    Laurie Keep fighting that cold, I have confidence you will win. I think the kids are probably just like us and tired of the winter, I think thats why they invented spring break, to help everyone re-focus.

    Made rotini with crumbled sausage and sauce. Added a can of diced tomato with zesty green chilis. Hubby was more than pleased with the spiciness of it....too much for me.  Also roasted asparagas...that was my treat.

    Susan Such an elegant cake and dining room.  Love all the white roses.

    Morning everyone!  Haven't been on in a while and this thread moves so quickly it's hard to keep up...I'll have to go backward and read when I have time!  Hope everyone is doing well and looking forward to Spring!

    I don't know how I did it, but I managed to dodge the stomach flu that my BF brought down from SC!  He was sick as a dog when he arrived and I took care of him...thought I would be next, but it's been a week and nothing, so guess I'm safe.

    We went out to Grande Luxe Cafe yesterday and had a nice lunch, so dinner last night was just snacks and a bad movie....The Master....don't bother unless you need to fall asleep...lol!

    Tonight he has requested pasta with sauce...now that's easy!  He likes everything I cook, which makes me wonder what he was getting before...lol!

    Kaara- Glad you dodged BF's stomach flu!  I bet it's nice to have your dinners appreciated.  So glad things are going well, you always seem super busy!

    Susan- The cake and roses are gorgeous!  I bet it was a wonderful day. 

    Today was very busy.  I watch my neighbors daughter who is 11 three days a week.  Today she had early release so she was here by lunch time.  I had some huge pieces of paper and the boys traced themselves and decorated them with faces etc- hair with string, it got kind of nutty.  They are now taped to my wall (???!!!!)  Then I finally did the salt clay dough and they made their creations and we baked them for three hours till they were hard then they painted them.  We did simple slice and bake sugar cookies and they decorated those.  I am pooped.  They all had a great day.

    So I am making a super easy dinner tonight.  Steak on the grill which DH will cook when he gets home, cous cous and pea pods.  Early bed time for the boys tonight.  Hopefully I am smart enough to follow suit and not stay up too late with a book.

    laurie - on man, I remember those days!  My children are 18 months apart - like a bad set of twins!  Sounds like you were busy but also had fun, and now I want a cookie!  It is funny - my kids are in their 20's now and I long for the days when their problems were small and life was fairly uncomplicated, and I always knew where they were! 

    kaara - I feel ya on the illness dodging - DD had to go to the urgent care on Sun. with acute bronchitis, she was actually gasping for air when she coughed and had a 103 temp.  I stayed in her room with her because she was scared - I can't believe I did not get sick!  I have been doing laundry and washing my hands, sterilizing all the telephones and common surfaces in the house like I'm possessed!

    Tonight's dinner was the 6 ounce sirloin at Texas Roadhouse along with caesar salad and baked sweet potato.  The steak was just as good as the filet I had in the Japanese restaurant on Sunday.  And at $8.99, how can you beat it?  Cooked to perfection!  And I ate every bite, most of the salad and half the potato...yum!

    My daughter surprised us this morning around 10, so she and I went for mani/pedis while my blood counts are still good.  We had a good time and then brought Subway home.  I'm becoming the queen of fast food, although my 6" wheat sub loaded up with roast beef, provolone and lots of veggies wasn't too naughty.

    This is my last week of being able to eat "fattening" food without gaining much weight [compared to my normal look at food and gain.] I am using these last few days to eat some things that will be off the list soon. Tonight was a grllled burger on homemade rolls, a vinegar-based cole slaw and onion rings. Little skinny onion rings. Yum! Will have to eat more carefully tomorrow though.

    I want to eat Carole's soup at the table at *Susan*'s  kid's house and I'll have whatever you're having for wine laurie.

    Then I want to go to the Luvmygoat's goat barn.

    I am at my wit's end with this innocent faced monster. Chew! Chew! Chase the cats! Run in circles! Beg! Rip up my new dog coat! Grab underwear, run away!! Oh, Oh gotta go outside Now! we're going for a walk, hopefully that will wear her out. She weighs about 5 pounds. chahuahua+ traveling salesman

     



    Can't do it! Oh well, I guess she'll have to be my new picture avatar, that I can do!

    Susan, do you bread them? What do you use? I'm enamored of the crispy, thin, more like tempura but not exactly, kind. Some places call them onion straws. For the life of me, I can't replicate the recipe. Also, are you dieting or do your food restrictions have something to do with your treatments?



    Michelle, really glad your appetite has returned!



    The Ethiopian braise was really good. I cooked some pasta to serve with it and a wedge salad with homemade thousand island dressing. DH loves that dressing. I do believe he would eat it with a spoon if I didn't keep an eye on him.

    Luv - go ahead & send in your name to be on the Penzey's catalog list.  If you get them by mail, there's usually a coupon for a free something.  And regardless of the dates, my Penzey's in Houston says they understand people live a long way away so the coupon's never expire.  I think it's free cinnamon this time.

    Penzey's recipes & tips are fantastic.  And the stores....oh my.  Can't remember where you are in Texas, but definitely worth a road trip.  There's one in Austin too.  Same for all the rest of you.  If you can get to a Penzey's, it's heaven.

    Wow, everyones cooking up a storm it all sounds so yummy. And all you southerners, boo to you. It was up to 40 degrees this week, then back down to 12 like normal. It's cold. Anyone get to see the comet? Too much cloud cover here.

    Supper yonight eas one of the freezer meals. Smoked mozzarella and tomato chicken and pasta. I thawed out the seasoned chicken, sauteed it, added in the cooked pasta and, supper. And it was really good. So far, the only one I didn't like was the hamburger. That was too salty. So next time ill cut it back. I will try to make the crockpot meal this weekend, when my husband is home to help eat it. The pasta meal was enough for at least two hungry people, and that was only half the normal recipe.

    Felt a bit upset, I needed to Ho for a.blood test and port flush. Turned out.I needed magnesium again. Sigh. Oh well. At least that's all i needed. To everyone, much love.

    I don't know if I posted the "rice bowl" that DD **LOVES**.  If not, I'll post it.  It has a fair amount of olive oil in it so the rice is stickey enough for chop sticks...and there's a fair amount of rice vinegar in it, so it's got some tang to it.  I'm still amazed that 2 onions can go into it and it not have a strong onion flavor.

    Susan, what kind of cake is that?  It looks great. I've not made a cake (other than cheese cake) before and it's something I'd like to try. 

    Did I miss the Ethiopian recipe?  Before it got so busy around here, I had been working on some (inspired by Apple) Middle Eastern recipes that are turning out pretty well.  Now that things are settling down, I'm going to start back up on them...they have some very interesting flavors.

    A couple of weeks ago, I discovered that there is a Penzey's store about a mile from a REI and an all organic food co-op--which are all about 15 miles from the house.  Looked at kyaks, bought a pair of trail running shoes in my size (size 14 EEEE), spices and a bunch of chicken and lamb...all in all a good day! :-)

    My 95 year old mom is going to need her deep brain stimulator battery pack/pulse generators replaced.  it's a 45 minute out patient surgery to do that, but I'm sure they are going to be extra cautious and do lots of tests to make sure that everything will be OK.  She has what is called essential tremor and the implants are absolutely amazing.  The first time they turned them on and mom's hands stopped shaking, she had tears of joy....

    Eric.  Please repost noodle bowl!  I have my repetoire that I depend on in order to make easy meals to get through the work week ( I take it with me as I travel) and I would love to have something for dinner. (lunch and BF always oatmeal, cheese sandwiches, hard boiled eggs, clementines or other fruit,  mason jar salads and yogurt and setzer water)  Thanks!

    I used canned tomatoes and added about 1 Tbs of tomato paste to thicken it up a bit. It would be excellent with couscous or quinoa, but DH won't eat those, so I had pasta. I also browned the ribs first, otherwise they are a very unappetizing gray color.



    Tonights dinner is chicken empanadas with jalapeno cornbread and a vegetable that is yet to be determined.



    I had a kitchen tragedy yesterday. My largest enamel over cast iron pot chipped, right in the bottom of the pot. I've had it for such a long time, I feel like a member of my family has died. I will have to replace it quickly but they are so much more expensive now. I'm sad.

    Oh... maybe I haven't mentioned this. I was diagnosed with Grave's Disease, an autoimmune thing, and tried to take medication to control it. Unfortunately, the medication tried to kill me. The only other two treatment options are radioactive iodine and surgery. To quote "since you are never more than 28 days from knowing about a progression and a move to chemo" they have opted for surgery.

    I will have my thyroid removed on Wednesday and then be in the hospital for a day or two. Once the thyroid is removed, unless I go back to eating tiny portions, my weight will increase by at least 20lbs. The only good part of Graves is that I was able to loose some of my estrogen-deprived-steroid-based-chemo weight. Not sure if I can keep that weight off, but it seems worth the effort.  I could still stand to loose more weight, but I suspect that my body won't allow that. It rathers likes having some extra pounds and simply won't listen to reason.

    Last night's onion rings were the lazy person's version. Soaked in buttermilk and dusted with AP flour. I love the tempura version but since I was only making one small onion, I didn't bother with making a batter. Fried in the wok since I can control the temperature of the oil better with a smaller amount of oil. They were delicious.

    susan - bummer on the Grave's!  My best friend from high school had it also and did very well once she had it dealt with - hope the same for you.  After reading your post I want some onion rings!

    News flash - gemzar is killing more than my blood cells - my tumor markers dropped from 1826 to 1528 - 250 points.  First downward trend since I was diagnosed with mets last year.   What a relief to find a chemo that is working!!!

    Susan Sending lots of prayers for you during your surgery.  Even if you have a weight gain afterwards, I think you will feel so much better overall. Graves disease can really have some crappy effects.

    Auntie  I like your enthusiasm for different recipes and trying the unusual.  I have no desire (for fear of failure) to step outta my comfort zone. I will leave that to the professionals and order it out.

    Going out tonight to bar to take in some basketball...we only get three channels here at home and cant get the college games, plus at the bar we can watch Akron and the 'cuse' at the same time and talk with friends during the commercials. We eliminated the extra tv cahnnels as a way to curb the budget, and we dont watch it during the warm months anyways.

    Fabulous news, Michelle!  I'm so glad the chemo is working this time.  Here's hoping those numbers keep taking a dive.

    Susan, that's a bummer that you have to face eating small portions of food after dealing with the Graves disease.  I have hypothyroidism and take a hormone daily to rev up the functioning.

    Bedo, my recipe for the broccoli cheese soup is from America's Test Kitchen.  It's pretty easy and makes a lot.  If you can't access the recipe, I'll pm it to you or type it in a post.

    My birthday celebration continues.  After golf today, three of the Friday group took me out to lunch at Rip's on the Lakefront in nearby Mandeville.  We had a seat on the front porch overlooking Lake Pontchartrain.  I had a cup of brie and crab soup and half an oyster poboy, dressed (tomato and lettuce), the oysters fried crispy. 

    Tonight dh and I are going out to dinner with neighbors to probably the fanciest restaurant on the northshore, Dakota's.  Their soup specialty...brie and crab soup!  After my fattening lunch, I plan to order a cup of soup, a spinach and arugula salad with spiced pecans and goat cheese, and a side of asparagus as my meal.  Did I mention hollandaise on the asparagus? 

    Next week--austerity begins.  Really.

    Nancy, I, too, like your adventurous attitude in the kitchen.  Hope you find a new pot you like.  I love my LeCreuset dutch oven and we use it a lot. 

    Bedo, I love those salads in jars.  Or I loved looking at them when I clicked on the link you provided.  The salads are so pretty.

    Michelle- YAY!!  I am so glad the markers came down and that things are headed in the right direction!  Now you will get to enjoy your Arizona trip and relax a bit.  ((((hugs)))))
