So for dinner I had parriesian carrots, roasted red potatos, and chicken breast in a dijon sauce. Now before you get too excited, its a frozen dinner, LOL.

Michelle, I liked hearing that "stability" news! Honestly, I always forget about the diabetes, so am glad that is being managed via moderate pleasure! Yes, you need to enjoy yourself and I love how you do it.
Tonight we went to the Winnipesaukee Playhouse to see "The Turn of The Screw" in which the two actors were amazing! We stopped for dinner at the Town Docks in Meredith. I had lobster corn chowder (not great flavor) and a BLT (not sure why I keep having these BLT cravings!), which was tasty....nice crisp bacon....and ot came with french fries which I hardly ever eat, but wow were they good....every last one!! It was nice to sit on the docks and eat a casual dinner while watching other people's toddlers, guessing how old they were by their speech and motor development. Can you tell we miss the DGS?!0 -

Lacey - it is fun watching children in action. I love to "kid-watch" when I go to the beach. I'm probably not watching from the same perspective as yours, but it's fun nonetheless. Are you using Facetime to keep in touch with the DGS? As for your BLT craving, it is tomato season. And everything tastes better with bacon, right ?
Moonflwr - I have to chuckle...as soon as I saw your carrots, I wondered how they were made. Frozen entree...brilliant! Any thoughts about what might have made them parisienne?0 -
Yes, Facetime is great.....except that DS1 uses his iphone for it which must be weird for DGS to see us as such small characters on that tiny screen.
For some reason they are averse to getting an Ipad which would make it so much nicer in my opinion....and knowing how they are, if they don't want an Ipad it doesn't even make sense to get them one as a gift...so we won't be doing that. Will just have to keep trekking down there... I should be happy they are not in California! Counting my blessings on that one!
Hey, I may soon be ordering bacon from that place you get yours if this craving keeps up!

This is to confirm my non-culinary skills, but can always be viewed as your laugh for the day: I bought a large stone pot with a lid from pampered chef, and some one had told me that they are great for doing a whole chicken in the microwave....so I got a whole roaster....did not fit in the pot to get the lid on....so decided to put it in with some foil and bake in oven instead....so good so far...until we try to slice it for dinner and thre wasnt any breast meat.....hmmm...so my DH says all the meat is on the bottom huh? Yes....I put the thing in upside down...arrrgh some days I should just stay outta the kitchen.
The good thing is, there is leftover chicken, and I should be able to do a simple salad tonight with chicken.

Last night I made teriyaki broccoli, with jasmine rice. I'll probably do that again tonight, as I still have quite a bit of broccoli that needs to be eaten.

Carrie... hilarious - I love kitchen stories like that. Sounds a bit like one of my Mum's friends - hated being in the kitchen so when her stove broke they said the part would take a week to get there so they could repair it.. she said could they make it 4 weeks so her and DH could go for take outs.

Carrie - so, cooking that chicken upside down is not actually totally wrong. Just sayin...I have seen recipes touting the idea of roasting a turkey upside down to make the breast meat more moist. So I'll bet that chicken was pretty darn good!
We ended up having pizza last night, too. DH said "no more chicken!"
I spilled coffee all over my Toshiba ultralight laptop this morning...and all over myself. Yuck! It was pretty hot but I managed to not burn myself. My laptop, on the other hand, has taken its last hit (it's been dropped a couple times and endured a couple of other spills over its lifetime). So, I just ordered a new one from Amazon. I hope it gets here before we leave next week for Atlantic City. In the meantime, I have an older netbook that still works better than my fancy new iPad for blogging.
Lacey - your iPad will do video Skype...if they have a laptop with a webcam, you might be able to Skype a little better than Facetime. Link to yummy bacon website, breakfast sausage is really good, too. I usually order pepper-coated bacon:
I was supposed to meet the family for dinner tonight at the mexican restaurant, then take my grandson to the beach tomorrow. He was supposed to spend the night. But strep is in their house and he has a temp of 102, so that's out. DH said I could go with him to NJ but I decided to stay home and enjoy some peace and quiet...and be ready to go to Dana Farber if I get the call in the next couple of days.

Debbie and Chabba, I'm so sorry for what you're going through. I know what it's like to lose a father, but not a brother.
DH's sister has just been diagnosed with a rare disease called Amyloidosis. It's every bit as frightening as cancer. An amyloid is a type of destructive protein that attacks the body and causes great damage. The only treatments are chemo and stem cell transplant.
On a more cheerful note, I needed some ground beef for tonight's taco salad dinner minus the taco shell. Not having any ground beef, I thawed out a flank steak and cut it into tiny pieces. How's that for persistence? I have a couple of avocados that should be perfect for quacomole, probably misspelled.

Paula Dean's Stuffed Mushrooms (with my changes of course, can't leave any recipe alone)
48 lrg. to med white mushrooms, wiped (not washed)
remove stems ( I put them into a breakfast omelette)
1 pkg. (10oz) frozen chopped spinach, thawed (I usually have fresh & steam it, cut up with scissors)
4 oz feta cheese, crumbled( I have also used blue cheese)
2 oz cream cheese, softened
1/c parmesan cheese
1/2 c. finely chopped green onions ( or whatever onion you have)
2 or 3 cloves of cushed garlic
Mix spinach, feta, cream cheese, green onions & bit of salt& pepper
Fill each mushroom, heaping teaspoon , sprinkle with parmesan
Place on cookie sheet & bake until filling is golden brown,
Oven 350' for about 20 min.
I place all mushrooms on sheet & then sprinkle with parmesan.
Delicious, always in demand & never have any left overs. Best served piping hot but be careful of those hot cheese centres.
I am a pretty slap dash cook, so not always exact with measurements, but always turns out. Enjoy

Thought I'd share a kitchen story with all..
When my DH and I first were married I knew nothing about cooking. I mean nothing. So I decided how hard could it be?
So I bought a whole chicken, put it in a pot and cooked it. At the time we lived in a 2 family with elder land ladies (who cooked all the time.) Well the chicken didn't look so hot, so I brought it to my landlady and she took one look and laughed so hard she couldn't tell me what's wrong.. Then she asked me if I cleaned it out first..the look on my face told her no ! Well there came more laughter, after she caught her breath, she explained that I cooked it upside down and that I was supposed to take out the "stuff" from inside the chicken.
Well from then on I started to learn how to cook and I haven't stopped siince.

I've been away on vacation for a bit over a week and then 2 days after we got back the PGA Golf Tournament that our town hosts kicked in... DH is on one of the committees so was MIA for most of this week... Dinners have been whatever they were serving at the course.....
I am sooooo behind that I will most likely never catch up completely here! But did want to pop in and say I am OK....

I need to catch up a bit on what is going on but, sounds like you have chosen a trial that may be a good fit for you and that, while the Xeloda wasn't the magic bullet, it at least stabilized those tumor markers so that's good! Took a look at the Amazon reviews on the book you are reading. Very interesting! That may be my next Kindle purchase!

Ok I am laughing at the chickens being cooked upside down. Mainly because more often than not I do the same thing! I always get confused when looking at the poor naked bird. Dh always is the one to cut it up etc (still can't handle it after being a veggie for years-years ago.) He always asks if I do it on purpose and I am always embarrassed! But it still tastes good
Today was my last day of waitressing. The customers were so nice, all the regulars left me huge tips and told me they were sad to see me go. It was really busy and a great day all around. The owner, our friend, told me if I ever find myself short on cash give her a call and I can pick up any shift I want any day I want. Super nice! I might just do a few days here and there to make some money for Christmas. Maybe one every few weeks?
So last night we had tacos and tonight we grilled some chicken and did wraps with fresh cucumber and tomato with sauteed veggies on the side. Like everyone else- it is hard to catch up on it all when you miss a few days. But hugs to you all!

When I was in college (a thousand years ago...) my roommate, who was a home economics major no less, was tasked with cooking the turkey while I was at work. We were making a Thanksgiving feast for all our friends on the Sunday before everyone went home for the holiday. When I got home to get ready for the party I discovered that she had not taken the bag of "stuff" out of the turkey before she put it in the oven. We went ahead and ate the turkey anyway since it was fully cooked, but the next day I was so sick! I had to turn in an essay test to my professor's office and had to stop twice on the way to his office to throw up. I was sure that we had poisoned 30 of our friends! I was quite ill all day and had to go to the hospital that night, was admitted and stayed for several days - turned out to be a nasty virus - I was so sick but glad it was not food poisoning!

LOL, on all the turkey and chicken stories. I think we all have left the stuff in at least once. And at least cooking it upside down just makes the breasts juicy.
For supper today I had an almost Elvis. Peanut butter on toast with Bacon. (No fluff) just sounded good. It was! LOL.0 -

Moonflwr Sorry, I love bacon, but gag on the peanut butter....I know everyone thinks I am crazy for not liking peanut butter...couldnt even do it as a kid, used to make my mom crazy because when fixing all of us kids lunches for school mine always had to be different..usually bologna with mustard. Dont like any nuts either.

Yes on the chicken being very moist having the breast on the bottom, ha ha. I used the leftovers in a pita for dinner and did scalloped potatos in the little crock (in the microwave) and they were the best ever. I think the stuff inside the chicken would probably add some good flavor if they didnt wrap it in paper or some such stuff.

You guessed right about the flavor thing with the chicken giblets, Carrie. I learned from my mother to boil and simmer them in water (out of the paper packet for making gravy....added to the fat drippings (the real flavor booster!). I used to blend the livers to add tothe gravy, but rarely do that anymore given cholesterol vigilance!
Yesterday we went to the local farm stand to get corn (excellent!) and tomatoes (made gazpacho in vitamix...nice and fast), then couldn't find ground lamb in the local supermarket, so tried bison for our burgers. Doctored the bison burgers up with garlic, minced onion and fresh grnd pepper. They were really good....less fatty than a hamburger. What do others do with bison?
Later today we head back to Boston to meet DS2 for dinner to celebrate DH's birthday.
Then home for a day to tend the lawn, etc., before returning to enjoy more of this beautiful weather.0 -
The first time I cooked a turkey many, many years ago, I took the packet out of the stomach cavity but didn't know there was something else tucked in a cavity at the neck. Discovered it when I was cooking the turkey carcass soup, which is probably the best meal off a turkey. IMHO roasted turkey is good when it's first sliced up and then we prefer the dark meat. All the left-over turkey has to be prepared some method to impart flavor. As you can tell, I'm not a great fan of roasted turkey except for the initial meal. The small turkeys cooked on a rotisserie are probably the best. Same with chickens.
Cooking the chicken breast down is a good way to cook it.
The taco salad last night hit the spot. The chipped flank steak sauteed with diced hot peppers and sweet pepper and seasoned with lots of cumin made a great substitute for ground beef. Lots of flavor.
My last hair apptment was about the middle of June prior to our departure for the summer. It's always an adventure to have my hair colored and cut by a complete stranger when we're on the road. Wish me luck. I have an apptment at 11 am today.
I don't know what dinner will be tonight. Maybe pork chops with vegetable side dish. Maybe the pole beans I bought at the farmers mkt.
