    red - I am sorry you have so much to worry about, this is hard.  It is difficult enough when dealing with your own injury, but then trying to manage your dad too.  Your docs may actually mean 8 weeks - no driving.  I had no driving for 12 weeks with my ankle, with two high schoolers without licenses.  It was a challenge for sure!  Can any of the church people who are so ready to criticize be of any help with driving?  Can his doctors recommend any driving/ride resources that are faster than the transit approval?  Eeeesh.

  • Redheaded, it makes me angry to think anyone would criticize you for not making every effort to assist your dad.  An injury was what you did NOT need.  My mother is 92 and gets around her house in an electric wheelchair.  She seldom stands except to transition.  This makes washing dishes and cooking a challenge.  Well, she has decided she will make cornbread dressing for our noon meal on Sunday.  I am cooking a turkey so we must have dressing.  It's a law or rule.  LOL.  I did not try to talk her out of her cooking task because it bothers her that she doesn't cook for the family any more.  I hope her dressing turns out good.  It won't matter to anyone but her because we will have enough food without dressing.

    We're off to an annual potluck luncheon today for "graduates" of the local hospital's cardiac therapy classes.  DH is a graduate.  The lunch is at the YMCA where we exercise.  We were there early this morning.  DH made a pasta salad.  He labored over it, needing larger and larger bowls as he chopped and added ingredients.  I won't be eating it because he put red onions in it with my encouragement.  It's very pretty with bow tie pasta and colorful additions like the red onions and yellow bell pepper.  I hope people compliment him and that we don't have a ton of it left.

    I don't know what I will eat but I'm hoping not to sabotage myself.  With luck the dessert foods won't be home-made.  I'm not sure I'll be able to resist a home-made brownie. 

    Dinner tonight will probably be soup and salad.  Still lots of leftover leek/potato soup and I have makings for a good cabbage and pineapple slaw.  Bought a lovely Savoy cabbage yesterday.  And have a small red cabbage from the farmers' mkt.

    Deb, how wonderful to see you!  Your GS is cute.  Please come more often.

    I don't wear pajamas of any material.   Makes me perspire to even think of fleece or flannel.  Cold weather means a long-sleeved t-shirt in the house.  Other weather a short-sleeved.  Never did like to lounge around in clothes I slept in.  Guess I'm weird that way!

    thanks  girls, the church folk have been helping with rides, but they can't pick up all the slack.  I just hope if I live to this age that I am willing to prioritize what gets done to me and for me so that I don't make people get fed up with me. 

    Now- I have had a pork chop thawed out and I am cooking Cinnamon Apple Pork Chop.  Easy and makes house smell wonderful:

    4 center cut pork chops 2 cups cinnamon applesauce, one t art apple peeled and sliced thin, and 1/2 envelope French Onion Soup Mix.   COmbine applesauce, apple and soup mix and set aside. Preheat Oven t0 375.  Brown chops on all sides and place in baking dish. Dump applesauce mixture over the top.  Bake 40 Minutes uncovered or to internal temp of 160.  I am stewing potatoes to go with it.

    I am actually angry for you. Who are these judgmental people who feel it is their right to feel that you have not "done enough." My goodness! Your whole life is about caring for your father. As far as I can tell, you spend time driving him, feeding him, taking him to fish fry dinners, and for his favorite this and that, not to mention arranging his medical care, etc. I suppose that these folks feel they have bought the right to judge you since they do help out, but they really haven't. Bottom line is, you have been his primary caretaker for a good long while.

    As to your father, it isn't unusual that as their world shrinks that they become more and more self-centered. I bet we have all seen this pattern evolve with family members.

    The real point of all of this is YOU ARE INJURED!!!! I wish someone was paying attention to that. Your dinner sounds pretty good though.... seems like you are figuring out ways to get food onto the table.

    Red - Susan is right. Enough!! I traveled to CA every 3 weeks to take care my Dad for 4 years. He finally quit firing the care givers I hired since his doc told him he'd have to go in a nursing home if he didn't accept some care. He wouldn't let anyone live in, or cook, but we had a wonderful young lady from Tonga who came every day. Of course I still had to be there for a week out of every three, but I didn't worry so much the other two weeks. For a while he called all the time telling me what he wanted. That finally tapered off when he figured out I'd still be there regularly to stock the pantry and take him to docs, etc. And he figured out this young lady would pick up fresh donuts for him every morning! (he didn't know I gave her a petty cash fund) People called me long distance to tell me my Dad wasn't eating right. I told them he was 95 and if he wanted to eat cokes & Milky Way candy bars, so be it. Older family members do become self-centered but they can adjust if you don't cave in. It's time to think of YOU first.

    Oh Special - I'm so hungry for prime rib.

    Carole - how was the luncheon? Did you find brownies? Hope your Mom does OK with the dressing. It will be fine - what ever.

    I ran errands today and met a friend at Beck's Prime for very late lunch. Excellent burger w/swiss cheese & sauteed mushrooms. Pricey but really good & we were both too tired go any further.

    I made an Alsatian Leek Tart for dinner tonight. I am in one of those things where I want something "different." This was different indeed. Much less cream, milk and egg than a Quiche, so it was all about the leeks. 4 whole leeks! I served with a green salad. Gosh, I felt like we were eating in a Paris bistro, though in a Paris bistro the leek tart would have been a starter. And we certainly got our vegetables!

    No words from Lacey... hope her life isn't a total hell. So hard to be carrying 100% of the daily tasks. At least there has been no additional snow accumulation. Well, not much anyhow. We have had about three inches.

    Tomorrow we are headed to Costco to look at cameras. Not sure the camera on the iPhone is what I want to use on this vacation. Love the Costco return policy. And I need to look for one for my mother as well. Anyone in this group up on cameras?

  • Minus, the pot luck luncheon was fun and the food was tasty and varied.  I had a serving of taco soup, a stuffed egg half, two tiny meatballs, a spoonful of a delicious salad with cranberries and walnuts and chopped romaine.  AND a brownie with a stack of recipes beside it, Healthy Brownies.  I took a recipe.  The brownie was good.   My main indulgence was a large doughnut filled with chocolate.  It tasted so.o.o good. 

    I'm thinking of cooking a pot roast today using a slow cooker recipe in the latest Cooking Light mag.  It calls for a plain brisket but a flat pot roast should work.  The spices used are supposed to develop the flavors in a corned beef brisket without the heavy load of salt.  We'll see.  The cabbage is cooked with the beef but the potatoes and carrots are steamed separate.

    Today I have to check the turkey thawing in the camper refrigerator and hasten the process if necessary so that I can butterfly it and dry brine for cooking on Sun. morning.

    Greetings all! Hunkering down getting ready for another freaking snowstorm. I know it's nothing compared what some of you have. What I'm really sick of are these sub zero temps. -5 last night and 12 degrees today. Ack! We're going on March already!

    Luv, looks like a nasty mess in your area. Hope you and the goaties are safe and warm. I looked out the living room window this morning to see 5 deer eating acorns in one of the clear spots near the house. I've never seen their coats so thick. They look like woolly mammoths.

    Had a fun couple of days in the city. Went to see American Sniper -- really well done. Had a so so Italian dinner. Won 5 bucks at the casino (not the money making venture I'd hoped for lol!) Did some shopping and just relaxed. A good time.

    Good to "see" you Deb! That grandbaby sure is a cutie pie!

    I've been reading the posts and am wondering about Lacey as well. Hope things are going ok for them.

    Monica, I don't know what to say except I hope there are happier times ahead for you. ((Hugs))

    Carole, did your lamb arrived yet?

    Red, I'm sure you've probably done this, but if you haven't, Illinois Division of Aging offers some excellent services, including transportation to appointments. They've done so much for my dad.

    Tonight was red beans and rice and a cucumber and onion salad.

    Sorry I'm sitting here freezing with chills. No longer just a cold. Sigh. DH(and you know I guess I mean D*MN Husband) didn't bother to call to let me know he's not coming home today. Don't know if he'll be home at all this weekend. We'll see. I really tired of being the one to ask him. He could let me know.

    My neighbor stopped to get my mail and a few groceries for me. One of my neighbors also cleaned the sidewalk from the light snow. So I'm lucky. I stayed home instead of going to my DD. She said I should rest. I'm glad now I didn't go cause if the fever stays maybe it's NOT what the little one has.

    Deb your grand baby is adorable.

    And Red, my Dad moved himself out of assisted living 3 times in 6 months. When he couldn't stay by himself all of us moved him to a place in the same block of my sisters house. He would then hire movers to move him back in to his house. The last time we told him we were done so he told the social worker he had been abandoned by his kids. All 8 of us. The sap believed him and helped him move home again. Sigh. When he lost his leg to an Infection, when he was on his own, he only Lasted 4 weeks before he fell in assisted living because wouldn't call for help. That fall finally took him a week later. It is not easy doing thing for people who don't want to listen. Feel free to tell him our story if you think it might shock him to listening. Hugs.

    Sorry I'm not replying to everyone but I need to curl up under my feather comfortor.

    Sorry I've been a pain lately.

    Supper tonight was sloppy Joe to use up the last bun. I'll either freeze leftovers or make a cottage pie with them.

  • Moon, hugs for you.  But hugs from a distance!  LOL!  You probably have flu and should get med from your PCP?  Never apologize for being honest and telling things like they are. 

    Joyce, I can only imagine your shock arriving at your northern home and habitat.  Be careful.  No falls or other accidents.

    Nance, glad you enjoyed your trip to St. Louis.  Too bad the Italian meal wasn't wonderful with all those great restaurants.

    The pot roast cooked with spices to mimic corned beef flavors was very good, in my opinion.  DH was less enthusiastic as he ate two ample plates of the sliced beef, cabbage, onions, potatoes and carrots.  When pressed, he said he liked roast beef cooked the usual way better.  He likes his roast beef with ketchup.  The beef didn't taste that much like corned beef but it was flavorful from the combination of brown sugar, cinnamon, cloves, dry mustard, cider vinegar, Worcestershire, bay leaves, garlic, onion.  It reminded me a little of the flavor profile of meat dishes in the Classic Indian Cooking recipe book.  It smelled wonderful cooking in the crock pot all day. 

    Leftovers for dinner with more veggies.  Another pan of roasted butternut squash and brussel sprouts already prepped.

    Hope you're managing, Redheaded, and aren't going crazy with your dad's shenanigans.

    Also hope that Lacey and Luv are "managing."  And everyone else, too. 

    Guess I'll go to the gym.  It's a pretty day today but Sat. isn't a golf day for my group of women golfers.  I skipped yesterday because it was cart path only and I hate playing on a wet course.  With luck we will get into golfing weather in March.

    Joyce, welcome to Winter! Amazing isn't it? Even after several days of sun, the snowbanks are much taller than I am. One could get lost in one of them.

    Lacey, Did you have your night with SonNo2 and SonNo2Girl last night? Is Bob making some progress on his mobility?

    Moon, argh. Truly big hugs to you. It is time for you to feel better from this flu/cold that you have. I suspect you missed seeing that cutie this week, but staying healthy, and not giving what you have to her, is actually pretty important. And I agree with Carole. No reason to "put on your nice face" for us. Things are pretty real around here, I think.

    Red, thoughts headed in your direction.

    And as to Luv, this is NOT weather suitable for Texas. Hope you and the goats are surviving.

    More leek tart for dinner last night, and lunch today. It is done! Very tasty, loved the texture of the crust, but I have had enough leek tart for a while. Tonight I am making a mushroom risotto, chicken "schnitzel" and steamed green beans. The kid is venturing into the land of duck, making a duck ragu that I make as a special treat. My goal will be to leave the kitchen before she gets started.

    Just popping in between tasks here...but happy that Inhave no sore throat nor headache, yay!

    First before I forget...Special, your idea about the apron was great...and I have so many kitchen aprons...some that I made with big pockets,that we went through them, and DH loved the one you will see pictured since he can squirrel away lots of "essentials" and crutch his way around the first floor. While it is not exactly his "fashion look", we decided that it was nice to see some spring flowers around here. I actually think I made this for my mother years ago...and I'm sure she is channelling good healing wishes to DH who she loved dearlyimageimage

    I Think that I might make some aprons with pockets like this to have on hand as get well gifts for folks who have mobility issues....and sadly we will be knowing more people in that situation in the future!

    Moon, I do hope you can beat that flu like bug you have.....yes, a doc call may be an important step now! Hugs!!!!

    Red, I can't even imagine how difficult things must be for you now that you are trying to recover from the hand surgery. Wish There was at least one "helper" who could step in for you in a reasonable way to offset some of the challenges your Dad presents.

    Hi to everyone....All of your dinners sound wonderful! That leek tart, Susan....ohhh la la! Last night we had our meal at Lumiere with DS2 and CG last night and were once again faked out......no new news....just that Winston the dog got a new bed! LOL!. Food wise, DH and I had the tasting menu....seemed that mushrooms were featured on most of the courses which I loved. The kids had chicken which looked great. Still not sure why DS2 was so firm about seeing us right after the big "move in", but I suppose we should be happy for that. I did spend most of the afternoon chopping thick ice on our driveway, so that DH could get to the car w/o wiping out, and it worked. His first trek outside was laborsome but successful after all that ice management! :) So pleased with my currently high functioning shoulders!! Brace back on the knee after a struggle with another outside duty....hope it calms down.

    So DH is coming along....and it does make a difference now that he can do some things himself (stand, transport ipad in his "roo pocket", pull socks on, etc.) and shower time is reduced by almost half, which is great. I have a better system for some things, so I am not as stressed with all the constant tasks....and have contracted with a trash service which should work well. I was always critical of the new couples in town who use such services, and now I are one!! ;) The appliance repairman could not find the problem with the washing machine :/, and I live in fear of it conking out...so am watching that closely. And am thinking we should just break the bank and get a new one.

    I apologize for missing from the thread....I have just been so busy that I just don't have the energy to fight with this Ipad's fussiness on this site. As you can see I didn't put up much of a fight today....soo many mistakes uncorrected.

    Tonight our next door neighbors have onvited us to their annual bourbon tasting gathering. It isnso icy out that I will probably drive DH tomtheir garage, lest he fall on the treacherous sidewalk. He needs to get out again.

    I hope you Texans are faring well with your weather...and anyone else who is part of this wild weather pattern.

    We expect more snow tomorrow...I am torn...vert little energy for more shoveling, yet I'd be damned happy if we pass the previous record for snow amount in recorded history. We are so close.....I have to enjoy so ething about this! ;)

    Joyce, please stay safe in the northland!

    Off to clean the lunch dishes that have been awaiting. He did really enjoy his THIRD reuben of the week.

    Lacey -- so glad to hear that you're surviving and so is your DH! He looks so cute in that apron lol! I have lots of aprons, but none with a nice big pocket like that in the front. Great idea.

    I detest going to the grocery on Saturday under the best of circumstances but especially before an impending snow storm, but as luck would have it, as I was preparing dinner last night, I used the last stalk of celery and the second to last onion. Since this constitutes a food emergency, I headed to the store this morning as early as I could get myself going. It's a good thing I went early because as I was leaving, the hordes arrived. There was plenty of milk and bread, neither of which I wanted (what do they do with all that milk and bread -- bread pudding??), but there wasn't one bag of sugar in the place, which I did need. WTH??? I've never seen that one! Maybe there's a snow melt shortage and they're using it on sidewalks now. Sheesh.

    I have been craving fruit so I started some baguettes this afternoon along with some meyer lemon marmalade, which was a pain. The lemons were very small and nearly impossible to get all the seeds out. I think I can scrape together enough sugar to finish it tomorrow. My fingers are wrinkled like prunes from handling the little buggers for so long.

    I bought a giant chicken which I'll roast tonight with Moroccan spices with some potatoes underneath the chicken. Add some broccoli and we'll call it a meal.

    Monica - I hope you feel better soon. Don't apologize and don't ever feel like you can't vent your feelings here. It's our kitchen table, remember?

    If I manage to outlive my dad, I really am going to move south. I may even take up golf. Carole, got room in your golf group?

    p.s. I really am not going to rant about the weather again, but this is how crazy it is -- Tuesday's high is forecast to be 56 degrees. Wednesday's high = 14 degrees.

    Special - what a spectacular idea about the aprons. And Lacey, thanks for the visuals & glad to see your DH up and about a little. I have two aprons my Mother used when working at charity "rummage" sales and have put them in the Good Will pile more than once - pulling them out only because her name is embroidered on them. Now I'll definitely save.

    Moon - hugs and by all means rant away anytime. Hope you are getting through the weekend OK. I like the picture Nance paints of all of sitting around a kitchen table.

    Susan - mushroom risotto - yum.

    Carole - you are so good at walking or golfing or going to the gym or biking or doing healthy things. I can't seem to get off my duff. Too bad the DH only had 2nds of the roast - lol.

    Eating a delicious shrimp salad from Costco this weekend. The shrimp are whole & huge (one is more than a mouthful) and mixed w/a light dressing of soybean oil, cream, eggs, vinegar with chopped celery, some other spices & parsley on top.

  • Lacey, your husband looks cute in that apron!  I never had any doubt that you would measure up to the challenge of caregiver. 

    Nance, lots of room in our golf group.  I felt sorry for myself all day--and envious of dh--because I wasn't out playing on this nice day.  There was nothing keeping me from going to the driving range but I didn't.  Your chicken dinner sounds good. 

    Odd that there was a run on sugar.  I remember a few years ago the rice supply got short.  Americans do seem to buy a lot of milk.  I see people with multiple gallons of it in their carts. 

    The weather map shows 70's on Mon., Tues., and Wed. but also chance of rain.   Then a cold front swoops down and the high on Thurs. is in the 40's.  I don't remember a Feb. like this one. 

    I have some aprons somewhere but never use an apron.  SK is an all-around smart lady, always coming up with good ideas. 

    I talked to my mother on the phone this afternoon.  She was exhausted from making the cornbread dressing for tomorrow and declared it was her last time to make it.  LOL.  Now she's worrying about whether it is good.  I had planned to skip the carbs tomorrow but I'll have to eat some dressing.  My sister will probably bring her mashed potatoes made with cream cheese.  In addition to the turkey and gravy, I'll probably cook some green beans and make a cabbage slaw with pineapple.  Then there won't be much room on the plate for mashed potatoes and dressing.  Good plan, right?  Formulated as I sip a rye old-fashioned. 

    Susan, it sounds like your daughter is following in your footsteps with an interest in cooking.  That must be gratifying.

    Lacey, what a great picture of DH with his apron! I am assuming that the number of broken glasses has dropped. Funny how DS2 *had* to see you, in spite of DH's injury is just a sign of youth and youthful enthusiasm. Or.... he is just playing with your emotions. :-)

    The rice supply shortage was something wasn't it? My Asian store was a perfect example. Families were buying 20 bags of rice; full of fear that they might not have enough rice. I admit, even we stocked up on some rices.

    Sadly, I am allergic to shrimp. No shrimp salad for me. In fact, I have asked my PCP to put in an Epi-Pen RX [very pricey] so I can take some to Spain with me. There is shrimp in everything!

    Dinner was excellent. There is leftover risotto [arancini anyone?] and strangely, even though I only cooked one minuscule half chicken breast, we only ate half of it. I know what we will have for dinner tomorrow!

    Week 6 of English muffin bread. It is rising on my desk right next to the client notes that I should be working on. I must enter Nancy's recipe into my Pepperplate account so that I can try it next week. I was simply too lazy last night to go back up the stairs to search for it, so I measured out my dry ingredients using what I knew. Mr 02143 wants French toast so I will start some eggs in the sous vide machine when I start soaking his bread. I rather like this routine for right now. And then I won't. :-)

    DD has the childhood development class' "robotic baby" this weekend and it's kind of stressing her a bit. It "came to life" around 3pm Friday and "turns off" Monday morning around 6am. So yesterday and this morning, I made her aebleskiver....her favorite breakfast.

    The "baby" looks, sounds and acts very realistic. This one is super hungry and loves to be held. DD wears a non-removable (except by cutting) bracelet so she can't just hand "baby" over and leave. Computers in "baby" tracks how much she holds "it", any missteps with not holding "baby's" head properly, and a whole host of other stuff.

    The look and sound is realistic enough that yesterday she got an amazingly nasty look from an older couple when we were all eating at a local Subway. We didn't bother to tell them it was a "robot".

    What a riot, Eric!  A robotic baby annoying people at a restaurant. 

    Minus and Nance, I don't actually have a recipe for the slaw with pineapple.  I got the idea from Ina Garten and tried to find her recipe this morning.  No success.  In that tv episode she used fresh pineapple and cabbage and a mayo dressing.  Today I used red cabbage, Savoy cabbage and grated carrot and a small can of pineapple pieces.  The dressing was red vinegar, light mayo and a little of the pineapple juice.  I think an addition of jalapeno pepper would have been good.

    Today was my second time to cook a butterflied and dry-brined turkey.  Once again it was juicy and quite good.  Tomorrow I'll make stock with the bones.  My mother was quite pleased that her dressing got compliments.

    I have no idea what dinner will be tonight - I am leaving tomorrow to go see DD, and take her dog to her, and will be gone until Friday.  I am leaving DH with ironed shirts for all the days this week, and stuff for his breakfast and lunch that he takes to work, and then stuff for dinners when he gets home.  I was so focused on that I forgot we still need dinner for tonight, lol!  I may have to rummage around in the freezer in a minute!

    carole - thanks! He freely admits to be spoiled! Part of it is also that I am more relaxed if I know all is under control at home. When my kids were middle school aged I started spending a lot of time in California (we lived just outside Washington, D.C.) dealing with my parents - my dad had stage IV lung CA and my mom a degenerative neuromuscular disease, my dad had been her caregiver until he got sick. I traveled there frequently for about five years - I got my packing and house leaving prep down to a science during that time. Knowing everything is organized makes leaving easier somehow.

    Went to Swedish Massage today with my friend and took a picture of her in her green Queen for a day Crown that I made her. It looks like a 2 year old did it and I used sparkle glue, thinking it was sparkle markers with the stickers and marker drawings so it is still drying in her back seat. "Don't touch it! Don't touch it! It's not dry!"

    Then we went for brunch. I cannot tell you what Trish ate as I ate 6? 7? plates of food, including the clam chowder, a bloody mary and OJ. I am a pig. I am usually frugal. So I went for the expensive things that I love but don't usually get... mixed spring greens, smoked salmon (lots) cream cheese, capers, shallots, mushroom omelet made just for me, fresh cut up fruit, cantaloupe, honeydew, grapes, watermelon, roasted vegetable medley, Dijon herb incrusted cod with white wine reduction, olives, yogurt with granola and dried berries, three potato hash with herbs and caramelized onions (with ketchup)

    Trish had more of the prime rib with pan jus, eggs benedict with lobster, Belgium waffles, a lemon square, tiramisu, a mimosa, bread pudding, scrambled eggs, breakfast sausage, chocolate torte, Portuguese sweet bread and some of the things I had.

    We rolled out of the restaurant. She said, "It would have been enough just to get away from the house for awhile" And we kept saying "because we're worth it" and laughing.

    And you are all worth whatever you want too.

    bedo, in the vernacular, that is the essence of 'pigging out', even when it is done by a pescatarian! What a feast! So many of the items the two of you ate sound absolutely wonderful. I am sure that the crown was fun and made her feel special even if it wasn't dry. What a good friend you are!

    Dinner tonight took a left turn since the duck ragu preps were supposed to take over the kitchen. So, I decided to make the 2 oz piece of leftover carnitas from our night eating out the feature of our meal. Mr. 02143 went to the Whole Foods in the snow and bought an avocado, so dinner became a warmed chunk of pork with some sauce, black beans, and guacamole with some homemade tortilla chips made from some aging tortillas. It was actually a small meal, and yet very satisfying.

    Eric, is the baby robot to prevent teenage pregnancy? I think it would be VERY convincing. Babies are quite demanding. I am trying to imagine what the folks at the restaurant might have thought if she had started to breast feed. [Yea, I am evil!]
