So...whats for dinner?

Seaside thanks for the link. The recipes look real good. You can get canning jars pretty cheap now. I get half pints so I can bake bread in them for gift baskets. I cook up a pan of steal cut or old fashioned oats all the time. Just the oats and water and salt. In the mornings I heat up what I want with ilk or water and add whatever fruit or nuts I have on hand or just plain brown sugar and cinnamon. Yum. It lasts all week. Although on the site they said you could freeze it in the jelly jars. Great idea if I want to change it up. Also great to freeze soups and stews in the jars. For single meals or to take to people who need one size servings. I'm inspired. Now to clean out the freezer.... LOL
Keith those sound delicious! I used to make my Mom's recipe of PB, honey, dried milk balls (just mix equal parts) to dip. I also used it as edible play dough back in the days it was considered a healthy snack. Id take it to the preschool along with chow mein noodles, raisens ,choc chips, and let the kids build monsters to eat. Now most schools dont allow PB due to rampant allergies.0 -
Joyce- So good to see you, you have been on my mind knowing how sad you must be. She did love her ice cream too huh!
Seaside- Oh my gosh, thank you for finding that video, I remember how much fun she said she had. It is just too cute!
Kay- Good to see you too. You are one of the lucky ones who got to meet Michelle. Love how she said the company is what was Important. I will remember that next time I have bad food at a restaurant.
Lacey- I know I am a little late but, Happy 40th Anniversary.
Minus and Nancy- McDonalds now has spicy chx wings which are really good.
Laurie-Chuck is doing better, but he still has a ways to go ( I can't wait for him to go back to work) But glad he has been here for me too he has been wonderful so I shouldn't complain that he is home.
Tazzy- Good to see you, It seems like it has been a long time since I saw your name pop up, hope you are doing well.
Back to bed for a nap, It is rainy and yuccky here.0 -
@deb. Um there is sometimes um "to much of a good thing" LOL0 -
I've just discovered the steel-cut oatmeal. Well, I knew about it but hadn't tried it and SpecialK reminded me that oatmeal is considered a good food for lowering cholesterol. I quick-cooked a batch. 4 cups of water to 1 cup of oatmeal, bring to a boil and let it sit. The next morning I heated a bowl of it in the microwave, added 1 tsp of Smart Balance margarine and 1 tsp of Splenda brown sugar. Some pieces of toasted walnuts. I really enjoyed eating it! It's much tastier than the old-fashioned oats that you cook for 5 min.
I had lunch today at our club after playing golf so I won't be eating a big meal tonight. I'll probably have a bowl of the beef veggie barley soup I made on Mon. There are also leftovers from last night's meal. I made a skillet dish with ground beef, onion and garlic, white summer squash, and a can of tomatoes. Seasoned with s & p, ground bay and a blend of dried herbs. It was pretty good with a sprinkling of parmesan. But then almost anything is!0 -
Debbie, You have such a great memory!! I had forgotten all about those pics!
Michelle's outfit for her son's birthday was hilarious... Here's the description of what she was going for...
"I'm sitting here with my costume for tonight's 70's party and DH is shaking his head. I started with the wig because my head was cold and I figured it could use a little gravity to help the style. I may wash it with my wig shampoo to see if it makes it a bit more manageable. I make him model his wig and he said he isnt't going to wear it, so I played the cancer card and he said he'll wear it until it gets too hot. I told him he'll wear it until he does the Sonny & Cher karaoke with me...lol. Then he can take it off! His needs to be washed and restyled, too. So you know what I'll be doing today!!! I need to get some false eyelashes, mine are gone and my glasse are too contemporary so I'll wear my contacts. I've never, ever applied eyelashes, this should be a hoot!"
Picture of her and Rick at the party...
And her description of the result.... "And here we are. His wig looked more like something from The Muppets!"
Too funny! For more pics from the party, check back on page 93!!!
Edited to change who's birthday they were celebrating!0 -
I think I'm going to try the McCann's oatmeal in the slow cooker. I liked the sound of the apples and cinnamon recipe. Love oatmeal, but hate waiting around for it so this might be a good solution. Thanks for the link.
Tonight was a simple pasta arriabiata with fresh basil and a wedge salad with pancetta and gorgonzola.

Nancy,
The only complaint that some had was that, depending on how fast your slow cooker cooks, it could be burnt by morning.... For me and my particular slow cooker, the double boiler thing using the slow cooker worked really well! More forgiving if time goes a bit long!
When I make it I turn it on before bed and it's done by morning. Leftovers package well for breakfast thoughout the week!0 -
Seaside, I thought I would try the double boiler method. Thanks!

loved the video of Michelle. Could someone post her Facebook connection.0 -
Tonight is French onion soup gratinee with emmentaler and toasted French bread croutons. I'm using Susan's onion caramelization oven method. So far, so good! And does the house smell good! But boy did I cry some tears . . . Maybe I'll make an apple clafoutis to French it up some more.0 -
Yum, Nance!0 -
Nancy- I am drooling. That sounds SOOOOO good!
Another busy day today. Boys had dentist appointments after school and I had about 20 minutes to get something in the oven before heading to soccer. I did a quick home made mac n cheese from a recipe that I got from a friend. I love his mac n cheese lets hope it tastes like his! It is cooling right now as I just got home.
Tomorrow I am surprising DS1 at school by showing up to have lunch with him. They allow the parents to eat lunch with the kids with 24 hour notice. Should be interesting!!0 -
I remember going to Rebekah's elementary school and meeting her for lunch, I loved the pizza with a salad.
She will be 38 the 29th of December.0 -
Joysley,
I can help you with Michelle's blog but not Facebook (i'm not on there). Michelle has the link to her blog listed in her signature. So, if you find one of her posts, it should be there!0 -
Laurie,
Enjoy lunch tomorrow! Your son will feel very special and will be so excited to see you!
Deborye,
It's funny how, almost universally here, Fridays are pizza, fish or mac and cheese days! We had the BEST pizza brought in from a local pizza place to be served in the cafeteria when I was in school! We all loved it!
Then came the government cheese subsidy days where schools got cheap (free?) cheese and our cafeteria ladies started making the pizza! Oh my, it really was pretty bad! They made lots of things I really liked but pizza wasn't one of them!0 -
Back in the dark ages - I walked home from elementary school every day for lunch - rain or shine. I don't think they had a cafeteria. In Jr. Hi I took a lunch but bought milkshakes. We had an open campus Hi School so I walked to a local sandwich shop when I didn't take lunch.
I did go to lunch with my son when he was in elementary school, but he's 44 this year so I have no memory of what we ate. It was fun though. Hope you enjoy Laurie.0 -
Minus,
We had an open HS campus for the lunch period, too! We had a Wendy's and a couple of Mom and Pop restaurants.
The Mom and Pop places weren't very welcoming to the hoards of teens with little to spend and nothing to tip. Wendy's was good as long as you bought something and the pizza place had a lunch special for students and could get you in and out fast! Important when you only have 42 minutes including travel time..lol!
More often than not we wound up at the bakery just up the street! They had the most incredible baked goods on display and for sale!! Our parents would have just about cried if they knew we spent our 75 cents on sweets rather than lunch but, yes, we did!
Hard here to find a good bakery anymore. Seems the grocery chains have pushed them out here!0 -
Thanks everyone! DS2 will be going with me and it popcorn chicken for lunch. The mac n cheese turned out awesome. You buy shredded sharp white cheddar cheese and alternate the cheese and cooked macaroni in layers with pats of butter and salt and pepper in each layer. Fill the pyrex dish 1/2 full of milk at the end and bake. It is not healthy but it was oh so good and super easy! Way better than my usual way with a double boiler.0 -
Laurie: Sounds like something easy I need to copy. I assume you're talking about a 9x13 dish? And how long did you bake? Yes - I can cook but only by following directions. I'm not creative like so many of you but I could imagine adding cooked ham to this.0 -
Seaside: That shot of Michelle and her DH is just how I want to remember her...laughing and clowning around...making the best of her circumstances, and enjoying every minute she had left on this earth. I know she is in a better place, but I will miss her terribly! Thanks for sharing those memories!
I'm at my new beach house and the decorating is all but complete...just one accent wall left to paint and the guy is coming to do that on Saturday. I should have taken before and after photos because it is quite a transformation. I enjoy doing this sort of thing..it's like therapy for me. The transition from the mountains to the beach was made easier because I'm so looking forward to the new adventure.
Haven't done much cooking, but I am making my Cajun dish for BF's son and his wife tonight...it has shrimp and sausage and is served over yellow rice....quite spicy....so not everyone likes it.
Hope everyone has a wonderful weekend!0 -
Minus- I actually used an 8x12 last night. I used 4 cups shredded cheddar cheese and about 1/2 a stick of butter. I put cheese covering the bottom a few pats of butter covered with a layer of cooked macaroni, salt and peppered the macaroni then covered with cheese- a few pats of butter and another layer of pasta then covered that with cheese. Poured milk in until pyrex was 1/2 full. Bake at 350 till it starts to brown on top, about an hour. This was super easy and the best mac n cheese I have ever made. Hope that helps? I am not a measurer!!
Kaara- So glad you are settling in to your new home!0 -
Laurie,
That sounds good and way easier than making a cheese sauce! Any idea how much cooked macaroni you used?0 -
Seaside- I used a little more than half a box. It is so much easier and came out better. I literally threw it together in a bout 2 minutes once the macaroni was cooked.0 -
I have no idea what to make for dinner....skipped the grocery store today. Time to get creative I suppose.0 -
Thanks Laurie!
Going to give that one a try! My DD started her very first job after graduating with her Master's. She moved a couple hours away into her very first apartment.
She doesn't have much in the way of cooking experience so I'm trying to teach her easier dishes that she can make herself to boost her confidence that she can do it! Wish I had started long ago but better late than never! She loves to bake but, one cannot live on cookies alone!
I've started making an online collection of my (and my family's) favorite recipes so that she and my son will have them in some organised fashion and not just my usual list of ingredients that only I know what to do with...lol. My crockpot version of your salsa chicken recipe is included!
How was lunch with your son?
Kaara,
Glad to hear your house is coming together!! I soooooooo wish I lived on the beach! someday....0 -
For you ladies...
My sister and mother
My sister, me, Rick, mom, and my brother Ron. It was his 40th birthday party.

Christine,
Thanks so much for the post and pics. Funny, I reposted one of your Mom's pics from that same party on the previous page (although I had who's birthday it was wrong. I will go back to correct that) It looked like you all were having a blast!
Would have loved to party with your Mom!!!0 -
lovinmymom, thank you for the wonderful pictures that captured her spirit. The one thing on all pictures of her that stands out is her SMILE! EVERY SINGLE ONE. That's what I will remember when I think of her. Thank you for thinking of us as well. Much love to you and your family.0 -
Thank you Christine, wonderful pictures! That smile really came through on much of what she wrote and shared with us.
Seaside, bummer that we can't live on cookies alone :-(
In a fall mode today -- cider braised pork chops, a potato roesti and scalloped cabbage.

Lol Nancy!
I agree on the cookies but, shhhhhhhh, don't tell her!0
