and she has a pool. We normally have traditional turkey, ham, roast vegies plus salads, seafoods and my favourite pavlova.

carole - thank you for the compliment! I love to cook and did have a side hustle as a caterer for military receptions for a while. My son went to FSU and during one visit home told me I should move to Tallahassee and open a restaurant within walking distance from campus and cook homestyle food - that I would make a ton of money. He didn't cook much back then - too newly on his own, but since he has been a firefighter/paramedic for many years now he has become a very accomplished cook. He regularly sends me photos of what he has made, and has a super well equipped commercial kitchen at his station so I am a little jealous. DD sends me animal photos, lol! She can cook, just doesn't like to. She does grill though and uses her smoker and she recently also got an air fryer and loves it.
minus - frozen ravs = not cheating! That is all I use! When DD played field hockey in high school her nickname on the team was Bugles, because she ate them all the time, lol! Also, yum on the strawberry pie - one of my faves.
Dinner last night was a chicken stroganoff with rice and steamed broccoli. There was a discussion a couple of pages ago about lemon on broccoli - I use lemon infused olive oil and lemon pepper on mine, along with a bit of salt and sometimes parm. I often use that same oil to saute asparagus and squash, it does add a nice lemon flavor without being too acidic.
I have been feeling bleh for the last several days, fatigue remaining from a sinus infection that moved to my eye. I have done zero planning/shopping for T-Giv and need to get busy. It is my favorite meal to cook, I always make too much, but I love all that harvest type food.
aussie - hope there is some other explanation for your upset stomach, and that any scans are stable. My grandparents lived outside Melbourne and when I was young I was always tickled that the seasons were opposite of ours in California.

The ravioli sauce must be delicious, judging from the ingredients. The few times I have eaten ravioli, it was in a restaurant. I see them at Sam's Club.

Dinner last night was leftover chicken and sauage gumbo with leftover brown rice. Warmed up was just as good as the first time, especially with a loaf of French bread. This is a splurge for us. Fresh bread, which we both enjoy and tend to eat more than we should. Fresh baked French bread is available in every supermarket. It used to cost about $1 before inflation. Now it's $2, still affordable. It always comes in a paper sleeve that is open at one end.
Wally, pickled pork is regional, like tasso. You could cook mustard or turnip greens with any smoked meat or with ham. Some people use onions as an ingredient. I'm sure there are vegetarian recipes. In the rural south many people grow mustard greens and turnip greens in little garden "patches." My family favored mustard greens but also liked the turnip roots.

I think I recall pickled meat in Wisconsin, but haven't seen it here in Washington. I don't think pickled is the same as "corned," is it? Otherwise corned beef would no doubt work too.
Grilled cheese (with the havarti!) and I'm going to try pan-roasting asparagus.
Tomorrow will be the duck. I've seen recipes that do a super hot oven for only 20 minutes. Perfect.0 -
Tonight was a stir fry, not great since the rural grocery doesn’t have things like hoisen sauce or snap peas but the stir fry frozen veg mix and stir fry bottled sauce worked well enough. DH mad dumplings and egg rolls too and those were really tasty.

Wed. night I crushed hazelnuts, used them to coat walleye fillets, and pan-seared the fish. Sauteed sugar-snap peas as a side, and Bob had the remainder of his brown Basmati rice. Thurs. night was our annual "Beaujolais Nouveau hunt," at Binny's across the street from L. Woods Tap & Pine Lodge (a faux northwoods "supper club"). We split a wedge salad. Bob had the Thurs. meatloaf special with mashed spuds & buttered green beans; I had a half-rack of dry-rub baby back ribs with coleslaw and a baked sweet potato (got 3 meals out of the latter). We split a piece of key lime pie for dessert--it was nearly frozen, so hard that when Bob tried to cut off a little with the side of his fork, it flipped over on to the plate.
Last night I cast-iron-seared a steak (too cold and snow-showery out to grill it). Accompanied it with buttered baby carrots, mushrooms sauteed in butter & Madeira (with parsley & shallot), my leftover baby back rib and 1/3 of my leftover sweet potato (which Bob didn't want). Going to order out tonight--what, I'm not sure. Just don't feel like cooking (and cleaning up) again, especially after making a full brunch for Bob.

Last night was a sheet pan meal. I usually always have fully cooked brats in the freezer, and usually cook them in a pan over med heat continuously turning so they simultaneously thaw and get browned. I always have them because they are a quick dinner option when DH gets home late. I decided to try them in the oven and partitioned some foil on my sheet pan to contain the brats, some carrots in big pieces tossed in olive oil, S&P, and thyme, and some little mixed potatoes which were halved and sprinkled with my house seasoning. I rotated the brats every ten mins, and re-tossed the carrots for even cooking and turned the potatoes so they would get a bit crispy. It worked great and I will definitely do again - it took three ten min intervals to fully cook everything at 350 F. I often roast vegetables at 400 F., but I was worried about that being too hot for the brats.
Tonight I am making an old recipe my mom made when I was growing up - the recipe says chili dogs but there is no chili or dog. This is cooked ground beef that has been cooled, tomato sauce, shredded cheddar, chopped black olives, garlic, onion, chili powder and S&P. You mix all of that together and load it into a bun, wrap it waxed paper or foil, and heat in the oven. The decision to make these came from a conversation this morning with DH about olives - he is NOT a fan, but I challenged that these have olives and he won't be able to tell, lol!
Did the big grocery shop this morning for T-Giv, feels good to have that done. I had not been feeling any energy and today feel relatively normal so that is good! I am making turkey (duh..), gravy, dressing, corn casserole, green beans, Brussels sprouts with bacon jam, mashed potatoes, chipotle sweet potatoes (made them for the first time last year and loved them) with a spinach and feta in puff pastry appetizer with a small antipasto, and a pumpkin spice cake with caramel cream cheese frosting, and an apple tart for dessert. I wish you all could come and share this with me!

Special, do you have a recipe for the chipotle sweet potatoes? I may convince DH we should try it if I have the ingredients. I'm making the whole duck and crossing fingers it all comes together. Depending on how many days there are leftovers, we'll no doubt thaw the Dungeness crab (the last 3 our neighbor was kind enough to give us). They are not packed as well as I would do it and I don't want off flavor or freezer burn on these babies, so I'll thaw those in the next day or so. Not sure what T-day will be; maybe a frozen pizza, LOL.

We bought Popeye's fried chicken and biscuits and took it to my younger sister's house for noon dinner. She had cooked red beans and rice. Today was her birthday and we also celebrated her granddaughter Olivia's 13th birthday. It was an enjoyable day.
The shock was paying for the Popeye's chicken. We bought two boxes of 16 pieces of chicken and a dozen biscuits. $72.
No evening meal.

OMG, Carole--and you're down there practically in the birthplace of Popeye's! I've never bought more than 4-6 pcs. of fried chicken at a time, so 32 pcs. is a bit difficult for me to fathom. Still comes out to about two bucks per piece, plus the biscuits (definitely a high-margin item for them, as are most starches).
Last night we ordered out from The Little India in the neighborhood (one of the few Indian joints not on the Devon Ave. "Sari Strip"). Samosas (so big I could eat only one "tip" of a triangle); palak paneer; and tandoori chicken, lamb & roti with baby spinach & pickled carrot garnish. We slept in and didn't go to brunch--and I skipped breakfast & lunch. Went for an early dinner to Regalia (walked there & back really fast to try to stay warm--it was just too chilly & windy to walk as far as Chengdu Impression, which would have been half the price). My appetizer was the bone marrow special with crostini, arugula salad & onion confit; Bob had poblano potato soup and a tossed salad. His entree was what I had last Sunday: halibut, grape tomatoes & green beans; I had the Berkshire pork shank special over baked Parm-Regg. polenta with a tomato ragu. (I took home more than half). We split the chef's special dessert of fior di latte (fresh mozz.) panna cotta with berries--not too sweet, light as a feather. I'm done eating till after tomorrow a.m.'s blood draw after seeing the melanoma MO--grab a quick bite & coffee at home before turning around and going back up there for my PT eval.

Wally - you inspired me to steam/saute asparagus again w/lots of garlic. Of course it helped that asparagus was a loss leader digtal deal this week for only $0.77. Usually $2.99 or more. Heated up the last of the meatloaf and made some mashed potatoes to round out the meal. Nothing fancy but it's cold here & I wanted comfort food. Dinner at 3 - 4pm works well since I'm usually not hungry again.
I have a surplus of eggs since they were also on sale so I boiled half a dozen. Four turned into deviled eggs tucked into the fridge. The other two will be sliced in a green salad tomorrow with black olives & shoestring beets, tomatoes and some of the leftover asparagus.
Carole - wow for Popeyes prices. Guess I haven't been there lately. Although I did try the new "darling" - Raising Canes chicken tenders last week at a friend's house. Secret Sauce was good, but the chicken was but too crispy for my liking. (I prefer KFC original)
Special - I too wish we could join you. After all that cooking, I hope someone else is doing the dishes.

YIKES on that price for Popeyes. I fear dining out, in any form, is going to get pricier.
My asparagus splattered grease everywhere (olive oil) so I think it will continue to be an oven process. Our was on sale for 1.99. I suspect it is coming from south america.
The duck turned out fabulous. I love this new technique. First time I used the convection on the oven, though 2 of the recipes for "quick cooking" were in traditional ovens, just super hot. Mine was at 525 with convection. It may motivate me to try more more new to me techniques. Leftover duck tonight.

wallycat, I am northern and so do not know about cooking greens except when cooking spinach stovetop, in olive oil and garlic. Basic. Others will sure chime in.
Tonight I made crockpot cauliflower soup served with cornbread. Pretty tasty. We were invited to some friends house for Thanksgiving. May take one of the remaining jars, along with the requested pies.

I had a whole post typed out and I don't know where it went! Couldn't get it back because it was on my phone. Oh well - I will recreate it!
wally - the chipotle sweet potatoes are pretty easy - cook your potatoes either by cutting up and boiling, or roasting. I roasted mine whole until they were very well done - super soft. I cut the skin and scooped out the insides into a bowl. Added some butter and milk, as you would for mashed potatoes, and you can use cream or plant-based products. Salt and pepper to taste, but you could also add cinnamon. I added one minced canned chipotle pepper, plus extra adobo sauce - you could add more depending on your heat tolerance, and a little maple syrup. You could use honey or brown sugar in place of the maple syrup. I used an electric mixer to whip until the ingredients were well incorporated and everything was a bit fluffy. Spooned the mixture into a baking dish and returned it to the oven until heated through - no more than 30 mins.
DH was not super hungry last night so I just made him a salad - a modified chef. I did not eat - have not been feeling especially well. I went to urgent care just before Veteran's Day with what seemed to be a sinus infection that had also involved my eye. I took a course of antibiotics and had antibiotic eye drops. I also had some involvement with ears/fluid so they advised taking Claritin as well. I improved, but have been very tired for the last several days and had a lot of body aches and a headache yesterday which I took some Tylenol for and had a warm bath. I ran a fever last night, and my lymphedema arm was red, warm, and swollen - I suspect cellulitis - which I have never had. The forearm is still sensitive to the touch, but less painful than last night, and my ring finger and pinky fingertips have pins and needles. I took some Benadryl last night in case it was an allergic reaction, and it seems marginally better this morning - and I actually feel better - and the fever is gone. Not sure what I want to do at this point. Bleh. I have terrible timing.
I think tonight will be turkey kielbasa, wild rice, and baby bok choy. I am opting for black bean soup on Wednesday night (the refrigerated Panera brand) because it is easy and I plan to start my side dishes on Wed. I have red onion, goat cheese, avocado, and tortilla chips for toppings.
