    Minus, as everyone has posted, that lunch meal/restaurant sounds wonderful!

    Carole, so glad to hear you are safe. I'm sorry for your DH. Has he tried d-mannose? It may keep things at bay once he is off the antibiotics. Interestingly, there was a recent study that indicated post-meno gals with UTIs often get delirium...discovered it is tied to estrogen (or lack there of), so I suspect men have a double whammy...bad patients and less estrogen.

    Carole, I rarely use the amount of oil required in most recipes. Of course, I'm hard pressed to follow most recipes exactly, so I go by our preferences, experience and take it from there. The flavors would still hold true even without using all that oil. I do use EVOO very liberally and hope it offers all the health crap that "they" keep talking about, LOL. And I also find the hams super salty. Since all of them are fully cooked, I boil 'em. Helps warm them through and dilutes some of the salt. If DH wants some browning, I pan sear his slices. Clearly, I am not a purist for most meal prep, LOL.

    TOnight will be the leftover chicken stroganoff riff. The addition of asparagus was wonderful. See, I can't follow a recipe to save my life, LOL.

    Carole - I certainly agree that your DH needs to find a urologist who actually cares. Glad he got treated even if it did require the ER. Glad you are safe. The weather event didn't happen as promised in Houston. Lots of wind to shake down more leaves, but only included 1/4" of rain.

    Mae - Laurenzo's is on Washington between Shepherd & Yale. Been there for years but hard to spot. Originally founded by "Pappa Laurenzo" the husband of "Mama Ninfa". Of course now the next generation of the dynasty even includes El Tiempo.

    Nance - good to hear from you. What are you planning for the holidays?

    Special K - I'm thinking of you as I savor my See's peanut brittle. What about your plans?

    Sad to say I decided I should toss the leftover rotisserie chicken pieces. I defrosted on Monday and still haven't used them, so.... And now it's critical that I make egg salad right now to use some eggs I boiled earlier this week.

    I'm glad your husband is doing better, Carole. I agree men don't make great patients. :-) I've posted the possibly spoof Youtube video about "man colds".

    And, both Carole and Minus, that's good news that the weather was calmer than expected.

    It was a busy day here; meeting with the health insurance broker, eye exam (spent over $1,200 for the exam and two sets of glasses), signed up for a gym, dog grooming, hardware store visit to get stuff to hook up MIL's satellite television system that we brought up from her home in "the valley" (Sun City).

    Dinner tonight was a pork shoulder and a salad. We bought the shoulder when it was on sale and was less expensive than chicken and far less expensive than beef. With the new cooking recommendations (145F and a few minutes hold time), the pork turns out great....much better than when pork "had" to be cooked to 185F.

    I used a recipe for the potato/leek soup that Susan posted, years ago. Julia's Basic Potato Leek Soup. I assume Julia is Julia Childs. The soup lacked any wow factor but I didn't expect anything wowlike considering the ingredients. The French bread was good with butter. There is a big container of leftovers.

    The ham steak cut into small dice didn't add a lot of flavor. A ham bone would have been much better. DH used to buy ham bones from a baked ham place. They were about $8 and had a lot of ham on them. I'll bet they cost twice that now. He used them to season red beans. Out of curiosity I think I will call and inquire about the cost.

    Minus, I thought about you as I stripped the rest of the chicken from a rotisserie chicken and froze it. You are such a conscientious user of leftover food. I also thought of Eric as I deposited the carcass in the garbage can, thinking "Eric would have made chicken broth with this."

    Our Christmas day plan is on the cheerless side. We will go to my middle sister's house. The only other participants will be her son, his wife and two small children, ages 4 and 2 months. The son and wife are reclusive and not self supporting. The little boy seems to have some form of autism. My sister drove her daughter, early 40's, to a rehab facility yesterday for people with addiction and mental illness. The daughter's three children have opted to spend Christmas Eve and day with the daughter's ex who is father to two of the children. My sister isn't happy about that, especially since she has provided a home for the 17 year old granddaughter.

    I would just as soon stay home but do look forward to seeing the little great niece who is very cute judging from pictures on Facebook. I will cook some side dishes, including a spinach casserole that my sister especially likes.

    Norman Rockwell, where are you when we need you? LOL.

    No clue yet what dinner will be.

    Dinner was shrimp sautéed in garlic and butter, with mixed veggies, spinach and Uncle Bens cheesy risotto. I expected better but it wasn’t bad for a 90 second microwave risotto.

    Tonight, we were planning to to go to a Christmas party potluck put on by a club we belong to, but by the time we got done with the errands, we decided we'd done enough today.

    Yesterday, our dog stumbled while coming down a cement step at the groomers, and after that, he would not put any weight on that leg. Today was only slightly better, so....off to the vet. The vet decided it's just a bad "sprain" and felt it would improve with some rest and a NSAID. We were relieved with the diagnosis, and we are now established with a sort of local vet. I include "sort of local" because the only vet with an open (due to a cancellation) time before 27 Dec, was in Lakeside, which is an hour drive from the house.

    Fortunately we have leftovers tonight for when we do get hungry.

    Carole, I'm sorry for the holiday blues. In some respects, not growing up with any religious affiliation has served me well. Dad gave up on religion during the hollocaust and Mom was forbidden her worship because of dad (oy!) so we were "forbidden" to celebrate anything. I love looking at pretty lights, watching the movies, singing the songs, but it has no meaning or hold on me...for better or worse. When I feel FOMO (fear of missing out), I am sad to say, the old refrain of being thankful for my health keeps me going. ...especially DH's health. I will need my Merk's manual to decipher his last scan.

    Our Sequim trip was easy driving today and hopefully, no flu or RSV. I made a broccoli, bacon, lettuce, feta cheese, red onion salad of sorts yesterday so that is what we had tonight when we got home. I may use that to flesh out our lunch salads the next few days and I will make egg foo young of sorts (I usually make it like a fritatta and don't spend time to make the cute smaller pancake/patty things.

    Wally, I enjoy Christmas lights, too. Our next door neighbor's house is beautifully decorated on the outside. At some point before Christmas day, dh and I usually drive around the subdivisions in the neighborhood. I do detest those blowup decorations that collapse on the lawn during the day.

    Last night's dinner was easy comfort food, a beef pot roast with potatoes and carrots. Tonight will be leftovers and a tossed salad. Unless I get the rotisserie chicken meat out of the freezer and make an enchilada dish. We have avocados that would be good for guacamole.

    Mae - so glad you are still posting pictures of your delicious meals.

    My nephew cancelled our holiday lunch today. Both he and the 7 year old are sick. Whew!! I don't have to get dressed up & drive across town, and I can eat some of the wonderful leftovers in my fridge.

    Eric - glad the dog is OK. My granddog went in to review her CBD with an internal med vet & they found she was anemic. Of course that has to be fixed first. $1800 worth of tests later....ULS showed no internal bleeding & results pending on all the others.

    I am always inspired by what everyone is fixing. Carole - I agree about the ham bones making a difference. It's going to be cold here for the next week so pot roast sounds delicious. Oh - and I have some tortillas and some frozen enchilada sauce... Wally - I love broccoli salad. I haven't made my version of foo young in ages. Since it's spinach based & I have that, I'll plan Spinach Egg Foo Young in the next few days. BTW - I just drop spoonfuls in the pan & don't make elaborate patty things either.

    Like Eric's 'other daughter' - I have an 'other son'. He now lives in Panama. I just received a HUGE Harry & David gift basket from them. I had hunks of Gouda cheese for breakfast. I can hardly wait for the Royal Rivera pears to ripen.

    Forgot to say HI to MOON. Great to see you. When you get your electronics configured, please send an update on your family.

    Tonight I’m making Butterball soup (similar to matzo), I cooked the chicken and broth last night and will make the butterballs this evening. The weather is forecast to range from the teens to 30’s, so the time is now.

    Last night was pizza at a friends house.

    I'm making a sort of vegetarian chili/stew...cobbling stuff together to use up ingredients.

    DH's labs were not great; Pain doc thinks his MRI indicates the pain is from the cancer. Onco on Wed. ...and the last time we'll see her. Waaaaaaaa!!

    Crappy day. At least it is cold and we may see some snow for a day.

    I got the butterballs right this time but not the noodles since I couldn’t find them locally. Still great soup but it’s always better the next day.

    Wally - sorry about the DH's doc's supposition. Were they able to give him something for the pain?

    Mae - Yummy soup!!! If you were still in Houston, I'd invite myself over to lunch.

    I took a friend to lunch today and she choose Chicken Salad Chick. While I like their chicken salad & especially their broccoli salad, it was cold & rainy here and a 'warmer' atmosphere probably would have been more inviting. I scratched a number of errands that were not urgent so I could get home before the weather got worse. Supper was (original) Beer Nuts with my gin & tonic and then See's Victoria Toffee for my main course.

    There's cold leftover rice that must be used tomorrow. And asparagus that needs to be cooked. I'm thinking pasta vongole for Christmas Day - but haven't made a final selection yet. Also thinking about green chili chicken enchiladas. It's supposed to be 11 (yup - eleven) degrees here Thursday night. Our State government has done nothing about solving the electric grid problems so I sure hope we don't lose power again for an extended time.

    Sorry for not having popped in here for awhile. We've been dealing with various minor annoyances (cat antics, home stuff, computers/mobile devices, etc.) that have piled up to be quite time-consuming. Snafus with passwords, updating operating systems, holiday lights, yada yada... And my HK's DH's health is definitely deteriorating. The V.A. will pay to retrofit his bedroom (he lives on the first floor, she on the second) with a hospital bed, IV pole & pump, and O2 concentrator, and a daytime caregiver; but his problems occur at night and they won't pay for overnight help. It's touch & go now. At least he can still get to dialysis.

    Carole, glad you dodged the NOLA-area tornado. Wally, saying a Mi Sheberach for your DH. Monica, welcome back.

    Haven't been cooking anything interesting. Friday night we went to a Middle Eastern (mostly Israeli) restaurant, Fiya, in Andersonville we'd been meaning to try. Managed to park half a block away. It has a central woodburning oven (shaped like a Big Green Egg on steroids) around which is a large counter. Warms the place up. The food is reasonable and the portions generous--so much so that 4 appetizers were all we needed for a meal for two. Fantastic velvety hummus, studded with whole chickpeas, grilled shredded chicken, and gribenes (pronounced GRIB-niss: rendered chicken skin, sort of kosher chicharrones). The pita was baked in that oven and was lush & pillowy. Kofta (lamb) meatballs with labneh, matbucha (tomato/red pepper/eggplant spread), Jerusalem salad and housemade pickles. We shared both of those. Bob had Georgian beef dumpling soup, and I had a wood-roasted maitake mushroom that was a veritable umami-bomb (if I had to be both vegan & keto, it would be a nice beef substitute). Creative drink & wine list too. We will be back.

    Sat. night was a friend's annual pre-Christmas party, with charcuterie, cheeses and assorted no-nos. Sun. night was the temple Hanukkah dinner: roast chicken (the vegans got falafel in pita), steamed green beans, fennel-arugula salad, and latkes galore (with sour cream & applesauce). Dessert was sufganiyot--or as close thereto as Dunkin' jelly donuts could be. Yeah, I indulged--tradition, of course. Entertainment was the little kids' Sunday school choir, followed by the teen band from the neighborhood branch of the School of Rock franchise. They were pretty good, albeit earsplitting at times.

    Tonight Bob's office brought in burgers; I nuked a frozen CauliPower keto lasagna and made a Caesar with pepitas instead of croutons. Dessert was mixed nuts and a small "ingot" of 77% dark Teuscher chocolate.

    I am currently in RCN's "e-mail jail;" my account was (w/o warning) suspended because the algorithm flagged "abuse," claiming I sent too many e-mails. Baloney--I GET too d**n many junk mails. I spend 3 hrs every other day purging first my Inbox and then my Trash. I called and found out that from the time the Customer Svce rep put in the case request, I remain suspended for a full 24 hrs. So all the accounts that use that address to contact me (including via apps) can't notify me--their e-mails will bounce back. I'd been reluctant to take T-Mobile up on that $50/mo. internet because I'd have to give up my RCN address and spend hours-to-days notifying everyone of the address change; but I'm going to do it anyway as soon as RCN reinstates me; once I've notified everyone, then I'll ditch RCN as my ISP. (Still have to keep it for my landline, which is how my DirecTV updates; and its basic cable for when the satellite goes out during storms & heavy snow; if I subscribed to all the streaming services that provide the shows & channels I like, it'd cost as much as cable and would be useless during an internet outage).

    Oh, and the kids are still insisting on driving down (with their dog) to the Hill Country for Christmas weekend. They're leaving Wed., ahead of the blizzard--but it's gonna be 19F in San Antonio by Fri. Maybe they should book a flight to Cancun and follow Cruz if the grid goes down again.

    We are expecting 6-15" of snow from Thurs-Sat. and then subzero cold (air temps, not "feels like"). Time to wrap the basement pipes and run all the taps. We may also lose power, Bob is insisting on going to work on Friday, so he will be staying at a hotel near the hospital Thurs. night (or in the on-call room if the hotel is booked up). I will be stuck here alone with the kitties.

    Thank you all for your kind words for DH. Onco mycharted that he may need to change treatment and move on to newly FDA approved (thankful) radioactive treatment. Will spare all the details here....

    Leftover hodge-podge and I'll make a broccoli, scalloped potato dish with canadian bacon so we can just reheat tomorrow.

    editing to add: I misspoke, I added cheese, so it is au gratin potatoes....

    DD is flying to Phoenix, from Detroit, Friday morning...provided her flight is not cancelled...and we will pick her up at the airport.

    Tomorrow we are getting window blinds/shutters installed (finally) and all the furniture is away from the windows, so the house is in great disarray at the moment.

    Eric, fingers crossed that nothing interferes with your DD's visit.

    Last night's dinner was a pork chop baked dish with cabbage and potato. Enough of the veggie portion was left over to have it again tonight with browned ground beef mixed in.

    We're braced for at least two days of freezing temperatures. Why do meteorologists seem to get so excited about bad weather?

    Eric - I still need to do something about blinds/window coverings 1-1/2 years later. My son said to order from Blinds, Etc. but I can't install myself & he lives in CA.

    Met a friend for holiday lunch yesterday at Landry's on the lake in the Woodlands. Wonderful view. Excellent shrimp scampi. As usual, I brought half home. They have a great lunch special. Too bad most in Houston have gone upscale to McCormick's & Schmicks. (does it come through that I dislike Fertitta?) But Mae - there's still a Landry's Seafood in Katy. Christmas drinks today at 2pm at a friend's house. Her husband is fast proceeding into serious Alzheimer's. He insists on dinner at 3pm and goes to bed by 4:30pm so we have to have really early happy hour. Pretty much shoots the rest of the day.

    Plants in. Pipes wrapped. I'm heading out to cover more of the flower beds. Weather bomb is supposed to come thru Houston in another couple of hours. 18 degrees tonight. We'll be OK if the grid holds and we don't lose power.

    Forgot to say - I love your wig Goldie.

    And I had a quick note from Lacey. They are having a full house for Christmas with all the kids & grandkids. Hope we hear from Special K and Nance and....

    Minus, we’re moving into our travel trailer tonight and throughout the weekend (easier to keep us and the pups warm), the “feels like” temp is predicted to be 0-5 degrees and the wind can get brutal on the ridge line, gusts were well over 50mph last night.

    Thinking about a veggie and pasta dish for dinner but still in the planning stage. Plenty of leftover butterball soup too for the cold days ahead.

    Hey all - I have been AWOL, had some pre-holiday company. I just read through all of the posts since the last time I signed in, but I jut got done baking several dozen pumpkin chocolate chip cookies with brown butter icing, so I decided it is futile to try to respond to all posts. Glad to hear about lacey, great to see moon and bedo and goldie. Glad carole is safe from scary weather - and for goodness sakes - stay warm out there you people!!! And eric - yay for a visit from DD!

    I finally made the butternut squash lasagna. Will edit this post with a photo on my phone when I get done typing it. We had a nice 39th anniversary dinner on the new St. Petersburg pier, and happened to catch a boat parade out the window - a two-fer! Other than that, we just relaxed and chatted with my BFF for the most part!

    The last few nights dinner has not been memorable - just sustenance. Tonight is leftover steak with mushroom sauce, baked potatoes and green beans almondine.

    minus - I am glad you are enjoying the See's - cracks me up that it is your "main course" at various points. But I totally get it...
