Leftovers tonight.
Let's all go over susan's to eat. When I come home from work, I just don't feel like cooking.
Trying to get a bill resolved that BCBS won't pay. The coding is wrong, the clinic that I have my lab work done or someone keeps coding it as routine not diagnosis. Double dumb asses. I have to give the nurse at the office a call tomorrow she left a message on my phone at home.

OMG Laurie, you brought me back to my very first visit to a pediatrician with infant DS1 (who is now the sweet daddy of these little grandkids), back in 1977!
The patient before me was a pre-schooler who had put a bean up his nose. Dr. Hass promptly got it out! I guess that it was before all docs became so specialized .....and pediatricians do not have the right "equipment" to handle such cases. Good thing mothers do!!
Spent a rainy day inside with the babies. Boy are they busy....even little Ava has figured into the attention mix. We will all sleep well tonight! Hope they do.....
DDIL and I spent most of the day in the kitchen....making veggie/fruit smoothies to introduce to DGS, making an interesting quinoa/brown rice spinach loaf that could be sliced for DGS's snack and called "bread" since that is his latest favorite food. For dinner we made a tasty Meditteranean quinoa salad to go with marinated grilled chicken.
Relying on Trader Joe's for a Pear Tarte dessert.....then sleep...........0 -

Carrie, I believe steak tips are usually sirloin or sirloin tip, which is marinated. I used boneless ribeye because i had a single largish steak on hand. I've also used tenderloin when I've bought a whole one and cut it up myself. The end pieces make great tips.0 -

The panfried walleye fish fillets were SO good. I heated up the skillet with some EVOO and a pat of butter. Browned the fillets. DH made a tartar sauce. Our side was steamed broccoli with squeezed lemon juice and some pats of butter.

Carole, the taggies do not have to have any extra padding/filling if they are made with two pieces of fleece, since it is thick enough to feel padded. When I make one side with a silkier fabric, I usually line it with polyester to keep it plumped enough. When I get home, I'll try post some of my favorite taggies...do I need to put them on Facebook first? What other sites could I use first?

Nancy - have fun in KC! The American Royal is underway during the month of October. If you're in KC this weekend, don't miss the World Series of BBQ competition - it's heavenly to walk around and smell the delicious food being prepared for judging. And you won't believe the creativity of some of the homemade smokers. It's a real party event!

We went out to dinner tonight with JoyceK and her DH, had a fabulous meal and great conversation, as always. She had a homemade fettucine dish, my DH and I had buttermilk fried chicken with hand cut french fries and asparagus (really naughty but we had half of each dinner left over) and Joyce's DH had short ribs.
I had spent the afternoon shopping at JC Penney for new undies, socks and bras for my mom, then went to visit her. So by the time we got home, I headed straight for my PJs!!! I think Joyce was planning on doing the same. We're real party animals...lol!

Nancy- Glad you liked the brandy with it, I usually will have a small shot when I make them too it helps lol!
Carrie- Nancy is right sirlion tips are usually what you use for the tips, however any steak you have on hand will do. I also like to make them with filet mignons if they are on sale.
Michelle- Sounds like a great dinner you and Joyce had out! How is your mom doing?
Made pork chops for dinner after I cooked them I put some shredded asiago & parmesan cheese on top and put it under broiler for just a minute. Sweet potatoes and brussell sprouts. Pretty yummy!

Debbie - thanks for asking, my mom is doing much better. She still has some weepy "I hate this place" moments, but she has far more better days. They upped her antidepressant med and it seems to be taking effect, thankfully.

Reporting back on the basil-garlic-oil. I had read that you could put the oil into a zip lock, and then with a chopstick or skewer mark it in squares. The theory is that then you can break off pieces as needed without thawing.
HA! My basil-garlic-oil laughed and taunted me. There is NO way that this concoction is interested in cooperating with me. For a short moment it would separate like the Red Sea, but then it remembered the law of physics and oozed to fill the open spot. Now I have to hope that smashing the block against a counter will crack it enough for me to use smaller pieces. Next year, I am going back to using ice cube trays.

Michelle- Thats good to hear your mom is getting more adjusted to her new place. I know my grandma was the same way when she first was moved into her new assisstant living home, it took her about 6 months but she really started loving it.

Pushing through another day with this yuckiness. Ds special snack was a hit and he was very proud so that made me feel great. Thanks for all the compliments He got to choose dinner tonight and he picked spaghetti- no meatballs. So I am making Michelle's sauce and some garlic bread and salad. Nice and easy.
I need to get my menu together for camping this weekend and do the shopping and some cooking tomorrow. I am hoping these meds kick in big time when I sleep tonight! I will admit, we all took a two hour nap today

I'm teeing a new crockpot recipe today - chicken enchiladas. Ingredients are chicken, sauce, corn, black beans, cheese, onions, peppers and spices. Sounds too easy but it smells wonderful! I'll let you know how it turns out.

Dinner was leftover chili and I made some guacamole since I wanted something different. Homemade chips. Very stuffed!
All the leftovers have been eaten, so will have to cook more food tomorrow.

Thawed a package of chicken that I thought was two chicken legs. Turned out to be a chicken back and two wings! So I quickly thawed out two pork chops which I covered with panko crumbs and sprinkled with seasoning and pan-fried in a small amt. of olive oil. Our side dish was roasted asparagus with a sprinkling of parmasan. Very tasty.
Bought a crock pot for the house kitchen today. It looks awfully big. Seven quarts. But it has more settings than just high and low.

My Dad was just the opposite, maybe it is different with men. He admitted that he could not keep up his home anymore and when my brother brought him to Nashoba Park Assisted Living, my Day picked out his own apartment and made himself at home as soon as we moved him in. There were times in the beginning when I went to visit him he would get up out of his chair and grabbed his walker and said, "my friends are waiting for me to play Cribbage" I just sat there with my mouth open, then smile cuz I felt happy he accepted this as his home. He moved in Sept. 2008 and passed away in his own apartment June 13, 2012. He loved to sing and they had a lot of action going on that involved singing.
Now his is with my Mum.

Happy Anniversary Seaside! Glad your treat was a hit Laurie. And it was healthy to boot. I was wondering if his school requires the birthday treats to be healthy. In 3rd grade, my DD's school started a new rule that you weren't allowed to send in food of any kind to celebrate birthdays. It was in conjunction with President Bush's health initiative for kids. I agree that kids eating healthier is a good priority, but there were 20 kids in my DD's class, and I am sure some of them had summer birthdays. Do they really think a dozen or so cupcakes over the school year was going to make much of a difference. It was suggested to bring in pencils or erasers or such instead. I can tell you, none of the kids liked the idea. You weren't allowed to do fruit or anything like that either. They said they were afraid of allergies.
We had ravioli filled with cheese and spinach for dinner. I put some roasted grape tomatoes, garlic and collard greens with it. It was good! Partly because I have been trying to cut down on pasta, so it's been a while since we had it. It was worth the wait. LOL

Just finished watching the debate. I'm not sure there were any revelations. I guess that's no surprise. We had last night's chicken and the rest of the apple pie for dinner. I was supposed to watch the grandkids but that got canceled so I got to stay home. I did get my suitcase mostly packed today...woohoo!

Michelle- Yay for packing! I am in time delay on the debate. I am not sure if I will be able to stomach it all in one night
Kay- The teachers at his preschool did tell us at the beginning of the year that no children in his class have allergies. Kind of amazing where there are 20 of them. They do have a rule that you can not bring cup cakes etc. It should be a healthy snack. But I have since discovered that banana bread is considered a healthy snack.Your dinner sounded wonderful, I love spinach ravioli's and can not remember the last time I had them.
Dinner was delish tonight- Michelle's sauce recipe is amazing. I let it simmer for a good hour and it was very good. I made a double batch to use when I make lasagna tomorrow for camping weekend.

Beautiful night on Seneca Lake tonight. We took our friend who had lost her husband to cancer out on the lake to "visit his ashes" that she had spread in the lake. We had the most amazing red sunset Jerry smiling down on us. then we boated over to the castle for dinner to celebrate her birthday! Great time with great friends. I had the open faced steak sandwich. Everyone got decadent deserts and passed them around the table.
Glad I missed the debate.

Carrie, that sounds like a perfectly lovely evening. What a sweet thing to do.
The enchiladas turned out really good! Here's the recipe: makes 12
1/2 onion, diced small
1/2 green pepper diced small
1 small jalapeno, diced small
1 can black beans, drained
1 cup frozen corn, thawed
2 tsp chili powder
1 tsp cumin
1 tsp salt
1 1/2 cups shredded jack cheese
2 cups salsa
2 cans enchilada sauce
12 6-8" tortillas
2 cups cooked chicken, pork, hamburger or shredded beef.
Mix onions, peppers, beans, corn, spices, meat and 1/2 cup cheese. Pour 1 can of sauce into bottom of crockpot, spread evenly.
Scoop about 1/3 cup of mixture into tortillas, roll up and nestle in bottom of crockpot until bottom is filled. Pour 1/2 can of enchilada sauce over layer and sprinkle with 1/2 cup of cheese. Repeat process to create second layer. Top with remaining sauce but do NOT top with remaining cheese.
Pour salsa over top of everything. Cook on high 2-4 hours. In the last fifteen minutes of cooking, top with remaining cheese and let melt. Serve.
I halved the recipe for just the two of us and cooked for 4 hours. They sort of fell apart when I took them out so I'm thinking 3 hours might be better for the smaller amount. Could be the tortillas I used (whole grain). Anyway, it was a great way to use leftovers and extremely tasty.0
