So...whats for dinner?

SpecialK what a day. Surgery or cop car ride. Hmmm so she did both. Then super woman got the car fixed too. LOL
All you ladies with DH recovering. Ug. Heres hoping they heal FAST! LOL
This thread is important to me too. We have met so many wonderful people, read so many recipes, shared smiles and tears and we just made ourselves at home.
Ok enough schmaltz! LOL. Just saw a new Food Network show. Heartland table. This looked real good but its a bit weird. Sourdough bread sliced and put in a pan with melted butter and maple syrup. Cooked til it was crispy and a dark golden brown. Cooled a bit and served with a soft cheese like brie or goat. It really sounds like it will be good. Kinda going with the breakfast food talk! Maybe its a recipe for healing! LOL
Much love.0 -
My everyday Correlle. I bought it last year during chemo. I wanted something bright.

are those cherries? I love anything with cherries! I grew up in the cherry capital of the world!!!0 -
Monica, how nice! And what a nice sentiment as well, I couldn't agree more!
The back is good today, so I'm going to work out. God help me, I joined a gym. After that, I think I'll make the olive oil cake. I made a poulish yesterday, so I need to make bread too. Hmmm, I haven't made onion rolls for a while. Bread means soup, so it will be either the lamb shanks or garlic sausage and lentil. Looks like I just created a busy day for myself.

Hey all! All the food sounds so yummy! We had leftover beef stew last night, I made enough so that I would not have to cook last night, which was a good thing. I do need to grocery shop though - where I am going later today is right by Whole Foods and the Fresh Market, so that will be a treat! I did not sleep well because the surgical area is right at the inside of the shoulder blade in the middle of my back. I can't sleep on my back, can't sleep on the left side due to the incision, and sleeping on the right side kept squishing the left side. Consequently, I watched a lot of stuff recorded on my DVR and slept in 15 minute increments. I need a caffeine IV right now! Today I am getting four new tires (in about an hour) and my hair done later this afternoon. The good news is that I don't have to raise my arms to wash my hair for a couple of days, which I think would be a bit uncomfortable, the bad news can't take any pain meds because I have to drive. Life seems to be full of these trade-offs! Just made my appointments for my clinical trial vaccine booster in Washington, D.C. for December and January - it will be cold by then! Very exciting!
moon - I like your Corelle - it has a bit of a vintage vibe, yet modern! Plus, you have to love the durability. My everyday bowls and dinner plates are doing some kind of weird scratching thing - I think from the flatware contact. I may be in the market for new everyday stuff sooner than I thought.0 -
Special K- I don't know how you did all that with just having surgery on your back?! Take care of yourself!
Lacey- Your eggplant sounded great- love the pesto element, I am going to have to try it.
We had soccer AGAIN tonight and do for the next three days as well
I roasted the eggplant before hand and had dinner ready to go when we got home. Still ate a bit late and the boys were late on heading to bed but only by a 1/2 hour. DH is sick. He NEVER gets sick. He ate no dinner and headed to bed almost as soon as we got home from the game. Hopefully he is better in the morning.
Hugs to all.
As always thinking of Michelle.0 -
laurie - I'm good, don't worry! Today was mostly sitting - tire place is 5 minutes from home, sat there, drove to hairdresser (sitting in the car), sat and got hair colored/cut, stopped at Whole Foods and it was not crowded and just grabbed a small cart of things, it was quiet so the sweet bagger came to my car and put the bags in for me. Drove home - sitting, lol! I got chimichurri steak and smoked gouda pasta salad for DH so I did not cook. DH is watching the WS right now - and I am getting ready to go lay down! Sorry to hear your DH is sick - boo! Hope he is feeling better quickly!
I need a kale pesto recipe!0 -
spevcalK so sorry you didnt get sleep. When you dont get sleep its just hard to do anything. Hope you get some tonite.
My last everyday set was just some Ikea plates in dark grey. But my total clumsiness during chemo chipped them big time and I didnt like looking at proof I was so bad! LOL. These are called cherries and berries. They have some neat patterns now though. I bought them only after my DH replaced my dishwasher that had been broken for over 5 years. I was using a lot of paper plates because I couldnt stand up enough to wash stuff. LOL. Today its only pork chops. They needed to be cooked.0 -
Special, there are a lot of kale pesto recipes on various internet sites, so just google it and select the one you like best. I found that the only DIFFERENCE (note, I am not listing all the ingredients for pesto here....just the variations...hope that isn't too confusing) from my basil pesto was that I toasted the walnuts (I use them in favor of pine nuts), blanched (for a minute) about 8 large leaves of kale, stripped of their ribs, and added only a minimal amount of basil (maybe 1/4 to 1/2 cup). I also add the juice of one lemon which I never did with regular basil pesto. The color is bright green and tends not to turn which I like. To me kale pesto tastes like basil pesto in a milder form....and is cheaper to make...those kale leaves go far! I can use just one bunch of kale for pesto, soup, and several smoothies. And it is not so easy to find nice fresh basil here through the winter.
Also, Special, I was dying at your account of all that sitting...did that not hurt your back? You must have a high pain tolerance! I would be much more debilitated!
Laurie, so sorry to learn your DH is sick. He obviously listened to his body by heading to the sack!
My DH is struggling with a cold, which kept him up all last night. It does seem odd to see our guys get sick.
So no report on the rollatine, since I stopped at Marshall's in search of a dress and ended up spending more time there than planned (could I be turning into a suburban shopper....hope not!!). DH decided to go to a business program he was going to skip....so I got out of making any dinner...and spent my time doing "clothes management". Tomorrow I do have to cook!
So for my spontaneous dinner, I made a mashed avocado (with some garlic) sandwich on whole wheat bread, with tomato, red onion, green leaf lettuce, and kalamata olives. It did the trick!
Back to watching the game......glad I am seeing it from the warmth of my family room. I like to attend baseball games on balmy summer nites.

Lacey- Your spontanius dinner sounds wonderful! I too have been wathching the game. After freezing my butt off at soccer tonight I am enjoying the wood stove heat:)0 -
lacey - the surgical spot is up pretty high so I just leaned forward a bit. The biggest problem was getting my hair washed because I had to lean back, but my hairdresser went fast! My car has heated seats (yes, ridiculous in Fl, but the car came from VA - I love them though for Femara related joint pain - I just blast the AC to balance it out, lol!) so I was comfortable for the car rides to various places. I do have a high pain tolerance - I took pain meds for only a few days after the previous surgeries - even the BMX. I think I will like kale pesto - I am not that into basil, although I do like basil pesto. Thanks for the handy hints on how to do the kale pesto - the fact that it is milder is what I will like.0 -
Special, I am going to try to post a link to a recipe for kale pesto that doesn't even use any basil.
http://www.loveandlemons.com/2013/04/02/kale-walnut-pesto/
Voila! It worked...I never know with this Ipad.....
Laurie, aren't you happy for that toasty woodstove now?!
Watching kid sports while freezing was never high on my list of body friendly activities! But of course I did it like we all do..... And I shivered a little bit tonight when I read your soccer post on FB!0 -
I don't know Michelle, but still I am so very sorry.
Her words that Nancy posted, from when she was by her mom's side, struck home a bit for me, having been with my own mother while she was in hospice earlier this year. I can't help but have that experience in the back of my mind now here at home, and it shades and influences every moment I spend with my love. Sometimes for the better, and sometimes with melancholy, but it's brought a higher octave of awareness to me, and the sharpened perception that every moment really is precious.0 -
Last night yours truly made mushroom soup based on a Wolfgang Puck recipe and served with french bread NOT made by yours truly. It was tasty!
Still wondering what to do to jazz up the peanut butter puffs, but they keep disappearing on me - I guess that's good?
I've got some amaretto chocolate drizzle I made to go on a tiramisu cheesecake I did, and I'm gonna try painting some cookies with a little bit of that after dusting them with the powdered sugar I finally remembered to buy.
(If it isn't written down, it most likely gets overlooked, un-purchased or just plain forgotten around here)0 -
ok- a question for everyone. When I cook my chicken pot pie I usually bake at 375 for an hour. We have soccer again tonight....do you think it would work if I baked it at 325 for an hour and a half?0 -
Laurie, does your oven have a timer with a delay start?
Gyros tonight with a Greek salad and feta dressing.
0 -
Nancy It does! I had no idea? Now I have to figure out how it works!! You are so smart!0 -
Keith, the 2nd time around shades things for me too.
The what to do part is less hard for me because I've been through it before.
BUT.....The emotional part is harder because I have been through it before and I have to be careful to not assume that this time will be like last time.

Why thank you Laurie (blushing) lol, I always have to consult my manual because I use that feature so seldom.

Laurie and Nance...so great that the mundane (and handy) in our appliances was awakened here!! I also never think to use my range on/off timer. Was fascinated that the people we purchased our first home from had (and used) that feature on their stove. Well, as fascinated as I was, I never used it then and have never used it on either stove I've owned in this house. I also tend to let gift cards expire....there may be a category in DSM-V for me.....appliance feature/gift card user avoidant syndrome.
And Keith and Eric....so happy you guys found each other on our humble "what's for dinner" thread.
Impressed with both of your culinary talents! Happy tonhave you both in our kitchen.....
Tonight I finally got the kale/ sausage/chicken soup together after DH and I went for a nice walk. I can tell you I am happy I did not spend a small fortune for a WS ticket given that it is darn cold out...and windy! Brrrr. We have been spoiled with a beautiful warm fall so far in New England.
OK, game is on....I'm off.......0 -
Eric, did you make it home?
0 -
So.....I never got a chance to read the manual to figure out my delayed start on the stove and when I checked the freezer I was out of chicken too. I could have sworn I had a few pounds left? So a quick chopped steak and gravy for dinner with left over cheese and rice with zucchini it was. Still good. Tomorrow is grocery shopping day. I need to plan my meals. Now that I am craving chicken pot pie I think that may be tomorrow- although DS has soccer at 6:30. Kind of a heavy meal for heading out right afterward.
I hate planning my weekly menu. I am always stumped for ideas that will please everyone.0 -
I have not been brave enough to use the self-clean on my self-clean oven. I can see me incinerating the whole house or at least the cabinet beside the stove.
We have been eating a casserole for 3 nights that I am so tired of. I don't know what tomorrow night will be but not that. Might be baked potato night.
Lacey I have the game on and it does look cold there. Brrrr. Alternating with the Dallas Stars hockey.0 -
Yes. I made it home, but I thought it was going to be a Planes, Trains and Automobiles type of thing.

when I work up this morning it was 34 degrees. I saw snowflakes. Nothing on the ground but darn.
Luvmygoats, I try not to make casseroles for that reason. I end up eating it for a week. Oh well. Sometimes I do anyway.
Have any of you tried the Kemps greek yogurt? (Confession time- I used to work there before they closed my Dept. And I lost my job after 8 years. But I still keep in touch with my friends there. ) ok. Anyway that is good. They use real sugar. And the carbs for a serving of the cherry was 25 grams. Thats pretty good and the protien was 15 gr. I know where they source the milk and ingredients. But for the lowfat variety to have only 25 carbs and use real sugar is not too shabby. The flavor was pretty good too. Ok we return you now to your regular programming..... LOL
warning TMI follows........
I am eating more Salad now. I was so hungry for it. But of course my late SE has been D. So there was less of the raw and green stuff for me. But we changed my magnesium supplement to Slo-mag. And miracle of miracle I can eat them without too much trouble. However it doesnt keep my mag level high enough. So im gonna enjoy salads until they make me go back to mag oxcide. LOL
ok safe now......
I bought a salad mix from costco. The Parisean mix. Has feta, dried cranberries, candied pecans, and white balsamic dressing along with mixed greens. Yummy. The only problem is they give you only enough of the fun stuff gor two salads. Enough greens for 4. But then you dont get tired of it either. That was supper for me tonight. I had the yogurt for dessert. Wow. Maybe I should just say just read the last paragraph! LOL. ( But of course, if you get to that you already read it, LOL)
Much love to all.

Hi Moonflower...I bought some yogurt activia this week, black cherry. not sure if it is real sugar, it has 17 grams. I am chicken to try it! I always think of the live culture....I need to try it though they say to try things you don't like while on chemo. Right now I am gathering courage for breakfast this am!
Glad you can eat salads for now...I love homemade ranch dressing...and to me that means from the packet.
Hope you all have a wonderful day and what ever you all cook is a success!0 -
After dinner Tuesday, the painkiller that Mr. 02143 had been given through his IV ceased working. A stubborn man, he refused to take his pain meds and paid the price. Wednesday was bad. From then on, carrying his meals to him in his chair. Poor man. Needless to say, he is taking those pain meds now.
Wednesday night I made the samosa, lentils, and rice dinner. Last night I managed to stop at the chicken store on my way home from a client visit and make chicken parm. I also made a second olive oil cake earlier in the week which is living in the room with Mr. 02143 and seems to be disappearing.
Today, he has already made it up and down the stairs once and I haven't heard quite so much groaning. I am optimistic that we are on an upswing. Since he isn't working right now, we have decided to head to the Cape to watch the Patriots and World Series with some friends this weekend. I can work most anywhere after all.

Hello everyone, I'm new to this thread. Pre-cancer I was a big salad eater and loved Boar's Head Oven Roasted Turkey breast for lunch. Was told by the dietician to stay away from processed foods and foods with nitrates. I tried Applegate sliced turkey but it was too bland for me. so I haven't had a turkey sandwich since June. Was craving a salad so starting eating salads last week. I'm also craving hot dogs, but haven't had that either since its processed meats and nitrates. Anyone have any suggestions?0 -
Candi07, hi! You can cook a turkey breast and slice it up for sandwiches if that's your desire. It's a challenge to avoid unprocessed foods, but I'm sure our resident expert, Susan, can give you some advice there.
I'm not sure what's for dinner tonight. Maybe babyback ribs. I do know that it will involve the olive oil cake. Susan, did you add more citrus?
Yesterday I froze about a billion peppers (hard freezer last night). I really don't like frozen peppers but I couldn't stand the thought of them going to waste. I still have ten or so in the fridge that will end up roasted or stuffed or in a piperade or all of the above. I expect the frozen ones will be used in frittatas or some other such thing.

Nancy - I look every time I go to grocery to see if they have peppers on clearance. I still have a couple sandwich baggies of the frozen roasted ones.
The olive oil cake sounds yummy but I need to find a good olive oil. No Costco card but can get to Trader Joes. Any good brand there? I could also make a Central Market stop which is prob. even better but dangerous for the pocket book. Susan - can you give me a description for what kind, style, taste of olive oil I need. I have Olivari in pantry at present which is almost gone anyway but then I don't have discriminating taste for it. Just cook with it. PCP is sending me to ortho for my shoulder. They asked if I had an MRI - noooo. Sounds like more fun coming my way. So looks like 2 trips to big town next week - ortho and to pick up DH's truck late in the week.0
