Maggie, what a pleasure that you were able to attend the outdoor concert.
I enjoyed dinner last night. Roasted chicken thighs with crispy browned skin and fresh green beans and new potatoes. Also, a beautiful tomato out of Mary's garden, sliced and topped with blue cheese dressing.

Dinner tonight was eggplant meatballs in pesto on penne which were excellent. The hospital cafe probably used a food processor but I found a recipe that only requires a potato masher. DH believes all dinners should have meat or fish so I might just make them without telling him what’s in them until he asks.

A couple and their daughter who had their camper in this campground for several years dropped by yesterday to visit. They came to happy hour at Mary's deck. Mary served Lavosh pizza and I brought a tray of cheese and crackers. Dh and I were not hungry for dinner, so we skipped a meal and had ice cream a little later.

I found a Food Channel recipe for eggplant meatballs. The mixture can also be used to make a loaf. My mother made an eggplant casserole that is similar but without the fresh herbs and Italian cheese. She peeled the eggplant. I remember the texture of the casserole was on the "mushy" side. The taste was good.

I bought yellow squash for a squash casserole. I’m wondering if one couldn’t make a similar dish using eggplant. If I come across some good looking eggplant I may try that.
Tonight is pizza night. We’ll probably order calzones from a local restaurant that makes good ones.

Carole, The eggplant meatballs were firm but a commercial kitchen has equipment unlike what is available to us. I couldn’t tell what, if anything, was used as a binder.
Nance, I’ll bet eggplant could be substituted for the yellow squash in your casserole. I like eggplant but tend to use it only in dishes that specifically call for it.
Dinner tonight was braised cube steak, parsnips and onions with mashed potatoes.

Hmm..broke a tooth. The only "open now/urgent" dentists are about 150 miles distant and close in 15 minutes.
I left a message with my regular dentist.
Currently the only bother is my tongue "exploring" the new hole…hopefully it remains that way.

Oh no, Eric! Why is it that dental emergencies always happen on the weekend? I hope your dentist contacts you quickly and the repair isn’t too expensive. Now would be a good time to have some of that chicken broth you have been putting up.

I'm cooking up rice in chicken broth and pinto beans in the pressure cooker.
On a scale of 1 to 10 on pain…it's *maybe* a half and most of that is my tongue that has been scraping against the rough surface. I suppose it's urgent, but not rising to emergency….so I'll wait unless the dentist calls me before then.

My counter in the camper has a collection of beautiful red tomatoes I bought yesterday at the farmers market. I had a delicious tomato and hard salami sandwich on sourdough bread for lunch yesterday. Liberal spread of Duke's light mayo.
Dinner last night was a large salad and a too-big pork chop, breaded with panko and browned in a skillet. I couldn't eat all of mine.

Dinner last night was meatloaf, cooked in the microwave/convection oven on the High Mix setting. Side was Bob's mashed potatoes and a packet country gravy. The meatloaf was good and there are leftovers for another meal or for lunches for dh.
So no Clancy's Meatloaf Monday tonight.
Purchases at the supermarket will be limited to one carry bag this week since we won't be able to park near our 5th wheel. The driveway is being re-surfaced and the full timers will have to park vehicles in a parking area that will require a circuitous walk and climbing some concrete stairs.

I had a friend spend the night Saturday. We celebrated our birthdays early by going out for prime rib. We have the same birth date, but she always tells the waiter she's younger. Yep - one year which really doesn't matter much after 80. We met when out sons were only 4 years old & have stayed close friends for 52 years. Obviously talked late into the night Saturday and most of Sunday morning over a fruit bowl and a Lemon-Raspberry loaf type coffee cake. I hate it that she's moved North by Dallas again. We talk often on the phone but will rarely see one another.

The younger comment made me laugh. ET (evil twin) is 20 minutes younger. About 5 minutes after my birth time, I call her to say I'm getting old. She replies, "Shut up!" and starts to laugh.
The dentist said I broke a crown.

Dealt with more of DH's stuff …closed the safety deposit box he insisted we have and never put anything in it. SOBBED the whole time.
I made lamb chops (one of his favorites) and sobbed …they turned out so tender and perfect. What I wouldn't do for him to have had a few bites. SOB.
A very painful and difficult day. I'm glad some of you are getting reprieve from the heat.

Carole, The bonus of cooking your own meatloaf is having leftovers for sandwiches. Hopefully the weather will cooperate so that you don’t have to carry groceries in the rain.
Eric, Broken crowns don’t hurt but the cost to replace them does. I have a dentist appointment on Thursday and I’m dreading what they will find.
Wally, All those tasks you have to do bring back so many memories. Hugs.

My college roommate and I have the same birthday. We always argued about who was older. The time on her birth certificate is two hours before mine but I was born in the Eastern time zone while she was born in the Pacific zone. I claimed that made me an hour older.
Dinner tonight was oven fried chicken breast, corn on the cob (from MD) and potato salad. No local corn yet.

The resurfacing company cancelled, so I was able to park our truck beside our camper when I returned from town with two heavyish shopping bags. Hugo's supermarket had rib eyes on sale, plus I had some other items on a list.
Dinner was freshly made cheddar brats from Hugo's. I simmered them in beer, then quickly browned them in a splash of olive oil. Sides were leftover sides, reheated in the microwave.

Carole, With the price of beef these days you need to take advantage of a sale on ribeyes. It’s good that you could drive your truck to the camper to avoid two long walks.

Maggie, in the not-so-distant past, the sale price of the rib eyes would have seemed high.
Dinner last night was the leftover meatloaf and corn off the cob with diced red bell pepper. We bought the corn from a farmer and it was very sweet. I enjoyed the meatloaf more than the first time. I slice it and heat quickly in a skillet so that a crust forms.
Tonight we're meeting another couple at Pizza Ranch in town, a midwestern chain. This Pizza Ranch is new, built last fall. I met the owner last summer at—of all places—Burger King when the restaurant was under construction. We chatted a few minutes. DH and I have intended to try the new Pizza Ranch and will do so tonight. The chain is known for its broasted chicken as well as a selection of pizzas. Dining is buffet style. I like pizza and broasted chicken. My challenge is not to overeat.

We have a Pizza Ranch here which we visit from time to time. They have decent fried chicken. DH likes the pizza. I think it’s just ok. I think it’s a bit pricey but it’s always crowded usually with lots of kids.
Tonight is beef kabobs.and rice pilaf.

Yesterday was a busy cooking day. I made an apple pie, sourdough bread and canned more chicken broth. Sharon cooked pinto beans and then made chili.
We are having some friends over for the afternoon and it will be either the chili, or hamburger/cheeseburger.
It's "amazing" how everyone we know comes up from Phoenix during the summer. :-)
Yesterday afternoon we have a "rather vigorous" (what the weather people called it) thunderstorm. Lots of thunder, lots of lightening, lots of wind and quite a bit of rain. But very surprisingly the electrical power remained on throughout.

Unfortunately although we had rain the last two days, it was only 1/4" each day. Very dry!!!
Dinner was the last of the leftover French Dip. Tomorrow will be corn on the cob.

I had egg salad sandwich with sliced tomatoes for dinner.
I think most of the paperwork is coming to an end.
It is perfect fishing weather but I won't be out there. SOB. 66 in August….pinching myself. I know it isn't over. I wish I could wake my husband to let him know how beautiful it has been. SOB.

I rescheduled a scan so that I could attend the final Hatch Shell concert tonight. Among other things they played Respighi’s Fountains of Rome and Saint-Saens’ Organ Symphony both of which I really like. During a piece called Wild Geese a flock of Canada geese flew over in formation as if on cue. It’s not surprising since the Esplanade is on the river and full of geese.
Dinner tonight was Pad Thai.

The Pizza Ranch wasn't obnoxiously crowded. I sampled the broasted chicken but took advantage of the opportunity to enjoy pizza. My favorite was a thin crust with fresh tomato slices and spinach and cheese. We were invited to request our favorite, and it was good, too. We sat in a booth and lingered to visit with our friends, Judy and Ron. She had surgery three weeks ago for uterus cancer and no spread of cancer was detected, so we're still celebrating the good news.

I lost a post…..
I was able to be seen by a dentist and after several x-rays of the tooth, they decided the tooth would be okay until "a temporary coronation" at the end of August….and to call if it begins to really bother me.

DH broke a tooth recently and much to our surprise his dentist did a root canal and crown the same day.
Tonight is large limas aka “butter beans”. They don’t taste like butter, to me they taste like dust and I hate the things but DH loves then so I will make him happy. I’ll enjoy the cornbread.

Carole, It’s great that your dinner could be celebratory.
Nance, DH loves the Irish heritage variety of butter beans his father planted but not the modern ones which are grown for yield. Getting a root canal and crown done on the same day is amazing.
Of course today my dentist found a tooth that should have a root canal and crown redone. She was trying to figure out the age of the root canal but didn’t recognize the materials used, probably because it was done sometime in the 1980s when she was a child. I reminded her that the last time I had a root canal redone I lost the tooth so she will cover some of the exposed area with a filling to buy time.
Dinner tonight was salmon cooked in tomatoes for DH and leftover chicken Alfredo for me.

One down and one to go.
Our tax accountant/CPA made a mistake on our tax returns and after the error was discovered, the forms were amended. We got all the correct amounts paid, but it was a few days after the deadline. They put a note on the amended tax forms saying the error was made by the CPA and they will be paying any interest and penalties for the mistake.
Arizona's "bill"arrived today…$10.67. So now all that's left is the letter from the IRS.
We went out to eat tonight and walked into the restaurant just as some of Sharon's friends were packing up their music instruments.
