Maggie, I have a four-burner gas stove in the 5th wheel. I used a skillet last night to pan fry two breaded chicken cutlets for dinner. Side was packet gravy and Dave's mashed potatoes.
I bought the cutlets at Aldi's. Shopping there is new and I thought of you, Maggie. People have praised the vegetable section for freshness. I bought ingredients for a broccoli and cauliflower salad I will be taking to a potluck on Saturday. A goodbye party for a man who is leaving our community in the campground.
Today is a baseball game in Fargo. The Red Hawks. Fingers crossed not to get rained on.

I met two groups of Scottish soccer fans today. One crew was looking for subway directions and nobody else could understand them. At least it was an area I know well; they just had to get off and walk five minutes rather than change lines three times to end out at the correct station. The other group joined me as I ate a late breakfast sandwich in the park near the MRI center. They wanted to know where to get Scottish food (an Irish pub) and tips on driving to Miami for the pool play game not in Boston (while I-95 is a direct route use Google Maps directions to avoid some bad bottlenecks.)
Dinner tonight was beef stew for DH. I was too full from my Legal Seafood lunch special of clam chowder and a small lobster roll to eat anything else.

babyback ribs. DH actually ate a little!! New hospice nurse was fabulous. If I need care for DH in the night, that is not covered by hospice…so something to cnsider moving forward.

I stopped at Chicken Salad Chick after my hearing aid appointment Thursday. So I'll be eating their delicious broccoli salad and their "Sassy Scotty" chicken salad. My favorite is their "Dilly" chicken salad, but they only have that on special occasions. Broccoli salad is every bit as good as the Costco version but in quantities that make sense for one person.
So - I'm one of those dinosaurs who still have a land line phone that hands on the wall in the kitchen. Or I had one until 5/31. This has been important to me since I live in Houston hurricane country and people line up to use my phone when the power goes out. A vandal stripped out the copper wire by the main entrance to our subdivision. 12 days later, no estimate of repair time or IF they will even repair. I'm giving up and migrating to fiber - what they are trying to push anyway. UGH. But that does mean my son will be coming next week from CA to pull the cables through the walls and hook up all my lines & computer. Bad timing with the World Cup. Supposed to be 4.5 million people through the Houston airports in the next 10 days. I'm going to cook Laurie's Salsa Chicken. He lives with a vegetarian so other options I'm pondering are beef tips & noodles, spaghetti & meatballs and a pork loin roast. But since he grew up here, he will want Tex-Mex for at least two meals a day.

Tonight I'll be starting the sourdough "sponge" and tomorrow it will be sourdough bake day.
It's obvious that the monsoon season is almost here as the storm clouds are building and looking "dark"….and I just heard some "not too close" thunder.

Minus, Yum on the chicken salad. It's too bad you have to switch to fiber on such short notice but great that your son can come help you out. The World Cup crowds are a pain. I'm dreading my next appointment in Boston since it is on the same day as a playoff game at the Patriots' stadium and at the main hospital which is a 7 minute walk from Party Central.
Eric, Your house will smell wonderful tomorrow and you'll have delicious bread to eat.
Dinner tonight was corned beef and cabbage, hardly seasonal but approaching its use by date.

All of my house cables & electric wires have always been dropped through the walls to the interior boxes from the attic instead of tacked to the outside of the house under the fascia boards like an ATT installer would do. I'm sure there's a good reason that my ex-DH and my son always do it that way, but I never questioned it.

I like the phone wires inside the walls as well.
I'm 99.999% certain the installation tech will connect the existing in-house telephone wiring to the fiber box so "what worked before will work after". They won't add any new wiring inside the house (without presenting a bill).

I researched this when fiber optic cable from a competing company expanded to my street. The fiber optic connection to the house is done the same way as the coaxial connection was. Since it can't be bent the fiber optic cable has to be connected to a single optical network terminal rather than being run through splitters to other rooms in the house. They weren’t sure what would happen with the landline since our provider is now owned by the cable company which installs VoIP. We stayed with what we already had since the cost after the introductory three months was higher. Our neighbors made the change and it all worked out.

We got rid of the land line several years ago and haven't missed it. All or most of the calls were nuisance calls. Personal calls were all cell phone.
Dinner last night was a potluck on Mary's deck next door. It was cold and windy, so everyone was bundled up. The food was a typical assortment. I brought broccoli and cauliflower salad and a carrot cake for dh's birthday. Carrot cake is his favorite. I stayed as long as necessary and was happy to return to our camper and relax after a very uncomfortable day that had included the farmers market. The temperature would have been ok, in the 50's and 60's, but I don't enjoy gusty wind.

I think I had refried bean nachos last night….I'm exhausted. Needed 911 for lift assist for DH…he is so angry, frustrated, bitter and can be unkind. I think he was having death rattles in the night…I feel like I'm doing the best I can but failing. I'll check and see what help is available. Maybe he will listen to strangers. *sob😭*

Wally, You are doing really well. Your DH’s behavior is caused by illness making the brain revert to instinct so unkind reactions are not personal. I went through this with my grandfather and mother. It must be much worse when it’s your spouse with whom you have had that special relationship. You might want to look into the possibility of residential hospice (often in a nursing home) if it gets to the point where you need it. The people who do that job are used to what happens and don’t take it personally. Medicare will cover a respite break for up to 5 days. Otherwise you have to pay the room/board fees (medicare covers the hospice care fees) but it might be worth it for your mental health. Hugs for you.

Hospice won't cover that, Maggie. At least not out here that I am aware of….I'm just mad at myself that my patience and feelings may be affecting his care. I am fully aware it isn't his fault, but that doesn't make it any easier. Just gut wrenching.

Carole, I would love weather in the 50’s and 60’s but without the wind you had to put up with all day. Carrot cake isn’t my favorite but one of my former colleagues used to make the best carrot cake whenever someone had a birthday.
Dinner tonight was pan fried tilapia, sautéed summer squash and tater tots for DH.

I was hungry in the afternoon yesterday and snacked enough that I didn't desire any dinner. DH had a small plate. I plan to add some pasta to cooked chili tonight.
Today will be warmer, high about 75 degrees, but still windy.

The weather was finally nice today: high 60’s to low 70’s.
Dinner tonight was the bakery frozen Neapolitan pizza crust with Rao’s, ground beef, mushrooms, black olives and cheese.

Last night's dinner was leftover chili with the addition of cooked ziti. Also a salad with lettuce from the farmers market and additions. I have decided that I like the leaf lettuce on sandwiches, but I prefer romaine for salads. The leaf lettuce would also be good for wraps. I rarely make sandwiches or wraps, even though I like them.
Dinner tonight may be a stir fry with chicken. I need to buy soy sauce when I'm in town. I'm having lunch with a MN friend from the farmers market. She was recently diagnosed with uterus cancer and is in the shock and fear stage. I shared my bc cancer background, and she was greatly encouraged to know a cancer survivor. I suggested the lunch so that we could have some conversation without husbands. Her husband is all gloom and doom, fearful of losing her.

Carole: Still no word on the PET CT with contrast. Still no phone. I'll call again next week since my son is here this week. I'm exhausted just trying to keep up. He is doing everything I need at warp speed.
Real meals since he's here. Lori's Salsa chicken last night with brown & wild rice. Pork Tenderloin tonight - marinated in Teriyaki & served with Ina Garten's Dill Fingerling Potatoes. Tomorrow is the phone installation. Depending on how that goes, we may go out to dinner or have Beef Bourguignon with Noodles. Thursday he'll meet his Dad for Tex-Mex lunch so dinner will be small or non-existent. Friday to the airport at 5am.

Carole, Having lunch with your friend will help her sort out what she is dealing with.
Minus, I hope you made enough of your son’s favorite meals so that you can freeze some and eat it later. I would rather not head to the airport so early but it is worth it to see your son and get all your tech switched over.

Thinking of Wally and DH.
Tonight was pork chops baked in the oven and rice. Bone in pork chops were on sale for $2.15 a pound if one bought the "family of 12" pack. I ended up with 12 chops, each weighing not quite a pound, so most were frozen for later.
I used a quick (no measurements other than…looks like about right) salt, cayenne, paprika, garlic powder and onion powder rub with the rub "held on" to the chop with a light spray of olive oil. I baked it to the "new" pork temperature of 145F degrees and then let it rest for about 15 minutes while the rice finished….
I will add that to my collection of things to cook.
I very much like the new cooking temperature as the pork doesn't end up chalk-like or needing a saw to cut.

Dinner was a simple skillet dish with chicken cutlets cut into strips, onion sliced into circles, and red bell pepper also cut into large strips. Soy sauce for sprinkling. Leftover Dave's mashed potatoes.
Tonight may be pork chops.
