    My mom had essential tremor and I remember feeling so sad watching her struggle with eating.

    Dinner last night was the potato-leek soup. Sharon and MIL both raved about it, so it is still worthy of staying in my personal recipe book.

    wally - kielbasa in my house tonight too - am going to try a sheet pan situation with it, roasting carrots with thyme, and multi-color baby potatoes I need to use up. My BFF arrives tomorrow night for a week and there are only enough potatoes for two, so I thought I should use them up.

    eric - I love anything having to do with potatoes, if you would like to share the soup recipe...

    I need to grocery shop today and run a bunch of errands, including going downtown for a Trader Joe's run. In addition to an airport pick-up tomorrow evening I am having a flooring delivery with a noon-5pm window that will prevent me leaving the house for the most part.

    auntie - cellulitis question - how did you know yours didn't clear with the first round of meds? Was it obvious, or was it just that you and your arm didn't feel right? I am not 100% at this point, and feel like I should be. My arm also hurts, but is not swollen or itchy or red. My shoulder joint particularly hurts when I wake up, which is new, but seems to resolve with a warm shower or with use as the morning goes on. I was outside yesterday working on a landscaping project and ended up laying down for the rest of the afternoon with an extremely red face, and just felt generally unwell. I feel much better today and can't attribute how I felt yesterday to anything I can pinpoint. Except maybe oldness, lol!

    We are finishing up a batch of potato leek soup too, along with a Costco meatloaf. Unfortunately, we ran out of bread for sandwiches which means a trip to the store where I think I’ll also snag some pork chops fior dinner. The thinner ones which I think I’ll pan fry something I almost never do.

    Minus your culinary tour sounds fabulous! Enjoy every minute!

    Eric I hope your MIL is on the mend. I feel like we’re playing Dodge ‘Em every time I go out with all the viruses floating around.

    Carole, it’s nice you that you were able to get some quality time with your family. I’m an only child and don’t have much family left but since we’ve moved closer to DH’s family and the kids we’ve made it a point to get together at least every few weeks. I hadn’t realized how much I had missed that by being so far away.

    Wally - I want to live next doorto your crab-giving-away neighbor.

    The hospital where she was admitted was full.....all but one bed was filled due to respiratory illnesses, but there were not that many COVID notices on the doors, so a lot of it is 'other crud'. I didn't go near the hospital without a N95 (actually unvented N99) mask of the type that had been used in my fit testing...that and lots of hand washing. ;-)


    And now, the recipe. .

    6 cups of potatoes cut into 1 inch cubes.

    2 leeks sliced into 1 inch thick 'rounds'.

    1/2 cup peeled carrots, diced.

    1/2 cup diced celery. I added in the celery leaves in addition to the 1/2 cup of celery.

    5 cups chicken or turkey stock.

    Parsley. It called for fresh. I didn't have that, so I used about 1tbsp of dried.

    2 tsp salt

    1/4 tsp black pepper

    1/3 cup of butter

    12 fluid ounce can of evaporated milk

    chives


    Put everything into the crock pot, EXCEPT the evaporated milk and chives.

    Cook on low for "10ish" hours, or high for "4ish" hours....or medium for around 6 hours.

    About an hour before serving, add the evaporated milk and let it cook with the rest of the soup.

    Add the chives when serving.


    it made enough for dinner, today's lunch and probably tomorrow's dinner. Tonight we'll have the remainder of the pork roast.

    Dinner tonight was a stroganoff like slop DH made. He wasn’t happy that the pasta turned to mush but it wasn’t that mushy, kinda like a flattened dumpling. The meat was ground bison leftover from a hungryroot box, it all tasted good to me.

    There used to be a wellness-adaptive "superstore" in the burbs (part of a TX-based chain). All sorts of stuff, like velcro-closure clothing for those with arm mobility issues, "donning" aids for socks & shoes, etc., braces, back cushions, exercise equipment, massagers, supplements, easy-grip utensils & ergonomic pens, special-diet foods, even shiatsu massage chairs. One thing I recall seeing was weighted & balanced utensils & cups, which seemed strange until a salesperson explained they were for Parkinson's patients and others with hand tremors. They used to have a huge catalog--I wonder if they (or a similar firm) still have an online presence,

    Thanks for the reminder of potato leek soup and the recipe, Eric. I will make it if our weather cools off. December is not soup weather so far.

    I had a meal with artichoke patties yesterday when I met friends for lunch. The plate also had sauteed spinach, diced tomatoes and an alfredo sauce. I added boiled shrimp, a mistake since the shrimp weren't a big flavor addition but a price addition. The artichoke patties were nice but too salty. The main pleasure was the company. But I will make the patties in the future.

    I'm all but positive the shrimp the restaurant used were frozen imported, a disappointment given the restaurant's popularity and prices. Fresh shrimp have a good texture and taste.

    I wasn't hungry for dinner but ate a small bowl of dh's butter beans cooked with smoked sausage spooned over Parish rice. The beans and rice were delicious. We also had slices of French bread spread with butter and heated in the oven. DH declared the beans were his best ever.

    Tonight's dinner may be pork roast out of the freezer.

    Auntie, Parish rice is a hybrid rice that is higher in protein and has a lower glycemic index. I wish we could find it locally. Red Stick Spice had a free-shipping promo for cyber monday, so I jumped on it; it was the lowest price for 2 pounds I found anywhere as well.

    Carole, recipe for the butter beans?

    Leftover kielbasa with beans and veggies tonight. If there are beans left over, I may add more veggies and make a "shakshuka" of sorts for tomorrow.

    Broiled swordfish and asparagus. I've added fish to my diet about once or twice a month. Oh, and beer.

    I eat fish at least 3-5 meals a week--a souvenir from my WW days of yore.

    This morning I made keto lemon-ricotta-blueberry pancakes. Using seltzer instead of water, and folding in a beaten egg white makes them light & fluffy. Instead of syrup, I sprinkied them with granulated erythritol.

    For dinner, I ordered (for my weekly Hooked on Fish choice) a quart of Manahattan-style fish (mahi) chowder and wild striped bass. En route home, I stopped at Sfera (a Sicilian street food joint) and bought two arancini (fried risotto balls stuffed with beef & cheese) plus salads--fennel/orange, arugula/Parm Reg., and panzanella (tomatoes, herbs, peppers, cheese, olives, cucumbers, and croutons). The soup was frozen solid and the label said to thaw before heating, so I put it into the fridge for tomorrow or Thursday night. Pan-seared the bass with salt, pepper and grapeseed oil, air-fryer reheated the arancini. Bob had 1-1/2 arancini, I had 1/2. I picked the croutons & oranges out of my salads. Not sure if I will have dessert beyond a few nuts.

    I was thawing a beautiful Salmon for dinner but the delayed pickup for DH's car from the dealership (brakes) led us to a local place. He had ribs, fries and slaw and I had spicy shrimp lo mein. Assured it was not really spicy I took the risk. Very good. We took home carrot cake to share. DH did not want any and I had about a 1/3 of it, restraining myself. As Sandy says it actually was not "cheat worthy" so I am not sure I'll finish it. 🤔

    I do hope the salmon is okay to cook tomorrow. It was frozen in a vacuum seal (and not inexpensive). I hate the amount of food we waste at times.

    Tonight was the leftover pork roast and then we went to a city council meeting to see the new mayor sworn in. The new mayor is our Obama Care insurance broker.

    While t the meeting, I saw a couple that I thought I knew and they thought they recognized me. We finally figured it out. We had deployed together to Hawaii for possible "use" in Guam. I'm on the Arizona disaster medical team and they are on the New Mexico team. The lady was the sister of the new mayor and she and her husband came over to watch her brother get sworn in....small town. :-)


    And...sigh...we just got a letter from a bank. The letter stated that they are unable to approve our credit request because of the credit freeze on our account. We didn't ask for credit from that bank. Sharon's info was stolen, most likely when she had to give her SSN/date of birth, etc for tax reporting services. it was used, successfully, to buy a laptop computer. We got that straightened out and put a credit freeze on both of our credit files . Since then there have, so far unsuccessful, been several attempts to open new lines of credit. The attempts are using our old address and we get the forwarded letters. There are only 6 more months of mail forwarding, so after that we may not know of the fraud attempts.

    Eric, I have to nod knowingly about that credit freeze. When I got a letter from a (now-defunct) department store denying "my" (alleged) application for a credit card--using the wrong first name and a prior address--we immediately placed a freeze with all three reporting agencies. Invariably, cashiers at stores where I don't already have an account will ask me if I'd like to save X% on my purchase by opening a credit account. I explain that the terms of the freeze we set require they call someone at my home for consent--which, of course, will not be granted (Bob & I agreed that neither of us would try and neither of us, if at home, would consent).

    That passionfruit meringue pie last night was definitely cheatworthy. When I first began my low-carb diet in 2019, we were at an annual dinner (the last, it turns out) for a soon-to-be defunct hospital, at a down-at-the-heels suburban hotel on the verge of becoming a de facto motel. Everything served--from drinks to coffee--was mediocre. I was seated next to another doctor's wife, and when I passed her the basket of rolls, she declared them "not carb-worthy." I asked if she was low-carb too and she nodded. I asked her what she would consider carb-worthy or not. "Bread fresh from a bakery, or served with tongs in an upscale restaurant by a waiter. A great risotto or paella. Really good pasta at a great restaurant. Stan's donuts, maybe Krispy Kreme. Dunkin'? Never."

    Words to live by.

    Wally, I'm sorry you are estranged from your twin. There are six of us siblings, three sisters, three brothers. We communicate weekly, sometimes more often, on a text thread. Four of us live close enough that we could get together but the family gatherings stopped when my mother died. We have to avoid any discussion of politics because my middle sister and I are Democrats and the other four are right wingers and Evangelicals.

    The butter beans recipe is the same as the recipe for red beans, navy beans, pinto beans. Chopped onions and garlic, a couple of bay leaves, and smoked sausage (sometimes andouille, which is also smoked sausage), water, s & p. Simmer in a large pot until tender. Mash some of the beans to make a thicker gravy. Serve over rice and sprinkle with Louisiana hot sauce. Both my sisters use their slow cookers for beans. Ham and smoked ham hocks are also good seasoning.

    Lump crab meat has come down from $40 a lb. I bought a lb. for $28 and made crab cakes last night. We ate four and I froze four. I also made remoulade sauce using a recipe from Serious Eats. Heated up leftover eggplant dish and made creamed spinach with frozen chopped spinach. A delicious meal. Would have been very pricey in a restaurant.

    Tonight we will have the pork roast out of the freezer. Yesterday I cooked some cranberries that will go well with pork and I have a couple of sweet potatoes standing by.

    Nance, my diabetic brother declares that his blood sugar is better with the Parish white rice than with brown rice. It's available in our Rouses supermarkets. I find that it tastes better than the ordinary white rice. My family always favored long grained.

    Reader, your salmon should be fine for 24 hours, at least. Editing to add, it is one of the reasons I prefer buying fish frozen. They are flash frozen as fresh as possible and I can decide when to thaw them. If I buy already thawed at the grocery store, I have no way to know how long they've thawed them for me. Even here, some fish is only available fresh when in season, and even that makes me nervous.

    The Parish rice, to me, seems more medium grain, at least compared to Basmati long grain. I emailed Parish rice folks begging them to hybridize short grain rice. Of all the rice I have eaten, short grain is my favorite and I've only started eating it last year. Even the brown (which I do not like in general) short grain is yummy to me. If I plan ahead, I try and make the rice the night before, cool it, then reheat as it creates resistant starch, which lowers the glycemic index. Same for potatoes; if I can plan ahead to cook them and cool them overnight, I try to do that.

    The shakshuka-style eggs using the leftover beans/kielbasa/veg for tonight.

    The best Pacific salmon are flash-frozen on the boat, which kills the parasite in the fish (seems to be limited to salmon). Then It is quick-thawed at point of sale, except for some of it kept frozen to be sold frozen. The flash-frozen and quick-thawed stuff can be sold as "fresh" if it's sold w/in (IIRC) 48 hrs. of being caught. (If thawed later, then it must be labeled "previously frozen"). The only exception is salmon (wild or farmed) caught to be smoked w'in 24 hrs--which also kills the parasite.

    Going out tonight but not sure when or where--Bob's schedule is so irregular I never know when he'll get home (especially if there's traffic) so I can't make dinner reservations, much less plan to cook dinner in advance without ruining it. We do have that fish chowder that is thawed enough to heat, plus various roes & blini plus the fixings for a Caprese.

    Sandy, that is interesting; did not know that flash-frozen/thawed can be called fresh...I will have to do some research. I wonder if it alters the flesh much if one buys in bulk to freeze at home.

    Salmon was wonderful but all this discussion was interesting! I bought it fresh (I think) wild caught at a fishmonger who vacuum sealed it and I froze it.

    Eric I too have had the identity theft. Not certain how it happened but I caught it before too much happened and froze my reports. It started when I got an unsolicited credit card in the mail which I naively just shredded and forgot about....until it showed up on my credit report as a new open account.

    Want to check out Parish rice for me and diabetec dear hubby.

    Reader, glad to hear the salmon was great. I still butcher-paper the coho I catch, but that is so meager now...waaaaaaaaa!!!! Sorry, tangent.

    I made chicken chilaquiles for tonight. There's leftovers and I know the tortilla chips will be soggy, but I'll add a poached egg over our servings for tomorrow and enjoy. What is not to love about corn tortilla chips and cheese?!

    At Regalia last night we shared tuna carpaccio and a Mediterranean salad. Bob's entree was fettucine "mare e mare" (shrimp, calamari, mussels & Manila clams in marinara); mine was salmon in a beurre blanc over peppers, mushrooms & onions. Leftovers tonight, with seafood chowder to start.

    Took the leftover Korean pork from the freezer and simmered it with a bit more Gochujang, Mirin & Sake to reconstitute. It was maybe even better the 2nd time. Served over long grain & wild rice with Brussels sprout on top.

    Made some Godiva chocolate pudding with the special Heloise recipe - sub heavy cream & Tia Maria for some of the milk. Her recipe was for chocolate pie, but I don't have a pie shell & don't need the extra calories. I had to order these pudding boxes from Amazon since no one local carries them anymore.

    Lunch with ex-DH tomorrow. He's coming up to help me change out some 4 and 8 foot fluorescent lights. Requires two people & two ladders. We'll go to the great hole in the wall Angies Cafe on Hempstead & I'll treat him to a patty melt.

    Got the Christmas packages mailed today. Whew. And bills paid. Now I can move on to the cards. I cut way back several years ago and only do cards & letters to far flung friends who I don't see often enough. Scheduling several holiday lunches next week with various friends. It's so much easier to eat the "big" meal mid day & be home before dark.
