Eric: no, I can't imagine it's easy in the absolute sense!

(For the board-appropriate content, I'm not cooking for Thanksgiving. I plan on eating out at a restaurant in Chicago, and enjoying that enormously.)

Queen, if you can still get reservations, the Signature Room on the 95th Fl. of the Hancock does a great T-day dinner—full buffet plus trad sit-down entrees…..with leftover turkey & stuffing packed to go.

We’re going to our friends’ condo in Rogers (No)Park.

ChiSandy: thanks! I'll at least check out the restaurant.

I did my Thanksgiving shopping today. It will be pork loin and I plan to make dressing w/sage (or stuffing depending on where you live). Tasty looking young asparagus was $1.77 & that will be my veg. It's just me & this is already too much food, so I'll likely forgo the potatoes. In memory of my Aunt, I'll probably stuff a couple sticks of celery w/pimento cheese for an appetizer/salad.

Still eating left overs. Tonight's supper will be a California Roll if I get hungry.

Bedo - I miss you. No one else eats crazy meals like I do. Hope your job is still going well and your daughter growing bigger.

Coming down with some kind of sinus, sore throat thing. Stoped at Sam's club and picked up a rotisserie chicken--also a huge can of mixed nuts, a Pantone Cake (Yes, Christmas is coming early for me) bananas, and Crest toothpaste. Then I stopped at Fresh Market and was bad----Yukon Mashed Potatoes and Mashed Sweet Potatoes, Lemon Squares, Tomatoe Basil Soup and Pimento Cheese spread.......I am sure my mother would have fainted at me buying already cooked potatoes in the Deli-----But I don't want to cook, I want to curl up and feel comforted with good food.... So dinner was roasted chicken, potatoes and cranberry sauce with a lemon square for dessert.

The way I am sneezing I should have bought the industrial size package of Kleenex.

Mmmmm……panettone! It makes insanely good French toast & bread pudding. (I was going to ask what color this year’s Pantone cake was, but that’s too snarky).

The sinus/scratchy throat seems to be going around, spontaneously (coming on too soon and of too short & intermittent duration to be infectious). High winds and (until tonight) unseasonably warm temps have allowed pollens to be released way past their usual end-of-season and carried them far & wide. Mold spores, too. But they stop doing pollen counts after mid-Oct. so we can only guess.

  • Redheaded, good to have you back. Your food sounds good. I really like rotisserie chicken.

We had leftover chicken thighs last night, an ample salad with romaine etc, and steamed and buttered broccoli.

Eric, I grieve for my mother while she's still with us. On Wednesday I was shopping in a kitchen department and thought about how she had no use for new kitchen possessions any more.

We will be traveling to Indiana for Thanksgiving, then going to Chicago area for a couple of days for more visiting with Dh's family before returning home. Hoping for no icy conditions.

    Not sure about dinner tonight

Redheaded, so good to see you at "the table" again! I know what you mean about comfort food....

Last night we couldn't get a reservation at our usual haunt near the TD Garden, so we made a quick meal at home before heading into town to see the Celts get creamed by the Warriors. I'd picked up asparagus (Minus!) on sale, so I sauteed that with yellow pepper, garlic, baby kale, and grape tomatoes, which DH put into an omelet. I made a cuke salad to go with it. Of course, DH needed to have a sausage/pepper/onion sub at the game, and I had popcorn.

Today I will try to get more organized about Thanksgiving. I am still harboring enough remnants of this "forever" virus to feel little energy. I hope everyone else is enjoying their holuday prep.

Carole, I appreciate your feelings of loss about your mother's changed life.

Carole, I too understand those feelings. Tomorrow we are packing up my dad's apartment (again.) Movers are coming Monday. We are moving his things to a storage unit just a few miles from the apartment while he is in rehab. If he recovers sufficiently to go back to supportive living, it won't be a big job to move him back. If he does not, we will arrange to dispose of his things because he will be in long term (nursing home) care. He is very unhappy about the situation, as am I, but seems motivated to get back. Well see.

Sandy, we're having the same weather as you. Unbelievable winds! Hard freeze tonight.

Welcome back Red! Sorry you have this obnoxious illness. The second round was less severe but I'm still coughing!

I made chicken noodle soup (homemade noodles) in the pressure cooker last night. So delicious and comforting! Tonight is pressure cooker beef stew for some friends coming for dinner and a movie. I'm also making a trifle with raspberries and strawberries.

I did regular grocery shopping yesterday and the store was playing Christmas music! Gah! Stop that!

So sorry for all of you who are battling the cold/flu/virus thing - no fun!

carole - you asked for my MIL's black bean recipe, and I totally forgot, then got distracted by surgery. Here it is:

1 1/4 lbs. black beans, 3 sm.onions, chopped, 1 lg. gr. pepper, chopped, 1 t. oregano, 2 bay leaves. Cook the preceding in a pressure cooker for 40 mins., or with water or stock on the stove until al dente. Drain and return to pan. Mix together 5 cloves of chopped garlic, 1 c. olive oil, 1 1/2 t. paprika, and 1 t. red pepper flakes. Add to the bean mixture and cook uncovered for 20 min until beans are tender.

Disclaimer - I have not cooked black beans this way, but hers were good

The final turkey pot pie tonight. Since the "pots" I used is pretty big, I'm going to split it with Sharon.

We're starting to sweep and mop the tile floors for Thanksgiving.

Special, I hope you are feeling better and better with your recovery! You are such a trooper...never a complaint.

Nance, I feel for you with all the work related to your dad's care which is tinged with emotional overlay. And the start of the holidays ta boot! Sending you hugs....(((((Nancy))))) ....to help you through this.

So my understated T-giv just expanded to include our friends who have us to their home on Christmas for an amazing meal. Her sister in CT decided for the first time in forty years not to host the twenty folks in their extended family for Thanksgiving dinner, and her adult daughters need to work or be with in laws, so our friends suddenly found themselves on their own for dinner. Of course we want them to join us.....and of course I feel much more pressure than just having our son and his food averse financee! I may even pull out my mother's silverware, which has been sitting in a secure hiding spot for the past seven years. HaHa! And now I am looking up some recipes, will clear the piles of paper in my kitchen, enhance the apps a bit, and become a bit more concerned about timing of the meal. This reminds me of how much I have changed (not in a good way) since the days when I used to host Thanksgiving here for many years. Clearly my 71 year old energy level is showing...

It was really beautiful here today...sunny and around 60 degrees....so DH got the ladder out and washed the kitchen windows that he spatters with dishwater every night. Then we walked and stopped to buy some ground lamb for dinner. The store changed their lamb supplier and for the better, we think. So we had grilled lamburgers, with our typical add ins...garlic, rosemary powder, pepper, and feta cheese. Delish! I cooked up the leftover lamb which will be mixed with a grain and some onion/garlic and probably chopped kale as a stuffing for portabello mushrooms tomorrowthat have been awaiting their chance for stardom since last week. I see the cold wet weather that is on its way, so it will be a good indoor meal tomorrow.

Nance, I couldn't find your Pinterest page somehow, and am hoping to find the easiest way to make fluffy mashed potatoes. I never make them.....so for me it feels like a challenge. Silly, I know..... ;;;;)))

Bottom dropped out of the weather, and we had flurries this morning and never made it out of the 30s. Going down to the mid-20s tonight. After rehearsal, I rode the L home, drove to Target for some costume pieces and to Mariano’s for food for Bob to take to a party tomorrow aft (I’ll get there in early evening after rehearsal—no way I’m hauling it around with me all day w/o refrigeration). Met Bob at B’way Cellars (renamed just Cellars) for late dinner—we shared asparagus salad, fried baby octopus, gumbo, trout, sweet potato gnocchi and Brussels sprouts.

Made calzones today one with chicken and broccoli and the other with pepperoni and mozzarella for hubby. Perfect comfort food for a lousy week. At least this week is Thanksgiving and it will be good to have everyone here together. Freezing out now...hate that winter is near.

April, I guess we both did stuff with thin dough. I made 8 small turkey pot pies tonight and also made the pie crust. They are all in the freezer now.

I had 3 cups of chicken broth that I'd made up midweek last week, so I used that. I had simmered the bones so long the cold broth was like chicken flavored Jello. I think someone mentioned saving the chicken bones in the freezer...that's what I do until I get enough to make it worthwhile to make the broth.

For the pot pies, I tried the pie crust in a pie book that was given to me. The crust is pretty much standard except for putting the dough in the freezer for about 5 minutes before rolling it out. This was the least fussy crust I've made. Hopefully it's a worthy pie crust.

Lacey, our Thanksgiving "crowd" started at seven and is now down to four. I'll need to learn to scale back on the stuff that can't be frozen.

Special, I hope the soreness is going away so that you are feeling well for Thanksgiving..

Hi to Red, It's good to "see" you back. It's been awhile..and thanks for the PM condolences. I hope you feel better in time for Thanksgiving.

Today I was going through more stuff and came across another trove of Kodachrome slides. I need to get a *GOOD* slide scanner.

It snowed this morning! We had an inch or so on the ground when I woke up. Very pretty but not thrilled that soon it will be shovel time (we have a snow blower but steps, decks etc have to be shoveled and that I don't like.

If any of you know LongTermSurvivor (Stephanie) from around this community, she passed away yesterday. She was a beautiful soul and most who interacted with her loved her and respected her a lot. Wanted to let you all know in case any of you also knew her. She will be missed. I hate CANCER!

April, Ditto on the snow here in my area of CT. Looking forward to more snow.

As far dinner, it looks like it will be the last of the chicken pot pie

Totally snowed in here...12in this morning and still snowing. they have closed the roads in our county to necessary travel only. No work for me today, I am still in my jammies (yoga pants)

Queen... I am a very simple cook here on this thread. I use the no-yolk egg noodles, can of tuna, can of cream of mushroom soup or cream of celery (whatever you have on hand, pats of butter and some sour cream. top with buttered cracker crumbs and bake...sometimes I will add peas and seasonings of your liking.

As far as the wine conversation, I am, of course, partial to our finger lakes wines which can be found in all price ranges. We are Reisling people here. For some reason the reds mess with me and make me sick, although I like them. We can literally hit a winery every 1/2 mile along all these lakes...BIG industry here. The wine tours are a great way to try lots of varieties to find your favorites. We drink a lot of Doobie Blues from Swedish Hill wineries. Unfortunately when we travel or staying in our NC home, we do not see NY wines in the stores or restaurants.

Hope everyone has a wonderful Thanksgiving, although I know it will be tough for lots of us here that have lost loved ones. Blessings everyone!

Carberry: mmmm, tuna noodle casserole! I grew up with cheese toppings, but gotta try the crackers. I gather that's a more conventional topping!

  • minustwo
    minustwo Posts: 13,797

Carrie - oh my, already 12"... And it isn't even December yet. Do you generally go to NC in the winter to escape the snow? Or in the summer to live on the beach?

That recipe is much like my Mom's except she used the canned, crunchy, La Choy Chow Mein noodles instead of soft noodles & she added chopped celery (and onions if my Dad wasn't watching). It's the very first "home made" recipe I made on the very first night I cooked when I first got married a hundred years ago.

    Lacey12 Posts: 2,895

Ah yes, I remember that tuna noodle casserole well! I also grew up with my mother making it, then I rotated it frequently on our home menus once I was married. It was one of those dishes that tempted me to keep going back for more if there were leftovers.

So tonight I used that leftover ground/spiced lamb with feta cheese to invent a tasty filling to put into the portabello mushrooms I had in the fridge. Made the filling with sauteed onions, garlic and chopped mushrooms, mixed in the lamb, added some extra rosemary powder and feta, along with cayenne and a chopped roasted pepper, and blended all that with a mix of cooked pastina (was out of orzo) and lentils. Talk about a kitchen sink mix!! Filled the portobellos after brushing them with some evoo and balsamic and topped with more cheese. Baked them for about 20 minutes....and we loved them! Had a cuke and tomato salad, and some steamed brussells sprouts as sides.

It is cold, raw and rather windy here today....but I should have no complaints after learning how upper NY state got deluged with snow. NOT READY!!

Gotta get off the screen and do some T-giv prep!

And I am sorry to hear about Stephanie....we have lost some very special women on these threads. Condolences to those who knew her well....and yes, Thanksgiving is a poignant time for remembering those who live on in us

I am eating the last of the Rotisserie chicken and the Yukon potatoes. Still have plenty of mashed sweet potatoes, which I probably won't buy again.....did not' care for the overly smooth texture. Still have pimento cheese spread and tomato basil soup in the fridge. Still coughing--it is not getting better, just moving from my head to my chest. They gave me 40 mg of prednisone for 5 days and a z-pack to pick up if I wasn't better. Starting to hear a little rattle in my chest so will check tomorrow to see if that is the green light for the antibiotic.....

Thanksgiving will be first this year---at the Nursing home with Dad. I have stairs at my house and the last time he was here, we discovered he couldn't negotiate the bathroom with his 4 wheel walker. He has problems now with stairs. It is a tight maneuver for two people also. So, whatever they serve at noon, he and I will be enjoying it in a private conference room. I had not been for two days because of my temperature. He was ok, but apparently had slid out of wheel chair or something yesterday and they charted they had called me, but I didn't get a call. He was fine. He was concerned when I started coughing bad during our visit. I had a bottle of water with me and when I started drinking it he told me he wanted me to get him some bottled water "the reverse osmosis kind" as he didn't care for the water they bring them at the nursing home....so I went to the store and made sure it said that on the label.......They have two kinds of hot chocolate there-one is sugar free and one is regular and it is in a machine dispenser. He is diabetic but he wants nothing to do with the sugar free hot chocolate......At 89, I am inclined to let it go.

I hope all of you have a wonderful thanksgiving, with food you enjoy and people you love and memories that you will cherish. I know I will.

Got all of dad's stuff moved and put in storage today. Thank goodness that's done. Went to see dad at rehab. He's feeling very down in the dumps about things and feels like he'll never get better. I reminded him that he injured himself just one week ago and that it was going to take some time. I don't know if he heard me.

One fun thing in the past few days was that after packing up the apartment yesterday, we had dinner at a restaurant in my hometown that I hadn't been to since I was a kid. Although it has been remodeled quite a bit, the food was still wonderful. They are known for their fried chicken which of course, I had to have. They also make a coleslaw that is thinly sliced cabbage lightly dressed in a garlicky vinegar and oil. Wonderful.

Dinner tonight was toasted ravioli for dh. For me it was an artichoke cooked in the pressure cooker, a couple of raviolis and a piece of fried chicken left from last nights dinner. All good lol.

For those of you traveling this thanksgiving, safe travels!

red - good to see you!

DH will be home tonight so I will be cooking dinner again! The surgery, combined with his departure a week ago with DD, meant the cooking came to a halt, lol! Tomorrow my son will also be here so the cooking/eating will be in full swing! I think we will do steaks tonight, not sure if we will grill. It was 45 F. last night when I came home from my cancer exercise class graduation. I know that is not even cold for some of you, but it is chilly for FL! I was wearing sandals too!
