    So glad to hear about Michelle.

    Yesterday, we had the salmon on the grill. Yum. So good. Just sauteed some zucchini to go with it. Pretty healthy, right. Um yeah, until we had the lemon meringue pie we bought two slices from the diner the night before... LOL. Badger came to our campout to help us eat it. This morning we went to the diner for breakfast, everyone else decided on potato pancakes. I, however chose the French toast made with raisen bread! LOL Yum. Lots and lots .of coffee, Oh. And I guess I should admit to everyone also having Bacon. LOL. and not a goat ball in sight....

    Inspiredbydolce- I agree- she has been on my mind a lot.  I would love to hear an update on how she is doing.

    My boys are TIRED.  They are doing a bible camp with their grandmother this week from 9-12.  She took them to lunch after and they missed nap time.  So dinner tonight needs to be early and something they will eat happily.  I am going to make home made chicken tenders, some green beans and zucchini from the garden and some sort of carb- thinking scalloped potatoes covered with cheddar cheese. 

    It is hard to believe DS 1 will be starting all day kindergarten in a couple of weeks and DS2 will be doing preschool two mornings a week.  Life as I know it is about to change....

    laurie - I regarded that change as a good thing as my kids were only a year apart - I was not one of those moms that cried as they dropped the kids off for school, lol!

    Don't know what to do with myself for dinner - I spent today at the hospital with a friend who needed a lumpectomy re-excision - only for larger margins - and DH is still in SC with my MIL/FIL, and DD is at her first day of internship and will not be home until about 9 pm!  What to do?  I feel like a big salad since it is about 98 degrees and steamy here.  I have errands to run and really can't get geared up to go back outside!

    SpecialK- I won't cry either- I don't think.  I only agreed to Bible camp as it gives me my mornings alone!!!!  I say for dinner you order something you love from a place and have it picked up/delivered.  relax and enjoy :P

    laurie - I am thinking it might be popcorn while in the bubble bath, lol! You won't cry because you make the most of your time with your boys - you are a great mom, and you know they will be having fun and learning so much at school!

    Re: Michelle, Laurie mentioned she saw on FB that Michelle was being pampered with a mani/pedi, so she at least felt up to going out and about for a bit. I took that as good news.

    I've been reading, but not posting so much.  As the schools start back up, the commute gets more crazy, so the time I had now evaporates on the freeway.

    I'd never intended to stay in the city.....but...stuff happens.....

    Hugs and warms thoughts to all those who need them....It seems that many do...I'd "name names", but I'd forget someone and I don't want to do that!

    I'm glad to hear that Michelle is starting to get out and about again.  I was getting worried.

    Laurie, I remember when DD was starting kindergarten.  It seems like just a few days ago.  10th grade now....

    Dinner tonight was a quickie....tonight DD's school hosted a "meet the teachers" night and it was late when we got home.  So, some chicken went into the dutch oven, along with a couple of cans of beans and enough BBQ sauce to cover everything up.   I cut up some potatoes into tiny slivers and added onion and cilantro to make a sort of hash brown dish that I cooked in a skillet.  I think I spent 5 minutes getting everything ready and let it cook for about 20 minutes..

    It apparently was pretty good as DD made some more for lunch tomorrow.

    Yesterday I spent the entire day with the kid test driving cars. We should have come home after lunch but instead pressed forward to see "just one more." By the time we got home it was too late to make the tart or calzones [dough needs three hours at room temp] dso we went out to dinner after the boy got home. Simple Mexican food... $2.00 tacos! So, I still have two meals in the fridge, plus all those veggies. Need to get to work!

    My kid starts school orientation next week and then classes the week after. Hard to believe that a doctoral program begins before Labor Day, but there it is!

    More PT this morning, so need to get moving here.

    Yesterday morning I picked about 20 pounds of tomatoes, so I roasted tomatoes and made a simple marinara sauce. I also made pasta noodles. So what did we have for dinner? Carryout from the local Mexican joint.



    Tonight is I don't know what. As usual, I'm all focused on my upcoming visitors this week and can't deal with the present. Maybe some stuffed peppers. I have bags of peppers from the garden that need to be used. I am Lady Bountiful these days!

    Nancy- Your post about the tomatoes had me drooling and then I laughed out loud when you said you had mexican!  Our tomatoes are a couple of weeks away from being red.  I can't wait to make sauce.

    No idea what is for dinner tonight....I need to figure it out.

    A question for all of you.  Do you think I could layer the tomatoes and onion and bake it in a frozen pie crust? I only have the bottom crust. Would it be OK?  Or should I just stick with the original recipe and serve with beet greens and cottage cheese?

    Sorry bedo. The crust would be totally soggy by the time that sucker cooked with tomatoes and onions. But-- you could cut the frozen dough into strips and create a lattice-style crust on top of the veggies. Just make sure you have some space between the dough so that the steam can escape. Another option would be to par-bake the dough. Bake the veggies until they have given up their water a bit, and then merge them as a tart.

    Tonight I made the rest of the calzones. The boy is eating half of mine right now. Just way too much food for me, today. That poor pate brisee is still in the fridge waiting for its moment in the sun. That should be tomorrow.

    I think the liquid released from the tomatoes would make the crust soggy. You could try pre baking the crust and "waterproofing" it by brushing it with an egg white beaten with a little bit of water just before the crust is done.

    Just struck the wrong key and my post disappeared.  Luckily, not a long post at this point.

    DH and I have been enjoying our buck apiece slicing tomatoes.  FINALLY, tomatoes that taste like tomatoes.  For lunch we have a sandwich with thick slices of tomato, the bread lady's multigrain bread slathered with Hellman's Light, and a few slices of Ole Farmer's ham. 

    Tonight's dinner will be a fish fry with a family here in the resort.  The fish was caught by one of the men. 

    My bad news is that my bathroom scales have gone berserk.   I haven't weighed lately because it's so cool in the mornings I hurriedly pull on my jeans and sweatshirt.  This morning I stepped on the scales and the number was dismaying.  I relocated the scales several places, and the number just got higher.  The home-made cookies from the bread lady and trips to the soda fountain in town have packed on the weight.  Oh, and a few dark chocolate snickers bars. 

    Oh, well.  It's not as though it hasn't happened before.  It's just not fair that older people don't need to eat as much as younger people.

    Enough whining.  Preparing for hibernation has been fun!

    Talk about preparing for hibernation - weather channel has fall forecast out. Fall can't come soon enough. Twas 103 here yest. Store had prepack fajitas on sale so made those with fresh red peppers - alas not mine - and onions. Garden yielded only one red pepper size of walnut and one skinny long green one to add. Yummy. Don't have a clue about today.

    Carole - I know the feeling. Tried on a skirt I wore earlier in summer. Uncomfortably tight even for short time at church. I need to use motto - "push away from the table". LOL. Much easier said than done. Been recording my exercise at 5:30am. Now I need to use it.

    So good to hear Michelle has been out and about some.

    Bedo sister how are you feeling? Sound better since cooking and getting things in order for Alaska. Wow.

    Laurie - sounds like a successful independent mom this weekend. And a wonderful time.

    Dinner tonight is going to be grilled chicken with sauteed veggies in a pocket again.  It was very good the other night DH suggested it again.  We are going to head out to play at the neighbors until DH gets home in about an hour.  I was looking on line at recipes and came across this one I might try tomorrow night.  I would appreciate thoughts or tips from anyone :)

    OOO - looks yummy. I love eggplant casseroles. I think eggplant is pretty neutral and picks up other flavors well. My grocery had them on sale a couple weeks ago - DH poo-poohed an eggplant soup and it was too hot to oven bake much then. I have some bulk frozen breasts; might have to get eggplant and try it. I'd go for it. Maybe add some cheese on top last few minutes or over the rice when you spoon it on.

    DH working late. Going easy route - breakfast for dinner. Frozen biscuits (I know not any 'real' cooking involved) already baked. Will make a fruit salad to accompany and make it a little healhtier.

    Just made a big pot of tortilla soup with chicken, corn, tomatoes and extra pinto beans.  It has been raining and thunder and lightning all day so it sounded good and I had all the stuff in the house.  Enjoying a bowl now with crackers and cheese and sour cream on top (don't tell!) but the problem is that DD is spending the night near the aquarium tonight because her shift starts at 6 am tomorrow morning and it is an hour drive from here, DH is in S. Carolina taking care of his parents!  This is way too much soup!!!

    I bought dome artichokes yesterday to make artichoke soup with. I'll at least start it tonight.

    What is up with the soup? I made a carrot-ginger soup for our "starter." Main course was a mustard-leek tart from "Around my French Table." Absolutely delicious! A fresh salad would have been a good addition but I didn't make it to the farmer's market today to pick up lettuce.

    Also processed a box of number 2 roma tomatoes. Cut in half, destemmed, drizzled with oil and a bit of salt. Slow roasted for 5 hours. I am freezing them and will vacuum them for Summer-in-December.

    I want some tortilla soup now. Never heard of beans in this soup... will need to try that sometime.

  • Oh yea, I totally think you can modify that recipe.  I actually think your idea sounds yummy!  You could also brush egg wash on it if you wanted to make it extra flaky.

    Now, I want to preach about Fooducate App.  If you all don't have this on your phone yet, please get it.  It is amazing.  The super healthy fig bars I got at Costco, which I thought were great, were actually labeled and graded a C.

    The grilled chicken from ChikFilA is extremely bad and LOADED with chemicals.  You must get this app. 

    You can scan bar codes at grocery stores, you can search fast food items on it, etc.  For me, it has put an end to my ChikFilA chicken sandwiches and to my splurge of "McFlurry" from McDonalds.  I will NEVER touch that McFlurry again after reading what is in it. It got a score of D/D-, and not because of ice cream, but because of all the chemicals in it, including some on the FDA 'watch list'.

    I've procrastinated and this means, once again a 6PM workout.  I think Rules of Engagement (#obsessed with Adam and Jeff) will be on during that time.   I'm hoping to have salmon and steamed veggies for dinner.

    Soup is a winter dish for us.  Maybe because it isn't a "starter" but the main dish.  We usually make a big pot and have leftovers for lunch for days.

    The "fish fry" with a family here in the campground was certainly different from a fish fry at home, which would feature catfish fillets.  At home everybody including the kids--or almost everyone-- would be eating the crispy fried fish.  Not so with this extended family.  They're from central MN where fish evidently is not a popular food.  Some of them just ate the side dishes, which were odd to us.  A jello salad, a pasta dish with egg noodles, bits of broccoli and bits of chicken, the noodles much overcooked.  Sliced tomatoes and cucumbers.  Everyone seemed to favor the jello salad which would be a rarity in south Louisiana. 

    The walleye fish, cooked in pieces in a couple of deep fryers, lightly breaded in a cornmeal breading, was good but not cooked as crispy as we would have cooked it.  Regional differences in preparing food are always interesting.  Favorite side dishes at home would have been potato salad and coleslaw and maybe corn on the cob.

    Tonight's dinner will probably be leftovers when we get home from playing golf, tee time at 4 pm.  Tomorrow's dinner will be the prime rib special at a nearby restaurant on the shore of this same lake.  We could easily row the canoe over to their dock but we'll keep our feet dry and drive the pickup!  I love prime rib and am looking forward to tomorrow night.

    Hauntie and Susan.  Thanks for warning me about the crust! I think I'm afraid to "improvise" so I'll follow the recipe and give it to DD

    Laurie, I don't know anything! My brother, sister and I became vegetarian in our teens and never learned to cook. Can you guess? lol I hope it was good! I don't know the difference between rib roast and rump roast. or how to cook either.

    Goats, thanks for asking, I have 8 weeks left. am down to 2 meds and feeling a little better. A corporation emails me everyday and asks me to apply.  I will never work for a corporation again, ie ins co, United health care etc.Only did it for a short time.  I'm getting my stuff in order and want to go to Ecuador to learn Spanish after AK.The reason I can do this is that I live in a cabin and rent the "real" house. I have been watching a documentary about Levon Helm (drummer in The Band...up on Cripple Creek etc) who lived in Woodstock Ny. What pretty land, what a nice place to retire with ..... GOATS!!  lol.

    Carol, jello salads are.... weird, I agree with you. When I first lived in the south I thought grits were cream of wheat, but I learned to love them with hot sauce.

    For dinner, I don't know...I made pickled refridgerator spicy green beans and more pickles and hummus and beet greens. I'll have the tomatoe and onion dish.  I have to think of something for protein. I've become addicted to banana/vanilla yogurt with frozen blueberries.  Dang yellow squash won't stop. I'm going to have to leave it on neighbor's doorsteps in the dead of night.

    Might make a quiche with the pie crust and put up a disco light.

    susan - I just added the beans to the tortilla soup because I thought it sounded good, I used pintos.  Also added the tomatoes and corn and chicken, same reason.  It ends up being more like a cross between a soup and a stew and we eat it for the main course since it has all the parts of a "balanced meal" all in the same bowl!  I sent soe with DD this morning but she had no time to eat today.  She is driving home and just called me to tell me how sad she was that her soup was next to her on the seat still in the lunchbag instead of in her tummy!

    I love Cabot yogurt. I think it is from Vermont. I add some granola, extra raisins, pumpkin seeds, whatever is around. It is a daily snack. Try to make it for lunch and make it last.

    Carole - I can't think of the last time I had a jello salad. Oddly enough I bought some cherry lemonade jello not long ago and can't seem to make it - actually can't find anything to go in it. I guess I could go plain and add pineapple.

    This came up when I signed into Taste of Home today. Sounds pretty good and I'm sure would be OK with only yellow squash (and no ham).

    I've laid out some boneless breasts for dinner. Don't have a clue what I'll do with them. Probably stovetop again, some kind of sauce. I need to go thru some cookbooks and find something different. Maybe back to the crockpot. Did I mention crockpot liners are the best; Reynolds site says they're BPA free.

    Ooooooo, Goats, good protein, I'm making your pie.  I was saving my mozzarella ball for more tomatoes and basil and mozzerella with pasta or bruchette (?sp) or whatever but I'm sick of that!

    Yes I use Cabot or Stonyfield Farm organic from NH.  Dairy and eggs are the two things I'm psycho about being organic and I try to buy pasture raised.

    Carol- I hope your prime rib makes up for the disappointing fish fry yesterday.  I agree- I don't think I have ever had a jello salad?  Weird.

    Bedo- You had me cracking up!!  Disco ball.  Your adventire you have planned sounds amazing.

    The chicken and eggplant dish is for tonight.  I am currently debating on adding some home made canned tomatoes to it....I feel I should try it as the recipe is- add cheese.  Then maybe Dr it up a second time if it is good enough to try again?  What do you think some stewed tomatoes or no?  Also it says serve over rice.  I need to choose between chicken rice and white rice...

    Laurie - It will make it soupier for sure but that could be a good thing over rice. What is "chicken rice"? You mean like Rice-A-Roni or something like it flavored with chicken? I think the chicken flavor might just get lost and better saved for something more plain. My DH wouldn't care, just make rice of any kind. Oddly enough he is not that much of a potatoes guy. I know many recipe sites say don't judge a recipe unless you made it like it says. I say "Phooey" - I couldn't make it like it's written 'cause DH won't eat mushrooms. I think I'd prob. add some onions but then I don't have kids eating it.

    Bedo I'm glad my recipe inspired you. Now to just inspire me. LOL.

    Off for fun time to give the dog a bath. Dinner here is hours away.
