My butter chicken will be tonight. DH and his middle brother wanted to go for "fish and chips" (or as we wisconsinites say, Fish fry. I almost never eat fried food…it was good but felt like it sat in my gut forever.

Maggie - recipe sounds good. I also boil extra potatoes but usually turn then into potato salad.
Carole - your salad sounds delicious.
Dinner was the last of 4 hot dogs and some homemade coleslaw. I froze the extra 4 buns. Now enjoying a 'snifter' of my favorite Italian brandy - Tuaca as I try to catch up with computer correspondence.

Reader, What a wonderful sign! Jefferson was definitely right. The Canny Man, the site of the hit and run in the second Isabel Dalhousie book, was our local pub. The Correspondent is on my list of books I want to read so I’ll have to get a copy.
Wally, Fish and chips is DH’s favorite meal but I don’t like regular fries (sweet potato ones are good) and I prefer fish cooked another way. Living in the UK l have eaten lots of fish and chips since that is the British version of fast food. They really did serve it wrapped in old newspaper which is no longer allowed by health laws.
Carole, Your shrimp is probably much better than the farmed shrimp from Ecuador we get. They are better than the frozen packaged ones, however.
DS took the Vermonter back to NYC this afternoon. It was great to have both of my children visit.
Dinner tonight was barbecued short ribs, lima beans and mashed potatoes. It was not as good as my favorite red barbecue (Dinosaur in Rochester NY) but tasted fine and was made with ingredients DH can eat.

Dinner involved labor last night. I breaded (flour) and browned the 5 large drumsticks. Then finished them in the oven. Thus "oven fried" chicken. I made a cheese sauce ahead of time and heated it before adding to steamed cauliflower. DH was appreciative and said a couple of times that the meal was very good.
I had my leftover spinach salad with four large shrimp for lunch. I enjoyed it but wasn't hungry for dinner. I think my preferred meal pattern would be small breakfast, more substantial lunch, small dinner. DH's pattern is large breakfast, small lunch, substantial dinner. He is making his large breakfast as I type. Lately I have been enjoying cereal (Cheerios) for breakfast with berries and/or banana. I have raspberries and strawberries. My "standard" breakfast is whole grain toast and peanut butter with sliced banana or drizzled honey. My beverage is half a carton of chocolate Premium Protein, which gets more and more pricey.
Today is Wednesday, exercise and go to lunch day, the last one before we depart on Monday.

I made the butter chicken last night and LOVED it. I tweaked the recipes and combined them all into a thing I could make easily. OY, I have a butt-load of leftovers. I could see making the sauce and doing a quick marinade with fish, or sub the chicken for pork or goat or …well, you get the idea.
I'm not a big fan of fried food, except potatoes….but figured once/year with my beloved middle BIL, worth it. They had halibut and cod. Honestly, I couldn't tell the difference, LOL.

We don’t eat fried food a lot but when we do it’s usually fish, but chicken is my favorite. I never make it because I hate the mess. DH would eat French fries every day of his life but when I make them they’re always oven fried with olive oil.
I eat half a bagel with whipped cream cheese and a banana nearly every day for breakfast. Lunch is usually light unless we go out. Like Carole, I prefer a heavier lunch and lighter dinner but that doesn’t seem to be our habit.

Carole, I can make a meal of cauliflower with cheese sauce but it is not enough for DH. You must be able to see the bottom of your freezer by now.
Nance, DH would eat fries at every meal if he could but I also oven bake them. If I prepare tater tots I don't hear about the comparison to the real thing.
If I could get a decent bagel I would have Nance's breakfast but since that doesn't happen often I have a scrambled egg, wheat toast and strawberries. I tend to always eat the same thing except for dinner.
Wally, Glad your butter chicken turned out well and it seems like a versatile sauce. My former MO once asked to see the novel I was reading which contained Indian recipes referenced in the plot in the afterward and told me his mother would approve of them. He was able to recommend locally available substitutions but I now rely on the Julie Sahni cookbook for that since he moved across the country.
I can tell the difference between halibut and cod since they are both northern Atlantic fish. I think haddock makes the best fish and chips but prefer halibut or flounder when baked.
Dinner tonight was spinach/ricotta ravioli in a tomato and ground beef sauce.

Drove my friend to Boston to get her passport renewed at a consulate. We then had clam chowder at Legal Seafood.
No dinner since I was not hungry after lunch.

DH and I, along with my younger sister and her dh, took a road trip yesterday, 3 hours each way, to have lunch with my middle sister and her dh at a restaurant close to their house. We lingered over lunch and had a good visit. The middle sister and her dh have health issues and lifestyle challenges, but I will spare details. I had a bowl of sausage and chicken gumbo with rice that was delicious. My middle sister and I shared an oyster poboy because a half is more than enough. I ate half of my half. We had two slices of decadent chocolate cake for the six of us to share. DH had a cup of shrimp and corn bisque that came with a roll.
For dinner dh had some raw veggies, cherry tomatoes, onion, celery, colored pepper. We made popcorn and each had a bowl.
I have a backache from the 6 hours of riding in the back seat of our pickup, but, hopefully, some Tylenol and back exercises will take care of it. I will start packing for the move to MN today. Decisions of what clothes to take are a challenge for this Pisces. There will be some cool temperatures and even cold temperatures in Sept.
Dinner may be pasta.

Carole, I just looked at the local news for the weather here, temps will be running around 50s and 60s here next week. Supposed to have rain fron Sunday to Tuesday and maybe more coming later in the week. Its been pretty dry up here lately.

49 h ere today!! woohooo…my b-day is tomorrow and it is an amazing "gift" from mother nature in May …thrilled.

Busy week trying to get the subdivision residents registered for the pool this summer. Spent 2 hours tonight handing out keys and posting 2026 signs. Will have 2 more hours tomorrow and 4 hours the next weekend. Also have some flower beds to weed and large bushes to cut down at the community pool. All of this is outside. Since it's already 93, I was too hot to care much about eating - let alone cooking. Dinner/supper was tuna salad on 1/2 an avocado.

Wally, Happy Birthday! Hopefully you’ll get a week of cool weather.
I was back at the dentist twice today. On Wednesday she had repaired a crack in the temporary bridge. Today my teeth were cleaned but in spite of being gentle the repair was knocked off. Another dentist was going to fix it in the afternoon but my dentist who was off today stopped in on her way home from the grocery store to do it. I hope it holds until the permanent bridge is ready.
Dinner tonight was shrimp with mushrooms and artichoke on cavatappi. The spinach had gone bad but this replacement worked out well.

Dinner tonight was chicken and roasted butternut squash cubes in creamy tomato sauce on leftover cavatappi. I used a silicone sheet instead of foil on a cookie sheet to roast the squash in the oven which worked out well.

Dinner was a ribeye, sauteed shitake mushrooms and a romaine salad.
Today I will do some housecleaning and last-minute preparation for departing.

My meal Sunday was 1/2 a tuna sangy and more 3 bean salad. I didn't have a green pepper when I made the salad and haven't managed to get to the grocery store since. The salad is much better with the missing pepper.

Minus, It's amazing how one ingredient can change the taste of a dish. I usually have both a red and green bell pepper in the fridge since they are such useful ingredients even if only for adding to scrambled eggs. You must be run off your feet with pool signups.
Carole, I hope the drive is going well and you have found something decent to eat for dinner.

Today was awards convocation and tomorrow is graduation. Grades are in. Exhausted lol. Having a heat wave too… so today kept it super easy… just spring mix salads with pickles and tomatoes, and tuna on English muffin. Tomorrow a bean salad and home made salsa. Happy Monday to all.

I left Huber Heights, Ohio yesterday morning and arrived home this afternoon…1,732 miles of driving.
Food was "gas station food".
