    Mae - oh that corn looks good. Makes me think of summer.

    Eric - good news you caught the fraud. 10 minutes with the Sheriff is amazing. Would they tell you the destination of the tickets? How is your MIL?

    Carole & Wally - I agree about forcing myself to eat sometimes when I can't get excited about the food - even food I usually like.

    Tonight was beef tips & noodles. I wasn't hungry but hadn't eaten all day and these delicious leftovers needed to be eaten or tossed - since tomorrow is trash day.

    Goldie posted about Strega on another thread. Has anyone tried it?

    Eric, good on ya for being so vigilant about your credit card. About 25 years ago we'd rented a car at LGA from National's Emerald Club--one of those deals where you pick out the one you want from the lot, drive to the exit kiosk and show your DL, and go. About a month or two later, my AmEx statement showed tickets for "Cats" (which we'd already seen several times in the past), plane tickets to & from Charleston, SC (where we've never been), and a fee for abandoning a rental car in damaged condition outside JFK. It took me a couple of weeks of constant phone calls and frustration to get any satisfaction--I had to pull rank and actually contact National's general counsel/VP and talk to him lawyer-to-lawyer to get to the bottom of it. He investigated and found two employees at the LGA rental office who copied DL numbers & addresses, and matched them to cc's on file from Emerald Club membere. They were fired and actually did time for that. AmEx was good about issuing a chargeback.

    About a year later, I got a rejection notice from Marshall Field's credit office for an application filed in my surname (but wrong first name), using the address on that DL--which I'd since changed when I moved. Because of that. I now have alerts with all three credit reporting agencies: if anyone applies for credit in my name, the store has to call my home landline to verify it's me. And, of course, usually nobody's home to verify (and Bob knows not to verify unless I join the call and he hears my voice). Saves me a lot of time at checkout when cashiers try to tell me "if you open an account, you can save x% on this purchase."

    Tues. night I made pan-seared Arctic char from Hooked on Fish, and roasted eggplant from WF's hot bar; Bob had the Reuben I'd made him to take to work but he'd forgotten that morning, followed by his leftover veal parmigiana. Last night I sauteed sea scallops in butter, white wine and saffron; got a "roll" of Melissa's brand quinoa, which I sliced and pan-seared; had the rest of the eggplant (with herbes de Provence), blistered shishito peppers and an insalata Caprese.

    Tonight we walked to Brasserie C&C. I had French onion soup and Bob had seviche; we shared a romaine wedge salad; and we both had chicken cassoulet. (Beans were a bit mushier than the last time, and there was less sausage). No dessert. We both took home leftovers. Tomorrow night I'll reheat them along with green beans, grape tomatoes and mixed wild mushrooms.

    Glad you got the alert and took care of the problem, Eric. I get a text on every charge using our main credit card. Several times our bank, Capital One, has queried me about charges that were not legitimate.

    Eric, we had our business hacked into quite awhile back, for the tune of 10K, bank gave us our money back, but didn't go any further to press charges on the person that did it. It was 2 transactions I believe, and one was even done with a check. So they new who did it. We just couldn't believe the bank didn't press charges.

    Wally, I think we all weep for our brains. My DH used to call me "Scarecrow" and would often tell me I needed more straw!

    carole - I haven't left a burner on and walked away yet, but your post reminded me of an incident from my childhood. My parents kept differing schedules, dad got up early and cooked himself bacon and eggs almost every morning, and then left for a long commute through Los Angeles traffic - which was bad even back then! He would often leave the skillet on the stove with bacon grease because it was easier to clean out once the grease had hardened a bit. My mom was not a morning person - even remotely - and didn't have to be at work until 9am. She always had tea in the morning and wasn't really awake until she had some. You can guess where this is going - she flipped the stove on under what she thought was the water kettle, but she was off by one knob, and she turned the burner on that had the bacon grease in the skillet. I was probably 4 years old. Kitchen cabinets caught on fire and I was dispatched down the street to get our neighbor who was a police officer. He opened the door to me in my pajamas and I said "guess what???" and he asked and I said "our house is on fire!" He was like, WHAT??? He ran down the block and flagged the fire engine and sent them to the right house. Sheesh! He loved to tell that story even long after I was an adult, lol! One of those it is funny now, but back then not so much.

    We have been moving furniture and things in and out of the bedroom getting the new floor installed, so dinner has been pretty much an afterthought. I did make a GF pasta bake with lentil pasta, marinara, mushrooms, and beef meatballs, topped with DF mozzarella and parm while the floor was being put down. The room looks good, but the transition pieces for the doorways were damaged in shipment. Ordered the replacement and it should be here tomorrow. We were able to move all the furniture back in last night, and it all looks nice. It was a great opportunity to clean and dust everything very thoroughly too. We were tired and it was 8:30pm, so we got take-out fried chicken, mac 'n cheese, and coleslaw from Publix. Comfort food, for sure. We don't eat that often - which is a good thing, but it was the right choice last night. We were glad to be back in a king-size bed, DH is a combative sleeper, lol!

    I have ripe avocados so tonight will be enchiladas, a corn and black bean salad, maybe some rice, and guac.

    Edited to add - I started this post last night on the previous page so missed the convo about credit card fraud - has also happened to me. When we lived overseas back in the day, I applied for a card by mail - the process took forever and I forgot about it, then we moved to upstate NY. The card arrived and whoever got the mailbox after us decided to take advantage of the new card. The idiots paid the minimum every month WITH A LEGIT PERSONAL CHECK so they could keep using the card at its maxxed out level, lol! Not the sharpest tools in the shed. They had a great time vacationing and buying jewelry, until they missed a payment, and I got a call. I'm like - what credit card? We had to supply proof of our signatures, and then they pursued the people who stole the card. They happened to be booked on a flight out of LAX but the secret service (since Guam is a territory the secret service handles this) got stuck in traffic on the way to the airport!! They arrested them in Hawaii when the plane stopped to refuel. They had to either pay back the $4K or do jail time - I think they elected the money...

    Sandy, stories like your always scared me. When DH was driving tour buses, he’d order food by phone every night and after a few pizzas charges in CA when he was in NY. I had him only use the credit card on the road, so I’d know immediately. It seems those responsible really take advantage of travelers especially.

    SpecialK, I have ripe avocados so our dinner menu will develop around guacamole. I have homemade tortillas in the freezer. Trying to decide on a meat component, chicken or steak strips from the freezer. Home cooked black beans in the freezer, too.

    I did enjoy last night's dinner, shrimp scampi with fettucini. Broccoli salad as the side.

    I think I will flesh out the cooked cabbage and beans into a vegetable soup...maybe drop an egg on top. Nothing exciting here.

    DH and I are in the beginning phase of planning an east coast food tour for this fall. It will start in Maine (ohhh lobstah) and end in Florida. The Nordicseafood buffet in RI is on the list along with White pizza in NY and I am excited for all of it.

    Tonight will be tortellini with asparagus and a side salad.

    Illimae, that sounds absolutely wonderful! Are you flying out and then renting a car? My DH and I did that with a west coast trip, but not for food, just site seeing, tourists. Flew out to San Francisco, rented a car and headed north up the coast.

    Made some salmon with a balsamic/honey drizzle, rice and steamed broccoli. I took a picture, but it really doesn't look so nice. The drizzle on the rice just made it black! I have some left over, I think I'll add some brown sugar to it, it was a little too vinegary for me.

    Goldie, we’re hooking up the couples camper and staying at some RV parks or boondocking along the way. I definitely hope to finish with a real Key Lime Pie before heading home.

    Last night was one of those unsatisfying meals not worth the effort or carbs. I made homemade pizza but the crust was uncooperative and I couldn’t get it thin enough for my taste. It was like bread pizza.

    Tonight was babyback ribs baked in the oven and finished on the grill. Sides were coleslaw and early corn on the cob. The corn was not terribly sweet but edible. The rest was excellent.

    The trip sounds wonderful Mae. Everyone's meals sound delicious.

    So far I've spent 4+ hours every day this week in the yard weeding & pruning & etc. So the back yard is maybe 80% done (not counting the lawn that is freeze damaged & full of weeds). And the temperatures are 85-87. Whew. Haven't started on the front yet but I can't believe how sore I am. Badly out of shape. I may have to take tomorrow off. Needless to say I was uninterested in cooking - or eating for that matter. So the meal of the day was cheerios with a banana & an English muffin.

    Mae, I look forward to some reports on your food trip. Maybe some photos?

    I enjoyed our Mexican buffet last night. Chicken thigh strips browned in a skillet with thick sliced onion, black beans, grated cheddar, sour cream, guacamole, corn tortillas, jarred salsa.

    Tonight will be red beans cooked with locally made smoked sausage, brown rice and tossed romaine salad.

    Dinner here last night was frozen pizza.

    I'm not sure about tonight. Sharon's allergies are bothering her (took Benadryl) a lot. We do need to go into town to take some stuff to MIL, and possibly go to the gym. I know that when my allergies were bothering me, I'd go run and that would fix it for the duration of the run, plus about 5 hours.


    I'm thinking of some rice-beans-chicken-hot sauce to make some stuffed bell peppers, or substitute some ground beef for the bell peppers.

    illimae - I don’t know how far south in FL you will go, but if you make it to the Keys, the best Key Lime pie in my opinion is from the Blonde Giraffe. You can get plain, whipped cream, meringue, or chocolate covered. My personal fave is old school whipped cream - it is truly the best I’ve had. The store is in Key Largo and sells individual slices or whole pies, and also frozen pies. We have a “pie cooler” that is the right size for frozen whole pies and always comes back full with pies for everyone

    Frozen pizza tonight.

    My cat may have dental issues...and vet is out till tuesday and I have an eye appointment on tuesday; trying to juggle it....poor BB; he is already so thin and needless to say, painful teeth do not encourage eating. ugh.

    The red beans came out perfect, tender but still whole. I soaked them overnight in water and don't always remember to do that. We had cornbread but I skipped making a salad. With the little rice cooker the brown rice always comes out good.

    We're getting some needed rain today after a father and son team came yesterday and did heavy pruning. They accomplished in about three hours what would have taken me many days to complete. The price carried some "ouch," but the job is done.

    The trip to Scotland and Ireland in September is taking shape. More "ouch," for sure. but dh is 83 and he has been talking about wanting to go to Scotland for years. He and I at a younger age would have planned our own trip but we're going with another couple and are using a tour company.

    Carole, my DH will be 83 this June. Precious time, especially in my DH's case. I hope your trip goes smoothly and you will have a good time. I've not been to Scotland or Ireland, but they have been on "my list" of places to go. Make sure your passport is up to date, the turnaround time is awful. I managed to renew mine online with minimal issues but I hear that is changing now that travel is ramping up. Also, verify if you need a visa. Yes, Europe has decided it wants visas for all the tourists coming in. I'm sure your tour company should know all that.

    Illimae WOW, you are driving/camping from TX to ME, then FL and back to TX? How long will you be gone? Funny your big hunt is for key lime pie. I've never had it!

    Carole, your trip sounds amazing as well. I've never been out of the country, except to Canada, when I lived in MI and you didn't need a passport.

    Goldie, DH drove tour buses across country for 20 years, so it’s an easy one for him. I’d like to keep the food tour under 3 weeks to stay on my treatment schedule but am comfortable with a small delay, if necessary.

    It would be awesome if we’re able to see the northern lights while up near Canada and I’ve never been to the Keys but I am very much a beach girl, so I expect to love it.

    I LOVE road trips, would much rather do that than fly. I do hope you get to see the Northern Lights and yes, on the 3 weeks because of treatments. I really doubt it would hurt if you stretched that to 4, JMO. I would!

    Eric - you were right on about yesterday's meal - especially since it didn't happen until almost 10pm. Scrambled eggs piled on a flour tortilla with melted Monterrey Jack cheese & topped with Mrs. Renfro's Green Chili salsa.

    My son taught aerial aerobatics when he was in college. He ended up taking NASA recruits on loops & rolls over the ocean.

    Still super busy so I considered French Toast tonight. But ended up steaming a pan of Asparagus with Garlic. Served over a package of "365" 7 grains & Lentil Blend from Whole Foods. Desert will be some fresh strawberries.

    carolehalston, it’s lovely that your Scotland & Ireland trip is working out. That’s on my wish list, too.

    Dinner was baked salmon, roasted carrots and a TJ’s couscous medley with lentil, orzo, couscous and red quinoa. DH and Ireally liked the medley, so I think we’ll have it again.
