I only take vitamins and supplements prescribed by a doctor for a specific reason (mostly malabsorption.) Blood tests are done periodically to make sure my levels are in normal range. Most vitamins in excess get excreted but A, B6, D, E and K can reach toxic levels. Almost all pills sold except for some multivitamins have way more than you need. I have a hard time finding E at only 100% of RDA; too much can cause internal bleeding/stroke.

Carole, I sometimes pay extra for shiitake mushrooms just for the taste variety. I like the name of the cookbook you mentioned. My recipe found online was titled easy which is why I chose it. The only easy part is the sliced eggplant does not have to be salted and sweated, just brushed on both sides with olive oil and baked.
Eric, You are well prepared with poultry broth. It does give rice a good flavor. You got a great deal on that chicken.. I’ve never tried it but the duck broth would probably make good French onion soup (sorry Carole.)
Dinner tonight was creamy chicken and asparagus with mashed potatoes.
