Michele - which island are you on? I was talking to my son yesterday (who lives on Oahu) and he said their weather has been not good, but my MIL (who winters at Kona) said theirs has been fine. So where are you?

Susan you read my mind....I am making chicken enchiladas as well...using store bought rotiisserie chicken, corn tortilla, black bean dip and green chilis. also black beans and rice. I am having a hard time keeping my hands off the chicken though and have already devoured one of his legs.
Eric Hope you get home soon to see your family...Vegas not a bad gig though right?
Laurie those pretzels look so festive and probably fun for the kids to help you make them. Good Idea for no baking!

So the chicken Marsala was a no go according to DH and the boys. Home made chicken tenders, mashed potatoes and gravy with corn. No wonder I am gaining weight. I need to start eating salads for lunch. It is my only hope in these winter months.

I'm joining in with the enchilada movement. Went out to lunch today to celebrate Fat Tuesday. We got beads, drank margaritas and ate stacked green chili/chicken enchiladas (New Mexico style). Then the owner decided we had to at least taste his 'hurricanes' and brought over free drinks for the table. No dinner here tonight.

man - enchiladas sound SOOOO good - alas, we are having re-heated meatloaf. It's GOOD meatloaf, but still - enchiladas sound oh so much better!!!

The enchiladas craze is catching! I could use some advice/info/recipes. Do you make your own sauce? Use a bottled or canned sauce? Any particular brand? Do you use Mexican cheese? I've been checking out recipes and the dish seems very simple to make, whether beef, chicken, or cheese enchiladas.
No dinner for me tonight. I spent the day "hanging out" with 7-yr-old great niece Nova. She chose to eat lunch at Buffalo Wild Wings and I had a big hamburger with fries. It was so-o-o good. Blue cheese dressing on the side. There's nothing better than a good burger. And I ate the fries! They were good, too, dipped in blue cheese dressing. Maybe I should skip eating tomorrow, too.
Today was fun but I SO admire you moms who spend all those hours with children. Laurie comes to mind!

The great thing about these is, you decide how many of the components you buy ready to assemble, and how many you create from scratch.
Tonight, I made the leftover chicken/onion mixture into a plate of enchiladas for him, and tortilla soup for me. Rather perfect, I must say. Rest of the chicken stock is slipping into the freezer.

Carole- I honestly don't know how I do it. Some days are good and some are hell. Yesterday I made them have quiet time for 45 minutes in their rooms alone. I needed a break from the word " Mommy". I sat in the chair in my room and literally just looked out the window and breathed.But in 2 years they will both be in school full time and I will have been an at home mom for 7. Wow.

OK, I will go to Whole Foods and buy The Chicken Who Lived The Worlds Best Life (the 5+) for about a million dollars a pound. I crave Susan's enchiladas and still remember how chicken tastes, I think. I must have it. This will be interesting having not had chicken in many years.
Laurie, I would eat those pretzels in a hot second and have no problem taking candy from babies.
I'm thinking frozen fish tonight with brussle sprouts. I really should broil/ grill the brussle sprouts like my friend's husband did, but I can't remember how to do it. They were pretty dark brown.
I'll make enough for dinner and lunch tomorrow

Enchiladas do sound good! Another thing on my list to try making. Burger and fries sound good too, it's been a very long time since i had that. We had mahi mahi burgers for dinner with pineapple habanero sauce. They were yummy. Had a salad and brown rice with them. Also DH stopped at the bakery and picked up some kind of chocolate expresso cupcake that we shared. I think it was some kind of Fat Tuesday cake. I know it was good.
Laurie, your chocolate covered pretzels look so good. Chocolate covered pretzels are actually my favorite food in the whole world.

bedo, forget the chicken.... this is delicious with any firm white fish. Bread and lightly fry before putting in the tortillas. I think a queso fresco would be the right cheese. So good, like a fish taco.

Just by coincidence I'm ordering level one Latin American Spanish from Rosetta Stone this week so that I can learn Spanish. It means "fresh cheese?" maybe??? I know no Spanish other than "Please remove your pants and underwear and sit on the table" and "How much are the rice and beans?"

Thanks so much, Susan, for the link to your enchiladas recipe. I copied and pasted and have it saved in a Word document under Susan's Enchiladas. I have to cook shrimp for dinner tomorrow night but Thursday night will be chicken enchiladas, my first time to cook them.
I kept reading beyond Susan's recipe and came to a post from Apple. Reading it made me feel happy and sad.
Kay, we'll miss you during Lent. That's a serious kind of fasting, giving up the internet.
I have no commitments tomorrow. It's a wonderful feeling.

Kay, medical needs win over lenten fasts, so if you need to check on something, its ok!
Supper tonight was wine, wings, cheese, pizza, wine,cheesecake, chocolate bar, wine,hershy kiss, cookie, hand lotion, (oops for hands. Not to eat, LOL) and a hamburger. Yes, it was Ladies night out, "a Kiss of indulgence." Everyone who preregistered got a totebag, scarf, coupons and Mardi gras mask. I walked too much, but the shuttle bus was helpful. And it was a beautiful night, 35 degrees and clear. I was to tired to watch the men's wear fashion show, but it was a fun night. Now, ill let you know if I can actually walk tomorrow. I probably shouldnt have gone, but I promised myself last year I would go, as last year I was in the hospital getting my port put in on that night. Well worth the 6$. Ahhhh, marketing downtown Port Washington! LOL.0 -

Laurie I used the storebought corn tortillas. cover with wet paper towels and microwave till warm and soft, makes them easier to roll up. I am definetly not a mexican cook...but they were good and DH loved them. My filling was the shredded chicken, black bean salsa, a few jalepenos, and monterey jack cheese. All rolled up and tightly pressing against one another, covered with enchilada sauce (canned), green chilis, more cheese and sliced black olives and bake for 30 min. Can serve with salsa and sour cream. I also have a recipe somwheres for a casserole where you layer the stuff instead of rolling, and it has a cream type sauce.
Moonflwr that sounds like a great night out, but I definitely would have stayed for the mens fashion mmmmm lol!
Tonight we go out to watch the "cuse" play...gotta find a tv ha ha Maybe us having only 3 channels is good thing. My DH is such a sports nut.

I want to make the enchiladas too! Although I have some roasted shredded chicken in the freezer I don't have the rest and I'm trying to get rid of stuff before we leave on Saturday. Bummer!

Carole, I know what you mean about the day with no commitments. I so enjoy that, when I have too many in a week (more than two) I get stressed. I like to tell people who ask me what I'm "doing"in my retirement, "whatever I want." Not completely true, but true enough lol.

I kinda of wished is stayed too!. But it was at 8 pm, and it was only 6:30, I had already gone to the required 20 businesses (you needed 20 stamps to be elegible for a drawing) , even though our downtown is small and everything is next door to each other, and I was pooped! NEXT YEAR. LOL.

I tried to call Debbie but she didn't answer her phone. She did send me a short PM. She is still completely devastated by the loss of her sister but promised to call as soon as she is able to talk.

Gardengumby - we are on Kauai and the weather has been so-so. Rick played golf yesterday and he said the sun was out for at least 14 holes before they got some brief showers. I stayed at the pool and beach and there were lots of clouds, occasional sprinkles and a little sun. The temp is just barely over 70 so it's cold when you get out of the water (my water excursions have been limited to the hot tub). Definitely not "warm" and sunny. I hope this funk clears out soon but there is a 30% chance of showers in the forecast for every remaining day that we are here. Not ideal!
