    Ended up with a hot dog & coleslaw last night. Tonight I had leftover meat loaf with leftover Stove Top stuffing. I still have enough meatloaf left for a sandwich tomorrow. And I did make more coleslaw.

    Later this week I plan to make my Mom's Three Bean Salad - although she called it "cold bean dish". Since it uses 3 cans of different beans, it makes a lot and I don't make it often & usually in the summer for picnics. But I'm hungry for this now.

    Kroger had their pudding cakes on sale & I had a coupon, so I picked up a Lemon Pudding Bundt Cake. I'll have to find someone to share 1/2 with.

    Carole, DD is already teaching GS to cook.This morning when making banana pancakes she had him "help" mash the banana, break an egg into the bowl, add the measure of flour and stir. She likes to bake but doesn’t love cooking other things so she's hoping he'll help out when he's a teenager.

    Teka, When my sister who is vegetarian flies cross country to visit I always make stuffed shells for her.

    m0mmy, Hopefully there were leftover roast potatoes for another meal.

    Minus, We had leftover meatloaf sandwiches for lunch today. I’m sure someone will be very grateful for half of your Bundt cake.

    Dinner tonight was pan fried tilapia, oven baked butternut squash pieces and tater tots.

    Dinner was supposed to be lamb loin chops cooked on the gas grill, but no gas shifted the cooking indoors to the broiler. The side was leftover Mexican rice. Condiment was mint jelly. The freezers are emptying out.

    Carole, It's good when you have alternate ways of preparing meals. You are an expert in the timing of cleaning out the freezer before changing residences.

    DD is staying one more night but I had to drive to Boston this afternoon. C’est la vie.

    Dinner tonight was turkey and Prince Edward Island vegetables from the hospital cafe, one of their reliably good meals.

    Dinner was a shared shoulder pork chop, breaded and pan fried. Side was Bob's mac and cheese. Condiment was cranberry sauce.

    Going to campus today for a faculty sentate plenary meeting, and they provide lunch. Last time I had a tofu Parmesan hero lol.. it was quite good, fingers crossed it’s the same caterer. Weather here is Springtime perfect and I’m looking forward to going in, which normally I don’t lol. But as the term comes to end I’m looking forward to down time yeah. Meals here have been simple, Greek salads and lots of olives with baguettes, and an occasional hummos dip. Which I could live on honestly.

    Asparagus has been my go to vegetable lately, found a lovely lemon pasta asparagus recipe which was yummy, sauce made with almond milk instead of cream which was light and tasty.

    Rhonda, It’s nice to have lunch provided when you are used to bringing your own. I hope you had a good meal. I love asparagus and often cook with almond milk (more calcium for me and no lactose for DH) so I’ll have to make that pasta sauce.

    Surprisingly I made it home before DD left this afternoon. This particular hospital imaging center is always backed up so I plan on waiting . I checked in half an hour before my appointment as I was supposed to and saw on the notice board that CTs were 30+ minutes behind schedule. I was shocked when they called for me right as I sat down. That was a great stroke of luck.

    Dinner tonight was chicken in onion sauce, asparagus and mashed potatoes.

    Tonight was Mahjong night so dinner was appetizers and wine.

    I made lunch my main meal today with leftovers from a steakhouse we went to with my brother and wife on Sunday. 1/2 a petite filet and leftover potatoes au gratin and honeyed carrots. Yummy.

    Last night's dinner was salsa chicken with bone-in chicken thighs, salsa and a can of rinsed black beans. Not as good as usual. I suspect something is going on with the toaster oven. It seems to be turning itself off. The chicken thighs cooked to well done but could have used more cooking to be as tender as desired. We also had brown rice, sour cream and grated Mexican cheese mix. Enough leftovers for another meal.

    Glad you got home before your DD departed, Maggie.

    Dinner (mostly for dh) was leftover pasta dish. I went on a road trip with two friends yesterday (5 hours total riding) to visit a friend who moved back to her hometown. Her new home is a lovely little house perfect for her. It's a hundred years old with high ceilings and tall doorways that was recently completely redone. It looks new inside and out. We had lunch at the clubhouse of a public golf course.

    Carole, That sounds like a fun road trip.

    Wally, I've been looking for a nitrate free beef or turkey kielbasa that DH could eat but the only nitrate free one I have found so far is pork. I'll keep searching.

    I spent 3 hours at the dentist this morning having the bridge on my debrided osteomyelitis mandible redone, the third one in as many years. Like Wally I have a really nice dentist. She is doing all the work gratis so I just have to pay for the lab fabrication costs. That's expensive enough but much cheaper than if I were charged for everything.

    DS took the train up yesterday to visit for a few days. Tonight he is camping at a wilderness site since it is the only rain free night in the week's forecast and will hike another day when there are intermittent showers. His career requires him to live in a big city but he would rather be out in the middle of nowhere.

    Dinner tonight was meatballs in Rao's on spaghetti.

    Maggie, what a treat to see your son so soon after a visit from your daughter. From your description he reminds me of SpecialK's son.

    I hope SpecialK is doing well.

    We're having a rainy day so far. Flash flood warnings are streaming across the top of the tv screen. We have been fortunate not be in the violent weather zones.

    I was hungry at dinner time last night since I hadn't eaten lunch at a restaurant. DH grilled a thick ribeye. The side was mashed potatoes with brown gravy. The meal was delicious. We have two more steaks in the freezer, one thick and one thin.

    We also had rain all day so DS put in a new router, new toilet seats and replaced a fan bulb, all things my hands can no longer do.

    Dinner tonight was corned beef and cabbage.

    Maggie, funny my husband also belatedly made corned beef and cabbage this week. one of those things is we meant to do in March..

    I saw corned beef for $2.99 a lb. a few days ago. I was soooo tempted to buy one. It's normally $8.99 a lb.

    We had smoked pork sausage and pancakes for dinner last night. I have been wanting both, but not for breakfast. My hunger was satisfied. I cook the sausage the way we ate it at home. Split open and browned on both sides in a skillet.

    Last night something weird happened. When I got up about 3 am to go to the bathroom, I saw a streak of light on the kitchen ceiling. I went to the kitchen and looked out the glass portion of the kitchen door. DH's truck parking lights were on. My first thought was to wonder if someone had tried to steal the truck. I woke dh and he used the key fob to try to turn off the lights. I refused to let him go outside. We went back to bed, the lights still on. This morning they were off. A big mystery.

    Never bothered to eat yesterday. I know, I know - not healthy. Maybe a hot dog tonight? I buy 8 packs, split & freeze half. But as ridiculous as it seems, I like actual hot dog buns. I'll have 4 to throw away - or feed them to the ducks in the nearby creek. Anyway, I made some coleslaw so I have a side.

    Can't believe the amount of snow in the Sierra Nevada mountains when it's 94 here today. Eric - how is it in your mountains?

    I too am thinking of Special K. Went to my endocrinologist and she told me that now Prolia is approved for 14 years - increased from 10. So I'm scheduled to go 4 more years w/o worrying about the bad side effects and the steep drop in bone loss when you stop Prolia. I think Special K transitioned over to Reclast? Would like to hear where she is with the osteopenia /osteoporosis. Not to mention if they're spending time at their new place in Colorado?

    Carole - I often think of posting what I'm reading that is interesting, since I know you are a reader and that thread never made it. And I'd like to hear recommendations too. Does it count for a dinner thread if I read while I'm eating?

    My PCP was unhappy when I told her I'd been riding my recliner instead of any other exercise the last 6 months. I know, I know - another bad. I dropped out of water aerobics last year. I don't care for the neighbor who volunteered to teach since I'd have to end up responsible for the facility and the lessons.

    Corned beef was on sale for $1.99 a pound after March 17 so I bought two straight cut pieces. I cooked the larger one since there were three of us to eat it. DH’s favorite part of it is the next day’s hash.

    Carole, That strange experience sounds spooky. Staying inside was a safe strategy.

    Teka, I almost always cook because it is much cheaper and often better than eating out. Having a steak these days is a treat.

    Minus, My sister went from Prolia to alendronate. It’s good you have an extra four years now. You could make your PCP happy by walking to the creek to feed stale rolls to the ducks. I’m reading The Names by Florence Knapp. I just finished all 16 of Alexander McCall Smith’s Isabel Dalhousie books. I lived in a less toney part of her neighborhood so I know the routes she took as she traveled around Edinburgh.

    After climbing Mt. Monadnock DS cleaned my car and got me Chinese for dinner. I made corned beef hash for DH.

    You can freeze buns, bread, etc… just sayin'

    I'm envious of all the corned beef sales.

    DH's brother flew in today; I cooked salmon pieces (costco) from frozen on a bed of spinach with refried beans. I'm thawing chicken breasts and will attempt Indian butter chicken for tomorrow…wish me luck> I've never made it.

    We'll have a warm up on tuesday and then cool again….Minus, 68 is hot enough for me, but I know summer hasn't started yet. I don't know how you survive those temps.

    I will go kicking and screaming if anyone suggests bone density meds to me…I've seen the horror for my DH's jaw and am gun-shy.

    Maggie, how do you make your corned beef hash? When I had leftover corned beef, I read some recipes but didn't attempt making hash.

    Minus, I remember when you walked miles. Walking is so beneficial for bone density. You may have free gym membership with your medicare plan. I highly recommend the Silver Sneakers exercise classes.

    We had catfish for dinner last night, breaded and pan fried very crispy. Sides were leftover mashed potatoes and mac and cheese and freshly made coleslaw.

    We're going to nearby Triple Nickel restaurant with our neighbors tonight.

    Wally, How did the Indian butter chicken turn out? I’ve made chicken tikka masala but not that dish.

    Carole, I boil a couple of extra potatoes when cooking the corned beef. Chop half an onion (and sometimes half a green bell pepper.) Melt about 2 Tbsp butter in a skillet , add the onions/ peppers and cook until softened. Add the diced corned beef and potatoes. Season with black pepper, salt and nutmeg. Cook while stirring over medium heat until warmed. Press down in skillet and drizzle heavy cream until it starts to rise to the top. Cook undisturbed 5 to 10 minutes to allow a crust to form.

    It’s going to be below freezing tonight so DS rented a cabin in VT to stay in after hiking. I think Wally likes the cold more than I do but I agree that temps in the 90’s for more than half the year would be hard to endure.

    Dinner tonight was tilapia Veracruz on rice.

    Maggie, I am I think one book shy of finishing the Isabelle Dalhousie series - my very favorite! I've been to Edinburgh but not as familiar like you would be.

    Also read The Correspondent and Saving CeeCee Hunnicutt recently. Both quite good. Also I'm currently reading When Trouble Comes by Phil Ryken, a pastor, author and College President I follow. In my library I have this sign I got ar Monticello - "I cannot live without books." Apt.

    We went to dinner early. Our neighbors picked us up at 5:30. I wasn't hungry, having eaten lunch late. I ordered a spinach salad topped with fried shrimp. Blue cheese dressing. I brought most of the salad home with a little container of the dressing. I enjoyed a Cosmo. DH had one of their large hamburgers and fries. The shrimp were large and tasty.

    I have chicken drumsticks in the freezer. Dinner may be oven fried chicken and cauliflower.
