    Deborye - if you want to try and organize something for the Boston area folks, I'll try to make it.  I'm not up to organizing anything as big as a 15 person gathering.  And I would be willing to drive to pretty much anywhere.  So just let me know and I'll try to be there!

    Joyce- That sounds like the salsa chicken that laurie gave out months ago, i just love it i make it quite often, also add black beans and top with s.cream at the end sometimes add avacodo as well

    Bedo- Wow, 16 dollars for a chx, did it have gold nuggets up his tush LOL!

    Michelle- That sounds easy enough i have always wanted to try the eyelashes but was nervous i will try them with the adhesive. Cant wait to hear what your daughters are plainning for you, sounds exciting. How are you feeling?

    Michelle- I dove in Tongue out  I will admit I gave a yell when I came up and swam right to the stairs- and then went a second time!!  I felt great after, all the sweat was off me and I felt refreshed.  But I am also a big fan for floating!

    Purchase the roll out pie crust 2 pcs. roll one out on the pie dish

    Boil chicken in chicken broth 2-4 pcs

    1 cup each of carrots, onion, celery, saute til ender in oil or butter in pan

    using about 2 cups of the chicken broth, and 1/4 and 2tbs of flour, add to veggies, mix in chicken, salt, pepper, thyme...place pie crust on top, prick to vent.

    bake 350 for 35 min.

    easy, delicious, and we used all organic food, except the pie crust

    YUMMO, WE LOVE FALL !

    Debbie - I am feeling pretty much ok.  Not a whole lot of endurance, but nothing hurts so that's good!  I am going to need a personal trainer after this is all finished!  Or I'll need to start cardio-shopping to get back into shape!

    In about 60 hours I'll be PFC!!!!!!!!!!!!!!!!!!!!!

    Laurie - what a gal!!!  I think my yell would be more of a gasp...lol!  Kinda like that first wave at Hampton Beach!  This weather keeps up and I might have to make one last trip.  Too bad my mom has a doctor appt tomorrow morning; otherwise, I think I might just do it!  It's going to be 80 there!!!

    Welcome, TravelingPants!  I am a fan of those refrigerated pie crusts, although I don't make too may pies these days.  Your pot pie sounds delish!

    We did a 50th wedding anniversary for my parents this year and did play songs from 1961 but, didn't do the dress from 'back in the day'..... We had a great time and looks like you all had fun,too!

    Hi Seaside!!!!   Great to hear from you!   I'll bet your parents' 50th anniversary was awesome, even without the period dressing!  I found my costume on Amazon, my most favorite shopping mall...LOL!  The minute I saw that outfit, I LOL'd so I knew it was the one for me!  And I was able to order it in the right size (well except for the really long bell-bottom pants!).  The wig was a better quality than I expected.  Someone on FB just told me her daughter said I looked like Sleeping Beauty!  Too funny!  I don't think good ole' Walt Disney would have posted a picture of Sleeping Beauty doing a shot!!!

    Travelingpants, your pot pie sounds really good- In a pinch i will use the pillsbury pie crust and they are pretty good

    Anyone hear from Sherrill lately (tougherthanithought) been a couple weeks since she logged on.

    Made grilled chx marinated in kens itialian dressing- had brown rice mixed with black beans also served yams with it. (yum)

    Laurie- OUCH on swimming into the stairs LOL!

    Hot here also this weekend, we had boat out to watch the boat races and got sunburned  YIKES and all the guys jumped in the lake

    zumbagirl   there is a radiation post on here  that has really good info...but the tattoos are sm permanent dots for the techs to line up the beams in the right place  so they dont have to go through the measurments and planning every day you go for rads. 

    bedo  that is the funniest story ever about the chicken....and 2 husbands?  you go girl...not at the same time I am assuming?  LOL very funny the way your wrote that.

    had the best marinated chicken sandwich with peppers and onions and mushrooms on a hoagie roll from one of the vendors at the races....delicious

    Lol that's a good one.  But would a lobster appreciate being  raised on a farmily farm in Amish Country? What *does* make a lobster happy?  I'm beginning to be a little jealous of my happy chicken's former life.  :)

    Making chili tonight, but we are going to meet my son and SO for dinner.  DH is driving back from Amherst MA, probably a two hour sojourn.  We'll eat the chili tomorrow or when the weather becomes conducive to chili!

    Took my mom to the doctor today - she is doing much better with the Aricept and anti-depressant.  She was actually quite feisty today!  Saw Joycek - she works at the same hospital and we chatted for a bit.  Then I took her out to lunch and the weather was so nice that we sat outside.  She doesn't have to go back until the end of January, so that's one less thing for me to worry about in the near term.  He did suggest another assisted living facility that I might want to check out in Nashua, when I am up to it.

    Michelle- I know what you mean about planning meals and the temp doesn't make you want to eat it.  We need to eat the left over roast for dinner tonight.  I don't feel like it eating a roast with gravy but we are going out tommorw to celebrate our anniversary and I am sure not going to throw it away.  I'm glad your mom has some pep to your step, it must make you feel good.

    My 9th anniversary is Wednesday.  Tonight my DH came home and said that his present to me was that my in laws are taking the boys for an over night and we are going out to dinner and having a date night.  Yay!  We don't get many date nights and I haven't been to a nice restaurant in a coons age.  Excited and looking forward to it.  Now we just have to choose Mexican or Italian food.  We have two restaurants that are our favorite, we usually go for the Italian place.  When we met I was 21, he was 26 and we worked for the same restaurant.  IN the same building where our favorite place is.  The food is incredible and it brings back memories.  Yet a margarita would be nice!

    Also, I have to laugh.  Now my DH is thinking of skipping the kids party on Sunday since I won't be there to help.  "It's a lot of work alone."  Duh!  I do it all the time.  I said it's on you then if we don't go, he's still thinking he says.  Either way I am going to lunch with all of you:)

    We just had Rotissari chicken for supper, DH made a sandwich and I tore off a thigh and microwaved 3 small yukon gold potatoes.

    I am not going to organize large get to gethers for a while, too much work.  But we did have a great time. The get together in Glouchester was organized by glostagirl.  In 2008 I met with 27 of the most wonderful sistahs in Las Vegas, they came from all over the US, three of them are angels right now Frown, it was a treat to myself and the hotel stay did not cost much cuz my DD was at an International Aesthetic Trade Show she used to be the Global Marketing Manager at Cynosure.  Spent 3 nights at Planet Hollywood and a few more at MGM.  Saw LeReve with DD and did a lot of shopping and walking and sightseeing.

    Had chicken and peppers in tomato sauce with sweet potatoes, peas and a salad.  It's warm here too, didn't really match the weather.

    Deborye, that is wonderful that you were able to do the Vegas trip.  Very sad about the 3 angels though :(

    Michelle-It is rainy and very windy today so chili sounds really great to me. Glad your mom is feeling better. and good luck with finding a better place for her, i know it takes time to check out a place she will like and be comfortable with.

    Laurie- Happy Anniversary- Hope you have a great night, no matter which one you choose. Im 8 years younger than my DH sometimes i feel like a kid next to him LOL!

    Deb- Thats great you got to make that trip in Vegas i contemplated going back then but was going through tx so couldnt make it. 

    Kay- your dinner sounded good, i make mine with sasuage that way next time i will do it with the chicken instead, it would be more healthier too,

     Made a Tamale pie for dinner tonight it was really good. 

    FILLING

    • 1 1/2 lbs. ground beef
    • 1 small onion, chopped
    • 2 cloves garlic, finely chopped
    • 2 cups (16 oz) enchilada sauce
    • 1 cup whole kernel corn
    • 1 can (2 1/4 oz) sliced black olives, drained
    • 1 cup of cheddar cheese (grated)
    • salt and pepper to taste

    CRUST

    • 2 1/4 cups albers corn meal ( yellow)
    • 2 cups water
    • 1 can (12 fl oz) evaporated milk
    • 1 tsp. salt
    • 1 can (4 oz) diced green chiles
    • 1 to 2 cups of cheddar cheese (shredded)
    • Sliced jalapeños (optional)

    FOR FILLING:
    COOK beef, onion and garlic in large skillet until beef is browned; drain. Stir in enchilada sauce, corn, olives and salt.and cheese

    FOR CRUST:
    PREHEAT oven to 425°F. Grease 12x8-inch baking dish.

    COMBINE corn meal, water, evaporated milk and salt in medium saucepan. Cook over medium-high heat, stirring frequently, for 5 to 7 minutes or until thickened. Stir in chiles and cheese. Reserve 2 cups corn meal mixture; cover with plastic wrap. Spread remaining corn meal mixture on bottom and up sides of prepared baking dish.

    BAKE for 10 minutes. Cool in dish on wire rack. Spoon beef filling into corn meal crust. Spread reserved corn meal mixture over beef filling.

    BAKE for 15 to 20 minutes. Sprinkle with additional cheese. Bake for additional 5 to 10 minutes or until cheese is melted. Garnish with jalapeños.

    Deborye - I hear you about organizing group events, it is a lot of work.  I read some of the discussion about the Las Vegas trip and it definitely sounded like there was lots of fun involved in that trip.  I might be up for something like that next year.  I LOVE Vegas and when I was working, I made several trips out there because my company was the local telephone service provider for the Vegas area.  I always stayed on the strip because the hotels were cheaper than the standard "corporate" hotels, so my evenings were fun and the dining options were endless!  One of my favorite restaurants is the French cafe with sidewalk seating at the Paris and across from the Bellagio fountains.  And the view at the top of the Eiffel Tower, at night, is spectacular.  One of the guys that worked for me had to go out there for business for a few days.  His girlfriend was going to join him for the weekend, and he intended to propose while he was out there.  He asked my opinion on where he should do it, and I suggested the top of the Tower.  I didn't know it then, but she had been to Paris, can't remember why, so it turned out to be the perfect suggestion.  They are now married and expecting their first child in December.  He is one of my favorite employees/co-workers ever!

    Laurie - hope you and DH have a beautiful anniversary/date!  So long as he doesn't make any plans that get in the way of you joining in with us on Sunday.  And I suggest you make it a progressive dinner.  Margaritas and appetizers at your favorite place, then on to entrees at the "best food" place, followed by dessert and coffee at the place with your favorite pastries.  You've got all night, right???  By the way, we gave this to our DD and SIL one year for Christmas - a personal chef will come to your house, cook and serve a full dinner for you that includes your favorite appetizers, entrees and dessert.  This guy is in MA, but I suspect he may travel north a bit.  Something to think about for the future!  You could farm out the kids, or have the meal served after the kiddies go to bed.  In the meantime, they are entertained by the goings-on in the kitchen.

    This time tomorrow I'll be getting ready for my LAST chemo!!! Six months ago I couldn't even imagine getting past the first session!

    Michelle  i also had a day with my parents yesterday, they are 79 and 77.  they go to the gym every morning for a "workout" and my dad was showing me their new ipods that they like to use while on the treadmill or bike. LOL I dont even have an ipod! then they go to the senior center for lunch, and when I ask my mom how she likes it there, she says "its ok, but theres a lot of old people there" ha ha

    Debbie love the sounds of that tamale pie, a good Sunday afternoon football dish! 

    Laurie   Happy Anniversary!  I always said, it didnt matter if my husband just took me around the block, if the kids were gone for the night, it was a date for me.

    Tonight I will do a pork roast on the grill, and going to make some home made applesauce. Will have to have summer squash as i went to get some corn on the cob and it was gone....just wanted it one more time.

    Carrie - that is so awesome that your parents are enjoying iPods and going to the gym every day!  I wish my mom could use one.  We tried giving her a netbook about 3 years ago, and "dumbed it down" as much as possible.  She couldn't even figure out how to turn it on so that was a bust.  Alzheimer's sucks as much as breast cancer!  She is in perfect health, otherwise, so it's even more frustrating.

    Michelle, my mother has Alzheimers too.  She will be 85 on Saturday.  She is also in perfect health otherwise, but she is wheel chair bound because she fell and broke her shoulder a year and a half ago and couldn't balance to walk.  Wasn't able to learn to walk again because she couldn't actively participate in physical therapy.  They tried, but she just couldn't follow directions.  I think it sucks even more than BC.  When I saw how it affected my mother, I wished I would never get Alzheimers.  I thought of that wish the minute I was dxed with BC.  I have to be careful what I wish for.  LOL

    Laurie, sorry I forgot to wish you a Happy Anniversary.  Happy Anniversary!

    That tamale pie sounds good.  I am going to try that one too.  I have to get out of this rut of just cooking the same things all the time.  I think it's because I'm just not confident in my cooking abilities.  i think it comes from being Irish (not known as great chefs) and from my mother.  We always loved her cooking, but she used to say she'd know something was done when the smoke alarm went off.  Everything was cooked well done in our house.  I am trying to break that habit.

    Carrie, I wish your parents had access to a senior center like ours.  Our sign says Everybody Welcome and our regulars include people of all ages.  We even have highchairs!  A couple of our members bring their grandchildren in at least once a week and every one lights up when they come.

    debbie 6122 - that tamale pie sounds seriously delish.

    I am not in the mood to eat or cook, but do so almost daily.. Sometimes, I'll take a day off and tell everyone to eat leftovers.  I made Chicago deep dish pizza last nite.. kind of like the recipe here.. it is so good and I've streamlined it so I can make it from start to finish, including the dough in about 90 minutes.,,. with plenty of time in the middle to do laundry and such.

    This is really a good recipe.. i use ALL olive oil.  The sequence of cheese, 'sauce' and toppings is important as the cheese keeps the crust crusty and not soggy.

    Hi ladies:  I'm new to the site and the recipes sound terrific.  I'm always looking for something new to cook.  We just returned from a 10 day cruise so we'll be eating "slim" for a few weeks until we're back on track.

     Tonight I'm having salmon and a nice broccoli slaw that I found packaged in the produce area, complete with cranberry bits, nuts and a nice dressing.  Just toss it up and serve with the salmon and you have a healthy meal.  Could add some brown rice if you want carbs.

    I also made a big pot of chicken vegetable soup.  Take a rotissary chicken from the store and take off the skin, cut it up in chunks and set aside.  Saute garlic, onion, celery, red & yellow peppers and carrots in a little olive oil, add a can of tomato bits & chicken broth, and bring to a boil.  Add the chicken and simmer for about an hour, then I cut up and add summer squash and zuccini about the last half hour of cooking so it doesn't get too overcooked.  You can also add potatoes, but I don't.   Add seasonings to taste and serve with a salad.  It's even better the next day.  Sometimes I have it for breakfast!

    Welcome, Kaara!  Your chicken soup recipe sounds like one I've made with the rotisserie chickens.  I actually leave it on the bones and simmer for an hour with carrots, onion and celery, and covered with water (or you could use chicken stock) to get a bit more "richness" into the broth.  I will eat chicken soup for breakfast, too, especially in the winter when I have a cold.

    Michelle- Congrats on your last chemo tomorrow, hope SE are minimal and fingers crossed your counts are good and wont need the shot ((((((hugs))))))) BTW- You do look 10 years younger in that color of wig it looks fabulous on you.

    Everyone talking about there elder parents i wanted to share that my friend george who is 92 or 94? Plays golf every day, works out everyday and is still going strong, hope when my dad reaches that age he will still be this active We have much to learn from them, ;-)))

    Roasting 2 cornish hens and potatoes, carrots and onions, I perferr to roast the veggies in an iron frying pan w/EVOO they seem to brown up better.

    Thanks, everyone!  I'm so looking forward to putting chemo behind me! 

    Regarding my picture...isn't that a hoot!  I've never, in my entire life, had hair that dark.  And that is a $25 costume wig I ordered from Amazon!!!  Geez, I've spent my "hair styling" money in the wrong places all these years...lol!   I don't know if I have the guts to try anything that dark when my hair returns!  It might only work if I wear the 70s outfit with all its bright colors!!!

     Debbie - hooray for your friend, George!  My SIL's grandmother is getting close to 90, still lives alone in Florida and is an almost scratch golfer (at least that's how the story goes!)  In any case, she's also sharp as a tack, gets on the internet and does email, etc.  She's one amazing woman!
