I wasn’t too tired to cook and it tasted delicious

Lilli Mae looks delicious and also happy for the scans.

Tonight pork chops, orange scented sweet potatoes with nutmeg, spinach and cheese casserole and applesauce were on the ❤️ menu.

LOL on the dressing confusion! For me stuffing is dressing.

The Valentine's dinner at a restaurant last night was a failure for me as far my food was concerned but I enjoyed the company and appreciated our friends getting us out of the house. We live in a comfortable rut that doesn't include going out to eat. The other dinners looked delicious. DH had crab cakes and shrimp with pasta.

I had an individual pizza with artichoke hearts and spinach. I asked to omit the onions and add Italian sausage. The sausage was added and the onion was not omitted. So I picked the pieces out. The pizza was cold and the crust was puffy. It was possibly the worst pizza I've ever eaten out at a restaurant that features its pizza. However the chardonnay was good.

As with most restaurants these days, the service left a lot to be desired. Still, we added a generous tip.

That picture depicts real winter, Eric. As I look outside, I see gloomy weather with a pop of bright pink azalea blossoms. I hope we don't have drizzling rain because I have a 9:30 appointment to have my car detailed here at my house. I'm not sure waxing and humidity go together.

Carole, I'm so sorry on that pizza...I must be an unpleasant customer because I would have sent the 'za back and explained that no onions meant no onions. And I say this having waitressed and cocktail waitressed and bartended....

    Leftover frozen 'za (Tombstone) tonight.

Eric, how is the water supply situation in Arizona? And where was that snow...do they sell homes up there? I'm depressingly trying to decide if I will stay here should DH go before I do.

The water situation in northeast Arizona is okay. That picture was taken on the White Mountain Apache Indian lands.

A few miles east of where I took the picture is Greer. There are houses for sale there, and in the surrounding communities, but "they ain't cheap". Greer, Alpine and (I think) Nutriso will have similar climates...8 feet of snow per year. We are northeast of Snowflake, where the snow amounts are a bit less than 2 feet per year.

Probably the easiest way to look for places around here is southern Navajo County and southern Apache County, both in Arizona.

Wow.. It was less than 0F last night and our well froze. At least that's what I hope is the problem. I've turned off the power to the pump and I'll let things sit for awhile.

Edited to add...2 hours later...The well/pipes have thawed out and we have water again.

Eric, sorry to hear about your well pump, but glad it's thawed out and you have water today. What about tonight? Another below 0 degrees. Is there anything you can do for that, to keep it from happening again? I'm on gravity, with my tanks high up on a hill, I filled them about a week ago, so no need to run my pump. I hope it's not froze! I would be afraid to try it, for fear of hurting/damaging something! Needless to say, myself and all of our neighbors are snowed in for a few. Several have tried to get out, only to get stuck. One neighbor took 4 hours to get unstuck!

Hello to everyone! Going to try a pineapple chicken recipe tonight and serve with rice. Not sure of a veggie, I'm out of fresh, so something from a can. Oh wait, I think I have one more jar of beans I canned, maybe I'll have those. I do have some local corn I froze, but not big on corn with rice.

  • eric95us
    eric95us Member Posts: 3,179

I'm not sure exactly where the freeze occurred, but it is obviously somewhere that warmed up quickly when the sun came up. I suppose it could be out at the well head. Later I'll go out and put a box (I've a lot of them) over the well casing and see if that helps.

The snow is slumping and turning to ice, so walking, like to get the trash can from the driveway--a 1/4 mile round trip walk) is something that requires some care. The paved roads are clear here and, right now, are dry.

Tonight's dinner will be leftovers. We are almost done with the marinated chicken, so that will be on the list, as will the left over chicken-rice dinner and the potato-leek soup.

The last recipe is good for the old joke....first you take a leek.... :-)

LOL, LOL, lOL...ok, Eric, I needed that today.

Eye pressures are up and suspect the glucosamine; we will recheck in a month. Hope that is all.

Rockfish on a bed of sauteed onions, green beans, corn and diced tomato.

Mae, congrats on the scan--and that surf & turf looks mouthwatering!

We've had crazy weather--a warm Feb. (pouring rain & 60F for V-Day); but everything in the "wintry-mix box" today. (Caused a huge old tree to fall over on the Northwestern campus, injuring four and sending two of them to the hospital). Cold & clear tomorrow, back to the 40s-50s over the weekend. For our trip to NOLA 3/1? Forecasting snow again.

V-day at Mercat a la Planxa: croquetas of jamon serrano & manchego; then "montaditos" (Catalan canapes) of lobster salad; chorizo-wrapped dates over mesclun salad; "mar y muntana," a surf & turf of sea scallops and Rioja-braised short rib; paella Catalana (clams, shrimp, squid, peas); and Basque chocolate cheesecake. Yeah, I cheated...until dessert. Took one bite and realized I couldn't eat another morsel of anything...until 4pm yesterday!

Picked up my Hooked on Fish order yesterday. Last night, I made insalata Caprese, sablefish in Nobu's miso marinade, and sauteed snap peas. Tonight, used some more of the marinade on dry-pack sea scallops. Also a stir-fry and an arugula salad. If I can make it out of the house tomorrow for anything non-medical/non-veterinary, will pick up a dozen $1 oysters at Whole Foods for "Fishmonger Friday." Not sure what else I'll cook.

Not a lot of eating around here over the last 48 hours. Our 16 year-old dog passed away yesterday after a 24 hour stretch of rapid decline. DH was at work, but DD and I stayed with him non-stop that entire time - he slept between us on the bed on Wed. night. Yesterday afternoon was very hard, and I find myself very emotional today in the house by myself without him. Flynn the cat is here with me and that is nice. The weather has been so beautiful - yesterday in the morning we carried him outside and put him by the pool on the chaise lounge - his favorite spot - under the umbrella and just sat with him - he was sleepy but knew where he was, and we fed hm some dog ice cream. We have a spillover ledge in the pool and it sounds like a fountain, so it was peaceful. He was just the best dog, full of love for all. Even though I knew it was his time to go, I am missing him very much right now.

Not really focused on dinner for tonight, but I will find something easy. I have some marinara that I should use, so maybe cauliflower linguine.

(((((Special))))) so very sorry for your loss. It is always so painful to lose our furry family members.

    Leftovers tonight (rockfish stuff).

Had quite a scary experience...almost choked on a hunk of cheese I put into our lunch salads, just now. It slid down without my chewing it (I eat waay to fast, I know) and then got stuck. DH did heimlich and managed to move it a bit and it finally went down all the way. I've never been so scared. Saw stars...hope not from lack of oxygen but stress. OY what an ugly way to have lunch.

Special, so sorry to hear bout your fur baby. If only all of us, our loved ones and our fur babies could live forever.

Wally, that is a VERY scary situation, glad you are ok!

Special - adding my sympathy to the passing of your beloved dog. Glad your DD was with you most of the time.

    Wally - I agree - really scary.

Lately my 'best laid plans' have gone awry. A neighbor & good friend died last week. He'd lived here 45 years and volunteered for everything over the years. His wife died 6 years ago. I've been picking his mail, trying to help his grown sons figure out who to invite to his celebration of life and collecting boxes from the liquor store. Also next Tuesday is the renewal class at the police department for our Citizen's Patrol group - so been working on that. We grew the group from 8 to 17. WOW.

It seems like everyone wants to call & talk just as I contemplate cooking. Spinach salad one night but otherwise leftovers. Today was cheerios & a banana. The selection of a cab wine might not have been the best pairing. And later some slices of Monterrey Jack cheese with a handful of black olives. Tomorrow is fresh raspberries and heavy cream - but dinner will likely be a no show since I have a tax meeting at 4pm. Or last minute eggs?

Special, so sorry to hear your furbaby passed away. 16 years is a good long run for a dog, but it doesn't make the loss easier to bear. Glad, though, that your kitty can comfort you.

Wally, nearly choking is scary stuff. After one too many close calls, I've learned to take my multivite separately from my other morning pills.

Feeling accomplished just now: Whole Foods had its dollar-oyster Fishmonger Friday special. Bought 3 each Wellfleet, Blue Point, and Rappahannock. Got a new shucking knife (the New Haven one ATK demonstrated), which made it easier (still by no means "easy") to shuck the dozen. Tricky finding the "hinges," but I got it. Not looking forward to washing out the glove & kitchen towel, though (nor taking out the garbage, even though the shells are triple-bagged). Kicking back with some Sauv. Blanc before making the rest of our late dinner (skate wing over quinoa with steamed Brussels sprouts, pačzki for dessert).

I’m so sorry, SpecialK, to learn you had to say goodbye to your beloved companion of 16 years. What was his name? It’s really painful to experience the loss of a pet (I’ve been there) and I’m very sad for you. Sending you many hugs.

Wallcat, I’m sorry to learn you had a choking incident so severe it required the Heimlick maneuver. It’s shocking how fast something like that can go awry. Thank goodness for your quick acting spouse.

Minus, you have my condolences on the passing of your long time neighbor.

Divinemrsm expressed my thoughts so well. Ditto to her post. My sympathy for your losses, Minus and Special. And Wally, please eat more slowly.

I'm feeling relieved and thankful that DH had his medical procedure on Thursday, underwent a general anesthesia, apparently did well, according to the urologist, and is recovering at home. He has experienced/is experiencing the expected discomfort but is doing well. Fingers crossed that he will not be developing more UTIs.

I have been promising him that I will make chicken and dumplings. The promise may be fulfilled for tonight's dinner. The whole chicken is in the refrigerator. This afternoon I'll mix up and roll out the dough for the dumplings and have them ready to drop into the pot of broth.

It's sunny and 33 degrees outside. There was white frost on the lawn when I got up this morning. I'm guessing this is our last hurrah of winter. Mardi Gras day is Tuesday and the forecast is for 81 degrees, one of the warmest Fat Tuesdays in recorded weather history. I'm seeing yard work in my future.

Special, I hope the days continue to get better. As most of us know, we never forget our furry pals, but hopefully, the good memories linger and the pain of the loss diminishes. Day by day.

Thank you, ladies, for your commiseration on my near-death-experience, LOL. As I was gasping, I thought of all the cancer scares and covid concerns, blah, blah and thought...and THIS is how I'm going to die? oy!

Carole, I hope the surgery improves your DH's situation.

I'm making pork spare ribs tonight. I'm trying a very weird (and new) technique from the FoodNetwork : https://www.foodnetwork.com/recipes/alexandra-guar...

It almost seems like a Filipino adobo style method, which I have used on chicken thighs or drumsticks, and LOVE it. I may add some chili flakes and some garlic, but this will be a huge experiment for me. Sweet potatoes and some sauteed bok choy for sides.

DH bought me a fancy rice cooker so I need to make something rice to start using that baby!

    Condolences to you Minus.

I'm going to have to begin steeling myself for those events. :-(

    I'm glad you're okay Wally.

I need to head to the electrical supply store on Monday to get some specialized electrical boxes. I'm waiting for FedEx to deliver some parts that got delayed due to the weather. When that gets here, I can "get back to work".

Dinner tonight was grilled chicken thighs and DH’s special potato salad, which includes bacon on Konriko seasoning, always a hit.

No idea about tomorrow but it’s my birthday, so I’m definitely not cooking.

Dinner was catfish fillets sliced into smaller pieces, breaded with fish fry and fried to a crispy stage. Broccoli and romaine salad. Home-made tartar sauce and slices of lemon.

Today is Mardi Gras and parades are rolling all day. The news stations are/will be covering the parades and all the cooking taking place on the routes. I am playing golf and feeling a lack of enthusiasm since I expect my game to be bad. I haven't played in a couple of months thanks to all the wet conditions.

Wally, I guess your dh is the reason you live in WA state? You seem to miss ice and snow during the winter.

  • wallycat
    wallycat Member Posts: 1,466

Carole, yes. DH is 17 years older than me, retired first and I wanted him to choose what he liked. It isn't bad here (mostly) but yes, he hates winter and I live for it. I detest summer and bright sun and he likes it. Go figure...opposites attract, LOL. I keep hoping the older I get, the less I will like cold temps but so far, that has not happened. Your crispy fish is mouth-watering!!

Still trying to figure out what I will do with my chicken thighs.

We did not lose power but OY on the winds! More on Thursday. Port Angeles will get a dusting of snow, but not here, I don't think. waaaaaaaaaa!!
