I hope you have a great time!! Soak up some of that warm weather for all of us!!! We have warmed up here into the 40's but we're scheduled to turn cold again by Sunday... Hoping the groundhog is right and we are in for an early Spring! Fresh fish... Authentic Tex-Mex... what's not to love??

Auntienance. What is Galveston like now? I was there a few hours after Hurricane Ike had hit the place. I had never been there before, so I have no idea how it is normally.
Dinner tonight was basically an after work meal....grilled pork chops and mashed sweet potato along with a salad. The sweet potatoes were mashed and I added cinnamon, cloves and nutmeg to taste and then an ounce of orange juice.

Just caught up before falling asleep in NJ in what I call the "space house" where my DS1and DDIL moved in December.....antithesis of Downton Abbey(!) but stunning in its own zen-like modern and open style.
Thanks for the good resources....I will have so much fun perusing that cookbook, Seaside.
Also liked that menu except for the kidney souffle....

Your dinners ( out and in) sounded delish. Tonight DDIL made a wonderful vegetable lasagna and salad, which we enjoyed in their space kitchen!

Eric, Galveston itself has made a remarkable recovery. If not for the fact that many of the live oaks trees were killed by the flood (Galveston Bay), it would be as lovely as ever. My niece's house is in the historic district and is a survivor of "the great storm of 1900". The house itself took on about 8 inches of water with Ike even though it stands four feet of the ground. We had to replant the entire yard the next spring because the salt water killed everything. It was the strangest spring because with no trees, there were no song birds, only pigeons and grackles. We saw few shorebirds that spring either.

Susan Thats what I thought about the veal, that you had to fry it to get it that crispy. We had it at a restaurant that way and husband said it was the best ever...well, I am not doing the frying thing and he will just have to deal with it. I try not to fry anything.
Laurie Doesnt it feel great to get a good cut? It is rare for me to go to the hairdressers also, but once in awhile I treat myself.

Good morning from Kauai where DH is deciding where to go for breakfast. It's fun to have him picking the places. My food tastes are so screwed up that I want him to choose and then I'll find something I can tolerate.
We may go on a dinner cruise this afternoon if the winds are down and the surf is relatively calm. I would like to see the Na Pali coastline and it's either a cruise or a helicopter ride. So right now the boat ride wins for both price and the ability to see whales and dolphins.
I'm getting a kick out of the Downton Abby food discussion. I've only seen a couple of episodes - I need to get caught up with this show!

Luvmygoats, I love cookie recipes and DD loves that I cook them. HOWEVER.....(there's always one of those) Sharon loves the cookies too. She's been very successful on Weight Watchers and I have to be careful (I taught her how to shoot a pistol and she is quite good at it). So, what usually happens is that I'll do up a batch of cookies for DD to take to school for whatever fund raising event is going on at the moment.... I get to cook them, and Sharon doesn't have to be tempted, so it all works out.
I'm pleased with the 50 cent muffin pans. I don't know what company made them, but I guess it doesn't matter because they weigh about 5 pounds each, cleaned up great and they seasoned perfectly.
I made 18 muffins and they just fell out onto the cooling rack when I turned the pan upside down. Sharon likes them and there's nothing "bad" in them...it was an Internet recipe...http://www.muffinrecipes.net/healthy-muffins.html
I've been playing around with the recipe to get rid of the dry oat chunks in the muffin. I put just the oats into the wet stuff and let it soak a few hours in the refrigerator before adding the remaining dry stuff. It helped.

Eric, bless you for being supportive of Sharon's healthy eating on WW. There's nothing worse than being sabotaged by a well-intentioned family member. My dh gave me a box of "turtles" for Valentine's Day. My way of dealing with the sugary temptation was to eat them up quickly, with his help!
Nancy, I haven't been to Galveston since that recent hurricane that did so much damage. I was sickened by the pictures and the reports of the destruction. DH spent quite a bit of time in Galveston during his working days as a supply boat captain in the oil patch. I did some "research sightseeing" there one year, thinking I might use the town as a story setting, but never did. It has a lot of charm.
It has been chilly here today, breezy and high in the low 50's. Tonight we're supposed to have our 1st freeze of 2013. Will have to bring in a few plants. But my citrus trees I planted a few months ago are on their own. Hope they survive.

Made the catfish tonight. Oven fried it. DH said it was better than the microwave but still drowned it in tartar sauce. Brussel sprouts and rice.

Blech Catfish, I still remember living in Wedowee Ala with only Pop's Landing where you bought your worms, canned Spaghettios, and T shirts. My husband caught so many catfish and would never clean them so I made Catfish "nuggets" You * have* to fry them and cover them with tartar sauce because I think that they are awful, but many disagree
I looked for catfish making noises on youtube but it was too disturbing, actually made me shudder.
I love brussel sprouts.

Bedo LOL I see the catfish swimming around in our lake, and they are one ugly fish. But i cant say I have ever eaten one, so cant comment. I dont ever hear of anyone here eating them either, but they might. It is all about lake trout here.

I really dislike catfish and very often get an allergic reaction to them since they eat shellfish. So I never order anything that might be catfish.
My homemade bagels came out really well this time. Just cooked off 6. I will do 6 more tomorrow. And then 4 on Tuesday. This way we get 2 fresh out of the oven bagels each day. The rest go into the freezer. Topping all of them with sesame seeds, my personal favorite.
Dinner tonight will be some lentil soup concoction. Not sure if I will go the ham hock route or the tomato minestrone route. I want to lighten it up just a bit. Though I haven't put on any weight, I feel heavier so soup is the perfect antidote.
Snow is going sideways here.

Susan, do you use the peter reinhart recipe for your bagels? I love making them myself, so I can make them smaller (fewer carbs.) As always, your "concoctions" sound delicious.

Yes. That is the recipe that I use; the one in Bread Baker's Assistant in case he has more than one. I make the sponge with a really high gluten flour [Sir Lancelot from King Arthur] and then make the dough with regular Bread Flour. I like to use barley malt instead of the malt powder for the flavor. I knead with a stand mixer. My hands couldn't handle that stiff dough on their own.

I am loving the Downton Abbey talk. I just finished season 1 yesterday. Looking forward to finishing catching up on it. DH is working tonight, and I promised to wait for him, so it won't be tonight.
Laurie, those pretzels looked so good. Chocolate covered pretzels are my favorite food in the whole world. Eric, I can relate to your cookie dilemma. DH is starting to get it too. Today at Costco he bought a giant bag of trail mix, but he told me he's bringing them in to his office so he'll have it when he's working nights. It's very frustrating to work so hard at eating healthy and then feel like you blow it all pigging out on cookies. I don't mind having small amounts of treats in the kitchen for everyone, just don't want giant bags that sit around too long.
We feasted tonight! I cooked a filet mignon roast that came out perfectly. It was really a treat for my DS because I have not been cooking much red meat for a while. I made a sauce for it with leeks that i sauteed in a little bit of the bacon fat from the mashed potatoes, yummy! Of course DD had her Mickey Mouse chicken nuggets because she doesn't eat red meat. And she is 15! Michelle, I think your daughter is in for a long haul with those picky eaters. I made mashed potatoes with shallots, garlic, bacon, cheddar cheese and butter. We all thought they were delicious, except DD who didn't like the potato skins in there. Had a spring salad with tomatoes, dried cranberries, walnuts, and goat cheese and raspberry walnut vinagrette, some steamed broccoli with olive oil and garlic and a great crusty French bread. I think this thread rubbed off on me! And I am doing the enchiladas soon. I don't know why I am so scared to try it.

I love fried catfish, and in fact had some for dinner tonight, along with boiled shrimp, sauteed spinach, pinto beans and fried okra. A southern fried extravaganza! (we are in Oklahoma) Tomorrow San Antonio and Tex Mex. Supposed to be in the 70's -- shorts weather for sure.

Susan, that's the recipe I use too. I'm not sure what publication it's from, it was given to me. An Italian grocery store in the city sells a high gluten bread flour that I love, but I use the kaf when I can get it (without paying the exorbitant shipping.)0 -

Today my sister drove up from South Jersey for a visit with us. She also now cares for my DS1's and DDIL's former giant dog, so brings her up to visit DS1, too. Always a fun time....DDIL and I made the slow roasted salmon I saw made on The Chew this week. It was delightful, but perhaps overkill to have a honey coriander glaze, pesto, AND an avacado relish on top of the salmon. We also had asparagus with parmesan and garlic, a very tasty wild/red rice mix, and garden salad. My sister brought one of her amazing pies...apple cranberry and some Italian cookies (tadales), so we ate a lot!
Tomorrow morning DS1 and DDIL will take baby Ava to the light fixture store with them and I will stay here to decorate my chocolate cookies with DGS. He is so much fun....love his little two year old sayings. But boy, Laurie, I have such renewed respect for you and others who care for these little ones 24/7.....often by yourself! They are adorable and exhausting! Guess it would help if I were still thirty! DH and I keep looking at each other wondering how we ever got through these years.
Better get some rest for the next chapter!

Yum to some "good eats" mentioned in posts. Amen to Lacey's admiration of moms and dads coping with youngsters 24/7.
After dinner out at La Provence on Saturday night and a southern noon dinner at my mother's house yesterday, I was happy to be up on the scales only 1 1/2 lbs this morning. At La Provence I had the set dinner. Salad with slices of pear, blue cheese, frilly salad greenery. Entree of shrimp etouffe with large whole shrimp and a spicy (too salty for me) brown etouffe sauce over home-made pasta, little scoop shells. Loved the pasta. Dessert with fresh strawberries, scoop of cinnamon ice cream and a little cake.
Yesterday's dinner was Boston butt pork roast stuffed with garlic and chopped green onions. Mashed potatoes made with cream cheese. Green beans cooked with a little bacon. Dessert was home-made brownies and Blue Bell Neopolitan ice cream. I made everything but the mashed potatoes. My sister Michelle is the mashed potato queen in our family! The brownies were made with a Ghirardelli boxed mix and they were moist and very dark.
Question voiced during dessert: Why is a carton of chocolate, vanilla and strawberry ice cream called Neopolitan?
Refrigerator is full of left-overs, including a lentil soup that dh and I both agree is "just ok" and needs something, maybe a meatier taste. DH followed a recipe from America's Test Kitchen and ingredients were French green lentils, bacon, onion, carrots, celery, tomatoes. I plan to brown some ground beef and add that.
Today is WW meeting.

Morning everyone: Had a wonderful Valentine's in the Florida Keys...overdid the eating and of course the Red Velvet Valentine's cake that my sweetie bought for me was delicious. We ate every bite of it ourselves...took us three days...LOL!
Made a big pot of chicken vegetable soup for us to detox from all the high calorie foods we ate! We've been feasting on that for two days. Tonight I'll make a pork loin with fresh Florida sweet corn (first of the season) and some broccoli and a salad.
Ski trip coming up this weekend, so time to start finding my ski stuff!

carole - here is the deal on Neopolitan ice cream - it was a three color ice cream called "spumoni" in Naples and was usually cherry, pistachio and chocolate, when the 3 color ice cream idea came to the US it was called Neopolitan in honor of its origin.
For those unsure of enchiladas I have found it easier to use small-ish flour tortillas - faster and easier.
susan - I like the Frontera green sauce for fish tacos too - it is a nice product.
michelle - glad you are finally getting some good sun time!

everyone else - sounds like everyone is busy with snow, vacations and soup! I am way behind on this thread - I have been helping some friends renovate a condo. They took it down to the bare walls so we have been buying tile, light fixtures, appliances, cabinets, wood flooring, carpet, etc. My DH is thrilled that I am shoppping with someone else's money - I am thrilled that I am getting paid to do so!

I love the Homeboy Industries green/verde salsa but it doesn't love me during chemo.
In normal times, I like it on just about everything, including grilled chicken breast, vegetables, etc.

We did our belated Valentine's dinner on Saturday and had way to many mussels for the two of us to finish so DH is making some kind of mussel bisque for dinner tonight! Saturday's mussels and antipasto were delicious but, I think I overcooked the chocolate souffles. I didn't have the right size ramekins and used bigger ones with a bit more of the mixture in each and upped the baking time and I think I upped it too much... They were still good, good though!

SpecialK, ditto thanks on the Neopolitan background. The original sounds wonderful! I love pistachio ice cream and seldom see it. Cherry, pistachio and chocolate would be a delicious combination.
Bought a nifty pot today. Triple decker. Bottom is an 8 qt. pot, middle is a pasta strainer and top is a steamer pan. I plan to use the pot later to boil/poach a chicken for chicken salad and broth. Dh's cardiac exercise class is having a reunion tomorrow, a potluck lunch. Doesn't that sound rollicking! I'm making curry chicken salad.
