    Happy Anniversary, Carole!! May you have more of them!!! My 33rd would have been on the 14th. I'm sobbing this morning because I drove to get my mail and his water bottle was in the driver side of the door. 😭
    Interesting mention of climate change that far north. I have thought about moving back to WI or Michigan or Minnesota, but looking at the summer temps, not sure. Harder winters, which I would love, but the summers and mosquitoes….I know I should do nothing for a year….ugh…

    I'll probably finish the canned refried beans….or who knows. The weather has been perfect here…49 at night and 61 during the day…maybe I can make a frozen pizza in the oven. Our warm up is coming and there's still August.

    Wally, its not really that bad in NW WI during summer. To me its way better than being in the East Coast with the heat and humidity.

    Mommy, I lived in WI for 35+ years. It is hot and humid and mosquitoey out there….not sure how far north you are. I was an hour from Madison, give or take. Dh moved us here (PNW) because he hated the winters and I hated the summers, LOL. We were perfect together. SOB …how I miss him. It will be 3 weeks on Tuesday. It feels like an hour ago. I can't shake the loss….ugh.

    i'm all the way up by Lake Superior, about 10 minutes to Duluth, MN by car. I've got relatives in the PNW.

    Wally, Sounds like you need two different locations, one for each season, but sometimes even that doesn’t work out. You are wise to let things settle before deciding what to do.

    m0mmy, Reheating dinner in the microwave will keep the house cool.

    Dinner tonight was steak enchiladas and Mexican rice.

    Dinner at La Pasta was excellent. DH looked at other possibilities on the menu but ordered his usual. Linguine with Italian sausage and onions and peppers in alfredo sauce. I took a leap of faith and had shrimp scampi, the first time I've had shrimp in MN. It was delicious. The side was linguini in a butter sauce. The restaurant was packed. We had a nice table for two. The waitress was very good. Everything was perfect.

    Wally - I haven’t been online for awhile, so I’m just catching up and am so sorry for your loss. I know grief is powerful and rises and falls so unexpectedly at times. And it’s still so soon, but Small steps help. ❤️ Treasure the memories so nice you have them to wrap around your heart.

    Maggie - thanks for pinging me.. I’ve taken a long digital holiday coming online just once in awhile. DH is slowly recovering, much better than he was, but not the same as he was before. So we are both just taking it slow, one day at a time . I’m actually starting to fantasize about retirement, perhaps next year.. and just take advantage of the time we have left in a new way.

    And yes my CSA is brilliant again. Gosh I love the farm delivery each week. The corn and zucchini have been spectacular and the cucumbers and lettuce so refreshing. Been cooking lightly, so hot here.. and am eating a little dairy now so get fresh goat cheese and Kefir too. Lol . God I love food lol.

    Carole, It sounds like your anniversary dinner was wonderful.

    Rhonda, Good to hear from you. The CSA veggies sound delicious. The cold spring means we are still waiting for local produce. I had to retire earlier than I had planned to but it turned out to be for the best.

    Dinner tonight was creamy chicken and asparagus with mashed potatoes.

    Last night's dinner was simple and enjoyable. A chicken thigh for each of us, roasted in an aluminum foil pan in the outdoor gas grill. Fresh green beans from the farmers market with chunks of potato. Canned cranberry sauce.

    Tonight will be large meatballs, which suffice as a substitute for meatloaf.

    Rhonda, your veggies sound wonderful. So good to have you chime in.

    Italian shredded beef last night and for the next few nights. Today would be our 33rd wedding anniversary. 😓

    Wally, A tough day in many ways but try to focus on the good memories. Hugs.

    In addition to the heat the air mass is bringing smoke from the Canadian wildfires. Everyone is staying inside.

    Dinner tonight was a shrimp stir fry with veggies and soba noodles.

    Maggie, same here but ours is coming from wildfires burning in the Boundary Waters area of Northern MN. Under an air quality alert until Thursday at least. Think it might also be affecting Carole where she is in MN

    Yes, a smoke alert in addition to the heat alert.

    As planned, dinner was home-made large meatballs in brown gravy. I used the Aldi brand gravy mix, and it was fine. Side was Bob's mashed potatoes.

    I ended up making tuna salad and stuffed potato with broccoli….will have to plow through the shredded beef…

    Our warmup is coming; nothing (so far) like what you all are dealing with, but it is officially summer temps here. I'm getting a DEXA scan on the 22nd. It will be the first time I'll be driving and "out" of the house since I picked up my DH's ashes.

    Have the day off , so enjoying the slow day. Cooking tonight is whole wheat spaghetti with summer squash and corn, toasted seed bread with goat cheese and honey. Can’t wait.

    The air quality was too bad to venture out today. I replaced the cranberries in my cranberry orange bread recipe (from DD’s preschool days) with blackberries which worked out well.

    Carole, Any of the Aldi spice aisle items I have tried have been fine.

    Teka, Spaghetti is definitely comfort food.

    Rhonda, Your dinner sounds delicious. I’ve never had honey with goat cheese before. I’ll have to try it.

    Wally, Rotating meals is a good idea so that you don’t have to eat the same thing for several days in a row.

    Dinner tonight was Chicken Florentine on penne. I decided I had better cook the bagged baby spinach since cyclosporiasis is in the area.

    Carole - belated anniversary wishes. We must be tracking since my dinner was leftover hamburger steak with brown gravy and Bob's mashed potatoes.
    Wally - after making most meals, I separate the leftovers & freeze individual portions in zip lock bags. It's easy to pull out one portion for leftover delights and means "no cooking" nights several times a week. Love your temperatures. We had 4 days of 100+ last week.

    To everyone in the North Country, sorry about the wildfire smoke.

    Prepared cucumbers, onions & dill in sour cream yesterday to marinate overnight. Also prepared guacamole with tomatoes. Just had some of the guac for breakfast at 6am.

    Dinner was pork chops with a can of cream of celery soup in the slow cooker. Added frozen peas. Side was Bob's mac and cheese. The pork chops were overcooked, thanks to dh's insistence that I plug in the slow cooker on the deck to keep the heat outside. It was plug in and forget.

    I'm in the same boat with Mommyof3. What to cook for tonight?

    The Canadian wildfire smoke is a health hazard but it is better than wildfires occurring locally. Hopefully it will have moved on by the weekend. Thankfully the Saharan dust plume is currently over the eastern southern states. It’s amazing how local weather is affected by conditions so far away.

    Minus, Your cucumbers sound yummy. Guacamole for breakfast is just a variation of avocado toast.

    Dinner tonight was salmon, potato salad and some meh corn on the cob from the Carolinas.

    We’re fortunate not to be affected by the wildfires this year, at least not yet.

    Tonight was beef Lo mein made with shaved steak and a frozen stir fry medley from Costco which I love. It was delicious.

    That beef lo mein sounds tasty! I like seeing all the different dinner ideas people share here. Some nights it's a full meal, and other nights it's just whatever is easy and convenient. 😊

    Last night was linguine with Raos and bulk Italian sausage. Reliable and enjoyable. Also, a good salad with well-washed lettuce and additions. Tonight's dinner will probably be leftovers.

    I'll have to look up beef lo mein.

    Nance, I haven’t made lo mein in ages. I’ll have to add to my already large pasta/noodle collection.

    Carole, Rao’s is always good. I splurged on their margherita pizza sauce which is a bit different from their spaghetti sauces.

    Dinner tonight was pizza made from a bakery frozen Neapolitan crust and toppings (including the Rao’s sauce.)
