This afternoon I made a chopped salad of raw cauliflower, broccoli and carrot.  Another ingredient is avocado but I will wait until later to add it.  I dressed the salad with a vinaigrette that contains Dejon mustard and honey as well as vinegar and olive oil.  We'll also have a roasted chicken and steamed yellow squash if the squash are still good.  They have been in the veggie drawer for a while.

I had in mind butterflying the chicken to shorten the roasting time.  I'll rub it with olive oil and season both sides with s & p, granulated garlic and onion, paprika and poultry seasoning.  I really like roasted chicken.

Hope Susan is relaxing and having a good time.

I'm just checking in here. We're staying at my wife's cousin's house in Potsdam, NY and have been driving around way upstate New York visiting all of her family. I've not done any cooking at all.

In other news, we are having to move our departure from New York to a day earlier than we had planned to accommodate travel orders. Uncle Sam wants me for two weeks.... It's for classroom based training, so I won't be practicing be uncomfortable. :-)

Carole, that's funny about your DH and the custard dish. I often use a cake cone to limit portions but find that I can get 3 scoops in that sucker!

I'm uninspired about dinner so I'm just throwing some pork steaks on the grill. Sides will just be corn on the cob and applesauce

Rain again today. It has rained 12 days out of 18 this month. Have I said I'm tired of this?

Oh, Carol, you are so good with your veggies

Nance, sometimes rain can be nice. I spent 4 months in Ketchikan AK last year and kind of got used to it. It is the rain capital of the US, the largest temperate rain forest in the world. It rained every single day for 3 weeks and then5/7 days for the rest of the time. They can tell tourists because they have umbrellas. Everyone else just pulls their hood down further over their face. Try camping in the living room in a tent? Very Romantic.

Eric, your travels sound wonderful. I am so jealous

For dinner I'm celebrating because my three day weekend starts on today, as I have Fridays off. I will be very busy tomorrow with errands and practicing violin as 6 of us have been asked to play on stage at the Solstice Festival on Saturday with the Real Musicians. I don't want to let my teacher down. So more shrimp cocktail, lots!! with baby greens and watermelon

Watching a PBS documentary on John Denver. I am such a dork

Have a 3d date if I can work it in this weekend. He's really nice, but I am undecided. I really like doing my own thing, and having lived with someone my whole life, am kind of enjoying living by myself, plus I am a twin, so never had my own things, we'll see.

You go Bedo - Rocky Mountain High.

My cousin is here from the small AZ mountain town of Taylor. We haven't seen each other since my Dad died in 2007 at age 96. He was the last of that generation. I took her for Rainbow Trout, which she rarely sees. Grilled w/sides of French green lentils and wilted spinach w/pecan. Bread was sourdough, rosemary garlic and cranberry walnut. We had a wonderful visit but the reason she is here is grim. Her 40 yr old daughter is on her 4th or 5th recurrent cancer in 6 years. This time the sarcoma is wrapped around the small intestine w/ "free floating" cancer cells around the spine so they're afraid of surgery. She's here for a consult at MD Anderson since MDA is one of the few doing immunology & mixing chemos that were originally for other regimes to try for reduction. I'm an hour north and they don't have a car so I'll drive back down tomorrow for another exciting lunch &/or dinner depending on how the daughter feels.

Minus, that is such a sad story. Am hoping MDA can pull off a miracle for your cousin's daughter. Hugs to you all. Glad they have you for support, rides, home meals, etc.

I liked the sound of that salad, Carole. I wish that I loved chicken. I kind of think if it as wallpaper, and eat it often mostly to avoid having much red meat. Last evening we were at a house dinner with some of DH's colleagues and spouses. The hostess made a lovely dinner with chicken breasts roasted atop whole layers of herbs. It was very tasty along with a quinua pilaf with onions and peppers, and roasted asparagus, and I believe, a beet greens salad.

The weirdest experience happened there.....one of the other spouses was a former parent/client of mine, with a high profile child. There were many remarkable and sad events with this family, and for years I spent hours and hours with/for them. It was odd indeed to see her with her new spouse, have her hugging me as tho we were great long lost friends, and have her ask me during dinner if I had known her DH had died. Not only did I know that, I was the support person for her children through that very traumatic loss years ago. She also unsolicitedly filled me in on other traumatic "news" that I lived through about hers and other families whom I knew well. Suddenly, I felt not the least bit worried about MY memory. Yikes! It is rare that my professional and personal lives intersect. This was odd to have them do so last night with this particular person.

I should mention that our dessert was the most delectable brownie I have ever tasted with vanilla ice cream and rhubarb sauce from the hostesses farden. Oh my! :) I think I was really needing to dive into that sweetness!

Today I taught my last two classes. The kids are ready to run through fields and beaches at this point! They gave me a cute bag with all of their names on it and some cute drawings. I took forever making them bookmarks with "social skills tips" on them. I decided to add a bit of glitter. Ha! What work! And glitter now adorns my kitchen, my hair, clothes, etc

Not a single healthy bit of food today (unless peanut brittle can qualify). I have been running around like crazy and just grazing on bad stuff. Tomorrow is another day......back on the health wagon.

Happy for Susan that we are having gorgeous weather.

Please don't send us your rain, Nance! But do chase it away. You've had too much!

Play well, Bedo.  I mean the violin!

I was introduced to the chopped salad I made last night when I was recovering from my breast surgery.  One of the dinners brought to us had this salad and it was very good.  I added it to my salad repertoire.  Always before I had chopped up the veggies by hand but yesterday I used the food processor.  Much faster and not as messy.  The avocado is a necessary ingredient and you can use a variety of dressings and spices/herbs.

We'll be eating dinner at our club tonight.  DH has a free dinner for his birthday.  I'm playing golf today for the first time since my foot surgery, which, unfortunately, did not "fix" my foot malady.  I still have the pain in the toes and front portion of the foot when I do a lot of walking and standing.  I'm actually dreading spending four hours out doors in this heat and humidity.  I know I will be drenched with perspiration.  If my foot bothers me too much, I will just play nine holes.

carole - so sorry that your foot is not improved - I know you like to be active, I am sure you are disappointed.  It is already so hot here in FL, I am only doing short periods outside.  It is going to be a long summer...

    Lacey12 Posts: 2,895

Oh dear Carole, I hope that the pain you are still having in your foot is just temporary. I know what it is like to have foot surgery that doesn't work, and it is just another insult to injury. Arggggh! Hope to day's golf game goes well.

I had planned to make an interesting pizza for dinner until I just seemingly out of the blue, pulled something in my lower back and am having a hard time standing straight even with ibuprofen. It was one of those weird things that happened dramatically as I was getting into my sweats. It may be due to my trying leg lifts on that side for the first time this morning Oy! Fortunately, I know that back spasms generally resolve themselves, and I will be using the foam roller to keep the muscles up and down my back from joining in the spasming! You know what Rosanna, Rosanna Dana says........:

Thanks for the sympathy.  I played 18 holes of golf without a lot of foot pain, just some twinges.  Of course, I didn't walk.  I rode in a cart.  Afterwards I had a good lunch with the other women.  I had a shrimp remoulade salad.  One ingredient in the salad is several breaded and fried slices of green tomatoes.

Lacey, hope the back injury is very temporary.

I've got a big pot of mango chutney on the stove, it's canning time around here

    carolehalston Posts: 9,013

    Mango chutney sounds delightful.

I had poached salmon last night as my entrée.  With asparagus spears and lump crabmeat and hollandaise.  Also Brabant potatoes.  The salmon was delicious.  Not at all fishy.

Yesterday was an excessive eating day.

Our electricity went out today about 6:30.  The power company trucks are out cruising around.  A reminder of how dependent we are on electrical power.

Hope it returns soon, Carole. I would guess you might need some cooling today if the temps are still high. It's good to hear that your golf outing went well, and your dinner sounded sooo delicious!

So I never made pizza last night, but made a quick orange/garlic/cumin marinade for vegetables and chicken breast and thighs, which grilled up nicely. Rounded out with corn on the cob and a garden salad. Still easier than making pizza dough. It was such a lovely evening that I made our sides quickly and sat on the deck watching DH grill while enjoying a glass of wine. I'm past the bad Spring allergy phase (just in time for summer!), so it's nice to enjoy the outdoors more.

Today I start my daily new sublingual serum allergy meds. I'll be happy if I tolerate it well since I won't need to self-inject serum any more, and this method builds up immunity over time. The back spasms are not as acute today, so hopefully, they are on their way out.......end of banal nedical report!

Eric, I hope you are having a good Father's Day weekend during your trip!

Since we can't be with either son tomorrow, if I can drive, I'll take DH out for a good lobster roll. He would love that! Seems like Father's Day is becoming larger than life, like Mother's Day. Oh Hallmark, how powerful you are! And what a punctuated/complicated "holiday" this is for so many....children and adults alike. Too bad Hallmark didn't just promote a "Family Day, which could be all-inclusive, but maybe it wouldn't make enough money. :/

Carole, I am so disappointed for you that the foot surgery didn't fix all of your issues. Can't imagine your life without daily gold excursions.

Lacey, did you wake with a pain free back? Where do the two of you head for lobster rolls? Of course, I can't eat them, and Mr. 02143 seems to have lost interest in lobster lately, but you never know when one is required.

Sula, do you grow your own mangos or buy them? We have had lots of Haitian mangos in the past two weeks. They are among my most favorite variety.

I am a curmudgeon. I do not do Mother, Father, Grandmother, Secretary, or any of these Hallmark days. The good news is, the son-in-laws family does all of them and there is absolutely no conflict for them. Off they go! But they had better not mess with my Thanksgiving. This new drug, Ibrance, is kicking my butt seriously. My poor stomach is very troubled. I made a lovely dinner last night for my friends and us and was only able to eat about 12 bites. I wish I could describe how it feels so could ask for assistance. Maybe it will become clearer. Tonight will be pill no 9, just over 1/3 of the way through this round.

Sorry not to respond to all.... *susan*

Lacey, what a wonderful idea that would be but I think that growing up my family would be avoiding that. My Mother would be putting out the good china, my stepfather would be stoned, my brother would be meditating at the table, my sister would be trying to hide in her room and practice violin and I would be gone somewhere.

Played at the Festival today. I have to rethink this. I don't like classical which is why I stopped violin, plus the competitiveness. I don't really like Irish which we play a lot. I like blues/Cajun. My work gets in the way of everything.

Going out to dinner tonight with a friend who is going to give me a royal headache. She wants to talk about my portfolio, such as it is, she is a financial planner, but is doing this as a friend. I am grumpy after being in the sun all day and being forced to play without music. I don't think it's urgent she keeps saying the market is volatile and blah blah blah and can't wait until next week. That is not true. I just want her to leave me alone about this today and she keeps making comments, like "Honey I'm doing this for you...you woudn't want...blah blah blah so I said FINE. Went to the DMV for the THIRD Friday off in three weeks because they screwed up my registration AGAIN, and I have to go back NEXT Friday, then the pharmacy LOST my prescription who does that???? And I told them to call the Dr. themselves I was tired of doing everyone's work on my day off, Then I had to return a music stand that I bought that I pulled new out of the package BROKEN

I am very very crabby. Thus the family dinner comment.

Hallmark moment - Do you think if I go the store I could find a Father's Day card for my son from his dog. No doubt it's there but not likely that I'll even consider going.

Bedo - I like the family comment. My mother would also be setting out good china & my dad would be out of town on business. Very interesting conflicts.

Susan - so sorry to hear that the new drug is not going down comfortably. So you take for a month and then off for a period of time ??? Gentle hugs.

Carole - I think maybe you're packing to leave this coming week for the cool regions?

Bad news on the medical front today. Carole, how frustrating! I hope it gets better with time. And Susan, I'm so sorry about your poor stomach. I hope your docs can get you some relief.

My niece and bil are here for the weekend. The meatballs and spaghetti were a kid hit. Tonight we're having a spatchcocked large chicken on the grill with a lemon, olive oil, garlic and oregano marinade. Sides are the Greek roasted potatoes and a coleslaw with a light vinegar and oil dressing. No vampires here tonight, lots and lots of garlic!

Bedo, sounds like you deserve to be grumpy.

Tomorrow we're going to see my dad and take him to lunch. His father's day present is a large container of limoncello biscotti, which will thrill him no end lol!

  • Lacey12
    Lacey12 Posts: 2,895

Nance, limoncello biscotti? You are a great daughter!! :)

As I reflect on my family of origin, a "family day" celebration would have been pretty much of a stretch too......yes, china, lots of cooking and stress for my mother, physically or emotionally absent father, taunting brother and isolated sister. So maybe Hallmark could leave it at "special person" in our lives day since I attribute much of my mental health to certain extended family members and neighbors who nurtured me in the most caring ways when my family just couldn't. We all get by in the "family of man"...:)

Susan, we had thought to take a ride to the North Shore, but the forecast for strong rain makes a long drive sound pretty uninviting, especially since my back pain has yet to go packing. We may just settle for a no view fresh lobster local option....Dolphin in Natick...Captain Marden's in Wellesley? Or maybe something more creative if I research a bit more.....

I am really sorry that the meds is impacting your digestive tract so badly. Arrrrgh!! Did your MO mention that possibility and what you might do for it? There is a terrible injustice in you having to deal with such a side effect, given your wonderful culinary skills and creations.

We had a substantial dinner....spice rubbed tenderloin steaks, grilled pineapple, baked potatoes, and a big Greek salad to which I added fresh mint. My back is screaming at me for standing at the counter for prep. But the meal was tasty!

I have been putting off starting my sub lingual drops all day, and better get to it now. I am a bit terrified of the possible allergic reactions that are mentioned in three places with the materials it came with. Okay, I will stop wimping out...wish me luck!

  • susan_02143
    susan_02143 Posts: 2,394

Lacey, Captain Marden's is supposed to be pretty darn good. There is also a lobster place in Natick. Have them steam it for you, and then make your own lobster salad to exactly your own taste, served alongside a bottle of beer or glass of wine. Is that place the same as Dolphin? Warning, Marden's is only open until 2pm on a Sunday.

Made a Chinese soup for dinner which was delicious. Was able to eat about half of it. The recipe called for too much meat, not enough noodle, and WAY too much woodsear mushroom. In fact, about 1/4 of the mushroom amount. http://www.cookstr.com/recipes/fortune-noodle-meat... . I have this book, and have enjoyed many of the recipes, though I have to be careful with his salt and sugar amounts. Now we will see how the soup settles.

And so sorry your back didn't resolve while sleeping last night.

Bedo, sounds like you need a reset button for today.

Lacey, The mods have posted this tip for iPad users in the Glitches thread. Maybe it would help you?

    <quote>

iPad users who know they have issues typing with the rich text editor; tap the "Use plain text editor" link before you start to type a post -- the link is located at the bottom right of the post text field, next to the Preview and Submit buttons. This will turn the rich text editor into a plain text box, which does not have any formatting options (e.g. bold, italic), but should be faster.

Unfortunately, clicking this link and toggling to a plain text box will not permanently keep this as your default setting -- at this time, you'll have to tap the link each time you want to post. This is only meant as an interim fix -- unfortunately, a permanent fix will require money and time. Hopefully, we'll be able to implement a permanent fix in the future, but this should work for those having trouble in the time-being.

We hope this helps, and please let us know if you have any questions or trouble using this new feature!

Thanks Susan! I had noticed the option recently but worried that if I chose to use it, I could cause even more typing probs! Now I will try it. :)

Meanwhile, here's what we did for lobster roll Father's Day late lunch.....ate at, of all places, "Live and Kickin" in Central Square. Their "lobster sandwich" is delicious as were their steamers. A very primitive "eat in the rough" picnin table place with no view but of triple decker alleyways, yet great seafood! DH was happy. For dinner I made a weird light salad. Used some amazingly beautiful "salad bowl lettuce" I bought at our farmer's market this morning, on top of which I placed a bunch of prosciutto wrapped cantaloupe pieces, drizzled with balsamic, no oil. It was so tasty. Then to chase the healthy motif, we ate carrot cupcakes that had been burning a hole in the refridge.

Before dinner, I ventured downstairs to the basement to start the onerous project of moving lots of stored items...bags of food, boxes of my old work stuff, our sons' memorabilia, etc. (Actually found some books I'd been looking for;) to make room for the workmen who are installing a new furnace and hot water heater this week. Glad that's done. I thought we'd be doing it together tomorrow, but this morning, DH managed to slip in the tub, and hurt his ribcage, so I figured I'd better do it, after dosing my back with ibuprofen, and have it be done. Tonight my back is not thanking me....but I'm still glad it's done! We are like the walking wounded here....but in time should get better.

This text format is easier to use, so I will try it from now on.
    Thanks again Susan.......:)

Live N' Kickin is a great place. That is where I have bought lobsters in the past. High quality, cooked to order, and they couldn't be any nicer. "Eat in the Rough" doesn't really begin to describe the experience. Imagine this folks.... you pull into a gravel drive, which is also the parking lot. Room for about 7 cars? It is on a tiny residential street and as Lacey has stated, there are three-family [quite expensive these days, but still pretty run down] all around. It is a Fish Shack without the water, view, ambience. The picnic tables are tucked under an awning outside that looks like it might just collapse at any moment. But, they have bins filled with live lobsters, separated by size. This place is all about the food.

And the two of you need to stop slipping! Your backs won't be happy with you at all. It is summer time, and it is finally possible to move outdoors.

Dinner here was the Merguez sausage [I am down to 1/2 and Mr. 02143 ate 1 1/2], some saffron bulgar using my Spanish saffron for the first time, zucchini strips sautéed and a simple yogurt sauce. So far, I have determined that orange is out, lemon is in; carbs are good; tomato sauce is out; red wine out, vodka in; eggs are marginal, yogurt in small amount is in; dark leafy greens are in but need to be cooked. Today wasn't a bad stomach day.

Some visuals to complete Susan's apt description of the fine dining DH and I enjoyed this afternoon:imageimage

Casual fresh seafood bliss! The rain had stopped so we were fine under that awning. And yes, the working staff could not be nicer as they efficiently filled orders! I also learned today that if one buys soft shell lobsters there, they are about three dollars cheaper per pound. Never knew they were available for sale.

And for the record, Susan, there is one person at this address who has slipped/fallen (twice in six months). ;)

I hurt my back doing side leg lifts. Didn't know it until ten minutes later when a lower back muscle on that side abruptly spasmed as I went to put on slacks. Good thing we see Sarah the trainer tomorrow....

lacey - hope you both are feeling better quickly - regardless of what the hurtie is!  Your b-day lobster excusion looks like just my kind of thing!

susan - sounds like progress in terms of determining what foods are tolerable with your new med.  Limiting/eliminating any of the delicious things you make is distressing, but maybe the stomach SE will dissipate after a bit - hope so.

I did not make dinner last night - DD ad DH went to his office to work on his little aquarium, then out for snacks and then to the movies!  DD had to work earlier in the day so they didn't get started until about 4.  I ran some errands and then came home and put together their lunches for today - teriyaki noodles with veggies and roasted chicken.  I had a Horiatiki type salad (Greek salad, without the lettuce) in the early afternoon so didn't eat dinner either.  Tonight is the naughty meatloaf, with buttermilk mashed potatoes and green beans, that we would have had last night!

SpecialK, naughty meatloaf sounds better than well-behaved meatloaf!

I spent the morning working on transferring frozen food and pantry items out to the 5th wheel camper.  The indoor chest freezer is about empty and will be unplugged later on this afternoon or tomorrow.  Our departure day is Friday.

I cooked a big (and I do mean big) pot of MS style chicken and dumplings for noon dinner yesterday.  That and a tossed salad was the meal and everyone had seconds of the dumplings.

Tonight we're having a large ribeye cooked on the outside grill and also sliced eggplant, cooked on the grill, too.  We'll also have a tossed salad with romaine, tomato, cucumber and avocado.  Maybe blue cheese vinaigrette dressing.

It is hotter and more humid outside than you New Englanders can imagine.  We are so looking forward to some MN coolness.  It would be wonderful not to have to use the a/c.  Last July was ideal but the weather makes no promises.

carole - ugh on the weather, right?  We have 90 F. and raining/thunder/lightning right now - supposed to get hotter during the week.  When it is like this I am all about the air-conditioning, lol! Yes, naughty meatloaf is better!

I spent the morning cooking - broccoli salad, dill/sour cream red potato salad, curried rice and chicken salad - I cooked ahead so I can supply my two worker bees with ready made food for their lunches.  I used some of the potatoes to make the buttermilk mashed potatoes for tonight - I will oven warm them while I cook the meatloaf.  On Thursday I am making some caramel corn and Andes mint cookies for my DH to take up to his parents - they love both and they are 84 and 90 - it is getting harder to get them gifts that they need or want, so I send their fave treats instead.  It is MIL's b-day, and late Father's Day - last month was the reverse - FIL's b-day and Mother's Day - so he is going with his sisters and they are having a little celebration.  I am dog-sitting here, and cat-sitting for a friend at her house while she is in the Keys.

I'm talking with a friend about taking a fall leaf cruise round trip from Boston up to Nova Scotia. Anyone have a good experience or recommendation to share? If it happens, we'll probably stay a night or two in Boston since she's never been to that fair city before.

Minus, I've been to Nova Scotia and it's beautiful. I went to Halifax. There is Celtic music which you may not be interested in, lots of good seafood and shellfish, the leaves, and so many interesting things to see. Don't camp the end of Sept, the weather can be a bit cold for camping at night by then. Come and maybe you and your friend, the Boston /NH /New England ladies can have a get together, I would love to come

Minus, I went to Prince Edward Island and it was lovely.  The mosquito's were the size of black flys though.....

Dinner is left over pork shoulder barbeque, and mashed taters.  I have the fixins for ratatouille which I love to eat over pasta with some mozerrella cheese.

the Black raspberries are ripening at my dads and I picked about 6 cups tonight, but the canes didn't get thinned last year as I was recovering from rads and it is  literally a jungle.  Can't get into the back side of the canes because of the undergrowth, and I be there are snakes and chiggers and critters I don't want to think of in there.
